Abstract

The objective of this study was to produce arrowroot starch flakes with dumbo catfish (Clarias gariepinus) flour, as a rich energy, protein, and mineral food for elderly. Design of this study was complete randomized design with four formulas and each combination was replicated two times. A selected formula was determined based on semi trained panelists preference. Acceptance of selected flakes formula was examined by elderly using hedonic test. Flakes by addition of 33.00% of dumbo catfish flour was the selected formula. The chemical properties for selected flakes were as follows 4.00% of water, 4.84% ash, 16.90% protein, 5.21% fat, 69.06% carbohydrate, 14.48% calcium, and 8.61% phosphor. The selected flakes contain 391 kcals energy per 100 g. The selected flakes had contributed more than 20.00% of energy, protein, calcium, and phosphor for elderly people so it can be claimed as a food product rich in energy, protein and minerals.

Abstract

The objective of this research was to analyze the glycemic index values of gembili products. The research consisted of three stages covered: (1) processing of gembili into three treatments (boiled, steamed, and fried), (2) analyzing of nutrient contents in gembili products, (3) measuring of glycemic index of three processed food. Moisture content (wet based/wb) in boiled, steamed and fried gembili were 68.09%, 62.11%, and 49.09% respectively. Ash content (dry based/db) in boiled, steamed and fried gembili were 1.62%, 2.15%, and 2.13% respectively. Fat content (dry based/db) were 0.63%, 0.37% and 7.75%, while protein content (dry based/db) were 3.71%, 2.99%, and 4.25%. Insoluble dietary fiber content (dry based/db) between 11.79% to 13.43%, while was higher than soluble dietary fiber content (dry based/db) between 5.84% to 10.88%. Total dietary fiber content (dry based/db) in boiled, steamed and fried gembili were 19.01%, 18.15%, and 24.30% respectively, while carbohydrate by difference content (dry based/db) were 91.05%, 93.33%, and 88.88% respectively. The results of this study indicated that all glycemic index values of gembili products were high (>70). Glycemic index values gembili boiled, steamed, and fried gembili were 85.56, 87.56, and 83.61 respectively. Analysis of variance test One Way ANOVA showed that those treatments did not significantly affect the glycemic index value (p> 0.05).

Abstract

This research aimed was to know food service and level of customer satisfaction in the Zea Mays cafetaria at Bogor Agricultural University. Case study and descriptive analysis were applied in this study. Sampling method of purposive sampling was carried out and number of subjects used was 95 people. The food service in the Zea Mays cafetaria consists of planning, purchasing, receiving, storing, processing, and distributing. The result of analysis based on Importance Performance Analysis showed that the most important attribute was the security and hygiene product and the highest performance levels was the cleanliness of dining room. More than fifty percent subjects was concerned against nutrient content of the menu (50.5%). Based on the Customer Satisfaction Index the satisfaction value was 69.3 (satisfied). There was a correlation between job and education level with quality of the product and between income with nutrient content (p<0.05).

Abstract

The purpose of this study was to formulate instant baby porridge as a source of protein weaning food based on red beans flour and canna starch composite. The design of this study was a complete randomized design with one factor which was the ratio of red beans flour and canna starch in composite composition as instant porridge ingredient (2:1, 3:1, and 4:1). Based on organoleptic test, F2 which used red bean flour and starch canna ratio by 3:1 was the best formula. The optimal time to brew the instant porridge was 62 seconds with amount of water used was 3 ml/g. The instant porridge bulk density was 0.61 g/ml and water absorption was 4.67g/g. This instant porridge contained 363 kcal/100 g, 16.57% protein, 1.48% fat, 70.84% total carbohydrate, 197.70 mg calcium, 8.17 mg zinc, and 16.48 mg iron. Protein digestibility of this porridge was 79.83%. As per 27 g serving size of this instant porridge can fulfill 22.25% protein, 55.25% iron, 27.63% zinc so that it can be claimed as food source of protein and zinc, and high iron.

