Abstract

Failure of stunting in children will produce human resources that cannot compete in the era of globalization, affect work productivity, increase the risk of obesity, and lead to metabolic syndrome. Indonesia has a high incidence of stunting among children under five and school children, including North Sumatra with a prevalence of 42.3%, ranked fourth in the province with a high stunting prevalence. The prevalence of stunting in children aged 5-12 years increases every year. During the growth of very high bone mineralization, low intake of protein, calcium, and zinc influences linear growth. Aged 5-12 years is an opportunity to catch up and improve height. In terms of overcoming the lack of protein, calcium, and zinc intake as well as spurring the growth of schoolchildren, it can be done by giving Lemuru fish nuggets. Fish nugget processing is a simple processing method and has a long shelf life, with storage life in the freezer was 2 weeks. From the results of conseling and training conducted an initial and final knowledge assessment, it is known that initial knowledge is still lacking with an average value of 64.69 after the activity has increased to 83.95. Participants better understand the benefits of local food such as lemuru fish to cope with the stunting situation experienced by their child.

Abstract

Perang melawan kelaparan, kekurangan gizi dan rawan pangan telah menjadi tujuan utama negara-negara di seluruh dunia. Walaupun ada perbedaan dalam bagaimana cara memproduksi pangan pada berbagai negara, akan tetapi tetap kelaparan tidak dapat di toleransi dalam bentuk apapun. Namun, kemajuan dalam memerangi kelaparan dan kekurangan gizi di negara-negara berkembang masih dalam taraf mengecewakan, bahkan ketika kemakmuran global secara keseluruhan telah meningkat dalam beberapa dekade terakhir. Semakin banyak orang yang kehilangan hak fundamental atas makanan, yang penting untuk semua hak-hak lain serta untuk keberadaan manusia itu sendiri. Krisis pangan dan gizi semakin dalam beberapa tahun terakhir, seiring meningkatnya volatilitas harga pangan dan resesi global yang memengaruhi kaum miskin. Dalam agenda strategis, akan perlu untuk mempromosikan pertumbuhan pertanian yang berpihak pada masyarakat miskin, mengurangi volatilitas pasar yang ekstrem dan memperluas perlindungan sosial dan aksi gizi anak. Abstract

Background: School Health Program or UKS aims to improve  students learning achievement by improving their health status including the fulfillment of nutrition so that they can grow and develop optimally. The nutritional problems of school-age children in Indonesia, according to Riskesdas 2018 data, are children with the short/stunting category reaching 30.7%, while those who are obese are 8% and anemic 26%. Nutritional problems in school children will affect the quality of human resources in the future. Objectives: This study examined the effect of promoting healthy and safe snacks by UKS’s cadres on increasing knowledge, attitudes, behavior of students and snack sellers.Materials and Methods: The first stage of research was training elementary school students UKS’s cadres who will become educators on promoting healthy and safe food consumption behavior. The second stage was assessed to 360 randomly selected students and 94 school vendors in 12 different schools. The intervention schools received a package of promotions delivered by UKS’s cadres while the comparison group received the poster. Data on knowledge, attitudes, behavior of students and food sellers were collected using a questionnaire instrument. The data were collected by the researchers assisted by 12 enumerators, 6 research field assistants and 12 teachers in charge of the research field. Bivariate analysis using t-test, Wilcoxon test, and Mann Whitney test were used to assess the differences between the groups. Results: After intervention by UKS.s cadres, there was a change in students' knowledge of 51.1% for knowledge of healthy snacks, 52.8% about safe snacks, 82.8% about formalin, 62.8% about borax, and 75.6% about Rhodamine B. Changes in the behavior of snack sellers, the highest percentage of changes in holding food with tools is 62.5% and not holding food after holding money is 54.2%. Increased change were significantly higher in the intervention groups than the comparison group (p <0.05).Conclusion: The UKS’s cadres as trained peer-educators could significantly improve safe and healthy food behavior of students as well as knowledge of snack school vendors. UKS’s cadres as promoters of healthy and safe snacks can be used as a mandatory UKS program in school to achieve food safety for school children

