Abstract

Micro, Small, and Medium Enterprises (MSMEs) play a pivotal role in Indonesia’s national economy, contributing 61% of GDP and absorbing 97% of the national workforce. Despite this significance, MSMEs face persistent structural challenges including manual production processes, inadequate packaging technology, limited digital marketing capabilities, and the absence of integrated financial recording systems. This community service (PkM) activity was conducted by the Faculty of Economics and Business, Universitas Mercu Buana, in partnership with the MSME Community of Pondok Melati, Bekasi City, involving 30 active MSME practitioners. The program applied a Community-Based Empowerment and Technology Integration approach through five systematic stages: needs assessment, capacity building training, technology implementation, intensive mentoring, and sustainability evaluation. Key interventions included vacuum and nitrogen packaging technology, Point of Sales (POS) systems, the Keuangan Bisnisku digital accounting application, digital marketing training via social media platforms, and the formation of Digital Champions. Evaluation results using a Likert-scale (1–4) questionnaire revealed mean scores of 3.20–3.80 across all indicators, categorized as High to Very High. The program effectively enhanced participants’ business management capacity, improved financial reporting accuracy by up to 92%, and strengthened digital marketing skills. The program contributes to SDG 5, 8, 9, and 17, and supports the Asta Cita national priority agenda.

Abstract

This study describes a community service initiative for undergraduate students at the Deiyai Dormitory in Jayapura, Papua, that aims to improve academic writing skills through LaTeX training. A one-day intensive training program utilizing a practice-based technique was attended by 26 individuals who had never used LaTeX before. Document structure, mathematical formatting, figures and tables, cross-references, and BibTeX were all covered in the training materials. 100% of participants successfully produced simple LaTeX documents, surpassing the 80% goal (+20%), according to the results. However, only over 30% were proficient in creating thesis templates and BibTeX, falling short of the expectations of 60% (−30%) and 70% (−40%). The goal of ≥40 (−35%) was not met by participation (26). In terms of access, the dual-platform concept was validated by the fact that 38% utilized computers and 62% used smartphones via Overleaf. Two completed assignments (goal ≥5) and a learning community with more than thirty participants and more than ten talks over a three-month period were among the post-training outcomes. These findings show a significant short-term increase in fundamental skills, but they also demonstrate the need for continuous interventions and long-term training for advanced competencies.

Abstract

Political debate is an important instrument in political communication because it functions as a means of conveying programs, exchanging ideas, and evaluating the capacity of candidates by the public. This study aims to analyze the dynamics of political communication in the 2024 Wonogiri Pilkada Public Debate based on the function of utterances and message topics using the Functional Theory of Political Campaign Discourse developed by Benoit. The study uses a quantitative approach with a content analysis method on 237 utterance units obtained from the transcript of the 2024 Wonogiri Pilkada Public Debate. Data are coded using the categories of acclaim, attack, defense, policy, and character. The results show that the acclaim function dominates with a frequency of 108 utterances (45.6%), followed by defense with 83 utterances (35.0%), and attack with 44 utterances (18.6%). In terms of topics, policy is the most dominant topic with a frequency of 191 utterances (80.6%), while character appears with 44 utterances (18.6%). Further analysis showed that the future plans category dominated policy discussions with 159 utterances (83.2%), while the past deeds category only accounted for 32 utterances (16.8%). Regarding character, the ideals category was used more often than personal qualities, indicating that candidates more often emphasized values, principles, and commitment to public service than personal qualities. Comparisons between candidate pairs showed that Candidate Pair Number 1 (Tarso–Teguh) tended to use attack strategies more often, while Candidate Pair Number 2 (Setyo–Imron) used defense strategies more often to maintain the legitimacy of existing policies and government performance.

Abstract

The performance of healthcare workers is a crucial factor in determining the quality of healthcare services. However, healthcare worker performance in Indonesia still faces various challenges. Data shows that productive working time for healthcare workers at Community Health Centers (Puskesmas) is only 53.2%, with only 13.3% of that time spent on direct healthcare services. Furthermore, approximately 56% of the 175,000 healthcare workers complain about low incentives, while Indonesia is among the five countries with the lowest levels of healthcare worker motivation in the world. These conditions highlight the importance of implementing effective healthcare human resource (HR) management strategies to improve healthcare worker performance. This study aims to systematically analyze various healthcare HR management strategies for improving healthcare worker performance. The method used was a Systematic Literature Review (SLR) following the Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA) protocol. The literature search was conducted through Google Scholar, the Garuda Portal, and SINTA databases, covering publications from 2021–2026. Fifteen articles meeting the inclusion criteria were analyzed using a thematic synthesis approach.

Abstract

This study aimed to investigate the effect of oyster mushroom (Pleurotus ostreatus) to mirepoix ratio on the physical properties and sensory quality of mushroom seasoning powder as a natural alternative to monosodium glutamate (MSG). The study was motivated by the growing consumer demand for healthier, natural food products and the persistent problem of post-harvest surplus of oyster mushrooms at the farm level. An experimental method was employed with three ratio treatments of oyster mushroom to mirepoix namely 70:30, 60:40, and 50:50 alongside a control treatment (100:0). Physical properties assessed included acidity (pH) and total dissolved solids (°Brix), while sensory quality evaluation covered color, oyster mushroom aroma, mirepoix aroma, umami taste, oyster mushroom taste, and texture, tested under both dry and dissolved conditions. Validation testing was conducted by five expert panelists and sensory quality testing by 45 semi-trained panelists. Data were analyzed using one-way ANOVA for physical properties and the Kruskal-Wallis test for sensory quality, followed by post-hoc tests where significant effects were found. Results indicated that the ratio significantly affected pH (Fcount = 174.889 > Ftable = 4.066) but had no significant effect on °Brix. The 70:30 formulation yielded the optimal sensory profile: pale yellow-cream color, dominant mushroom aroma and taste, strong umami, fine powder texture, and pH closest to neutral.

