Abstract

Permasalahan gizi yang sering pada remaja adalah anemia. Dampak dari anemia gizi pada remaja putri diantaranya prestasi belajar menurun karena daya konsentrasi belajar menurun. Angka kejadian anemia di Kabupaten Sukoharjo didapatkan anemia pada usia sekolah sebesar 26,5% menurut data Dinkes Provinsi Jateng 2014 dan meningkat menjadi 51,36 % pada 2018. Salah satu faktor penyebab terjadinya anemia adalah faktor pengetahuan. Penanganan permasalahan anemia pada remaja adalah pemberian edukasi gizi secara benar sehingga dapat meningkatkan pengetahuan. Tujuan dari pengabdian ini adalah meningkatkan pengetahuan tentang anemia pada remaja putri di Sukoharjo.  Metode yang digunakan pada pengabdian ini adalah penyuluhan melalui media daring (zoom meeting). Mitra yang terlibat antara lain, remaja putri tingkat SMP dan SMA di wilayah Sukoharjo sebanyak 112 orang. Materi yang diberikan berkaitan dengan trend kejadian anemia pada remaja putri, diet, factor risiko dan dampak/ akibat anemia serta penanggulangan anemia pada remaja putri yang telah dilakukan Dinkes Kabupaten Sukoharjo. Hasil kegiatan pengabdian ini memberikan kontribusi terhadap pengetahuan remaja putri. Remaja putri mendapatkan nilai yang baik pada dampak anemia 96%, memahami cara konsumsi tablet tambah darah 96%, memahami zat gizi penyebab anemia 86% dan memahami mengenai porsi isi piringku 73%.  Tingkat pengetahuan tentang anemia ini diharapkan dapat meningkatkan sikap dan perilaku remaja putri tentang anemia gizi. Remaja putri diharapkan dapat menerapkan pola makan gizi seimbang dalam konsumsi makanan sehari-hari sehinggan dapat meningkatkan kadar hemoglobin remaja putri.

Abstract

Ikan tongkol (Euthynnus Affinis) selain kaya protein, juga sumber asam lemak omega-3 rantai panjang yang berperan dalam modulasi respon inflamasi, seperti pada pasien yang membutuhkan makanan enteral. Pengabdian ini merupakan tindak lanjut dari hasil penelitian kami dalam rangka meningkatkan nilai gizi makanan enteral standar (Modisco) yang biasa digunakan di rumah sakit di Indonesia dengan substitusi ikan tongkol (Ensikol). Pengabdian dilaksanakan dalam bentuk webinar sosialisasi Ensikol yang dilaksanakan dalam 3 tahap yaitu sosialisasi kegiatan, pelaksanaan webinar dan evaluasi. Webinar diikuti oleh 108 ahli gizi alumni Prodi Ilmu Gizi UMS yang telah bekerja di berbagai instansi seperti rumah sakit, puskesmas, dll yang telah menerapkan enteral di tempat kerja masing-masing. Materi webinar disampaikan oleh 3 narasumber yang masing-masing membahas tentang peran enteral sebagai dukungan gizi pasien, potensi pengambangan enteral dari pangan lokal dan jaminan kehalalannya, serta hasil riset Ensikol. Hasil evaluasi menunjukkan antusias peserta dalam sesi tanya jawab cukup baik dan terdapat peningkatan nilai rerata (minimun; maximum) post-test=82,6 (40;100) dibandingkan nilai pre-test=53,8 (13;100).

Abstract

Low level of mothers’ knowledge on food and nutritional status has been reported to contribute the high prevalence of malnutrition of children aged 3-5 years in Kopen Village, District Teras Boyolali. The aim of this community service was to educate mothers about a balanced nutrition. Twenty-four mothers who have children aged 3-5 years were participated in this program. Each mother followed a half day nutritional education presented in 2 sections which were interactive discussion using power point and cooking demonstration. Before and after jointed the class, each mother completed a questionnaire consisted of 12 items questions about nutritional status and a balanced nutrition. The average (minimum, maximum) knowledge score before and after the program were 8.4 (5.0, 11.0) and 9.5 (7.0, 11.0) respectively. Of all participants, 70.8% showed an increase in their knowledge score following the program. The highest improvement of mothers’ knowledge score was on the statement ‘Children aged 1-3 year is a passive consumer, while 4-5 year is an active consumer’, followed by ‘Mother should not push children for eating when they are tired after playing’. While the lowest mothers’ knowledge score was on the statement ‘Fruits are not suitable for children because can cause diarrhoea’ followed by ‘Children who consume egg can suffered from allergy’ and ‘Meal cooking technique for children under 5 years is to cook the food until soft’.

Abstract

Adolescents are vulnerable to the emergence of nutritional problems, both undernutrition and overnutrition which can influence their health and school performance. However, many of them on an improper diet to overcome their nutritional issues. The purpose of this community service was to improve high school students’ knowledge on a balanced nutrition. A nutrition counseling program was designed and implemented in 86 students in class XI at the Al-Islam High School, Surakarta. Each student received an individual nutrition consultation by a nutrition student that refers to Standardized Nutrition Care Process (SNCP). The model consists of 4 steps including nutrition assessment, nutrition diagnosis, nutrition intervention and nutrition monitoring and evaluation. Students’ knowledge on the balanced nutrition were measured before and after the counselling using a validated questionnaire consisted of 10 item questions about the balanced nutrition. Average age of the total students was 15-18 years old. Nearly approximately 50% students’ knowledge on the balance nutrition improved after the counselling in all item questions of the questionnaire. The highest improvement score is the food habit statement, while the lowest is example of dietary sources. Nutrition education about sources of nutrients is guaranteed.

