Abstract

This study was aimed to observe association between consumption pattern and physical activity with strength and endurance of taruna in Immigration Academy, Depok, West Java. A cross sectional study using 63 taruna as study participant was conducted. The results of study showed that there was significant correlation between nutritional status and strength of taruna (p<0.05). There was no significant correlation between adequacy levels of energy, protein, fat, carbohydrate, calcium, iron, vitamin A, vitamin B1, vitamin C, physical activity with strength and endurance (p>0.05). There was no significant correlation between nutritional status with endurance of taruna (p>0.05).

Abstract

The objectives of this study were to assess food service management, food acceptance, and the consumption’s level of students boarding school dormitory SMA 1 Pemali Bangka Belitung. The research was conducted in May—July 2013 with a cross sectional design. Subjects were purposively chosen with the total of 71 students. As many as 51.0% of components of food service management system have already been applied consisted of planning, purchasing, storage, processing, serving, personal hygiene, and sanitation. Spearman correlation analysis showed that the preference level for taste of food was significantly associated with energy and protein sufficiency level (p<0.05). The preference level for temperature of food was significantly associated with sufficiency levels of phosphorus (p<0.05). Preference level for temperature of food was significantly associated with compliance level of energy and iron (p<0.05). The level of compliance was significantly associated with sufficiency level of energy, iron, phosphorus, and zinc (p<0.05). Energy, protein, fosfor, iron intake from dormitory was significantly negatively associated with intake from non dormitory (p<0.05).

Abstract

This research aims to analyze the nutritive value of flour head, liver powder and bone meal as by product of Indonesian eel (Anguilla bicolor) processing. Eel waste flour was made by using a thermal process in the drum dryer fish flouring mill PT. Carmelitha Lestari in Bogor, whereas proximate analysis for chemical tests were performed in the laboratory of Integrated Chemical Laboratory, IPB and direct observation was conducted in PT Jawa Suisan Indah, Palabuhanratu Sukabumi district in October 2012—April 2013. The nutritive value based on proximate analysis showed that head flour, liver flour, and bone flour contained protein 61.78%, 53.92%, and 41.01%; fat 15.55%, 27.28%, 13.07%; carbohydrate 11.48%; 14.96%, 8.13%; water 5.44%, 8.48%, 3.01%; ash 12.95%, 3.62%, 37.49%, and crude fiber 1.33%, 0.04%, 1.11%, respectively.

Abstract

The objective of this research was to analyze changes in bioavailability of zinc (Zn) caused by addition of Na2EDTA and processing of fortified wheat flour. Bioavailability of zinc was tested by in vitro method as a simulation of human digestive track. The result showed that there was no significant difference in the bioavailability of zinc on wheat flour which is processed by frying (donuts), steaming (steamed bun), and baking (bread) (p>0.05). However, there was a tendency to increase the bioavailability of wheat flour processed by frying (donuts) and baking (bread) when compared to the raw dough. Raw dough had bioavailability of zinc 13.29%, after frying (donut) increase to 14.72%, and after baking (bread) increase to 17.06%. The addition of Na2EDTA also did not increase bioavailability of zinc significantly for the three types of processing (p>0.05), despite increased bioavailability of zinc on the donuts by 4.67%.

Abstract

The objectives of this study were to analyze relationship of maternal height, nutrients intake and nutritional status in children under five years. The study design used was cross-sectional study with 90 children as subjects that consisted of 47 stunting children and 43 normal children. This study showed that short mothers (height <150 cm) were more prevalent in stunting children (74.5%) compared to normal children (60.5%). Energy and protein adequacy level of stunting and normal children were relatively severe deficient. There were no significant relationship between maternal height and energy adequacy level with nutritional status. However, there was a negative relationship between protein adequacy level with nutritional status (p<0.05; r=-0.223).

Abstract

The study aimed to analyze correlation between dietary fiber and water intake with defecation pattern among elementary school students. A Cross-sectional design was used in this study. Subjects were 527 students of V and VI grades. The results showed that the mean of fiber and water intake of students was categorized as low. The average dietary fiber intake was 12.4 g/d. The average water intake was 1 086 ml. The average frequency of bowel movements was six times/week with the consistency of the stool according to Bristol Stools Chart categories was normal (type 4). Based on correlation test, there was significant correlation between fiber intake with stool frequency and consistency of stool (p<0.05). However, there was no significant correlation between fiber intake with painfulness during defecation, water intake with stool frequency, consistency of stool, painfulness during defecation, and constipation (p>0.05).

