Abstract

Antioxidants are important for the prevention of oxidative stress, which can cause various degenerative diseases. Bangles contain bioactive components with antioxidant potential. Processing affects the active compounds in food, including angle. This study aimed to determine the effects of the blanching and extraction methods on the antioxidant activity of Bangle. This study focused on three factors: blanching treatment extraction technique, time, and type of extraction solvent. Analyses of antioxidants using the DPPH and ABTS methods were conducted in triplicate for each sample.  Data were analyzed using ANOVA. The results of this study show that the method, time, and type of solvent significantly affect the antioxidant activity of bangle rhizome extracts. The best treatment for antioxidant activity of Bangle rhizome was blanching treatment by adding 0,05% citric acid solution in the sonication extraction method for 30 min with ethanol as the solvent. The IC50 value on the DPPH method was 20,61±0,76 mg/g, and the percent free radical scavenging value was 87,11±3,04%. The IC50 value on the ABTS method is 20,79±0,29 mg/g and a percent free radical scavenging activity value of 92,75±0,13%. This study provides key insights for choosing effective extraction methods to increase antioxidant activity in natural materials, such as Bangle rhizomes.

Abstract

Dysmenorrhea has an impact on the disruption of daily activities and a decrease in physical conditions such as fatigue and lethargy, decreased appetite, and decreased sleep quality. More than 50% of women worldwide experience dysmenorrhea. The prevalence of dysmenorrhea in Indonesia is 64,25%. This study aimed to determine factors associated with the incidence of dysmenorrhea in adolescent girls. The study used a cross-sectional design and was conducted from May to June 2023. Using a random sampling technique, the sample consisted of 63 students at State Senior High School 11, South Tangerang. Data were collected by completing questionnaires on dysmenorrhea, junk food consumption, and sleep quality. Interviews were conducted for calcium intake data using a 2 x 24-hour food recall and measuring height and weight. Data analysis using chi-square tests. Results: There was a relationship between junk food consumption (p=0,022), sleep quality (p=0,035), calcium intake (p=0,030) and the incidence of dysmenorrhea. Meanwhile, there was no significant relationship between percent body fat (p=1,000), nutritional status (p=0,638) and the incidence of dysmenorrhea. In conclusion, junk food consumption, sleep quality, and calcium intake were associated with the incidence of dysmenorrhea. In contrast, body fat percentage and nutritional status were not associated with the incidence of dysmenorrhea in adolescent girls.

Abstract

Hypertension is a non-communicable disease that affects approximately 22% of the global population, as reported by the World Health Organization (WHO) in 2019. It also affects adults and the elderly (63,49%) more than the younger population (13,22%). This study aimed to determine the differences in the knowledge and food habits of patients after counseling using nutrition and hypertension flipcharts. The research used a pre-experimental design with a one-group pretest-posttest. The research was conducted at the Tanjung Priok Public Health Center in 2022 with 30 outpatients with hypertension as respondents. Respondents who met the inclusion criteria were selected through accidental sampling. Knowledge levels were collected using questionnaires, and food habits were assessed using a food frequency questionnaire (FFQ). Statistical analysis of the data was performed using a paired t-test (80% CI). The results showed a significant increase in the knowledge scores of patients, from 76,67 to 93,00 after counseling using nutrition and hypertension flipcharts (p <0,001). After counseling, descriptive analysis showed a reduction in the number of respondents who frequently consumed high-sodium and high-saturated foods. It was concluded that the knowledge levels and food habits of patients with hypertension can improve after counseling using nutrition and hypertension charts.

Abstract

Hypercholesterolemia in adults over 18 years of age poses a significant health risk. Reproductive-age women are susceptible to this condition owing to unhealthy dietary habits, notably consumption of fast food. This study aimed to investigate the potential of edamame and almonds to lower blood cholesterol levels. This study employed a pre-test post-test group design following a 6-week intervention. Twenty-eight participants were recruited through consecutive sampling conducted in Purwokerto between March and August of 2022. Statistical analyses were performed using independent and paired t-tests. Results indicated no significant difference in the effectiveness of edamame and almonds in reducing total cholesterol levels among reproductive-age women (p= 0,534). After consumption of 48,8 g/d edamame for 6 weeks, a substantial decrease in total cholesterol levels was observed (p= 0,004), with a mean reduction of 17,79 ± 19,11 mg/dL. Conversely, the intervention with 42,5 g/d of almonds for 6 weeks did not significantly change total cholesterol levels (p= 0,193), yielding a mean reduction of 11,57 ± 31,51 mg/dL. In conclusion, the consumption of edamame for six weeks is effective in lowering total cholesterol levels among women of reproductive age.

Abstract

Food security is a global issue that has received serious attention from various countries, including Indonesia. Indonesia still has problems related to gender inequality, which is a separate cause of food insecurity. This study aimed to analyze the mapping related to the food security of Jember farmers and its relation to household decision-making and the division of tasks related to food management in farming households. The study used a survey method by taking 251 samples of farming families from the working area of the Health Center in the Jember District. This study was conducted from May to July 2023. Data were collected using questionnaires and supported by qualitative data through in-depth interviews. Bivariate data analysis was performed using Spearman’s rho test. The results showed a correlation between gender identity and food security (p= 0,000), and there was a positive relationship pattern: the higher the gender role given, the more food security will increase in July (r= 0,504). In conclusion, there is a positive relationship between gender roles and food security; the higher the gender roles, the higher the farmers' food security.

