Journal Gizi dan Pangan Soedirman advances to publish scientific and authentic research articles with various topic regarding nutrition and food sciences. The relevants aspects to the topic are clinical nutrition, dietetics, public health nutrition, paediatrics and maternal nutrition, nutrigenomic and nutrigenetic, food science, food processing and technology, supplement and functional foods, food fortification, sport nutrition and physical activity, socio-culture, environmental and behaviour nutrition, nutrition and aging, nutrition education,food services and counselling. This journal has an official affiliation with Department of Nutrition Science, Faculty of Health Sciences, Universitas Jenderal Soedirman. Abstract

Preschool teachers play a crucial role in influencing children's eating patterns at school, which is of utmost importance considering the detrimental impact of malnutrition on preschool children's cognitive abilities. In order to improve preschool teachers' nutrition behavior, it is imperative to provide education on nutritional behavior. One effective approach is implementing nutrition education for teachers through e-Health, which offers numerous advantages such as easier access and wider reach. Therefore, this research aimed to analyze the effectiveness of the Pegia eHealth intervention in improving the knowledge, attitudes, and practices of preschool teachers regarding nutrition. The sample consisted of 24 teachers from eight preschool centers in Purwokerto City, Indonesia. The e-Health intervention was conducted for 12 weeks, and the differences before and after the intervention were analyzed using the Wilcoxon test. The results showed a significant increase in the median knowledge by 12.00 with an interquartile range (IR) of 14.00, the median attitudes by 10.50 (IR: 8.75), and the median nutrition practices by 7.00 (IR: 3.00) (p-value < 0.05). The Pegia eHealth intervention showed its effectiveness in improving the nutrition knowledge, attitudes, and practices of preschool teachers.

Abstract

Children with autism spectrum disorder (ASD) are allergic to gluten products. Fish nuggets generally should not be consumed by children with autism because due to gluten (wheat flour) ingredients. This research developed gluten-free mackerel nuggets using ganyong flour as a filler. The study was to determine the effect of using ganyong flour on protein content, levels of omega-3 fatty acids, cooking loss, water holding capacity, sensory characteristics, and preference level for gluten-free mackerel fish nuggets. An experimental study with a completely randomized design (CRD) with three replications and four treatments. The addition of ganyong flour in mackerel nuggets was 0% (G0); 5% (G1); 10% (G2); 15% (G3); and 20%(G4). The best treatment was determined based on the result of the highest level of sensory preference. Mackerel nuggets with the addition of 10% canna flour as the best result, with characteristics are cooking loss (12%), water holding capacity (64.92%), protein content (14.05%), and omega-3 content (0.54%). The increase of ganyong flour (Canna edulis Kerr) affected the cooking loss, and sensory characteristics (p value <0,05). Mackerel fish nuggets and ganyong flour formulations can be categorized as gluten-free nuggets that can be consumed by children with ASD.

Abstract

Babies over 6 months of age need complementary foods with high protein content. Tilapia fish and Moringa leaves have a high protein content, so they can be used as food to food fortification in making cookies. The aim of this research is to analyze the acceptability and protein content of cookies fortified with tilapia fish meal and moringa leaf flour. The research design used was Research and Development (R&D) with a Completely Randomized Design (CRD), using four treatments and two replications. The selected formula is determined based on the average value of acceptability of color, aroma, taste and texture. Analysis of protein content using the Kjeldahl method. There was a difference in the acceptability (preference for color, aroma, taste and texture) of cookies fortified with tilapia fish meal and moringa leaf flour compared to the control formula. The selected formula based on the average value of color, aroma, taste and texture was formula F3 (87g wheat flour, 6g tilapia fish meal and 2g moringa leaf flour). The selected formula, namely formula F3, contains protein per 100g, 2.85g higher than the control formula (F0). It is necessary to analyze macronutrients and other micronutrients so that the entire nutritional content of cookies can be known

