Abstract

Dragon fruit peel (Hylocereus polyrhizus) contains anthocyanin which can be used as a potential natural colorant. Anthocyanins can be taken through the extraction process. The extraction of anthocyanin was performed by UAE (Ultrasound Assisted Extraction) method. UAE was chosen because it can result greater extraction efficiency and shorter operating times compared to conventional method. This study aims was to determine the effects of different amplitude and extraction times on the characteristics of dragron fruit peels extract using UAE. The control used was maceration method. The operating amplitude were evaluated at two levels 65% and 95%. Ultrasonic processor of 500 W output with frequency 20 kHz, solid-solvent ratio 1: 20, 60 mesh particle size with 15 minutes, 30 minutes and 45 minutes extraction times. The solvent used was aquadest with citric acid 10%. The method used was laboratory experiments using descriptive analysis. Characteristics of dragron fruit peel extracts investigated were total yield, residual solvent content, specific gravity, total anthocyanin, pH, and colour characteristics. The results showed that the dragon fruit peel extracts with amplitude 65% and extraction time of 45 minutes was the best treatment with total yield 10.62%, residual solvent content 37.50%, spesific gravity 1.2198, total anthocyanin content 29.640 ppm, pH 2.80, respectively. Based on hue angle (23.42o) the dragon fruit peel extracts obtained was resulting in red colour. Meanwhile, control treatment revealed that total yield was 9.44%, residual solvent content was 52.67%, spesific gravity 1.0609, total anthocyanin content 24.074 ppm, pH 3.06, and hue angle 33.16 o. It proven that UAE could increase the effectiveness of anthocyanin extraction and reduce residual solvent content of dragon fruit peel extracts compared to maceration. Hence, the present study makes influences of ultrasound technique on physico-chemical characteristics during extraction.

Abstract

Technical specification of the spinner at the Pilot Plant of FTIP Unpad was needed to be reviewed through technical analysis and performance test. Experimental Design method of the research was carried out by on the spot observations, measurements, and recalculating machine main components. Results obtained from technical analysis showed that the machine required a driven power of 216 W, one single belt, a minimum shaft diameter of 16 mm, as well as a pin diameter at the main roller and at the pulley of 5,46 mm and 6 mm, respectively. It had a deflection torsion of 0,0460 a critical shaft speed of 1338 RPM, a bearing life of 3.227.817,96 hours, a frame deflection of 0,24 mm, and a frame welding load of 503,74 N. Sofar, the machine has fulfilled its technical feasibility. While the results of performance tests showed that the best taste sensation of the crackers was termed at an engine speed of 650 rpm at an actual capacity of 3.6 kg/h and at a power of 120 W, a specific spin energy of 120 kJ/kg, a spin yield of 97.38 %, an engine efficiency of 65.60 %, an engine performance index of 0.95 at a level of noissiness of 86.86 dBA. The data has fulfilled the performance requirement, but due to its vibration frequency of 21.44 mm/s – which was dangerous, improvements related to it had to be done. Keywords: technical analysis, oil spinner, performance test ABSTRAK Spesifikasi teknis mesin peniris minyak (spinner) di laboratorium Pilot Plant FTIP UNPAD perlu dikaji-ulang melalui analisis teknik dan uji kinerja. Metode analisis deskriptif dalam penelitian ini dilakukan melalui pengukuran, pengamatan dan perhitungan terhadap komponen-komponen utama mesin. Hasil analisis teknik menunjukkan bahwa untuk mengoperasikan mesin ini dibutuhkan daya penggerak 216 Watt, satu sabuk, diameter poros minimum 16 mm, defleksi puntiran 0,0460, putaran kritis poros 1338 RPM, diameter pin pada motor penggerak 5,46 mm, diameter pin pada roll utama dan diameter puli 6 mm. Sementara umur bantalan 3.227 jam, lendutan rangka 0,24 mm, dan beban las rangka 503,74 N. Secara teknis mesin ini telah memenuhi kelayakan teknis. Hasil uji kinerja mesin menunjukkan bahwa sensasi rasa kerupuk terbaik diperoleh pada kecepatan putaran motor 650 RPM dengan kapasitas aktual 3,6 kg/jam pada daya 120 Watt, energi spesifik penirisan 120 kJ/kg, rendemen penirisan 97,376 %, efisiensi mesin 65,60 %, indeks performansi mesin 0,95, dan tingkat kebisingan 86,86 dBA. Data ini telah memenuhi spesifikasi kinerjanya. Namun dengan frekuensi getaran 21,44 mm/s (berbahaya). Perbaikan teknis terkait masalah ini masih perlu dilakukan. Abstract