Abstract

This study aims to examine the effect of raja bulu banana flour (Musa paradisiaca L. var. sapientum) substitution on baking loss and sensory quality characteristics of dry choux pastry (sus kering). The research employed an experimental approach with a Completely Randomized Design (CRD), encompassing three substitution levels 10% (P1), 15% (P2), and 20% (P3) each replicated three times. Baking loss was analyzed using one-way ANOVA, while sensory quality assessment involved 45 semi-trained panelists using a 5-point hedonic scale instrument, subsequently analyzed using the Kruskal-Wallis test and Tukey's HSD post-hoc test at a significance level of α = 0.05. Results indicated that variations in substitution level did not produce significant differences in baking loss values (F calculated 3.36 < F table 5.14), with mean values of 2.10%, 1.96%, and 1.61% for P1, P2, and P3, respectively. From a sensory quality perspective, substitution significantly affected color (H=20.82), cavity/hollow structure (H=19.26), and crispness texture (H=6.39), while aroma (H=3.48), banana flavor (H=4.87), and savory taste (H=0.39) showed no statistically significant differences. The 15% substitution level was identified as the optimal treatment, achieving the best balance between baking loss, textural crispness, cavity formation, and overall sensory acceptance by panelists.

Abstract

The shift in food consumer preferences toward clean-label products has increased the demand for natural dyes, such as those derived from roselle (Hibiscus sabdariffa L.). Despite the potential of roselle as an anthocyanin-rich coloring agent, its application in traditional Indonesian cookies, specifically kue bangkit, remains unexplored. This study aims to analyze the effect of adding red roselle extract on the physical quality and sensory attributes of innovative kue bangkit. An experimental quantitative approach was employed, utilizing roselle extract at 9%, 12%, and 15% concentrations. The research addressed challenges related to pigment stability, flavor modification, and texture maintenance during the baking process. Results indicated that increasing the concentration of roselle extract intensified the pink color and sour taste, with the 15% formulation receiving the highest scores for visual and sensory appeal. The addition of the extract did not significantly affect the baking loss or damage the characteristic crumbly texture of the cookies. In conclusion, a 15% concentration of red roselle extract is the recommended formulation for producing a visually appealing and sensory-acceptable innovative kue bangkit, supporting the potential for local food resource development in the bakery industry.

Abstract

Vocational education demands the implementation of safe learning according to standards, especially in high-risk skill areas such as culinary which desperately require the application of occupational health and safety elements. However, the learning of these elements in vocational high schools is currently still dominated by the lecture method using basic presentation media without direct practical demonstration. This causes a problem because many students experience difficulties in understanding the procedural stages of cleaning food processing equipment which requires accuracy and varied treatments. The absence of demonstrative media hinders the achievement of practical competencies. As a solution, this research aims to develop learning media in the form of a video tutorial on food processing equipment cleaning procedures using a specific development model. The developed product has gone through a series of feasibility tests by material, media, and language experts, and has been tested directly on students. The conclusion of this study indicates that the developed video tutorial learning media is proven to be highly feasible and effective to be used as a supporting learning resource, successfully helping students understand procedural material more clearly, systematically, and interestingly.

Abstract

The gap between high access to technology and low digital literacy remains a major challenge for students at Madrasah Ibtidaiyah (MI) in rural areas. This community service research aims to internalize basic digital literacy and internet ethics based on religious character among sixth-grade students at MI Miftahul Falah, Cikaramas Village. The study employed the Participatory Action Research (PAR) method, involving 27 students as active participants. The activities were carried out through the use of interactive companion media designed to facilitate students' understanding of data privacy, the risks of cyberbullying, and proper communication etiquette in digital spaces. The results demonstrated significant achievements: 85% of the students were able to identify the risks of personal data breaches, while 80% applied the principles of politeness in online interactions. These findings indicate that a participatory approach supported by interactive companion media is effective in bridging the digital literacy gap while strengthening the values of akhlakul karimah (noble moral character). The program also produced a digital module that can be sustainably utilized by the school.

Abstract

Indonesian migrant workers often return with valuable work experience and savings, yet many have limited opportunities to turn these assets into sustainable businesses. This community service program addressed gaps in entrepreneurial readiness, culinary business planning, and food safety awareness among 26 Indonesian migrant workers in Singapore. The program was delivered with D’Gayatri International Pte. Ltd. through short lectures, guided discussion, case examples, hands-on culinary demonstration, cost and pricing exercises, digital marketing practice, and mentoring. Participant learning was assessed using a 10-item pre-test and post-test, while satisfaction was measured through a five-item questionnaire. The mean proportion of correct responses increased from 38.08% to 76.54%. Before training, no participant was in the high-score category; afterward, 20 participants (77%) reached that category. Overall satisfaction averaged 4.42 out of 5 (88.46%). The clearest gains concerned entrepreneurial competencies, corporate mindset, business systems, marketing, and branding. One item on competitor and consumer analysis declined, indicating a need for clearer question wording and stronger market-research practice. The program shows that practical, context-sensitive culinary entrepreneurship training can strengthen migrant workers’ confidence and post-migration business preparedness.