Abstract

Adolescent girls are a group that is vulnerable to experiencing nutritional problems such as anemia, which is characterized by hemoglobin levels in the blood that are lower than normal. Factors that support compliance with the consumption of blood supplement tablets in adolescent girls include perception, knowledge, motivation, attitudes, and family and teacher support regarding anemia and blood supplement tablets administration. This research aims to determine the relationship between the knowledge and characteristics of parents on parental support in implementing the blood supplement tablets program for adolescent girls. This research used a cross-sectional design located at MAN 3 Jakarta with 96 parents of adolescent girls as respondents. Data were analyzed using the Chi-Square test. The results showed that there was a relationship between the father's occupation and parental support (p=0.005), the father's income and parental support (p=0.000), the father's education and parental support (p=0.006), the mother's education and parental support (p=0.000), and parental knowledge with parental support (p=0.001). Thus, the father's occupation, the father's income, the father's education, the mother's education, and parental knowledge are factors related to parental support for the blood supplement tablets program for adolescent girls

Abstract

Currently, the highest number of deaths in Indonesia is caused by non-communicable diseases. One of the non-communicable diseases is diabetes mellitus which is a metabolic disease. Efforts to prevent diabetes mellitus with non-pharmacological therapy can use plants that have the potential to have anti-diabetic effects. This study aims to make brotowali with manalagi apples as a functional drink which has potential as an antidiabetic and to determine total sugar content, flavonoids, and antioxidant activity with 3 ratios of brotowali : manalagi apple (F1 1:2, F2 1:1, and F3 2:1). This study used a completely randomized design (CRD) with 3 formulations and 3 repetitions. The statistical tests used were Analysis of Variance (ANOVA) and Duncan's Multiple Range Test (DMRT). The results showed that F1, F2, and F3 averaged total sugar content respectively 27.4%, 22.3% and 20.9%, the average of flavonoids was 41.7 mgQE/g, 48.8 mgQE/g, and 62.8 mgQE/g, and the average antioxidant activity with IC50 values were 145.5 µg/ml, 109.3 µg/ml, and 92.2 µg/ml. The best formulation of brotowali functional drink with manalagi apple is formula F3 with total sugar content of 20.9%, flavonoid content of 62.8 mgQE/g and antioxidant activity with IC50 value of 92.2 µg/ml.

Abstract

Overnutrition is one of the most common nutritional problems in the adult age group. Overnutrition among working adults can harm productivity at work. This is because excess nutritional status can cause various non-communicable diseases such as type 2 diabetes mellitus, coronary heart disease, and cancer. The purpose of this study was to determine the relationship between food intake, body image perception, and weight control behavior with nutritional status at the Muhammadiyah College of Rawamangun. The research was conducted in August 2023, involving 61 teachers. The research method used is quantitative research with a cross-sectional design and total sampling method for sample selection. Data was analyzed using the Chi-Square statistical test. Dietary intake was measured using a 2x24-hour recall method, body image perception and weight control behavior were assessed using Body Shape Questionnaire (BSQ) Short Version also waist circumference, body weight and height were measured using anthropometric measurements. The results of data analysis indicate a significant relationship between energy intake, protein intake, fat intake, carbohydrate intake, body image perception, and weight control behavior with nutritional status based on BMI and waist circumference (P<0.05). However, no significant relationship was found between body image perception and weight control behavior with nutritional status based on waist circumference (p>0.05). In conclusion, there were significant relationship between energy intake, protein intake, fat intake, carbohydrate intake, body image perception, and weight control behavior with nutritional status based on BMI and waist circumference.