Rice bran is a by-product of rice milling industry, which contains considerable amount of protein, fat, carbohydrate and minerals. The aim of this study was to investigate the change of functional and physochemical properties of stabilised rice bran with microwave during storage. In this study, functional and physicochemical properties (including water and oil adsorption, emulsion capasity, foam stability and colour characteristics of rice bran obtain from heating (with microwave and without heating), packaging (with vaccum and without vaccum) and storing the rice bran for 0, 2, 4, 6, 8, 10, and 12 weeks on ambient temprature. The results showed that interaction between heating, packaging and the length of storage had affect on water adsorption, but did not have affect on oil absorption, emulsion and foam capasity of rice bran. The L and a value of rice bran was effected by the interaction between heating, packaging and the length of storage, however the b value, and Hue of rice bran was not effected. The rice bran with 3.42 ± 0.08% (g/g) which obtained from microwave heating, vaccum packaging and stored for 12 weeks had the highest amount of water adsorption. Oil adsorption capasity ranged from 6.73 ± 0.11% to 9.5 ± 0.48% for rice bran with microwave heating, vaccum packaging and 12 weeks of storage. The highest L and a value rice bran that was obtained from heating with microwave and without vaccum packaging was 76.02 ± 1.33 and 3.90 ± 0.04, respectively. The b value of rice bran ranged from 21.0 ± 0 to 22.80 ± 0.32 and Hue ranged from 80 ± 0.23 to 82.6 ± 0.37. Keywords: rice bran, microwave, packaging, storage, vaccum ABSTRAK Dedak padi merupakan hasil sampingan industri penggilingan padi, yang banyak mengandung protein, lemak, karbohidrat dan mineral. Penelitian ini bertujuan untuk mengetahui perubahan sifat fungsional dan fisikokimia dedak padi yang distabilisasi dengan gelombang mikro selama penyimpanan. Sifat fungsional dan fisikokimia dedak padi yang ditelaah meliputi daya serap air dan minyak, kapasitas emulsi, kapasitas buih dan karakteristik warna dedak padi yang diperoleh dengan pemanasan gelombang mikro dan tanpa pemanasan, dikemas vakum dan tanpa vakum, dan disimpan selama 0, 2, 4, 6, 8, 10 dan 12 minggu pada suhu kamar. Hasil penelitian ini menunjukkan bahwa interaksi antara pemanasan, pengemasan dan lama penyimpanan berpengaruh terhadap daya serap air, namun tidak berpengaruh terhadap daya serap minyak, kapasitas emulsi dan kapasitas buih dedak padi. Nilai L dan a dedak padi dipengaruhi oleh interaksi antara pemanasan, pengemasan dan lama penyimpanan, namun nilai b dan Hue dedak padi tidak terpengaruh. Daya serap air dedak padi sebesar 3,42 ± 0,08% (g/g) yang diperoleh dari pemanasan gelombang mikro dan pengemasan vakum serta disimpan selama 12 minggu merupakan yang tertinggi. Daya serap minyak dedak padi berkisar antara 6,73 ± 0,11% sampai dengan 9,5 ± 0,48%. Nilai L dan a tertinggi dedak padi diperoleh dari perlakuan pemanasan dengan gelombang mikro dan pengemasan tanpa vakum, yaitu berturut-turut sebesar 76,02 ± 1,33 sampai dengan 3,90 ± 0,04. Nilai b dedak padi yang dipanaskan dengan gelombang mikro dengan pengemasan vakum dan tanpa vakum berkisar antara 21,0 ± 0 hingga 22,80 ± 0,32, sedangkan Hue dedak padi berkisar antara 80 ± 0,23 hingga 82,6 ± 0,37. Abstract