Abstract

Gotu Kola is a herbal plant that can improve cognitive ability. This study aims to find a flakes formulas of composite flour of arrowroot starch and cassava flour with addition of gotu kola as a functional food for elementary school children’s breakfast. The tests show that the final selected formula flakes (FTA) are the flakes made of 60% arrowroot starch, 40% of cassava flour, with 2.5% addition of gotu kola. Acceptance test show that 91.67% of consumer target accept FTA. The results of physical analysis show that FTA have 51.04 g/mmof hardness, 273.79% of water absorption, and 0.13 g/ml of bulk density. The results of nutrition content analysis show that FTA contained 3.28% of water, 1.35% of ash, 0.43% of fat, 3.09% of protein, 91.86% of carbohydrate, and 384 kcal of energy, 11.33 mg/100 g of Ca, 5.93 mg/100 g of Fe, and 52.45 mg/100 g of P. Nutrient contributions of flakes FTA against RDA of children aged elementary school are 6.39—8.39% for energy, 1.80—3.09% for protein, 0.21—0.24% for fat, 11.13—14.61% for carbohydrate, 0.33—0.40% for Ca, 14.83—25.95% for Fe, and 1.47—3.67% for P.

Abstract

The objective of this study was to analyze the intake of energy and nutrients, nutritional status, and anemia status in adolescent boys with drug abuse at boys penitentiary class IIA Tangerang. This study used cross sectional design. Subjects of this study were adolescent boys with drug addiction. Sampling method used was purposive sampling and the number of subjects was 40 people. Descriptive analysis showed energy (35.0%) and protein (27.5%) adequacy level were categorized as severe deficit. Mean energy from food provided by the penintentiary hadn’t met subjects’ daily requirement while mean protein had met subjects’ daily requirement. Iron adequacy level was categorized as adequate (82.5%) and vitamin C adequacy level was categorized as inadequate (100.0%). Most subjects had normal nutritional status (85.0%) and anemia (57.5%).

Abstract

The objective of this study was to analyze the relationship between energy-protein intake and exercise frequency with cardiorespiratory endurance and muscle mass. The study was conducted between October 2013 and February 2014 at campus of Bogor Agricultural University. Design of the study was cross sectional.Subjects were 25 students of football UKM and 25 students of non-UKM groups. In average, nutritional status of subjects was normal. Intakes and adequacy level of energy, protein, fat, and carbohydrate of subjects in UKM group were significantly higher than intakes of non-UKM group. Exercise frequency of subjects in UKM group was more frequent (4.04 times/week) than that of non-UKM group (1.24 times/week). Cardiorespiratory endurance of UKM group (40.1 ml O2/kg BW/minute) was significantly higher than of non-UKM group (36.2 ml O2/kg BW/minute). However, the muscle mass of subjects was not significantly different, namely 28.3 kg in UKM group and 28.4 kg in non-UKM group. There was a significant relationship between cardiorespiratory endurance and energy intake(p=0.003, r=0.415), protein intake (p=0.009, r=0.365), and exercise frequency (p=0.004, r=0.395); but there was no significant relationship between muscle mass and exercise frequency, energy nor protein intake (p>0.05).

Abstract

The objective of this study was to analyze the effectiveness of vitamin C, vitamin E and multivitamin-mineral supplements on reducing plasma malondialdehyde (MDA) level among college students of IPB. The design of this study was quasi experimental with pre-post test and control design. The subjects were 24 healthy students and divided into 4 groups, namely 1) vitamin C group (given supplement of vitamin C 500 mg), 2) vitamin E group (given supplement of vitamin E 200 IU), 3) multivitamin-mineral group (given a supplement consisted of vitamin C 500 mg, vitamin E 30 mg, zinc 15 mg and copper 1.5 mg), and 4) control group who were not given any supplement intervention. The supplements in the form of capsule were given once daily for seven days. Before the intervention, the plasma MDA level of subjects were not different significantly (p>0.05). After 7 day intervention, the MDA level of VC, VE, and MVM group were reduced significantly compared to before intervention (p<0.05), whereas plasma MDA level of control group seemed increased although not significant compare to pre-intervention. The largest reduction was occured on vitamin E group (-55.1%), followed by vitamin C group (-47.2%), and multivitamin-mineral group (-44.7%). The ANOVA test shows that there was a significant difference on reduction of plasma MDA levels among groups. The difference occured between control group and each of intervention group of VC, VE, and MVM. There were no significant differences between two groups of intervention (p>0.05). Hence, the study shows that in 7 day intervention, vitamin C, vitamin E or multivitamin-mineral supplement had relative similar effects on reducing plasma MDA level.
