Journal Gizi dan Pangan Soedirman advances to publish scientific and authentic research articles with various topic regarding nutrition and food sciences. The relevants aspects to the topic are clinical nutrition, dietetics, public health nutrition, paediatrics and maternal nutrition, nutrigenomic and nutrigenetic, food science, food processing and technology, supplement and functional foods, food fortification, sport nutrition and physical activity, socio-culture, environmental and behaviour nutrition, nutrition and aging, nutrition education,food services and counselling. This journal has an official affiliation with Department of Nutrition Science, Faculty of Health Sciences, Universitas Jenderal Soedirman. Abstract

One of the efforts to manage malnutrition is to fulfill nutritional needs. Fulfillment of nutritional needs can be done through the administration of enteral formulas. The high cost of commercial formulas led to budget swelling in hospitals. Therefore, it is necessary to develop enteral formulas that are cheaper but in accordance with the needs of poor nutrition. One of the development efforts is to utilize local food. Various local foods such as purple sweet potato, catfish, soybean tempe and pumpkin have nutritional content that has the potential as a therapy for malnutrition. This study aims to analyze nutrients including carbohydrates, fats, proteins and -carotene contained in enteral formulas based on purple sweet potato, catfish, soybean tempeh and pumpkin. An experimental study with a completely randomized design (CRD) using four formulas, namely L1, L2, L3 and L4 with a ratio of catfish meal and soybean tempeh flour sequentially 19: 31, 21: 29, 23: 27, 25: 25. Statistical analysis was carried out. with the Oneway Anova test and further tests using the Duncan test. The results showed that in 100g L1 formula contains 73.09% carbohydrates, 8.89% protein and 18.03% fat from total energy and 7.62 mg -carotene. 100g L2 formula contains 74.27% carbohydrates, 9.46% protein and 16.27% fat from total energy as well as 7.40mg -carotene. 100g L3 formula contains 74.29% carbohydrates, 9.78% protein and 15.93% fat from total energy and 10.15 mg -carotene. 100g L4 formula contains 73.62% carbohydrates, 10.21% protein and 16.17% fat from total energy and 9.08 mg -carotene. The formulation with the most nutritional content that meets the needs is the L4 formula. The average nutritional value of enteral L4 formula is 399.60 kcal/100g energy, 10.21% protein, 16.17% fat and 9.08 mg/100g -carotene.

Abstract

Synbiotic drinks are beverages that contain probiotic bacteria as well as prebiotics as a substrate for probiotic bacteria. This study aims to determine the type of soybean, the concentration of inulin, and the interactions that affect the proximate and organoleptic characteristics of soyghurt synbiotics. The research was conducted at the basic Agrotechnology Laboratory, Faculty of Agriculture and Fisheries, Universitas Muhammadiyah Purwokerto, from April to June 2022. This study used a Completely Randomized Design (CRD) of two factors. The first factor is soybean type: Yellow soybean (Glycine max) not peeled (K1), yellow soybean (Glycine max) peeled (K2), black soybean (Glycine Soja L.) peeled (K3), and black soybean (Glycine Soja L.) not peeled (K4). The second factor was the concentration of Inulin: 0% (I0), 3% (I1), 5% (I2), and 7% (I3). Observation variables measured pH, water content, protein content, ash content, carbohydrate content, fat content, fiber content, lactic acid bacteria viability test, antioxidant and organoleptic activity. The results showed that K4I3 (unpeeled black soybean) between soybean type and inulin concentration affected the proximate and organoleptic characteristics. The values were pH 4.30, water content 84.29, protein 6.29, ash content 0.21, carbohydrates 8 .32, fat 0.89, fiber 12.39, BAL 25x108 CFU/ml, antioxidant 50.93, color 3.95 (Neutral), aroma 4.5 (Neutral), taste 4.4 (Neutral), Softness 4 .3 (Neutral) and a total of 4.25 (Neutral).