The purpose of this research was to determined the shelf life of packaged palm sugar at various temperatures and relative humidity (RH) storage using Arrhenius model based on changes in water content. The palm sugars were packed with 0.675 mm polyethylene packaging and stored at 15, 25, 30 and 35°C at RH of 77% and 98%. Measured parameters included the determination of critical parameters of palm sugar, initial moisture content and critical moisture content of palm sugar, changes in moisture content during storage. The Arrhenius model approach was used in this study to predict the shelf life period of palm sugar. The results showed that the texture was one of palm sugar critical parameters. Initial moisture content and critical moisture content of palm sugar were obtained at 1.51% (db) and 6.80% (db), respectively. Increase in moisture content of palm sugar occurred in various temperature variations and RH storage. The higher the storage temperature, the higher the moisture content of the palm sugar, which was characterized by the greater slope of moisture content relationship graph with respect to storage period at both RH 77% and 98%. The longest duration of palm sugar occurredat 15°C, RH 77%; the shortest duration occurred at 35°C, RH 98%. Keywords: palm sugar, packaging, relative humidity, temperature, shelf life ABSTRAK Tujuan dari penelitian in adalah menentukan umur simpan gula semut dalam kemasan pada berbagai suhu dan RH penyimpanan mengunakan model Arrhenius berdasarkan perubahan kadar air. Gula semut dikemas menggunakan kemasan polietilen ketabalan 0,675 mm dan disimpan pada suhu 15, 25, 30 dan 35oC pada RH 77% dan 98%. Parameter yang diukur antara lain penetuan parameter kritis gula semut, kadar air awal dan kadar air kritis gula semut, perubahan kadar air selama penyimpanan. Pendekatan model Arrhenius digunakan dalam penelitan ini untuk memprediksi umur simpan gula semut. Hasil menunjukkan bahwa tekstur merupakan salah satu parameter kritis gula semut. Kadar air awal dan kadar air kritis gula semut diperoleh masing-masing 1,51 % (db) dan 6,80% (db). Terjadi peningkatan kadar air gula semut pada berbagai variasi suhu dan RH penyimpanan. Semakin tinggi suhu penyimpanan maka kenaiakn kadar air gula semut semakin besar yang ditandai dengan semakin besar kemiringan grafik hubungan kadar air terhadap waktu penyimpanan baik pada RH 77% dan 98%. Umur simpan gula semut paling lama terjadi pada suhu 15oC RH 77% dan umur simpan gula semut yang paling pendek terjadi pada suhu 35oC RH 98%. Abstract

Mortari emitter of sawdust (SG) can solve problem faced by farmers in dryland on irrigating their land. Aim of this research was to design an emitter by determining its mixture ratio and thickness. This research used experimental method by conducting experiment in laboratory. Observed parameters to determine water discharge were flow velocity, hydraulic conductivity value, coefficient of variation, and coefficient of uniformity. Ratio of cement, sand and sawdust to made sawdust (SG) mortari emitter were varied, i.e. P1 (1:2:2); P2 (2:1:3); P3 (2:4:4); P4 (2:2:2); and P5 (2:3:1). Result showed that the hydraulic conductivity could be classified as very low since K < 0.0036 cm/hour. The water discharge, flow velocity, and coefficient of uniformity were decreased in every reservoir elevation. Sawdust (SG) mortar emitter of P5 had the highest seeping ability and P3 had the lowest. The coefficient of uniformity (CU) value was 78,74%-80.64%. The use of Sawdust (SG) mortar emitter can be adjusted to the water discharge required by any plant type. The P3 emitter is suitable for plant which requires low water discharge and the P5 emitter is suitable for the high one. Keywords: water discharge, SG mortar emitter, hydraulic conductivity ABSTRAK Emiter mortari serbuk gergaji (SG) dapat memecahkan masalah yang dihadapi para petani lahan kering dalam mengairi lahannya. Tujuan dilakukan penelitian ini adalah dapat merancang sebuah emiter dengan menentukan komposisi dan ketebalan emiter. Metode yang digunakan dalam penelitian ini adalah metode eksperimental dengan percobaan laboratorium. Parameter untuk menjawab tujuan penelitian adalah mencari nilai debit aliran yang dapat dihasilkan emiter mortari SG dengan menentukan kecepatan aliran, nilai konduktivitas hidrolik, koefisien variasi dan koefisien keseragaman. Emiter mortari SG dalam pengujian dilakukan dengan mencampurkan semen, pasir, dan serbuk gergaji masing-masing dengan 5 perbandingan, yaitu P1 (1:2:2); P2 (2:1:3); P3 (2:4:4); P4 (2:2:2); dan P5 (2:3:1). Nilai konduktivitas hidrolik didapatkan hasil pengkelasan dalam kategori sangat rendah karena memiliki nilai K<0,0036 cm/jam. Debit aliran, kecepatan aliran, dan koefisien keseragaman mengalami penurunan setiap ketinggian reservoir. Dimana emiter mortari SG dengan perlakuan P5 memiliki kemampuan merembeskan air dengan nilai tertinggi dan P3 pada emiter dengan kemampuan terendah. Nilai koefisien keseragaman pada emiter mortari SG terdapat keragaman dengan nilai CU sebesar 78,74%-80,64 %. Penggunaan emiter mortari SG dapat disesuaikan dengan jumlah kebutuhan debit air yang dibutuhkan oleh jenis tanaman. Emiter P3 baik digunakan pada tanaman dengan debit air rendah dan emiter P5 baik untuk tanaman dengan debit air tinggi. Kata kunci: debit aliran, emiter mortari SG, konduktivitas hidrolik

