Abstract

Food security is a condition of sufficient food availability for everyone at all times and every individual who has access to obtain it, both physically and economically. Many households experience food insecurity, due to unequal ability to access food and lack of food availability in households caused by poverty. The occurrence of food insecurity can be influenced by several factors, including low socio-economic status, the level of food consumption, especially energy and protein, which will have an impact on the lack of diversity of food consumed. This research aim to see the relationship between socio-economic status, levels of energy and protein consumption and coping strategies on food security. This research is a quantitative study with a cross sectional design and analyzed using the Chi-Square test. The sample was determined using simple random sampling and a sample of 81 housewives aged 25-45 years were obtained. Data collection was carried out using the HFIAS questionnaire, RCSI, 2x24 hour Recall and interviews. The results showed that 66% of respondents experienced food insecurity, which shows that there is a relationship between recent education (p = 0.000), knowledge (p = 0.000), employment (p = 0.000), income (p = 0.000), level of energy and protein consumption (p = 0.000) with Food Security in Makasar Village, East Jakarta. Abstract

Mental health in students can be caused by academic stress. Academic stress is a pressure that occurs caused by competition or academic demands. Students who feel stressed can experience troubled appetites. Experiencing stress will cause the release of hormones that affect eating behavior. When someone experiences stress, they tend to have unhealthy behaviors such as eating too little, overeating, eating fatty foods, or eating foods with excessive sugar. The study applied a quantitative approach using a cross-sectional design. Data collection was done through distributing a questionnaire to Indonesian students totaling 180 students as respondents. The results of the study showed a relationship between stress and 6 categories of eating behavior (low-fat eating, emotional eating, sweet snacking, cultural/environmental/healthy eating behavior, meal planning, and skipping meals). The Spearman correlation test showed a significant relationship in the category of emotional eating (p-value = 0.0001, r = 0.2874), cultural//environmental/healthy eating behavior (p-value 0.0476, r = -0.1479, skipping meals (p-value = 0.0001, r = 0.2856), in contrast, there was an insignificant relationship in the category of low-fat foods (p-value = 0.9977, r = - 0.0002), sweet snacking (p-value = 0.1625, r = 0.1045), and meal planning (p-value = 0.9051, r = 0.0090).

Abstract

This study aimed to discuss the effect of yogurt fortified with pomegranate-fortified yoghurt, containing key antioxidant compounds such as anthocyanins, on male Wistar rats (Rattus norvegicus) induced by 1,2-dimethylhydrazine (DMH), a carcinogenic compound for colon cancer. The first stage of this study was testing antioxidant activity in various methods of making yogurt. A colon cancer rat group was induced with DMH with a dose of 20 mg/kg/body weight for 5 weeks by subcutaneous injection once a week. Induction of 1.2 DMH in experimental animals was carried out for 5 weeks, while the induction of pomegranate yogurt was carried out using oral induction every day for 4 weeks. The highest antioxidant activity was obtained from yogurt made by mixing plain yogurt and fermented pomegranate juice, where the proportion of pomegranate juice was greater, resulting in a percentage inhibition value of 77.96%. Giving pomegranate yogurt for 4 weeks was able to improve the histopathological picture of rats induced by 1.2 DMH. The best improvement in the histopathological in the colon of rats induced by 1.2 DMH was achieved by the P3 treatment group, where the proportion of pomegranate was greater when compared to plain yogurt.