Abstract

Broccoli is abundant in fiber, vitamins, and minerals and is useful as a complement to main dishes. However, the use of broccoli during baking is still limited. Therefore, an experiment was conducted to explore the use of broccoli as a substitute in the recipe of a traditional cake, Kue Lumpur, as a traditional Indonesian snack for various events. This study aimed to determine how to make green broccoli puree, the process of making Kue Lumpur with green broccoli puree substitution, the response of panelists, and the nutritional content of Kue Lumpur from green broccoli puree substitution. The experimental design research was conducted at Makassar State University from December 2021 to February 2022. The participants were 16 trained panelists. Data collection was carried out using documentation and questionnaires (Scoresheet). The process of making broccoli puree involves separation, blanching, steaming, and mashing in four formulations: F1 (10%), F2 (20%), F3 (30%), and F4 (40%). Data were analyzed using ANOVA and Duncan's t-test. The organoleptic Kue Lumpur with green broccoli puree substitution had significant acceptability (p<0,05) in formula F2 (20% green broccoli puree and 80% potato) according to color, texture, and taste.  In conclusion, Kue Lumpur in formula F2 is very good based on organoleptic and hedonic properties, and shows that the aroma tends to be more fragrant and preferred.

Abstract

Indonesia still has a high prevalence of stunting compared with several other Southeast Asian countries. The National Survey on Nutritional Status in Indonesia in 2022 reported that stunting in Indonesia was 18.5%, while Bangka Regency recorded a stunting prevalence of 16.2%. Feeding under the age of six months has become one of the factors of stunting. This requires concrete effort to handle the problem of stunting. This study aimed to assess the association between prelacteal feeding practices and infant stunting. The research used a cross-sectional design in the Kenangan Health Centre area, Bangka Regency, in May 2023. A sample of 173 infants aged 0-6 months was obtained using cluster random sampling. The height of the selected infants was measured using a lenghtboard and an infantometer. Interviews related to practical feeding were conducted with the parents using a questionnaire. Data were analyzed using Pearson’s correlation test with α= 0,05. The results showed that 14,5% of mothers gave prelacteal food to their infants until 6 months of age. There was a relationship between prelacteal feeding practices and stunting in the Kenanga Health Center working area (p= 0,001; r= -0,663). There was a negative correlation between prelacteal feeding practices and stunting. In conclusion, there is a significant negative relationship between prelacteal feeding practices and infant stunting.

Abstract

Breast milk is the main source of nutrients in infants under six months of age. The causes of low exclusive breastfeeding coverage vary from region to region. Lack of husband’s support is one of the factors contributing to exclusive breastfeeding failure. This study aimed to determine the determinants of exclusive breastfeeding failure, designed as a cross-sectional study, conducted in Sawangan District, Depok City, in February 2023. Subjects were selected using the total sampling method, namely all mothers who had babies aged 0-6 months who conducted antenatal checks at Health Center and private midwife clinics who were available to be interviewed and filled out a questionnaire with as many as 224 people and analyzed using the Chi-square test at 95% CI. Results: During antenatal care, the father's role in buying formula/instant porridge/bananas (p= 0,0000 and applying honey or mashed dates to the newborn (p= 0,000) was associated with failure of exclusive breastfeeding in the early postnatal period. Both variables were associated with a 3,7 times higher risk of discontinuing exclusive breastfeeding in the early postnatal period. In conclusion, the determinants of exclusive breastfeeding failure in the early postnatal period were fathers who bought formula/instant porridge/bananas and applied honey or mashed dates to newborns. Socialization and education of fathers regarding the importance of fathers’ involvement in exclusive breastfeeding for mothers is needed.

Abstract

Non-communicable diseases can cause oxidative stress, which affects their pathophysiology. One of the recommended diets for preventing complications of non-communicable diseases (NCD) is a rich antioxidant diet. One of the foods rich in antioxidants is beetroots. This study aimed to assess the antioxidant content of locally obtained beetroot juice. Laboratory experimental methods were used to test the antioxidant activity of beetroot juice. Before the laboratory test, the panelists carried out a hedonic test. The beets were then juiced and checked for DPPH′ (2,2-diphenyl-1-picrylhydrazyl). The beetroot was then juiced and checked for DPPH′ (2,2-diphenyl-1-picrylhydrazyl). Statistical analysis was performed using the Kruskal–Wallis test.  Results: The hedonic test showed that panelists preferred beetroot juice with lemon juice, with a 'like' range for the aroma and viscosity and a 'neutral-like' range for the taste and color of beetroot juice. The antioxidant content in 300 ml of beetroot juice was 53,34 ± 0,13%. In conclusion, beetroot juice has a high antioxidant content and health benefits in preventing NCD.

Abstract

The fat intake of pregnant mothers, especially palmitic acid, which is one of the main components of palm oil, may affect the weight and fat mass of newborns. This study aimed to analyze the relationship between maternal palmitic acid intake and palmitic acid levels in maternal and cord blood with birth weight and infant fat mass. This study uses secondary data using a cross-sectional design, which is part of the main study of the BSEA and IPB University. The research was conducted from May to October 2018 at the Tanah Sareal Health Center and North Bogor Health Center. A total of 142 pregnant women were selected based on a single pregnancy and Hb level of >9 mg/dL. Exclusion criteria were the presence of congenital abnormalities or undergoing therapy for a particular disease. Data analysis was performed using the Pearson/Spearman correlation test. The results of the study showed no association between maternal palmitic acid intake and birth weight or infant fat mass (p> 0,05). Two approximate significant indicators were palmitic acid level in maternal blood with birth weight (p= 0,089), as well as palmitic acid level in cord blood with infant fat mass (p= 0,053). In conclusion, maternal palmitic acid intake and palmitic acid levels in maternal and cord blood did not affect birth weight or infant fat mass.