Abstract

Rice mill has a very important role, this role is reflected in the large number of rice mills that spread almost evenly throughout the rice production centers in Indonesia. The large number of rice mills scattered in some areas does not guarantee the quality of rice produced will be better. One of the areas that have used rice milling technology is Sumbawa Barat Regency. The grinding machines used in this area are mobile. Therefore, this study aims to analyze the effect of rice varieties used on the quality of rice from milling, to determine the quality of rice produced, and to determine the yield of the milling. This research was conducted by grinding Ciherang varieties, Cigelis and Infari 32 using mobile grinding machine each three replications. The result of this research showed that rice varieties had significant effect on yield and losses of milling. Infari 32 varieties yield average yield of 69.41%, followed by Cigelis varieties 62.75% and Ciherang 59.36%. Infari 32 varieties also resulted in the lowest shrinkage of 1.46% compared to Ciherang (3.48%) and Cigelis (2.95%). Keyword: Grinding machine mobile, quality of rice, rice, yield milled ABSTRAK Penggilingan padi memiliki peran yang sangat penting, peranan ini tercermin dari besarnya jumlah penggilingan padi yang menyebar hampir merata di seluruh daerah sentra produksi padi di Indonesia. Besarnya jumlah penggilingan padi yang tersebar di sejumlah daerah tidak menjamin kualitas beras yang dihasilkan akan lebih baik. Salah satu daerah yang telah menggunakan teknologi penggilingan padi adalah Kabupaten Sumbawa Barat. Mesin penggiling yang digunakan di daerah ini bersifat berpindah-pindah (mobile). Maka dari itu, penelitian ini bertujuan untuk menganalisis pengaruh dari varietas padi yang digunakan terhadap mutu beras hasil penggilingan, menentukan kualitas/mutu beras yang dihasilkan, dan menentukan rendemen dari hasil penggilingan. Penelitian ini dilakukan dengan menggiling varietas padi Ciherang, Cigelis dan Infari 32 menggunakan mesin penggiling mobile masing-masing tiga kali ulangan. Hasil penelitian yang diperoleh adalah varietas padi berpengaruh nyata terhadap rendemen dan susut penggilingan. Varietas Infari 32 menghasilkan rendemen tertinggi rata-rata 69.41%, disusul oleh varietas Cigelis 62.75% dan Ciherang 59.36%. Abstract

