Abstract

The prevalence of stunting in children under five years of age in Indonesia, and Aceh in particular, is still very high. This condition affects the quality of human resources and future economic growth. This study examined the determinants of stunting among children under five years of age 24-59 months in West Aceh District, Aceh Province, Indonesia. The research method was a cross-sectional study design, using secondary data from the EPPGBM and PIS-PK data from the Health Center in 2020. The sample comprised 386 families with children under five. Data were collected through documentation studies from PIS-PK data and stunting data from the E-PPGBM data. Family data matching was performed using the National Identity Number (NIN). Statistical analysis was performed using a Multiple Logistic Regression test with 95% confidence interval (CI). The results showed a significant association between exclusive breastfeeding (OR= 2,81; p= 0,010), latrine use (OR=1,73; p= 0,043), and smoking (OR= 1,62; p= 0,022) with the prevalence of stunting. Furthermore, exclusive breastfeeding was a determining factor for the incidence of stunting in toddlers (OR= 2,36; p= 0,010).  In conclusion, exclusive breastfeeding practices are a determinant factor of stunting in children under five in West Aceh, so structured efforts need to be made to increase exclusive breastfeeding coverage by strengthening nutrition counseling and breastfeeding preparation for pregnant women up to two years.

Abstract

Improper processing of soymilk, such as soybean raw materials, use of well water, and use of cooking vessels, produces soymilk that does not meet SNI standards. These conditions can contaminate soymilk with harmful metals. The purpose of this study was to measure the nutritional quality and metal content of soymilk produced using aluminum and stainless steel cooking vessels. The research was descriptive and was conducted in July 2022. Analytical tests were carried out by comparing the nutritional content in the form of total protein, fat, lactose, and solid non-fat (SNF), and analyzing the heavy metal content. The results showed that the contents of Pb, Cu, and Hg in soy milk processed with stainless steel were lower than those of aluminum, from 11,494 ppm to 2,706 ppm, 114,612 ppm to 10,211 ppm, and 0,372 ppm to 0,012 ppm, respectively.  The contents of Zn and As in soymilk with stainless steel were higher than those treated with aluminum, from 884,585 ppm to 73,616 ppm and from 0,107 ppm to 0,079 ppm, respectively. Cooking water also contributed 0,055; 0,044; 0,028, and 0,156 ppm to the heavy metal content of Pb, Cu, Zn, Hg, and As, respectively. In conclusion, the use of stainless steel in soymilk processing resulted in better nutritional quality and lower heavy metal content compared to aluminum.

Abstract

Utilizing Android-based Information Communication Technology (ICT) is pivotal in the healthcare sector for monitoring the growth, development, and assessment of nutritional status and ensuring enhanced data quality for toddlers. The adherence to ISO/IEC 25010 standards is imperative in developing high-quality applications like "PSG Balita." This study aimed to assess the impact of the "PSG Balita" Android application, which complies with the ISO/IEC 25010 standard, on the accuracy of nutritional status data for toddlers. In 2021, a quasi-experimental design research was conducted in Banda Aceh City, with the participation of 30 nutritionists from health facilities. The data were gathered by observations and interviews, utilizing a questionnaire that assessed the aspects of timeliness, completeness, accuracy, and usefulness. The intervention involved a one-month training session utilizing the "PSG Balita" software, which is consistent with the ISO/IEC 25010 standard. Data analysis utilizing repeated-measures ANOVA indicated that the "PSG Balita" application conformed to IEC standards, demonstrating a data quality score of 82,5. The intervention greatly improved the quality of data on the nutritional condition of children under the age of five (p < 0,05). In conclusion, the "PSG Balita" application, which is based on Android and adheres to ISO/IEC 25010 standards, can improve the precision of nutritional status data for toddlers, assessed in terms of timeliness, completeness, accuracy, and usefulness.Keywords:

Abstract

Emergency food is safe and highly nutritious processed food for disaster victims. It is hoped that the various food product assistants provided after the disaster will be able to meet the needs, but some of the food cannot be stored for a long time. This study aimed to determine the potential of irradiated Asam Keumamah as an alternative to emergency food. The experimental study used a completely randomized design to irradiate five doses of Asam Keumamah stored for 30 days. Asam Keumamah was processed in the Food Technology Laboratory, Nutrition Department of the Aceh Polytechnic, in 2022. Data were collected through laboratory examinations including irradiation, total bacteria, and proximate tests. Statistical analysis was performed using ANOVA, Kruskal-Wallis, and Duncan’s tests at 95% CI. The results showed that an irradiation dose of 0-20 kGy had no significant effect on the total bacteria and approximate levels of irradiated Asam Keumamah (p>0,05). Irradiation doses of 30, 40, and 50 kGy significantly affected the fat and carbohydrate levels in Asam Keumamah (p< 0,05). In conclusion, irradiated and vacuumed Asam Keumamah lasts longer; therefore, it can be recommended as an alternative post-disaster emergency food source.

Abstract

The COVID-19 pandemic exacerbated the food security dimension, from the macro to micro level.  Households dealt with the crisis by implementing coping strategies led by mothers.  Consequently, these impacted their health and nutrition status, notably during pregnancy.  This unfavorable condition was due to their primary role in maintaining household food security.  This study aimed to explore the perceptions of pregnant mothers of food security and insecurity about their household coping strategies.  This study used phenomenology with purposive sampling, with 33 informants (21 pregnant mothers and 12 other informants) in Serang district from May to October 2022.  In-depth interviews (IDIs) were used during data collection, and the transcripts were verbatim.  Respectively, the data was analyzed using thematic coding with N-Vivo 12 Plus and Microsoft Excel.  Result, twenty-one pregnant mothers from food-secure (n=7) and insecure (n=14) households revealed adopting the food-focused coping strategies: rationing, scratching, seeking, and sharing.  Non-focused on food: sought new job and side hustle, sold assets, borrowed money.  Differentiation was the barter which the food insecure family solely adopted.  Conclusion, both food-secure and insecure households implemented 2 types of coping strategies, while the severe coping strategies were implemented by food insecure pregnant mothers.

Abstract

Vitamin D is an unstable compound to light, heat, and certain chemicals, so it is easily degraded under various conditions. Therefore, instability is achieved through the encapsulation method using complex protein carrier compounds with fatty acids known as liprotide. This study aims to determine vitamin D3. Method, the determination of vitamin D3 was analyzed, including the determination of vitamin D3 standard eluents, calibration curve, and determining the retention time of vitamin D3 encapsulated in liprotide using HPLC (High-Performance Liquid Chromatography). Morphology of vitamin D3 encapsulated in liprotide using SEM (Scanning Electron Microscopy). The results showed that the standard vitamin D3 HPLC analysis using acetonitrile: methanol and acetonitrile: aquabidest obtained two peaks. Butanol: n-hexane eluent obtained one peak with a retention time of 2,170 minutes. The results of the standard calibration curve for vitamin D3 at a linearity value of R2 = 0,9997 and f(x) = 14,928x-117,930. The same retention time was obtained for vitamin D3 encapsulated in liprotide. Conclusion, an enlargement of the cubic structure, which occurred due to the encapsulation of vitamin D3 by the liprotide-forming micelles.

Abstract

Antioxidants in ginger (Zingiber officinale) and sappan wood play roles in health benefits, including dilating blood vessels and inhibiting cancer cells. The study analyzes the differences in organoleptic characteristics and antioxidant activity of powdered ginger and sappan wood, comparing Crystallization (MK) and conventional drying (MP) methods. In the crystallization method, 100 grams of Emprit Ginger and 5 grams of sappan wood sticks were blended, followed by adding 500 ml of water and 50 grams of sugar, then stirred in a hot pan for 2 hours until crystals formed. In the conventional drying method, an equal amount of ginger was dried for 5 days, and then, together with sappan wood and sugar, it was ground using a food processor. The data from the organoleptic test were normal, and the T-test result showed that powdered drinks from the drying method significantly exhibited better hedonic quality (p<0,05). For every 100 grams, this powder contains 386 kcal of energy, 1,62% ash content, 2,18% moisture content, 91,88% carbohydrates, 1,0% fat, 2,32% protein, and 2040,86 mg/kg of antioxidant activity (IC50 method). In conclusion, different methods affect the characteristics of ginger powder, which has implications for product development and medicinal uses.Keywords:

Abstract

The nutritional requirements of pregnant women increase with the gestational age. A low nutritional status is poor for both mothers and infants. Infant birth weight is influenced by nutritional intake during pregnancy. Therefore, multiple micronutrients (MMN) are needed for mothers during pregnancy to prevent low birth weight. This study aimed to determine the effect of MMN on infant birth weight at the Asian Waluyo Jati Clinic. The research method used a quasi-experimental design, with a posttest-only control group design involving 50 pregnant women (25 intervention and 25 control groups). This study was conducted at the Asih Waluyo Jati Clinic, Yogyakarta, in 2022. The intervention group received MMN supplementation starting in the 2nd trimester and standardized prenatal care, whereas the control group received standardized prenatal care throughout pregnancy. Both groups were monitored during the 2nd trimester of pregnancy until delivery. Data were analyzed using the Mann–Whitney U test. The results showed a difference in the mean birth weight of the infants in both groups (1,64 grams). MMN supplementation in the intervention group and standard pregnancy care effectively increased the infants' birth weight by 1,64 grams (p= 0,000). In conclusion, MMN supplementation increased the average birth weight of infants.

Abstract

Anemia remains a nutritional problem in Indonesia, where more than 50% of the incidence is due to iron deficiency caused by low quality and quantity of food consumed and iron intake sources. Low iron intake did not affect iron adequacy. This study aimed to analyze the factors associated with iron adequacy among adolescent girls in Indonesia. This study used a cross-sectional design and secondary data from the National Survey of Food Consumption (NSFC) in Indonesia in 2014. The number of participants was 11.766 adolescent girls aged 10-18 years. Data were collected using the NSFC 2014 questionnaire and the food consumption collection method using a food recall 24 hour. Statistical analysis was performed using the chi-squared test and Logistic Regression to identify the factors influencing iron adequacy. The results showed that the iron intake of adolescent girls in Indonesia was 10 mg/day, with an adequate iron level of 42,9%. Logistic regression showed that the most influential factors (p<0,05) were age, place of residence, economic status, and consumption of cereals, vegetables, nuts, fruits, and animal foods. In conclusion, the factors associated with the iron adequacy level of adolescent girls in Indonesia are age, region of residence, economic status, and consumption of cereals, vegetables, nuts, fruits, and animal foods.

Abstract

There are variations in the prevalence of stunting cases at the village level in Kerinci Regency. There have been no studies on the spatial distribution and risk factors of stunting cases in Kerinci Regency. This study aimed to determine the risk factors and spatial distribution of stunting. This research was conducted in Kerinci Regency from March to November 2020 using a case-control design and a total sampling technique. The study participants consisted of 223 patients and 223 controls. Children who experienced stunting were recorded at the health office. The controls were non-stunted children with an age range (±3 months) and sex who came from the same village as the cases—data collection through interview techniques and observation of the Mother and Child Health book. The chi-square test, logistic regression, and spatial distribution analysis were performed using the open-source software SatScan 10,1 and ArGIS 3,30. The analysis shows stunting cases clustered in Kayu Aro, Gunung Tujuh, and Keliling Danau Districts. A low father's education level (aOR=1,76), father's height <161 cm (aOR=1,52), mother's height <150 cm (aOR=1,83), and incomplete immunization status (aOR=1,6) were risk factors for stunting. In conclusion, cases of stunting clustered in three sub-districts, and the leading risk factor was the mother's height. The health office should make specific intervention efforts before and during pregnancy and focus on cluster-indicated areas.
