Abstract

Black garlic is a traditional spice having potential of herbal medicine; however, continuous heating darkens its color and changes its taste due to chemical processes and new equilibrium in the system. In this study, fresh garlic was processed into black garlic at 60 °C for 24 days. Changes in physical and chemical parameters, such as browning and protein content, reducing sugar content, and antioxidative components were recorded. Protein content was measured by Kjeldahl method, brown color development was analyzed using a color reader, reducing sugar was examined using a dinitro salicylic DNS reagent, and antioxidative activities were studied with a diphenyl picrylhydrazyl DPPH reagent in terms of their percent inhibition. Gas chromatography – mass sepctrometry (GC–MS) and Liquid Chromatography-High Relosultion Mass Spectrometry (LC–HRMS) were performed to determine the chemical profiles. Results showed a number of interesting features. The protein and sugar contents increased up to 3 and 4 times that of the initial values, respectively during processing. The antioxidative properties improved in the later stages. The chemical profiles of volatile and nonvolatile components were altered in their final stage. Sulfur and nitrogen-containing nonvolatile components were relatively stable during heating, but their compositions changed. The natural chemical changes reflect the biological potential dynamics in biological processes as herbal supplements. The reflection of the processes might go further into food chemistry and the food industry. This needs an interdisciplinary approach, expanded to biological concepts and safe, ethical industrial processes.

Abstract

This study aims to describe how to design teaching materials that effectively support the learning of Arabic reading skills. This research uses a qualitative approach with a library research method. Data collection involves searching for sources from various references such as books, magazines, journals, literature, and existing research that can be deemed appropriate sources for the study. The data is described and elaborated based on several expert opinions. The data analysis technique used is content analysis. The benefit of this writing is to provide readers with insights into the guidelines for designing Arabic reading teaching materials. The research results indicate the necessity of designing effective qira'ah teaching materials. Consequently, students can easily understand the content of Arabic texts, grasp the material being taught, improve their reading skills, and efficiently complete the questions given after using Arabic teaching materials with the qira'ah method.

Abstract

The film is one of the mass media that has the potential to influence audiences. Moreover, the film has more power than just entertainment media. It is able to oppose, reinforce and even overturn a religious perspective, basic values, and ideological assumptions. This study aimed to determine how the representation of Islamic teachings in the Korean drama Man who dies to live. This research applied a descriptive qualitative approach. The object of research was the whole drama Man who dies to live, while the subjects were the scenes in the film that interpret the teachings of Islam. The data analysis technique used Charles Sanders Pierce's semiotic analysis through the triadic method by identifying signs, objects, and interpretations. The result showed that several teachings of Islam are incompatible with those depicted in the drama man who dies to live, such as the use of hijab, foods, congregational prayers, and invitations to commit immorality.

Abstract

The K-Pop industry as a form of subculture within popular culture, offers more than just analysis focused on artists and their music, but also consider the aspect of it fans. In Indonesia, K-Pop is one of the most popular genres and receives high enthusiasm, especially due to the participation of it fans in promoting it by consuming and producing K-Pop-themed cultural texts. This study explores the Indonesian K-Pop fans as prosumers within the cultural industries through the practice of textual poaching. Using a qualitative approach with constructivist paradigm, data were collected through interviews with four K-Pop fans actively involved in producing fan art, fan fiction, and fan edits. The prosumer theories of Alvin Toffler and Henry Jenkins are applied to examine the blurred lines between producers and consumers in participatory culture. Findings reveal that fans do not merely consume cultural texts but also reconstruct and redistribute new meanings based on personal preferences, demonstrating their creative autonomy. Although some gain material benefits, most of these activities are carried out voluntarily and are regarded as hobbies, so they are unaware of the subtle element of free labour in the activities they engage in. The study supports the perspective of French cultural sociologists that the cultural industry is ambivalent, contested, and open to bottom-up innovation (grassroots creativity). Recommendations for further research could use a critical paradigm and specifically examine fans at the worker level, to better align with theories in the cultural industries.
