Abstract

This research aimed was to know food service and level of customer satisfaction in the Zea Mays cafetaria at Bogor Agricultural University. Case study and descriptive analysis were applied in this study. Sampling method of purposive sampling was carried out and number of subjects used was 95 people. The food service in the Zea Mays cafetaria consists of planning, purchasing, receiving, storing, processing, and distributing. The result of analysis based on Importance Performance Analysis showed that the most important attribute was the security and hygiene product and the highest performance levels was the cleanliness of dining room. More than fifty percent subjects was concerned against nutrient content of the menu (50.5%). Based on the Customer Satisfaction Index the satisfaction value was 69.3 (satisfied). There was a correlation between job and education level with quality of the product and between income with nutrient content (p<0.05).

Abstract

The prevalence of pneumonia in infants in Jambi province has increased the last few years, especially the city of Jambi in 2015 by 44.14%. Pneumonia is also widely recorded in the health center of Jambi. The purpose of this research is to identify factors that correlate with the incidence of infant pneumonia in two centers of Jambi City. The research was conducted at the site of Tahtul Yaman and Kebon Handil Puskesmas working area with the design of case control correlation. Sampling technique with purposive sampling amount of 55 (case) and 55 (control). Test the analysis using Chi Square and logistic regression. The Chi Square test is derived that the exclusive ASI-history factor, ISPA history, Mother's education, treatment history and environment has a significant relationship with the incidence of infant pneumonia (P value < 0.05). The test results of a logistic regression model found that the most correlated factor of Pneumona is the exclusive ASI-history, ISPA history, and treatment history. Researchers expect an effort to raise the awareness of mothers on prevention of infant pneumonia.

Abstract

Prevalensi obesitas di Indonesia meningkat pada tahun 2013, pada laki-laki maupun perempuan dewasa. Obesitas berhubungan dengan penyakit penyerta (komorbiditas), seperti kanker, diabetes mellitus, hipertensi, jantung iskemik, osteoartritis, dan stroke. Dengan demikian, akan memengaruhi peningkatan biaya perawatan kesehatan. Secara umum penelitian ini bertujuan mengestimasi kerugian ekonomi akibat biaya perawatan kesehatan langsung pada orang dewasa obesitas seluruh provinsi di Indonesia dengan menggunakan data sekunder. Penelitian dilakukan dengan desain cross sectional study. Biaya perawatan kesehatan yang dihitung merupakan biaya langsung meliputi biaya rawat jalan dan rawat inap. Biaya perawatan kesehatan akibat obesitas diestimasi dari perkalian jumlah orang yang mengalami obesitas disertai penyakit penyerta dengan rata-rata biaya perawatan dan proporsi kejadian komorbiditas pada populasi obesitas. Proporsi kejadian komorbiditas pada populasi obesitas digunakan untuk mengestimasi masing-masing komorbiditas yang diakibatkan oleh obesitas. Hasil penelitian menunjukkan bahwa Provinsi Jawa Barat merupakan provinsi dengan jumlah biaya rawat jalan terbesar (219 miliar rupiah) jumlah biaya rawat inap terbesar (13254 miliar rupiah) di Indonesia. Komorbiditas dengan biaya perawatan kesehatan terbesar adalah pada kasus penyakit diabetes mellitus (27486 miliar rupiah). Total biaya langsung yang dikeluarkan akibat obesitas pada subjek perempuan lebih tinggi daripada subjek laki-laki di Indonesia (45234 miliar rupiah dan 11252 miliar rupiah).

