Abstract

Background: Counseling on the practice of feeding infants and children to mothers with babies 0-24 months is an educational effort that can produce community behavior to increase knowledge (Suharjo, 2003). Counseling often carried out in the community by nutrition officers and posyandu cadres about feeding practices usually uses the lecture method and question and answer discussion. However, the method above makes the target bored quickly and less interested, so the results are not optimal. Another method that can help is participatory counseling or adult learning (POD), which emphasizes that participants are directly involved and carry out two-way communication and share experiences from each participant (Kemenkes, 2015). One of these methods is the participatory extension method. Research Methods: The study was carried out in the working area of the Kediri Health Center, West Lombok Regency, with 15 case groups and 15 control groups and had the same characteristics for three months, from September to November 2018. The study used a quasi-experimental method, pre-test post-test control group design. The data collected included data on characteristics, body weight, level of knowledge, and intake before and after giving participatory counseling interventions. Data analysis used an independent t-test to see the effect of participatory method counseling on children's growth status. Research Result: The results showed that the education level of all respondents (100%) achieved primary education, namely Elementary School (SD) and Junior High School (SMP). The results showed that the samples' average weight gain or growth status, treatment, and control, was 0.4 Kg. There is a significant effect on the growth status of children aged 12-24 months for weight gain in both cases and controls. Both have increased. Viewed from the level of knowledge, most of the respondents have a sufficient level of expertise, and the increase in the knowledge possessed by respondents in the treatment is not better than control. Conclusion: There is no effect of participatory method counseling on the level of knowledge of the case and control groups. Results counseling with participatory methods can change the eating patterns of children aged 12-24 months in the treatment group, as seen from the number, frequency, and variety of menus served by mothers of toddlers.  Suggestion: There needs to be a continuation of research with the same method, but the dependent variable is diet (amount, frequency, variety, and cleanliness)

Abstract

Background: Papaya fruit has many benefits, is relatively abundant in West Kalimantan and has not been optimized. One of the processed foods that can raise maximum papaya utilization and extend the short shelf life of papaya is papaya jam. This study measures the effect of different sugar concentrations for acceptance using an organoleptic test on papaya jam (Carica papaya L.). Methods: The research on papaya jam used a Completely Randomized Design (CRD) with three treatments of sugar concentration (25, 45, and 65 g). Thirty untrained panelists were used as replicates. Papaya jam was evaluated using the organoleptic test to determine its acceptability of papaya jam. The assessment uses a line scalar sheet using six parameters: color, flavor, viscosity, papaya taste, sweetness level, and preference. The data of the organoleptic test were analyzed using the SAS CRD model. If there were effective treatments, then continued with the LSD test at an alpha of 0.05. This papaya jam was also analyzed for water and sugar content. Result: The results showed that the panelists favored papaya jam with a sugar concentration of 65 g. Moreover, it was chosen because it has the highest average value on color, flavor, viscosity, papaya taste, level of sweetness, and preference. Moreover, the papaya jam with a concentration of 65 g sugar resulted from it in the lowest water content and highest sugar content, according to SII year 1978. Conclusion: In the organoleptic test, papaya jam was accepted at the highest sugar concentration (65 g). Not only color, flavor viscosity, papaya taste, sweetness level and preference was significantly most elevated compared to other treatments, but papaya jam with a sugar concentration of 65 product maximum water content and minimum sugar content by SII (Indonesian Industrial Standard).

Abstract

Background: One of the efforts to overcome nutritional problems is to increase knowledge about nutrition through nutrition counseling. Learning can be influenced by education. People with higher education tend to have a broader understanding and an openness to accept new things. Meanwhile, someone with low education tends to have old thinking patterns and is less open to new things, including powerful areas in holding their customs. One way to influence the community's mindset in such conditions is to use a trusted communication facilitator who can be a role model for the community. So that in this study, the role of traditional leaders is used so that the community is more receptive to the material presented. Objective: To determine the effect of counseling through the media of Wetu Telu Bayan traditional leaders on the knowledge of mothers of children under five about the message of balanced nutrition. Methods: This research is a pre-experimental study that allows testing the changes after the intervention. The research design used is a one-group pre-test-post-test design. Result: An increase in knowledge scores in the form of differences in scores from pretest to post-test. Analysis using Wilcoxon regarding the effect of counseling on balanced nutrition messages by traditional leaders on the knowledge of mothers of children under five, the results were p = 0.00 or p <0.05, meaning that there was an effect. Conclusion: There is an effect of counseling through the media of Wetu Telu Bayan traditional leaders on the knowledge of mothers of children under five about the message of balanced nutrition.