Loss of agricultural products occurs in post-harvest handling process. The threshing process is part of the rice post-harvest that can be done with various techniques and various types of rice thresher machine. Multipurpose thresher is one type of thresher that can thresh the grains such as rice and soybeans. The aim of Performance efficiency test is to determine the performance efficiency of the thresher. The parameters measured were threshing capacity, threshing efficiency, and thresher quality. Testing is done by using the engine speed of 2500 rpm and 3000 rpm, with the tested varieties of rice varieties Ciherang and Bestari. Test results show that the efficiency of Ciherang varieties cutting is better if using the speed of rotation 2500 rpm engine. If using a speed of 3000 rpm occurs losses results. As for Bestari varieties more efficient if using a speed of 3000 rpm. The higher the speed of rotation of the machine then the level of grain damage will also increase Keywords: rice, threshing, varieties, multipurpose thresher ABSTRAK Kehilangan hasil pertanian banyak terjadi pada proses penanganan pascapanen. Proses perontokan merupakan bagian dari pascapanen padi yang dapat dilakukan dengan berbagai teknik dan berbagai jenis mesin perontok padi. Alat perontok multiguna termasuk salah satu jenis perontok yang dapat merontokkan biji-bijian seperti padi dan kedelai. Pengujian efisiensi kinerja alat perontok multiguna bertujuan untuk mengetahui efisiensi kinerja alat perontok. Parameter yang diukur adalah kapasitas perontokan, efisiensi perontokan, dan kualitas perontokan. Pengujian tersebut dilakukan dengan menggunakan kecepatan putaran mesin 2500 rpm dan 3000 rpm, dengan varietas padi yang diuji yaitu varietas Ciherang dan Bestari. Hasil pengujian menunjukkan bahwa efisiensi perontokan varietas Ciherang lebih baik jika menggunakan kecepatan putaran mesin 2500 rpm. Jika menggunakan kecepatan putaran mesin 3000 rpm terjadi susut hasil. Sedangkan untuk varietas Bestari lebih efisien jika menggunakan kecepatan putaran mesin 3000 rpm. Semakin tinggi kecepatan putaran mesin maka tingkat kerusakan gabah juga akan semakin meningkat. Kata kunci : padi, perontokan, varietas, rpm, perontok multiguna

Abstract

The aim of this research is to know the effectiveness of intermittent irrigation and water productivity analysis, analysis of optimum irrigation interval on plant material of mixed solids of digestat and soil mixture, analysis of optimum combination of digestat solid and soil for plant, and growth and yield analysis Pak Choi plant production. The research was conducted at Greenhouse Plastic Department of Agricultural Engineering Faculty of Agriculture, University of Lampung in November 2016 until December 2016. This research uses two factors of observation, namely Composition of Planting Media and Interval of Irrigation Time. This research used 4 mixed treatment of plant media composition, that is D0 (Digestat 0%: Soil 100%), D1 (Digestat 20%: Soil 80%), D2 (Digestat 40%: Soil 60%), and D3 (Digestat 60% : Soil 40%). Each mixture of media was done 3 repetitions, so that 12 pots were observed. The results showed that the combination of planting medium D1 (Digestat 20%: 80% soil) resulted in a high enough on pak choi of 122.7 grams, while for treatment result D0, D2 and D3 there was a less significant difference. The provision of irrigation water with intermittent irrigation does not significantly affect the growth and yield of Pak choi plant. Longer water delivery intervals still provide a good effect on the results of pak choi plant production due to the addition of solid digestat on the planting medium. The highest water use productivity was achieved by treatment D1 with an average of 774 g /m3. Keywords : Digestat, Intermittent Irrigation, Media Planting, and Pak Choi.

Abstract

In producing potato chips mechanically there are two machines that play an important role, i.e. peeler and slicer potato. As a basis in production planning, it is necessary to test the performance of the machines of both units of the machine. The performance of potato slicing machine has been done in the previous research with the slicing capacity reaching 71.160 kg/hour. This study aims to test the performance and financial feasibility of potato peelers. Performance testing of potato peeler begins with the preparation of sweet potato, sorting the shape and size, and weighing. Some parameters measured during the test process consist of: power, effective capacity, weight loss, potato cleanliness, and stripping efficiency. Some of the parameters calculated on the financial feasibility analysis include: HPP, NPV, BCR, PBP and IRR. The result showed that peeling capacity was 396,73 watt, with peeling machine capacity 90.33 kg/hour, stripping efficiency 88.32%, for 2 minute stripping happened weight reduction 11.68% from initial weight 3.06 kg, with a cleanliness level that reaches 100% for potatoes round and 90% for ovalshaped potatoes. In the production capacity of potato peeled 6382,36 kg/month, the cost of production achieved Rp 12,149/kg. When peeled potatoes are sold at market price of Rp 18,000/kg, we get NPV of Rp 1,538,996,547/year, BCR of 1.42, IRR of 33.48% and capital returns in the sixth month. Keywords: machine performance, financial feasibility, peeled potato, potato peeler, sweet potato ABSTRAK Terdapat dua mesin yang berperan penting pada produksi keripik kentang secara mekanis yaitu mesin pengupas dan mesin pengiris kentang. Sebagai dasar dalam perencanaan produksi, perlu dilakukan uji kinerja mesin kedua unit mesin tersebut. Kinerja mesin pengiris kentang telah dilakukan pada penelitian sebelumnya dengan kapasitas pengirisan yang mencapai 71,160 kg/jam. Penelitian ini bertujuan melakukan uji kinerja dan kelayakan finansial mesin pengupas kentang. Pengujian kinerja mesin pengupas kentang dimulai dengan penyiapan ubi kentang, sortasi berdasarkan bentuk dan ukuran, dan penimbangan. Beberapa parameter yang diukur selama proses pengujian terdiri atas : daya, kapasitas efektif, kehilangan bobot, tingkat kebersihan kentang, dan efesiensi pengupasan. Beberapa parameter yang dihitung pada analisis kelayakan finansial antara lain : HPP, NPV, BCR, PBP dan IRR. Hasil penelitian menunjukkan besarnya daya pengupasan sebesar 396,73 watt, dengan kapasitas mesin pengupas sebesar 90,33 kg/jam, efesiensi pengupasan 88,32%, selama 2 menit pengupasan terjadi pengurangan bobot sebesar 11,68 % dari berat awal 3,06 kg, dengan tingkat kebersihan yang mencapai 100% untuk kentang berbentuk bulat dan 90% untuk kentang berbentuk lonjong. Pada kapasitas produksi kentang kupas 6382,36 kg/bulan, harga pokok produksi sebesar Rp. 12.149 /kg. Bila kentang kupas dijual dengan harga pasar Rp.18.000/kg maka didapatkan NPV sebesar Rp.1.538.996.547/tahun, BCR sebesar 1,42, IRR sebesar 33,48% dan modal akan kembali pada bulan keenam. Abstract