Abstract

This study aims to determine the knowledge, attitudes, and behavior of school children snacks before and after counseling related to the empowerment of cadres in schools at Muhammadiyah Lubuk Pakam Elementary School. This research method is a correlative study using a cross-sectional design. The results of the static test show that the value of p = 0.00 <0.05 means that there are significant differences between the knowledge, attitudes, and behavior of Muhammadiyah students' snacks in choosing healthy meals and snacks that contain hazardous ingredients after empowerment by young cadres, In conclusion, the counseling method is very influential in significantly increasing the knowledge, attitudes, and behavior of school children at SD Muhammadiyah Lubuk Pakam. Abstract

This study aims to determine the effect of the educational game of balanced nutrition ladder snakes on changes in knowledge and attitudes and actions in elementary school children in Muhammadyah school, Tanjung Morawa district. This type of research is a Quasi-Experimental study (quasi-experimental design) with the design of One Group Pretest- Posttest. The sample in this study was 75 elementary school children Muhammadiyah Kec. Tanjung Morawa. Data was collected using a questionnaire that was filled in by the respondent himself. If the data is normally distributed then the type of test used is the dependent T-test (in pairs). If the data is not normally distributed then the test used is the ranking test. The statistical test results obtained p-value = 0,000 < 0.05, which shows that the influence of snake ladder education game balanced nutrition to changes in knowledge and attitudes in school children. The conclusion in this study is the influence of the educational game of balanced nutrition ladder snakes on changes in knowledge and attitudes in school children.

Abstract

The purpose of this study was to determine the Effect of Balanced Nutrition Counseling through Poster Media on Knowledge Enhancement and Attitude Change of School Children in MIN Medan Senembah Kec. Tanjung Morawa. This research is an experimental study using design before and after the intervention using an external comparison group. The population was 346 students in grades 3,4 and 5—the research sample of 78 student samples. Data collected are before and after knowledge, before and after attitude. The method uses a questionnaire. Data collection is done by questionnaire form. Data analysis uses Paired Sample T-Test and Independent T-Test tests. The results obtained by the common knowledge before counseling in the experimental group are 62.87, and in the comparison group is 49.45. The average post-counseling knowledge in the experimental group was 76.17, and in the comparison group was 61.12. The average attitude before in the experimental group was 68.31 and in the comparison group 62.97. The average attitude after the experimental group was 73.85, and the comparison group was 68.95. There were significant differences in knowledge and attitudes before and after counseling (p-value = 0.000> 0.05). There were no differences in knowledge and attitudes between the experimental and comparison groups (p-value = 0.490> 0.05).

Abstract

This study aims to determine the effect of giving shredded eel on the intake of protein, Fe and hemoglobin levels of patients with pulmonary tuberculosis. The method used is a quasi-experimental design with one group pre and post-test design. The research sample was taken using a total sampling technique. The results showed that the average intake of protein, Fe and Hb levels after administration of shredded eel obtained a p-value of 0.000 and the significance value of each intake level was 0.000, 0.000, 0.001. In conclusion, there is a significant effect between the provision of shredded eel on the intake of protein, Fe and hemoglobin levels in patients with pulmonary TB. Abstract

This study aims to identify the consumers’ behavior toward sustainable packaging. This study involved 284 students and alumni of the Faculty of Food Science and Nutrition, Universiti Malaysia Sabah. A questionnaire was used to garner the data, covering the participants’ demographic, consumers’ behavior, and meal preferences, as well as their knowledge of the benefit of sustainable packaging and the danger of migration of chemical substances into food from the food packaging. The obtained data were subjected to descriptive analysis. It is found that most of the respondents (71.5 percent) were aware of the benefits of sustainable packaging and the risk of migration of chemical products into food. However, the purchase of sustainably packaged products was only 43.3 percent. The education level and income of the respondents have significantly affected their purchasing behaviour. However, the family size of the respondents does not affect their purchasing behaviour. The low purchase of sustainably packaged products may be caused by numerous factors such as higher cost of sustainably packaged products, lack of information, availability, and awareness of sustainably packaged products.

Abstract

This study aims to determine the effect of nutrition education with booklet media on mother's knowledge and attitudes about stunting as well as protein and calcium intake for stunted children aged 1-3 years in Paluh Sibaji Village. This type of research is quasi-experimental with one group pre-post test design. The results showed that there was an increase in knowledge and attitudes of mothers about stunting, as well as children's protein and calcium intake. The average knowledge score before the intervention increased after the nutrition education intervention. In conclusion, the average intake of protein and calcium before the intervention increased after the nutrition education intervention with booklet media.
