Abstract

Chicken nuggets are known as a nutritious processed meat food ingredient and are widely available in supermarkets and are very popular with consumers. Nugget is made by mixing it with various other additives, so that it raises a bit of concern about the ingredients used in terms of halal. The purpose of this study was to determine and analyze the protein profile of chicken, pork, nugget references, and nugget commercials. The method used in this study is an experimental laboratory analysis of variables using SDS-PAGE (Sodium Dodecyl Sulphate Polyacrylamide Gel Electrophoresis). The data were obtained from observing the description of protein bands, calculations were carried out using linear regression, and descriptive analysis was carried out. The results of this study showed 4 protein bands in pork that were not found in chicken meat with a molecular weight of 62.95 kDa, 41.86 kDa, 31.28 kDa and 17.46 kDa. Based on the protein fraction, the protein referred to as BM 31.28 kDa is Tropomyosin and BM 17.46 kDa is Troponin C. Nugget reference shows similarities to the protein bands found in pork, whereas nugget commercially did not show specific similarity.

Abstract

Abstract

Diabetes mellitus is frequently associated with decreased levels of high-density lipoprotein (HDL), which are prevalent cardiovascular disease risk factors. The use of synthetic drugs substantially increases the risk of atherosclerosis since they often have severe side effects, require high costs, and have poor prescription adherence. Anredera cordifolia (Ten.) Steenis, often known as the binahong plant, is a potentially effective complementary therapy for increasing HDL levels. Flavonoid compounds present in the ethanol extract of Binahong leaf have the potential to increase HDL levels. This work aims to evaluate the action of an ethanol extract from binahong leaves in raising HDL levels in rats of the Streptozotocin-induced Wistar strain (Rattus norvegicus). In this research, the Pretest-Posttest Control Group Design was used. The study involved the grouping of five Wistar strain rats (n=5) into five distinct groups: one received binahong leaf ethanol extract at concentrations of 25 mg/kg BW, 50 mg/kg BW, and 100 mg/kg BW, which served as the positive control group and received a negative control group supplemented with atorvastatin at 0.9 mg/kg BW. The CHOD-PAP method was applied to measure HDL levels. SPSS software was used to run the normality test, Wilcoxon test, one-way ANOVA test, and paired sample t-test. No statistically significant difference in HDL levels was found between treatment groups. The 50 mg/kg BW binahong leaf extract group had significantly higher HDL levels (p-value 0.05). As a result, the ethanol extract obtained from binahong leaves presumably raises HDL levels in streptozotocin-induced Wistar rats.

Abstract

Sidr leaf extract (Ziziphus mauritiana Lam.) is effective against hypercholesterolemia by blocking the HMG-CoA reductase. This study seeks to identify the characteristics of tablets formulated from the ethanol extract of Sidr leaf and their efficacy in lowering total blood cholesterol levels. The tablets were produced using the wet granulation method and processed into three formulations, F1, F2, and F3, with differing dosages of 100, 150, and 250 mg, along with placebo. The granules produced were evaluated for their physical characteristics. The tablets were evaluated for their physical characteristics and tested for effectiveness in lowering cholesterol levels. The efficacy of tablet-form sidr leaf ethanol extract was assessed by analyzing cholesterol levels in mouse serum samples compared to simvastatin. The data were statistically analyzed using one-way ANOVA and post-hoc Tukey HSD test. In the disintegration time test, F1 and F2 tablets satisfied the criteria. However, F3 exceeded the limit of 60 minutes. Among the three tablet doses, the F2 tablet (150 mg) demonstrated superior efficacy in lowering total cholesterol levels relative to the F1 and F3 tablets. Consequently, tablets containing Sidr leaf extract demonstrate potential for hypercholesterolemia management at an effective dosage of 150 mg, warranting further investigation through clinical trials.