Abstract

This study aims to determine the effect of giving Cowpea bean sprouts yogurt (CowpeaS-Yo) on blood glucose levels and abdominal circumference of patients with type-2 diabetes mellitus (T2DM). This experimental study used a pretest-posttest control group design, with 18 female subjects with T2DM, randomly divided into 2 groups, 9 people each. Group I was given CowpeaS-Yo, while group II was given a placebo as a control, 200 ml/day, for 2 months. Before and after 2 months of intervention, the subjects were measured for their abdominal circumference, and 1 mL of their blood sample was taken, to be checked for blood glucose levels. Data were analyzed using paired sample t-test. After two months of intervention, blood sugar levels decreased significantly from 259.33 mg/dl to 231.78 mg/dl (P=0.013) in the group consuming CowpeaS-Yo, as well as abdominal circumference decreased from 95.00 cm to 91 cm. .67 cm (P=0.008), compared to the control group. In conclusion, yocamcalo consumption was able to prevent the development of T2DM with central obesity, by reducing fasting blood glucose levels and abdominal circumference of patients.

Abstract

The development of coconut sap-based products with the addition of secang wood extract, cinnamon, ginger and black rice is one of the right steps to provide a beverage source of antioxidants to suppress the development of degenerative diseases caused by exposure to free radicals. Objective: to examine the effect of the type and amount of extract on the total phenol, anthocyanin, antioxidant activity levels of coconut sap based- functional drinks by added extract of sappan wood, cinnamon, ginger and black rice based. This is a factorial experimental study using a Randomized Block Design. Factors tried were: 1) Type of extract (sappan wood (J1), cinnamon (J2), ginger (J3) and black rice (J4)); 2) amount of extract addition (15%, 20%, 25%). Variables observed were: total phenol and anthocyanin levels. The results showed that the type of extract and the amount of its addition affected on the total phenol and anthocyanin levels of functional beverages made from coconut sap. Functional beverages with the addition of sappan wood, cinnamon, ginger and black rice extracts contained total phenols of: (4.8; 3.68, 2.68 and 3.68)mg/mL and anthocyanins content of (25.23; 7,72; 8.76; and 38.22)mg/L, respectively.. The more the addition of extract, the higher the anthocyanin and phenol levels. The mean value of anthocyanin levels in the addition of extracts 15%, 20% and 25% were: (13.08; 18.81; and 28.05) mg/L and the total phenol content, (2.94; 3.59, and 4.21 GAE/g), and antioxidant actifity (DPPH) were: (65,3%), (66,7%), (69% ) respectively. Functional drink based on coconut sap with the addition of black rice extract has the highest antioxidant activity.Keyword : secang wood, cinnamon, ginger, black rice

Abstract

This study aim to determine correlation between simple carbohydrates intake, dietary fiber intake, and excercise habbits on body mass index (BMI) of employee. This study used a cross-sectional method. As many as 63 peoples were selected as samples using purposive sampling method. Simple carbohydrate intake and fiber intake were measured using a 2x24 hour recall method, exercise habits were measured using exercise habits questionnaires. BMI was measured using digital scales and microtoise. The result showed an average simple carbohydrates intake 37.8 ± 33.3 g/day , dietary fiber intake 9.7 ± 4.1 g/day, excercise habbits 63.6 ± 77.7 minutes/week. The pearson correlation test showed insignificant relationship between simple carbohydrates intake, dietary fiber intake, and excercise habbits with BMI (p = 0.976, 0.871 and 0.454). Simple carbohydrates intake, dietary fiber intake, and excercise habbits did not relate with BMI head official employee Unsoed.

Abstract

Background: Iron deficiency anemia (IDA) is often suffered by pregnant women. Preventive action by giving iron tablet during pregnancy had been performed with unsatisfying result. Kelor leaves has micro nutrient substance that is needed by pregnant women. This study aims to develop additional food product such as mocaf (Modified cassava flour)-arrowroot biscuit that’s supplemented with kelor (Moringa Oleifera) leaves and chicken liver with high level iron and protein as well as sensory characteristics that can be accepted in pregnant women. Methodology: This study used Random Groups Design. There were two factors tested; they were, the proportion of mocaf : arrowroot (P), 80:20 (P1); 75:25 (P2); 70:30 (P3) and the comparison of kelor leaves : chicken liver (K), 50% addition to total flour, 25% : 25% (K1); 35% : 15% (K2). There were 6 treatment combinations repeated four times until 24 samples were obtained. Chemistry variable analysis used F-test (95%) and then continued with Duncan’s Multiple Range Test (DMRT) 5%, sensoric variable used Friedman Test and then continued with Double Compare Test 5%. The best treatment combination used Effectivity Index Test. Result: The best treatment combination was P3K1, in which biscuit had proportion of the composite of mocaf : arrowroot 70:30 and the comparison of kelor leaves : chicken liver 25%:25% with energy value 460.35 kkal/100g; water content 4.40% bb; gray value 1.76% bk; protein level 6.09% bk; fat content 17.71% bk; carbohidrat content by difference 74.43% bk and iron level 9.89 mg. Conclusion: Second trisemester pregnant women anemia could be given eleven biscuits and for third semester pregnant women anemia could be given sixteen biscuits in a day to fulfil the iron need. Abstract