Abstract

Background: Obesity is a teenage health problem that needs to be addressed. One of the handling efforts in overcoming excess weight is proper eating/diet settings. Research Methods: This type of research is a quasi-experimental design with a randomized pre-post test control group design. The research subjects used in this study were female adolescents aged 18-20 years with overweight nutritional status. The variables measured were body weight before and after treatment. The data obtained were tested statistically univariate to get an overview of the distribution of research variables and bivariate test to determine the effect of the REST diet on changes in body weight. Research Result: The results showed that the average weight loss in the treatment group was 0.92 kg, and the control group was 0.67 kg. From the results of the Paired-samples T-Test, a significant value of 0.000 (p <0.05) was obtained, which means that there was a substantial difference in the mean weight before and after treatment. Conclusion: The conclusion is that there is a difference in body weight before and after the study, but there is no effect of giving the REST diet on weight loss in obese adolescents.Background: Obesity is a teenage health problem that needs to be addressed. Abstract

One of the anemia prevention programs for young women is the provision of blood-added tablets, but this program has not been running effectively. Apart from coming from primary food sources and TTD, efforts to increase iron intake can be made by consuming snacks. One of the favorite foods among young women is cookies. This study aims to analyze the organoleptic test of making cookies substituted with purple sweet potato flour and beetroot as an alternative snack to prevent anemia in adolescent girls. Experimental research with a completely randomized design consisting of three factors, namely wheat flour, purple sweet potato flour, and beetroot juice, with three treatments with a ratio of 150 gr, 100 gr, 125 gr flour, purple sweet potato flour, 50 gr, 10 gr, 75 gr, and beet juice 5 gr, 10 gr, 15 gr. 30 untrained panelists conducted this study. The sensory analysis found that formula 2 was superior, while hedonic analysis found that formula one was preferred. Cookies with purple sweet potato flour substitution with the addition of beetroot juice have significant differences in sensory characteristics (organoleptic) in terms of color, aroma, taste, and texture.

Abstract

Background: Anemia decreases hemoglobin levels, hematocrit, and red blood cell counts below the average values set for individuals. Anemia is more common in young women because young women experience menstruation, and blood loss during menstruation can cause anemia. Adolescent boys and girls in their growth period need more energy, protein, and other nutrients than other age groups. Anemia in adolescents will impact decreased concentration in learning, decreased physical fitness, and impaired growth so that height and weight are not average. The common knowledge of adolescents about health information, especially about anemia, requires efforts to overcome the problem of anemia. This study aims to present an overview of the use of print media and audio-visual media for knowledge of adolescents about anemia. Research Methods: The method used by the author in this study is to use some of the existing literature related to the title of this study. Research Result: The results and discussion of this study will help readers and health workers understand the planning steps in education using print media and audio-visual media to adolescents about anemia. Conclusion: Using audio-visual media in animation and media in the form of guidebooks and flashcards is considered adequate for increasing knowledge of anemic adolescents, and flashcard media are still rarely used for learning media.

Abstract

Background: In the lifestyle shift in Indonesian society, consumption patterns are high in calories, high in simple sugars, and low in fiber and not balanced with sufficient physical activity. Nutrition education can prevent the increasing prevalence of obesity and overweight. An approach to the client is needed in solving problems to change the pattern of life to be healthier and better. Students in Elementary schools tend to prefer illustration books in realistic or cartoon form. Comics have an excellent visual media function in helping to increase knowledge of balanced nutrition, and it is hoped that this will influence the behavior of balanced nutrition. The purpose is to determine the effect of providing comic education Fill My Plate on the energy of elementary school children with excess nutritional status. Methods: This quasi-experimental study involved 60 students who were divided into treatment groups by providing education on comics Fill My Plate and a control group giving education without comics Fill My Plate energy data analysis in both groups using paired t-test. Research Result: The results showed an influence between the energy before and after giving education on comics Fill My Plate in the treatment group (P = 0.000), while the control group had no effect (p = 0.897). Conclusion: Providing education using comics Fill My Plate affected reducing energy in elementary school students who have more nutritional status.