Abstract

ABSTRACT The period of pregnancy is an important period early in the human life cycle, so the nutritional status and health must be optimized. The problem that many occur in pregnant women is the restriction of the type and amount of food consumed. One of them is due to food taboos. The purpose of this study was to describe the type of food taboos, symbolic meaning of food taboos on pregnant women in Indonesia, and its nutritional aspects. This study was a literature review, by collecting articles through the database online. Number of articles or libraries that have been collected to be reviewed were 38 reading materials, consist of 19 scientific articles, 10 research result in the form of thesis / dissertation, and 9 research result book with ethnographic approach. The results showed that the most abundant food taboos by pregnant women is the group of animal food dishes that are useful for fetal growth and development, such as squid and catfish. It is necessary to educate primarily on pregnant women to begin to avoid food taboos, and the importance of protein intake for fetal development early in human development cycle. Keywords: Nutrition, pregnant woman, symbolic meaning, food taboos ABSTRAK Periode kehamilan merupakan periode penting di awal siklus kehidupan manusia, sehingga status gizi dan kesehatannya harus dioptimalkan. Masalah yang banyak terjadi pada ibu hamil adalah pembatasan jenis dan jumlah makanan yang dikonsumsi. Salah satunya dikarenakan tabu makanan. Tujuan penelitian ini adalah mendeskripsikan jenis makanan yang ditabukan, makna simbolis tabu makanan bagi ibu hamil di Indonesia, dan aspek gizinya. Penelitian ini merupakan literature review, dengan mengumpulkan artikel melalui database secara online. Jumlah artikel atau pustaka yang berhasil dikumpulkan untuk ditelaah sebanyak 38 pustaka, terdiri dari 19 artikel ilmiah, 10 hasil penelitian berupa skripsi/tesis/disertasi dan 9 buku hasil penelitian dengan pendekatan etnografi. Hasil penelitian menunjukkan bahwa makanan yang paling banyak ditabukan oleh ibu hamil adalah kelompok makanan lauk hewani yang berguna bagi pertumbuhan dan perkembangan janin, seperti cumi-cumi serta ikan lele. Perlu adanya edukasi terutama terhadap ibu hamil untuk mulai menghindari tabu makanan dan pentingnya asupan protein untuk perkembangan janin di awal siklus perkembangan manusia. Abstract

ABSTRACT Chronic Energy Deficiency (CED) is one of the many nutritional problems occurring in pregnant women. The causes of CED are related to food availability and food consumption vulnerability that is affected by poverty, low education, and customs or beliefs including food taboos. The purpose of this study is to describe the types of food taboos, symbolic meaning tabooed by pregnant women, and the incidence of CEDs in pregnant women in Anak Dalam tribe in Bungku Village, Bajubang District, Batanghari Regency, Jambi. The study design was a cross-sectional study and carried out in January-July 2019. Respondents in this study were 31 pregnant women. Data collected include mid upper arm circumference (MUAC), respondent characteristics, and food culture of pregnant women. Data analysis was performed descriptively. The results showed that various foods were regarded as the taboo foods including carbohydrate, protein and vitamin sources The symbolic meaning of each group is hot food that causes miscarriage, the membranes become thick and blood can clot, miscarriages, and infants become fertile. The measurement results show that two-thirds of respondents are at risk of CED. Education is needed to straighten out the taboo food misperception of pregnant women. Keywords: Pregnant women, CED, food taboos, Suku Anak Dalam ABSTRAK Kurang Energi Kronik (KEK) merupakan salah satu masalah gizi yang banyak terjadi pada ibu hamil. Penyebab KEK terkait dengan ketersediaan makanan dan kerawanan konsumsi makanan yang dipengaruhi oleh kemiskinan, rendahnya pendidikan, dan adat atau kepercayaan termasuk tabu makanan. Tujuan penelitian ini adalah mendeskripsikan jenis tabu makanan, makna simbolis yang ditabukan ibu hamil, dan kejadian KEK pada ibu hamil di Desa Bungku, Kecamatan Bajubang, Kabupaten Batanghari, Jambi. Desain penelitian crossectional study dan dilaksanakan pada bulan Januari-Juli 2019. Responden pada penelitian ini adalah 31 orang ibu hamil. Data yang dikumpulkan pada penelitian ini meliputi lingkar lengan atas (LILA), karakteristik responden, dan budaya makanan ibu hamil. Pengumpulan data dilakukan dengan wawancara dan pengukuran. Analisis data dilakukan secara deskriptif. Hasil penelitian menunjukkan bahwa bahan makanan yang ditabukan meliputi makanan sebagai sumber karbohidrat, protein dan vitamin. Makna simbolis dari masing-masing kelompok berturut-turut adalah makanan panas yang menyebabkan keguguran, ketuban menjadi tebal dan darah mudah membeku, keguguran, dan bayi menjadi subur. Hasil pengukuran menunjukkan bahwa dua pertiga responden berisiko KEK. Perlu edukasi untuk meluruskan mispersepsi tabu makanan terhadap ibu hamil. Abstract