MetS (MetS) is a predictor of cardiovascular disease and type 2 Diabetes mellitus. The prevalence of MetS increases not only in the urban area but also in the rural area. Women have a greater risk of MetS than men in some studies. This study was purposed to describe MetS prevalence and pattern of rural area women in the Integrated Development Post of Non-communicable Disease (Posbindu PTM) in Cilongok Rural Area. A population-based cross-sectional study was conducted in Cilongok, Banyumas rural area of Central Java among 63 rural women. Data were collected by interviews; measurement of fasting blood glucose, high-density lipoprotein, and triacylglycerol; measurement of blood pressure and abdominal circumference. Food consumption data were collected by multiply 24-hours food recalls. MetS were categorized by NCEP ATP III 2001 criteria. The prevalence of MetS in rural area women was 31.75%. Age was associated with MetS (p-value 0.038 ;95% CI : 0.983-23.63). Women with MetS have significant differences with women without MetS in the value of fasting blood glucose, high-density lipoprotein, triacylglycerol, blood pressure, and abdominal circumference (p-value <0.05). About 95% of MetS women have a high waist circumference and 80% have a low high-density lipoprotein. MetS women consumed higher energy than women without MetS (p-value <0.05). Conclusion: Prevalence of MetS in Cilongok rural area women was high. High in fasting blood glucose, high-density lipoprotein, triacylglycerol, blood pressure, and abdominal circumference were found to be a predictor of MetS. High energy consumption becomes a risk factor for MetS.

Abstract

The objective of study was to analyze the improving of balanced nutrition behaviour after applying nutritional education through pictorial story media for children and audiovisual media for mothers. The design of this study is a quasi-experimental study. Subjects were 45 students and 45 mothers of Limpakuwus Elementary School, Banyumas Regency. There was increasing of students' knowledge (20.8%) and maternal nutritional knowledge (15.5%) after being educated. Different behavior changes occurred significantly (p: 0,000 <0.05) before and after nutrition education. Tujuan pada penelitian ini adalah untuk menganalisis perbaikan perilaku gizi seimbang setelah penerapan edukasi gizi mellaui media cerita bergambar dan audiovisual pada orangtua. Desain penelitian ini adalah Kuasi Eksperimen. Sampel adalah 45 siswa dan 45 ibu pada SD Limpakuwus, Kabupaten Banyumas. Hasil penelitian menunjukkan terdapat peningkatan pengetahuan anak (20,8%) dan ibu (15,5 %) setelah pemberian edukasi. Terdapat perbedaan yang bermakna pada perilaku (p 0,000< 0,05) sebelum dan sesudah edukasi.

