Abstract

Mud cake characterized by yellow color, round shape and soft texture like mud. This research to determine the effect of red dragon fruit peel pure addition on the characteristics of mud cake. This research is an experimental method using Randomized Group Design (RGD), 5 treatment and 3 repetitions, with red dragon fruit peel pure addition 10%, 13%, 16%, 19% and 22% of main ingredients. Organoleptic testing showed, the different significant effect on color, taste, aroma, texture, overall acceptance, color quality and texture quality. Results of chemical analysis of antioxidant capacity were 14.33 – 18.23 mg/L and crude fiber content were 2.75 – 4.51% bw. Mud cake with red dragon fruit peel pure addition of 16% (P3) got the best results with color average with average 3.73 (liked), taste with average value 3.68 (liked), aroma with average value 3.58 (liked), overall acceptance with average value 4.11 (liked), color quality with average value 1.91 (pink) and texture quality with average value 2.28 (a bit dense). Results of chemical analysis of P3 showed antioxidant capacity 15.07 mg/L and a crude fiber content 3.04% bb so, the public can use it as reference for developing modifications and utilization of dragon fruit peel into nutritious preparations.

Abstract

Based on 2018 Riskesdas data, it shows that the prevalence of anemia in pregnant women in Indonesia is 48.9%, an increase of 11% compared to 2013 Riskesdas data, which was 37.1%. Based on 2020 Bali Provincial Health Office data, it shows that the incidence of anemia in 2019 was 5.07%, then increased to 5.78% in 2020. Meanwhile, the incidence of anemia in Denpasar City in 2019 was 4.7%, increasing to 7. 55% in 2020. The highest coverage of iron tablets in Bali Province is in Denpasar City with a percentage of 98.5% in 2021. This research aims to determine the fulfillment of consuming iron (Fe) tablets and iron consumption by nutritional anemia status in pregnant women in the working area of UPTD Puskesmas IV South Denpasar. This type of research is classified as observational research with a cross sectional design. This research started from mid-April to mid-May 2024. The sample for this research was 44 people using purposive sampling techniques in sampling. The results of this study showed that 59.1% of pregnant women experienced anemia. 9.1% of pregnant women were non-compliant in consuming iron tablets. 84.1% of pregnant women have insufficient iron consumption. Pregnant women are advised to consume foods that are rich sources of iron, during pregnancy mothers must adhere to the recommendations for consuming iron tablets, and always adopt clean and healthy living habits.

Abstract

According to the Indonesia Nutrition Status Study 2021, 24.4% of toddlers are stunted, 17% are underweight, 7% are wasted, and 3.8% are overweight. The prevalence of diarrhea in Indonesia according to the 2018 Basic Health Research was 11.5% of diarrhea in children aged 1-4 years. According to the Indonesian Nutrition Status Study 2021, the proportion of children under five years of age with diarrhea in Bali Province is 11.2%. According to the 2020 Buleleng Health Profile, in the Gerokgak I Health Center working area there were 27.3% of diarrhea cases in toddlers. The purpose of this study was to determine the relationship between protein and micronutrient intake and the frequency of diarrhea with the nutritional status of toddlers in Patas Village. Type of observational research with cross-sectional design. This research was conducted in December 2022 in Patas Village. The research sample amounted to 84 samples. The sampling technique to be used is simple random sampling. The data analysis used is using the Pearson correlation test with α = 0.05. Based on statistical analysis test, there is a significant relationship between protein intake level and nutritional status of toddlers in Patas Village p=0.000. In addition, there is a meaningful relationship between the intake level of micronutrients calcium p=0.040 and phosphorus p=0.008 with the nutritional status of toddlers and there is meaningless relationship between micronutrients potassium p=0.322 with the nutritional status of toddlers. Then there is a relationship between the frequency of diarrhea and the nutritional status of toddlers in Patas Village p = 0.000 α (0.05). Abstract

Obesity is excess body weight,measured by a body Mass Index (BMI) of more than 30 kg/,wich is a goal problem,affecting 2 billion people,and is expected to affect 1 in 7 men and 1 in women by 20230.This study aims to determine the relationship between vegetable and fruit consumplition pattems and the incidence of obesity in adolescents at SMA Negeri 2 Negara.This type of research is observational with a cross-sectional design,conducted in April – May 2024 with a population of 733 people and a sample of 88 people using proportional random sampling.Date were collection throught questionnaires,SQ-FFW,and BMI/U measurements.The results of the analysis showed that most samples had vegetable and fruit consumption patterns showing that most samples (58%) with good patterns,27 samples (30,7%) sufficient,and 10 samples (11,4%) lacking.There were 15 samples (17%) who were obese and 73 samples (83%) were not obese.Chi-Square test shows there is a relationship between vegetable and fruit consumption patens and obesity incidence (p-value = 0,000).The suggestion that can be conveyed is that adolescents should apply the principle of balanced nutrition by routinely consuming vegetables and fruits and schools are expected to work together with health workers to provide counseling and education regarding the impotance of vegetable and fruit consumption.