Abstract

Campoleh fruit contains nutrients such as fibre, minerals and is high in vitamin C as an antioxidant. Yogurt set is a fermented milk product that has a thick texture and sour flavour. This study aims to determine the effect of the addition of campoleh fruit on the chemical and organoleptic characteristics of yogurt sets, and determine the best concentration of campoleh fruit based on SNI standards. This study used a complete randomised design method with the treatment of adding campoleh fruit concentrations of 10%, 15%, 20%, and 25%. The results of the analysis showed a significant effect on moisture content, ash content, protein, fat, lactic acid, vitamin C and colour. However, no significant effect showed the addition of campoleh fruit on colour, appearance, aroma and overall. The best concentration treatment of campoleh fruit addition to yogurt set is found in the campoleh fruit treatment of 25%, which has a moisture content of 73.84%, ash 0.92%, protein 4.64%, fat 1.85%, vitamin C 51.75 mg/100g, lactic acid 0.96%, colour 2.40, appearance 2.52, taste 2.52, aroma attribute 2.76 and overall 2.60.

Abstract

Obesity control is a significant public health challenge in Indonesia, contributing to chronic diseases like type 2 diabetes, heart disease, and hypertension. Adequate fiber intake effectively reduces obesity risk by increasing satiety and improving digestive function. This study aims to analyze the differences in nutritional content, fiber, and acceptability among three cookie formulations with the addition of Kepok banana flour (Musa paradisiaca L.) and red kidney bean flour (Phaseolus vulgaris) for adult obesity control. This experimental study used a Completely Randomized Design (CRD) involving various cookie formulations. Each formulation was tested for nutritional content, including protein, fat, carbohydrates, and fiber, as well as acceptability through organoleptic tests. Data analysis was conducted using ANOVA and Tukey's post hoc test for normally distributed and homogeneous data. For non-normally distributed data, Kruskal-Wallis and Mann-Whitney tests were used. Organoleptic tests were analyzed using the Friedman and Wilcoxon tests. The results showed significant differences among formulations in terms of nutritional content and acceptability. Based on organoleptic test results, F3 had the best acceptability. This study recommends further research with long-term clinical trials to evaluate the impact of these cookies on comprehensive obesity control.

Abstract

Primary school children are an age group that is vulnerable to nutrition and health problems. One that is often faced by elementary school children is a shift in diet that tends to consume foods that are high in energy and low in fluid and low in fiber, which affects the defecation patterns experienced. This study aims to determine the relationship between fluid intake, fiber intake and nutritional status on defecation patterns of grade III primary school children at SDN 78 Bengkulu City. This study is quantitative with a cross-sectional design and used 62 respondent. The study was conducted from May-June 2024.. Data were collected through questionnaires and food recall forms for 3 x 24 hours. The results of univariate analysis obtained 58.1% of respondents with adequate fluid intake, 67.7% with insufficient fiber intake, 66.1% with normal nutritional status, 56.5% with irregular defecation patterns. The results of the chi square test showed no relationship between fluid intake (p=0.34) and fiber intake (p=0.90) to the pattern of decefation and there was a relationship between nutritional status (p=0.002) to the pattern of decefation. Based on this research, it is expected that respondents can maintain nutritional status and improve fluid and fiber intake.

Abstract

The issue examined in this study is the relationship between macronutrient intake, infectious diseases, maternal nutrition knowledge, and feeding patterns in toddlers in the working area of Puskesmas Gambir, Central Jakarta. This research took place in the working area of Puskesmas Kecamatan Gambir, Central Jakarta City, in June 2024. The study used a cross-sectional design with chi-square analysis test using SPSS 25. The subjects of this study were toddlers aged 24–60 months, and the sample consisted of 81 toddlers. Data collection on the nutritional status of toddlers was done using anthropometric measurements (weight & height) with digital scales and stadiometers. Macronutrient intake was assessed using a 2x24 hour food recall sheet, maternal nutrition knowledge was assessed using a maternal nutrition knowledge questionnaire, and feeding patterns were assessed using a child feeding questionnaire. Most toddlers had abnormal nutritional status, and the chi-square test results showed protein intake p=0.477, fat intake p=0.052, carbohydrate intake p=0.678, infectious diseases p=0.448, maternal nutrition knowledge p=0.225, and feeding patterns p=0.279. There was no relationship between macronutrient intake, infectious diseases, maternal nutrition knowledge, and feeding patterns with the nutritional status of toddlers.