Abstract

Abstract The purpose of this study analyze the relationship between the iodine content of salt consumption and the level of consumption of iodine levels in women of childbearing age UIE. The study was observational with cross sectional design. The research location in the village of Kebumen, Baturraden subdistrict, Banyumas. Subjects were 38 selected by simple random sampling technique. The consumption level of iodine was measured by the method of Food Recall 2x24 hours. Salt iodine content was measured by iodometric titration method and UIE levels measured by acid digestion method in the laboratory BP2GAKI Magelang. Data analysis using spearman correlation. A total of 71.1% women of childbearing age using the iodine content of salt consumption of <30 ppm. The consumption level of iodine less subject category (86.8%). UIE levels by an average of 156.50 μg/L category of normal iodine intake. There was no relationship with the iodine content of salt UIE levels (p=0.671). No correlation with levels of iodine consumption levels UIE (p=0.586). Levels of UIE women of childbearing age are not affected by the iodine content of salt and iodine consumption levels. Keywords: Iodized salt, consumption levels, UIE Abstrak Tujuan penelitian ini adalah menganalisis hubungan kadar yodium konsumsi garam dan tingkat konsumsi kadar yodium pada wanita usia subur UIE. Penelitian ini bersifat observasional dengan rancangan cross sectional. Lokasi penelitian di desa Kebumen, Kecamatan Baturraden, Banyumas. Subjek penelitian dipilih dengan teknik simple random sampling. Tingkat konsumsi yodium diukur dengan metode Food Recall 2x24 jam. Kandungan garam yodium diukur dengan metode titrasi iodometrik dan tingkat UIE yang diukur dengan metode pencernaan asam di laboratorium BP2GAKI Magelang. Analisis data menggunakan korelasi spearman. Sebanyak 71,1% wanita usia subur menggunakan kandungan yodium konsumsi garam <30 ppm. Tingkat konsumsi kategori subjek kurang yodium (86,8%). Tingkat UIE rata-rata 156,50 μg / L kategori asupan yodium normal. Tidak ada hubungan dengan kadar yodium kadar garam UIE (p = 0,671). Tidak ada korelasi dengan tingkat kadar konsumsi yodium UIE (p = 0,586). Tingkat wanita UIE pada usia subur tidak terpengaruh oleh kadar yodium tingkat konsumsi garam dan yodium. Abstract

ABSTRACT The objective of this study was to access an understanding about Gluten-Free Casein-free Diet (GFCF) and its application in autism children in special need school C Yakut Purwokerto. This study uses qualitative research methods, descriptive depth interviews with 6 key informants and 11 informants support. The results showed that the mother initially did not understand and know about the GFCF diet. After got information from therapy, physician, psychologist and school teacher, they understanding of GFCF diet with is proved by mothers already know what foods must be limited. But the mother has not been able to implement a GFCF diet in everyday life as evidenced by the child is still often eat foods made from flour and milk. This is also evidenced in the form Food Frequency Quetionnaire Qulitative. Mother's level of understanding about the GFCF diet has been good, but from the 6 main informant could not do GFCF diet properly and strictly. Keywords: Autism, Diet Gluten Free Casein Free, Flour and milk ABSTRAK Sekitar 60% penyandang autis mempunyai gangguan sistem pencernaan akibat alergi makanan. Gangguan sistem pencernaan ini mengakibatkan terjadinya kebocoran usus (Leaky Gut). Dampak leaky gut pada autis menyebabkan produksi hormon sekretin terhambat. Sebagai akibat, protein susu sapi (casein) dan gandum (gluten) tidak dapat dicerna dengan sempurna, karena protein tersebut tidak berubah menjadi asam amino tetapi menjadi peptida yang seharusnya dibuang lewat urin, akan tetapi pada anak autis peptida ini diserap kembali oleh tubuh dan masuk ke otak dan diubah oleh reseptor opioid menjadi morfin. Untuk itu anak autis harus membatasi asupan makanan dari gluten dan kasein, agar tidak membuat anak hiperaktif dan tantrum. Tujuan penelitian ini adalah mengetahui gambaran pemahaman ibu mengenai diet GFCF serta sejauh mana ibu menerapkan diet tersebut pada anaknya. Penelitian ini menggunakan metode penelitian kualitatif, jenis deskriptif dengan wawancara mendalam kepada 6 informan utama dan 11 informan pendukung. Hasil menunjukkan bahwa ibu pada awalnya tidak memahami dan mengetahui mengenai diet GFCF. Setelah mendapatkan informasi dari terapi, dokter, psikolog dan guru sekolah ibu menjadi paham mengenai diet GFCF dengan dibuktikan ibu sudah mengetahui makanan apa saja yang harus dibatasi. Namun ibu belum bisa menerapkan diet GFCF di kehidupan sehari-hari yang dibuktikan dengan anak masih sering mengonsumsi makanan berbahan dasar tepung dan susu.