ABSTRACT The purpose of this research was to determine the best combination between the types of package with shelf-life treatments that can be used to maintain some qualities of instant seasoning plecingan based on the quality standards of seasoning or powdered spices. The research method used was experimental method with Randomized Block Design (RBD) single factor (the combination between the types of package and shelf-life treatments) with 9 treatments and 3 replications. The observed parameters were chemical parameters (moisture content and pH) and organoleptic parameters (hedonic test of flavor and odor) and also fungus growth visual test. The data were analyzed by analysis of variance α=5%and analyzed further by Honestly Significant Difference (HSD) test α=5% if significant differences occurred. The results of the research showed that the combination between the types of package and shelf-life treatments gave significant effect on moisture content, pH and flavor by hedonic test, but the effect is non-significant on the hedonic test of odor of instant plecingan seasoning. The results showed that the use of aluminum foilpackaging can maintain the quality of instant seasoning plecingan for 10 days of storage with moisture content 8.84% w/w, pH 5.13, the flavor and odor rather preferred by the panelists. Keywords: seasoned plecingan, packaging, shelf-life ABSTRAK Tujuan dari penelitian ini adalah untuk mengetahui kombinasi jenis kemasan dengan masa simpan terbaik yang dapat digunakan untuk mempertahankan mutu bumbu plecingan instan ditinjau dari standar mutu bumbu atau bubuk rempah-rempah. Metode penelitian yang digunakan dalam penelitian ini adalah metode eksperimental dengan rancangan percobaan Rancangan Acak Kelompok (RAK) faktor tunggal (kombinasi jenis kemasan dan masa simpan) dengan 9 perlakuan dan 3 kali ulangan. Parameter yang diamati meliputi parameter kimia (kadar air, dan pH) dan parameter organoleptik (kesukaan rasa dan aroma) serta uji visual pertumbuhan kapang. Data hasil pengamatan di analisis menggunakan analisis keragaman (ANOVA) pada taraf nyata 5%. Data yang menunjukkan pengaruh yang berbeda nyata diuji lanjut menggunakan uji lanjut Beda Nyata Jujur (BNJ) taraf 5%. Hasil penelitian menunjukkan bahwa kombinasi jenis kemasan dan masa simpan memberikan pengaruh yang berbeda nyata terhadap parameter kimia kadar air, pH dan kesukaan rasa bumbu plecingan instan, tetapi memberikan pengaruh yang tidak berbeda nyata pada kesukaan aroma. Berdasarkan hasil penelitian diketahui bahwa penggunaan kemasan aluminium foil mampu mempertahankan mutu bumbu plecingan instan selama penyimpanan 10 hari dengan kadar air sebesar 8,84% b/b, pH 5,13 dan rasa dan aroma yang agak disukai oleh panelis.