Abstract

Moringa leaves (Moringa oleifera) have many health benefits and have been used by the wider community to support health. The purpose of this review is to provide an overview of the acceptability of food products substituted with moringa leaves, based on studies conducted in Indonesia. Indosesia’s reference database, Garuda (Garba Rujukan Digital), was used for the eligible studies. The search terms used to obtain relevant studies were "Moringa leaf," "organoleptic," and "acceptability" published between 2016 and 2021. The inclusion criteria were full-text articles written in Indonesian or English and published in Sinta 1-4 indexed journals. This study used a completely randomized design and sensory testing in humans. Results: Nine studies qualified for this review, with a variation substitution of moringa leaf in instant noodles, jelly candy, cookies, biscuits, and pancakes. The addition of moringa leaves to the products was carried out in the form of powder, protein concentrate, flour, and puree–1,5-5% to improve the content of certain nutrients, such as protein, beta-carotene, iron, calcium, vitamin C, or overall nutrients. Untrained panelists of 15-33 were used to select consumer preferences for the products, followed by nutrient analysis to determine the increase in the content of certain nutrients by adding moringa leaves. In conclusion, the more moringa leaves were added to the food products, the lower the panelists' preference for aroma, color, texture, and taste.

Abstract

Students tend to prefer fast foods that contain high energy and fat, despite their awareness of the health issues related to this habit. However, data on the influence of pocket money on fast-food consumption among nutrition students remain limited. This study aimed to determine the relationship between pocket money for food and the frequency of fast-food consumption among nutrition students. An online survey on university students’ eating habits was conducted through Google Forms between June and July 2022 by involving 319 nutrition students at the Department of Nutrition Science, Universitas Muhammadiyah Surakarta (UMS). Data were collected using a pocket money questionnaire and a validated UMS students’ eating habits questionnaire. Most students (60.2%) received pocket money for food from their parents, averaging below IDR 35,000.00 per day. Taste (54.9%) was the primary factor in food selection, and 59.9% of students were categorized as rarely consuming fast food. There was no correlation between the pocket money for buying foods and the frequency of fast-food consumption among nutrition students at UMS (Chi-Square test; p=0.100). Future research should explore taste thresholds across different fast-food types to establish a healthy fast-food policy.

Abstract

The monitoring results of student’s hemoglobin (Hb) levels in the Tahfid Qur'an Islamic Boarding School (PPTQ) Al-Rasyid Sukoharjo showed a high prevalence of anemia at 63.64%. The intervention carried out by schools to overcome this issue is by providing iron (Fe) tablets, but there have been no nutritional education activities related to anemia. This community service aims to improve students’ knowledge regarding anemia including definition, causes, and prevention through a balanced diet. The service method was carried out through a counseling-based nutrition care process (NCP) approach which begins with pre-test activities and ends with a post-test to determine the increase in student knowledge. A total of 55 students participated in the counseling. The post-test results showed an increase in students' knowledge, from an average initial score of 6.65 to 7.65 (p=0.001).

Abstract

Promosi kesehatan untuk meningkatkan kesadaran akan pentingnya sarapan bagi orang tua membutuhkan media edukasi yang efektif dan efisien. Tujuan dari penelitian ini adalah untuk mengembangkan dan menguji validitas isi media edukasi gizi untuk meningkatkan pengetahuan orang tua dalam menyiapkan sarapan sehat. Metode Research and Development digunakan untuk mengembangkan media, dilanjutkan uji validasi oleh pakar di bidang gizi, bahasa, dan media (6 ahli). Buku yang dihasilkan dalam penelitian ini berupa buku saku cetak berisi 35 halaman berjudul ‘Sarapan Sehat untuk Anak usia 7-12 tahun’, diproduksi menggunakan kertas glossy untuk sampul dan matte untuk bagian dalam dengan ukuran 14,8 cm x 21 cm (A5), dan jenis huruf Brittany dan TT Norms Std Condensed. Nilai content validity index (CVI) oleh ahli gizi, bahasa, dan media masing-masing adalah 0,85, 1,00, dan 0,69 yang dikategorikan sangat sesuai. Buku saku yang dihasilkan dalam penelitian ini sesuai sebagai media edukasi gizi bagi orang tua dalam menyiapkan sarapan sehat untuk anak sekolah.

Abstract

Purpose: This study aims to develop nutrition education media in the form of a sugar-sweetened beverages pocketbook for elementary children and examining its validity. Methodology: The type of research used was research & development with 4 sequential steps including analysis, design, development, and evaluation its content va-lidity by 6 experts in the field of nutrition, language, and media. Results: The title of pocket book produced in this study was "sugar-sweetened bever-ages" with a size of 10.5 cm x 14.8 cm (A6) consisting of 39 pages. The font type "Glacial Indifference" with a size of 7 was used, and the booklet was printed on glossy paper with a dominant color scheme of light blue, red, yel-low, and orange. The overall average content validity indexed (CVIs) assessed by the nutrition expert, language, and media were 0.785, 1, and 0.775 which were in very suitable category. Applications/Originality/Value: It can be concluded that this pocket book media on sugar-sweetened beverag-es has met the characteristics of learning media for elementary school chil-dren.