Abstract

Background. Hypertension is a degenerative disease that is the leading cause of death globally. Handling hypertension can be done by giving the DASH diet. In this case, this study provides an interlude to the DASH diet. Research Methods. This study uses a quasi-experiment (pre-test-post-test control group design). The study subjects consisted of two groups: the treatment group with the administration of the DASH diet interlude and the control group. Research Result. Most of the subjects in this study were elderly 70-74 years (33.3%) in the treatment and 75-80 years (50%) in control. The research subjects were primarily female, with 27 elderly (75%). The mean blood pressure in both groups before the intervention was higher than the mean blood pressure after the intervention. The analysis of the two groups' different tests showed no difference in systolic and diastolic blood pressure before the intervention. However, there were differences in systolic and diastolic blood pressure after the intervention. Furthermore, giving a DASH diet interlude affected Systolic blood pressure (p=0.000) and Diastolic blood pressure (p=0.034) after the DASH diet snack was provided.  Conclusion. There is an effect of giving the DASH diet interlude on blood pressure after giving the DASH diet snack.

Abstract

Background. Nutritional problems in Indonesia are still dominated by malnutrition in children. This problem is caused not only due to lack of food but also influenced by the characteristics of the mother because the mother plays a vital role in fulfilling children's nutrition. The purpose of this study is to analyze the correlation between maternal traits and food choice motives. Research Methods. The research respondents were 50 people who were selected randomly (simple random sampling). This study uses quantitative methods supported by qualitative data. Data collection techniques used questionnaires to collect quantitative data and in-depth interviews to collect qualitative data. Quantitative data will be analyzed using the Spearman correlation test with SPSS software. The qualitative data will be presented in the form of a narrative that is used to support quantitative data. Research Result. Based on the Spearman correlation test, it was found that the level of knowledge had no significant effect on the mother's food choice motive with p value 0.056 (> 0.05), and there is no correlation between education and maternal food choice motives with a p-value of 0.422 (> 0.05).  Conclusion. The results show no influence between the mother's characteristics and food choice motives (p-value > 0.05).

Abstract

Background. Teenage girls are prone to anemia because they are at reproductive age and need three times more iron daily than young men. Anemia in adolescents can cause a decrease in body immunity, concentration, fitness, and productivity. One of the efforts that can be made to contribute to the prevention of anemia is to provide local food-based high protein and Fe snacks, namely by adding tolo bean flour to the pumpkin steamed cake. The resulting sponge contains an excellent nutritional value so that it can be an alternative snack for teenagers with anemia. Research Methods. This research was conducted at the Food Technology Science Laboratory (ITP) of the Mataram Health Polytechnic of the Indonesian Ministry of Health in August 2021. The analysis of the nutritional content of Bolu Kukus Lakulo was conducted at the Analytical Chemistry Laboratory, Mathematics and Natural Sciences Faculty, Mataram University, and the Health Testing and Calibration Laboratory. The consumer acceptance test was conducted at SMAN 9 Mataram. This study used an experimental method with a completely randomized design (CRD). The data collected is on organoleptic properties, nutritional value, and acceptability. The processing method uses descriptive statistical analysis and one-way ANOVA at a confidence level of 95% or alpha 0.05. Research Result. Based on the ANOVA test, it was found that the addition of tolo bean flour had a significant effect on the aroma, texture, and taste of the lactulose-steamed sponge p<0.05. Based on the organoleptic test, treatment t4 (addition of 20% tolo bean flour) was the preferred treatment level by the panelists. The results of the proximate test of Laculo steamed cake with the best treatment had a water content of 43.5%, ash content of 0.90%, fat content of 13, 2%, 7.11% protein content, 35.3% carbohydrates, 17.6 mg Fe content.  Conclusion. An acceptance test was carried out on 30 young women by giving 100 grams of Laculo steamed cake and showed that 27 people (90%) belonged to good acceptance and three people (10%) belonged to poor acceptance.