Abstract

This study aimed to assess food and nutrients intake, Nutrient Dietary Quality (NDQ), and Desirable Dietary Pattern (DDP) score of children aged 2—6 years.This study was carried out through analyzing a consumption data set of the National Basic Health Research (Riskesdas) 2010 were collected using 24 hour recall method. Total number 16 675 of children aged 2—6 years. The results showed that most children eat cereals (99.4%) and least eat oily seeds (1.6%). The children had deficiency of energy, fats, and water. They also had deficiency of calcium, vitamin A, vitamin B9, and vitamin C. The mean DDP score of the children was 67.1±12.9. The mean NDQ of the children was 62.4±17.1. Correlation between DDP score and each of NDQ was found 0.578—0.621 that showed moderate validity result.

Abstract

The study was aimed to develop Balanced Diet Index (BDI) for Indonesian adult males. The spesific purposes of this study were to assess food consumption pattern of Indonesian adult males, to develop several alternatives of BDIs and to select the most appropriate BDI for Indonesian adult males. The design of the study was cross-sectional, using the food consumption data from Basic Health Research 2010 collected using 24-hours recall method. The data covered 64 448 subjects, and 61 129 of them were analyzed in this study. There were 10 alternatives of BDIs developed based on the food group and their intake, and also their scoring systems. The gold standard used to validate the BDI is the mean adequacy ratio (MAR) measured by mean nutrient adequacy of 16 nutrients. The result showed the pearson correlation coefficient of the BDI and MAR range from 0.46 to 0.64. The most appropriate BDI to determine MAR is BDI3-60 (r=0.64). BDI3-60 consists of six food and implementing 3-level of scoring system.

Abstract

This study was aimed to analyze risk factors of stunting in underfive children aged 24—59 months in Sumatera. A cross sectional study was conducted in 1 239 children at Aceh, North Sumatera, South Sumatera, and Lampung Provinces who have complete variable data of the National Basic Health Research 2010. The data were collected by questionnaires and anthropometric assessment. Chi square analysis and logistic regression were used to assess the association between risk factors and stunting in children. The result showed that prevalence of stunting among children were 44.1%. The significant risk factors of stunting among subjects (p<0.05) were mother’s height (OR=1.36), fat intake (OR=1.30), family size (OR=1.38), and drinking water resources (OR=1.36). The dominant factor that associated with stunting in children was family size (OR=1.38). Researcher suggest that family can control total children with family planning program.

Abstract

The objective of this study was to analyzed the association of percent body fat and nutritional status on sexual development in adolescence girls in urban and rural areas. A cross sectional study involved 100 students of 8th grade junior high school. Age of menarche and breast growth used as sexual development indicators. Results showed that proportion of subjects with stunting and severe stunting was higher in rural area (34%) than urban area (14%). Subjects in urban area had earlier age of menarche (18%). Breast growth of subjects in urban and rural areas were in midpuberty phase. Statistical analysis showed a correlation between nutritional status (BMI/U) and percent body fat, nutritional status and sexual development, as well as percent body fat and sexual development (p<0.05).

Abstract

This study was aimed to assess nutritional knowledge, health complaints, psychological conditions, and their association with breastfeeding pattern on postpartum mother. A cross sectional study with interview method was conducted in five villages in Dramaga Subdistrict, Bogor District, during the period of April to May 2013. Subjects included in this study were 30 postpartum mothers who met inclusion criteria. Subjects were mothers of 10—40 days old newborn baby and it was not the first childbirth, willing to be subject through informed consent agreement, and was able to communicate. The majority of postpartum mothers had fair nutritional knowledge (60.0%), low health complaints (66.7%), and depression (56.7%). The nutritional knowledge of exclusive breastfeeding tended to correlate with exclusive breastfeeding practice (r=0.126; p=0.508). Meanwhile, lower health complaints tended to correlate with better breastfeeding practices (r=0.063; p=0.74).

Abstract

The objective of this study was to analyze the association of fiber consumption with nutritional status and blood lipid profile in dyslipidemic adults. The design study was cross sectional survey involving 79 subjects. The results showed that there were significant correlations between energy intake with High Density Lipoprotein (HDL) cholesterol and total cholesterol, fat intake with BMI (Body Mass Index), and BMI with Low Density Lipoprotein (LDL) cholesterol and total cholesterol (p<0.05). There was no significant correlation between consumption of fiber with nutritional status and blood lipid profile (p>0.05). In conclusion, most of the dyslipidemia subjects were obese. Dyslipidemia subjects should keep their intake of energy and fat in recommended ranges in order not to be obese and keep the BMI in normal range to avoid abnormalities of blood lipid profile.