Background: The largest demand for cooking oil in Indonesia is dominated by the use of coconut cooking oil with a breakdown of 8.954 million tons for palm cooking oil. Indonesia's most favorite food product is fried food. Fried food is one of the snacks that is always present when gathering. Examples of molen, fried tofu, fried tempeh, fried banana, fried bakwan, with deep frying methods that use a lot of oil, so that it has an impact on the use of cooking oil repeatedly and causes damage to cooking oil. Aims: aims to determine the chemical damage of used cooking oil based on the test parameters of water content, free fatty acid content and peroxide number content in accordance with the 2019 SNI palm cooking oil standard Methods: Descriptive non-experimental research is survey in nature, by collecting data interviews and questionnaires. This research was conducted in May-June 2023. The method of determining the sample is total sampling and univariate data processing. Results: The results showed that of the 10 samples of cooking oil used by fried food traders in private universities in Jambi City, there were 10% moisture content, 10% free fatty acid content and there were 100% peroxide number levels that did not meet the 2019 SNI standards. Conclusion: Of the 10 samples of used cooking oil from fried food traders in private universities in Jambi City, there was 1 sample of used cooking oil H that did not meet the 2019 SNI palm cooking oil quality standards

Abstract

In general, school children have even ofien bought snacks sold in the canteen or around the school without realiziling that some of the snacks consumed can later endanger their health. There are two direc and indirect causes of nutrition problems. Natural causes such as foot and disease can directly cause malnutrition. This study aimed to determine the relationship between snack consumption and mutritional status in students of SD N 90/VI Durian Lecah, Merangin Regency. The study was a quantitative study with a cross-sectional research design. This research was conducted ar SD N 90/VI Durian Lecah, Merangin Regency, in June 2023. The population in this study amounted to 178 respondent. The sample of this study amounted to 70 respondent using simple random sampling technique. This research was conducted by distributing SQ-FQ questionnaires. The results showed that the most dominant frequencydistribution of respondent snack consumption was unfavourable to as many as 55 respondent (78.6%). The most dominant frequency distribution of respondent nutritional status was undernutrition, wits as many as 57 respondent (81.4%). In this study, it can be concluded that a significant relationship exists between snack consumption and nutritional status in student of SD N 90/VI Durian Lecah, Merangin Regency. Abstract

Myth is one of the causes of nutritional problems in adolescents. There is a lot of knowledge in the form of myths that have been passed down from generation to generation by teenagers with scientifically uncertain truths, including adolescense girls at SMA N 9 Tanjung Jabung Timur. This is one of the causes of the low consumption of vegetables and fruit on the grounds of not avoiding vegetables and fruit due to myths. This community service activity was carried out at SMA N 9, Tanjung Jabung Timur Regency. The implementation of this activity will be from February 2021 to July 2021. The target of this activity is SMA N 9 Tanjung Jabung Timur students. The method used in the implementation of this activity is the lecture and discussion method. The results obtained in this activity are the target of understanding the material about myths and facts about vegetables and fruits. It is suggested to the school to be able to work together with the puskesmas and the local Health Office to provide education regarding the benefits of vegetables and fruit.

Abstract

Abstract Posyandu is a form of Community-Based Health Efforts (UKBM) which is managed by the community, especially in monitoring nutritional status. Nutrition status monitoring is important because nutrition influences brain development and behavior, work ability and productivity as well as resistance to infectious diseases. Toddlers are an age group that cannot yet manage their own food so parents need supervision, a group of toddlers vulnerable to malnutrition. So that the proper way of Infant and Child Feeding (PMBA) is important to be socialized. The implementation method is in the form of counseling, discussion, practice simulation and pre-post test evaluation. Evaluation monitoring is carried out by looking at indicators of success in the aspect of attendance of targets attending each meeting at the service activities and practices to the target, reflection and feedback from participants as well as PMBA practice behavior can be implemented by the target. After education, there is an increase in the ability of mothers to practice PMBA simulations. It was concluded that the use of media in providing information to mothers is very effective in increasing the ability of mothers in the correct PMBA so that it is expected to reduce nutritional problems in children. A program that is continuous with supervision by health workers and involves cadres in providing information to mothers of toddlers needs to be done.

Abstract

The problem of stunting is one of the nutritional problems in the world, especially in poor and developing countries. Stunting is a problem because it is associated with an increased risk of illness and death, suboptimal brain development, resulting in delayed motor development and stunted mental growth. For this reason, stunting needs to be prevented from an early age. On of the prevention efforts is training and counseling cadres related to stunting. Cadres are agents of community mobilization who assist in the proper implementation of the posyandu. For this reason, the cadres understanding of stunting must be improved. This community service activity is carried out at the community Health Centre Tungkal II, Tanjung Jabung Barat Regency. This activity will be held in Desember 2019. The target of this activity is cadres. The methode used in the implementation of this activity is the lecture and demonstration method. The results obtained in this activity are the goal of understanding material about stunting and also being able to demonstrate anthropometric measurements (weight and length/height). It is recommended that the community Health Centre Tungkal II be able ti work training related to stunting education so that cadres can understand the importance of preventing and overcoming stunting.