Abstract

Anemia is a condition of insufficient or low concentrations of hemoglobin (Hb), erythrocytes and hematocrit (Hct) from normal values. Pregnant women experience anemia if their hemoglobin (Hb) level is below 11 g/dL. The aim of this research is to determine the relationship between knowledge and levels of consumption of Iron, Folic Acid, Vitamin C, Protein and Energy with the incidence of anemia in pregnant women. This type of research is observational with a cross sectional design. Carried out in December 2023. The sample size was 50 samples determined from 98 pregnant women in the Seririt I Community Health Center Working Area, Buleleng Regency. Sampling was carried out using purposive sampling. Data analysis used the Pearson Correlation test. Based on the results of sample observations, it was found that 54.0% were Anemic, 42.0% had poor knowledge, 54.0% had a poor level of Iron consumption, good Folic Acid, 52.0% had a good level of Vitamin C consumption, 52.0% had a good level of Protein consumption 56.0% and the energy consumption level is 54% less. The results of statistical tests showed that there was no relationship between levels of iron consumption (p= 0.296 ; r= 0.151), folic acid (p= 0.184 ; r= 0.191), vitamin C (p= 0.488 ; r= 0.101), protein (p= 0.849 ; r= 0.028), energy p= 0.527 ; r= 0.092) with knowledge of pregnant women. There is a relationship between the level of iron consumption (p= 0.001 ; r= 0.744), Folic Acid (p= 0.001 ; r= 0.660), Vitamin C (p= 0.001 ; r= 0.697), Protein (p= 0.001 ; r=0.491), Energy (p= 0.001 ; r=0.678) with anemia status in the Seririt 1 Community Health Center Working Area, Buleleng Regency.Keywords: knowledge, iron consumption level, folic acid, vitamin C, protein, energy anemia of pregnant woman

Abstract

Based on Riskesdas Bali based on occupational groups, data from Riskesdas in 2018, people in the employee profession experienced an increase in nutritional problems compared to 2013. The number of overweight people increased from 13.7% (2013) to 20.0% (2018), as well as with obesity increasing from 17.1% (2013) to 33.7% (2018). The World Health Organization (WHO) predicts that work stress will become a major threat to human health by 2020. The aim of this research is to determine the relationship between work stress and food consumption and the nutritional status of employees at Bhayangkara Hospital, Denpasar. The type of research used was Descriptive Analytical with a Cross Sectional survey method, with a sample size of 61 people, using the Chi-Square test. A total of 31 samples (50.8%) had normal nutritional status, with light work stress levels in 59 samples (96.7%). Most of the samples had energy consumption in the deficit category, 48 samples (78.7%), protein consumption in the adequate category, 26 samples (42.6%), fat consumption in the adequate category, 25 samples (41.0%) and carbohydrate consumption in the adequate category. deficit 57 samples (93.5%). There is no significant relationship between energy, protein, fat and carbohydrate consumption and work stress, shown by p 0.05. There was no significant relationship between energy, protein, fat and carbohydrate consumption and nutritional status, as shown by p 0.05.

