Abstract

The Pedada fruit (Sonneratia caseolaris) is highly nutritious, containing vitamins A, B, B2, and C and phytochemicals such as flavonoids, steroids, and alkaloids. This study aims to develop Pedada fruit slice jam to enhance the practicality of conventional jam. However, the final product's unattractive color necessitates using natural colorants and bioactive compounds to enhance antioxidant activity. Roselle flower extract (Hibiscus sabdariffa L.), rich in anthocyanins with antioxidant properties, was used as a natural colorant. This research examines the effect of roselle extract on the antioxidant activity and acceptability of Pedada fruit sheet jam using a Completely Randomized Design (CRD) with four treatments: control (without roselle extract), and additions of 30% (P1), 40% (P2), and 50% (P3) roselle extract, each with five replications. Antioxidant activity, hedonic testing, and proximate analysis (carbohydrates, fats, moisture, ash, and protein) were measured. Data analysis was performed using SPSS with one-way ANOVA and Duncan's Multiple Range Test (DMRT) at a 95% significance level. The results show that adding roselle extract significantly enhances antioxidant activity, with the highest IC50 value observed at the 50% treatment (P3) at 25.380 ppm, compared to the control (P0) at 55.429 ppm. Furthermore, the addition of roselle extract improves product acceptability.

Abstract

Transportation is a follow-up activity in cultivation that is useful for moving fish to new habitats. The transportation system used is a closed system that relies on oxygen in it. This system has disadvantages, such as fish being easily exposed to stress due to decreased water quality in the media and disruption of fish metabolism. Therefore, an alternative strategy is needed by anesthetizing the fish to reduce movement and metabolism during transportation. The anesthetic used is sweet potato leaves which contain saponins (21,50%), flavonoids (1,30%), and polyphenols (4,0947 mg/g). This research aims to apply the use of Ipomoea batatas sweet potato leaf extract mixed into water media in the transportation process of prospective black tilapia broodstock Oreochromis niloticus. The research used a completely randomized design (CRD) method consisting of three replications and four treatments, namely treatment K (control), P2 (2 mg/L), P4 (4 mg/L), and P6 (6 mg/L). The results of the research can be concluded that the best treatment in this study was P6 which showed higher survival rates and lower blood glucose levels compared to other treatments (P<0.05), while the water quality parameters between treatments did not significant different.

Abstract

Blue swimming crab (BSC) (Portunus pelagicus) is an Indonesian export commodity for America. The distribution of BSC can be found in the seas of Java, Madura, Sumatra, Bangka Belitung, Kalimantan and Sulawesi. Differences in BSC habitat conditions and climatic conditions in various Indonesian marine locations influence the distribution and abundance of BSC in each location. Information on the distribution and seasonality of BSC in Indonesian seas is still limited. Analysis of the distribution and season of BSC in Indonesian seas based on a study of catch numbers for 2022-2023 PT Kelola Mina Laut. The highest number of catches was in the Madura, West Java and East Java regions, with the lowest number of catches in the Sulawesi and Bangka Belitung regions. The highest total catch occurred in quarter 2 (April-June) and the lowest total catch occurred in quarter 3 (July-September). This research data can be a basis for developing and exploring the potential of BSC in several Indonesian marine locations, but further analysis needs to be carried out regarding other factors that can influence the distribution and season as well as the catch of BSC fishermen in Indonesian seas.

Abstract

Cantang grouper is a hybridization between female tiger grouper and male kertang grouper. Transporting fish using a closed transportation system can cause stress, which results in increased blood glucose levels in fish as a secondary physiological response. This study aims to analyze blood glucose levels and identify bacteria in cantang grouper (Epinephelus fuscoguttatus lanceolatus) distributed from hatcheries in Bali. The results showed that the average blood glucose level reached 102 mg/dL, higher than the normal range (27–56 mg/dL), indicating that the fish experienced stress due to bacterial infection and the transportation process. The cantang grouper observed had been infected with Vibrio alginoliticus bacteria with the lowest TVC value of 98 x 105 CFU/mL and the highest 239 x 105 CFU /mL. The relationship between blood glucose and TVC values is positively correlated. The higher the blood glucose, the higher the TVC value in cantang grouper. Bacterial identification revealed the presence of Vibrio alginolyticus, a major pathogen causing vibriosis in marine fish. This study highlights the importance of improving transportation systems and implementing strict biosecurity to reduce stress and infection in cantang grouper

Abstract

One method to extend the shelf life of fish filets is through antibacterial preservation, which can be achieved using a cassava peel fermentation solution containing lactic acid bacteria that can combat spoilage bacteria in fish. This study aims to determine the effect of cassava peel fermentation solution on the organoleptic quality of red tilapia filets during low-temperature storage (5°-10°C). Red tilapia filets were soaked in a cassava peel fermentation solution with varying salt concentrations across four treatments: 0% (control), 2%, 3%, and 4%, with a soaking time of 30 minutes per filet according to the treatment. Observations were conducted on days 1, 4, 7, 8, 9, 10, 11, and 12, with organoleptic evaluations (appearance, aroma, slime, and texture) and data analysis using the Friedman statistical test, Multiple Comparison, and Bayes test. Results indicated that a 3% salt concentration yielded the best organoleptic value, especially on day 10, with aroma as the highest-ranked parameter according to the Bayes test (weight 0,44), followed by appearance (0,37), slime (0,10), and texture (0,08). Thus, cassava peel fermentation solution with a 3% salt concentration effectively extends the shelf life of red tilapia filets.