Abstract

Anemia is a significant health issue in Indonesia, particularly prevalent among women of childbearing age and adolescent girls. In Depok, cases reached 34.5% in 2017, highlighting the need for attention. Key nutritional issues linked to adolescent anemia include insufficient protein and iron intake, as well as high consumption of coffee and tea. This study aims to explore the relationship between knowledge of anemia, vitamin C and protein intake, nutritional status, and blood tablet consumption among female students at SMP Negeri 9 Depok. Utilizing a quantitative cross-sectional design, the study sampled 73 students through purposive sampling. Data was collected via questionnaires, 24-hour food recalls, anthropometric measurements, interviews, and blood samples. Results indicated a 37% prevalence of anemia, with 61.6% having inadequate knowledge of anemia and 83.6% reporting low protein intake, while none regularly consumed blood tablets. Statistical analysis revealed no significant relationships between knowledge of anemia (p=0.240), protein intake (p=0.190), nutritional status (p=0.527), and blood tablet consumption regarding anemia incidence. To mitigate anemia, dietary monitoring and support for blood tablet consumption are essential.

Abstract

The added value of carica fruit can be increased by using overripe fruit to make processed products. One such product with great potential is fruit leather. This study aims to determine the optimal proportions of high fructose syrup (HFS) and sorbitol for producing carica fruit leather products that are highly desirable, and to compare the chemical characteristics of these products with those of the control product (without the addition of HFS and sorbitol). The study employed the Response Surface Methodology (RSM) with a Central Composite Design (CCD) experimental design, consisting of two factors and two blocks, to generate 14 treatment combinations. The research data were analysed using the Design-Expert V.10 application. Then, the data analysis of the optimum product and the control product was carried out using a T-test at a 95% confidence level with the IBM SPSS Statistics 25 application. The results of this study are an optimum formula for carica fruit, obtained from a proportion of 7.13% HFS and 2.31% sorbitol, with a desirability value of 0.65. Compared to the control product, the optimum product has a lower Aw value and ash content, but a higher fat, total dietary fibre, carbohydrate, total sugar and vitamin C content.

Abstract

Diabetes mellitus is still a disease problem experienced by the pre-elderly and elderly in the Yogyakarta area. Uncontrolled blood sugar levels in people with diabetes mellitus are caused by several factors, including intake, compliance, medication, and quality of grip strength, which describes physical fitness. The purpose of this study was to analyze the relationship between diabetes mellitus diet compliance and handgrip strength with blood sugar levels of pre-elderly in the Pandak 2 Health Center Area. This study employed a cross-sectional design to assess pre-elderly individuals at the Pandak Health Center from September to November 2024. We collected data on diet compliance using a questionnaire, grip strength with a handgrip dynamometer, and instantaneous blood sugar levels with a glucometer. Data were analyzed using chi-square with α (<0.05). Uncontrolled blood sugar levels in this study were 64%, with dietary compliance at 34.4%. There was a significant relationship between DM diet compliance and blood sugar levels (p 0.011), and there was a significant relationship between grip strength and blood sugar levels (p 0.001). Dietary non-compliance affects blood sugar control and pre-elderly people with weak grip strength tend to have poor blood sugar control.

Abstract

Diabetes mellitus (DM) is a non – communicable disease due to hyperglycemia, impaired insulin secrection, or impaired insulin performance. The purpose of this study was to determine whether the steeping of star fruit leaves (Averrhoa bilimbi L.) affects lowering blood glucose levels. This type of research is an experiment groups. This study used 30 mice weighing 20-30 grams, 8 weeks old, divided into 5 groups, namely negative and positive controls, as well as treatment groups with doses 250, 500, and 500 mg/kg BW, with a period of intervention for 14 days through given oral. Statistical analysis was performed using the Paired T-test, One-Way ANOVA test, and Post Hoc LSD test. The results of the Paired T-test test showed a significant value in the opposing group, doses of 250 mg/kg BW, 500 mg/kg BW, and 750 mg/kg BW of 0,000 (p<0,05). The One-Way ANOVA test showed a significant value of 0,000 (p<0,05) which means there is a significant difference in the decrease in blood glucose levels, that the Post Hoc LSD test showed that the treatment group with a dose of 250, 500, and 750 mg/kg BW was effective in reducing fasting blood glucose levels by showing a significant difference of 0,000 (p<0,05). These results indicate that there is an effecf of decreasing blood glucose levels on the 25th day in the treatment group given steeped bean leaves.