Abstract

Gagal ginjal kronis merupakan gangguan fungsi ginjal yang progresif. Ketikapenyakit ginjal kronis sudah memasuki fase ESRD (End Stage Renal Disease),pasien membutuhkan terapi seumur hidup yaitu terapi hemodialisis. Hemodialisisadalah terapi pengganti fungsi ginjal untuk mengeluarkan sisa metabolisme atauracun dari peredaran darah menggunakan alat dialyzer. Malnutrisi merupakanmasalah gizi utama pada pasien yang menjalani terapi hemodialisis sehingga dapatmenyebabkan status gizi buruk dan prediktor terjadinya kematian pada pasienpenyakit gagal ginjal kronis. Tujuan umum penelitian ini adalah untuk mengetahuihubungan asupan energi, protein, dan adekuasi hemodialisis dengan status gizipasien gagal ginjal kronis hemodialisis rawat jalan di RS BaliMéd Denpasar. Jenispenelitian yang digunakan adalah analitik observasional dengan rancangan crosssectional. Jumlah sampel dalam penelitian sebanyak 30 orang. Pengambilan sampeldilakukan dengan metode consecutive sampling. Pengumpulan data dilakukandengan metode wawancara, pengukuran, serta pencatatan data rekam medis pasien.Status gizi dinilai menggunakan skor SGA (Subjective Global Assessment), asupanenergi dan protein didapatkan dari rata-rata hasil food recall 2x24 jam, sertaadekuasi hemodialisis dinilai berdasarkan persentase URR (Urea Reduction Ratio)yang tercatat pada rekam medis pasien selama 3 bulan terakhir. Data disajikandengan tabel frekuensi dan tabel silang. Hasil uji analisis Rank Spearmanmenunjukkan bahwa terdapat hubungan yang signifikan antara asupan energidengan status gizi (p=0,001; r=0,642). Terdapat hubungan yang signifikan antaraasupan protein dengan status gizi (p=0,001; r=0,624). Namun, tidak terdapathubungan yang signifikan antara adekuasi hemodialisis dengan status gizi(p=0,087; r=0,318).

Abstract

Chronic Energy Deficiency (CED) in pregnant women is one of the public health problems that has an impact on increasing the risk of pregnancy complications, childbirth, and maternal and infant mortality. This study aims to analyze the factors that influence the incidence of CED in pregnant women in the agricultural area of Tangsil Wetan Village, Bondowoso Regency. The study used an observational analytical design with a case control study approach, involving 40 pregnant women respondents with a total sampling technique. Primary data were collected through interviews using questionnaires, then analyzed using the Fisher's Exact test and Odds Ratio (OR) calculation using the SPSS application. The results showed a significant relationship between age, education level, economic status, pregnancy spacing, antenatal care (ANC) visits, knowledge of CED, and animal protein consumption with the nutritional status of pregnant women. Pregnant women with an age at risk, low education level, low economic status, close pregnancy spacing, less ANC visits, low knowledge of CED, and infrequent consumption of animal protein have a higher risk of experiencing CED. These findings emphasize the need for efforts to prevent CED through increasing nutrition education, routine pregnancy check-ups, and community-based interventions to improve the nutritional status of pregnant women in agricultural areas.

Abstract

Obesity is a pathological condition where excess fat accumulates in the body which is influenced by several factors, one of which is consumption and knowledge. The aim of this research is to determine the relationship between knowledge and consumption of fast food and the obesity status of adolescents at SMP Negeri 2 Abiansemal. This type of observational research was carried out in February 2023 at SMP Negeri 2 Abiansemal, with 76 samples. The sample collection technique uses the Multistage Random Sampling method. Consumption data uses 1x24 hour recall collected over 2 days. Knowledge data was collected using a knowledge form through interviews. The data are presented in frequency tables and cross tables between knowledge and consumption of fast food macronutrients and between consumption of fast food macronutrients and obesity status. The results of the Spearman rank analysis test show that there is a relationship between knowledge and fast food protein consumption (p = 0.000, r = -0.718). There is a relationship between knowledge and consumption of fast food fats (p = 0.000, r = 0.438). There is a relationship between protein consumption and obesity status (p = 0.000, r = 0.826). There is a relationship between fat consumption and nutritional status (p = 0.000, r = -0.507). It is hoped that schools can provide education to students, canteens and shops about nutritionally balanced food and it is hoped that future researchers can explore other factors that cause obesity by using more appropriate methods such as SQ-FFQ.

Abstract

Infant and Child Feeding is one of the government's programs aimed at reducing child mortality rates and improving the quality of life for mothers. According to survey data from the Kintamani IV Public Health Center, there is still a prevalence of undernourished toddlers in Banjar Beluhu, Desa Suter, at 32.78%, which is attributed to the lack of maternal knowledge about Infant and Child Feeding. The objective of this study is to determine the effect of health education on maternal knowledge regarding Infant and Child Feeding for children aged 6-24 months in Banjar Beluhu, Desa Suter, Kecamatan Kintamani, Kabupaten Bangli. This type of research is experimental with a quasi-experimental one-group pretest-posttest design. A pre-test was administered before the health education session, followed by a post-test. The analysis used was the Paired t-test. Knowledge before the health education showed 17% in the moderate category, while 83% were in the low category. After the health education, 55% were in the good category, and 45% were in the moderate category. The Paired t-test indicated a significant effect on maternal knowledge before and after the health education on infant and child feeding (p 0.05).
