Abstract

Breadfruit is valuable fruit and has a good of nutrient content, but its usage is limited by poor storage properties of fresh fruit. Processing into flour, can increase its utilization. The aim of this research was to utilize breadfruit flour in production of nutritious snack foods for School Supplementary Feeding Programme (PMT-AS). There were three products developed in this study; brownies, pia, and croquette. The research was conducted using experimental design. The proportions of breadfruit flour and wheat flour were different for each product, which brownies was formulated using 70:30, 80:20, 90:10, and 100:0; whereas pia and croquette was formulated by 50:50, 60:40, 70:30, and 80:20. Proximate analysis showed that 100 g brownies contained 409 kcal energy and 7.5 g protein, 100 g pia had 383 kcal energy and 6.7 g protein and croquette had the highest energy and protein content is 455 kcal and 9.9 g protein. In conclusion, all products were suitable as alternative snacks for PMT-AS. The products have met 300 kcal energy and 5 g protein per serving size. Considered also the cost of production, these products have fulfilled criteria to be used in PMT-AS.

Abstract

The objective of this study was to analyze fish consumption in Indonesia 2005— 2011. Data used in this study was based on the National Social and Economic Survey (SUSENAS). The study showed average national fish consumption 26.04 kg/capita/year, with average growth rate 0.05% per year. Fish consumption was higher in urban (26.51 kg/capita/year) than rural area (25.69kg/capita/year). Contribution of fresh fish and processed fish was higher in urban than rural area (63.0% and 14.0%). Processed food containing fish was higher in rural (8.30 kg/capita/year) than urban area (6.09 kg/capita/year). Low expenditure households consumed fish lower than the high expenditure. Recommendation of fish consumption is 32.70 kg/capita/year or 12.89 g protein/capita/day. The National fish requirement is projected 8.10 million tons at 2015.

Abstract

This study aimed to assess the antioxidant potential of chocholate-rice bran oil-emulsion beverage and meniran extract beverage. RBO beverage was made using oil in water emulsion with sugar ester as the emulsifier.Four formulas was created with the RBO-chocolate concentrate : water ratio of 1:1, 1:3, 1:5, and 1:7. Meanwhile the meniran beverage was made by adding extract meniran in five different concentrations (30, 40, 50, 60, 70 ppm) along with flavor and sucralose. The selected emulsion beverage had the AEAC value of 30.75 mg Vit C/100 g, while the meniran extract beverage had the AEAC value of 9.12 mg Vit C/100 g with the total fenol of 92.75 mg/100 g. The results of TBA value, content of protein, fat, carbohydrate, ash, and water of the emulsion beverage were 0.12 mg malondialdehyde eq/kg, 0.24%, 0.52%,6.74%, 0.15% and 92.32%, respectively. Increasing concentrations of chocolate and RBO significantly affected the results of the chemical parameters (p<0.05). Overall, the chocolate emulsion beverage based on RBO and meniran extract beverage had high antioxidant activity that are potential to prevent non-communicable diseases.

Abstract

The purpose of this research was to find out acceptance and preference of households and catering to non-branded cooking oil fortified with carotene from Red Palm Oil (RPO). The subjects in this study was 30 people respectively for each households and catering. Data was collected through interviews and discussions using questionnaires. Data of subjects acceptance and preference were analyzed using descriptive statistics and Friedman test. Average cooking oil used by household subjects was 0.185+0.070 kg/day and catering was 3.87+2.46 kg/day. Most households (73.3%) and catering (66.7%) could not accept cooking oil fortified with carotene from RPO due to its colour and aroma. Fortified cooking oil had orange colour and rotten aroma (of odor). More than half of households (66.7%) and catering (63.3%) could not accept the fried product using fortified cooking oil because of its yellow colour. Friedman test showed that there were differences in both subjects acceptance to nonfortified and fortified non-branded cooking oil (p<0.05). Both household and catering subjects preferred nonfortified cooking oil.

Abstract

The purposes of this research was to analyze the influence of individual characteristics, nutritional knowledge, nutrition claim’s knowledge, perception and attitude on nutrition claim of maternal milk product on purchasing decision. This research used cross sectional study design, on 60 pregnant women that consisted of 30 who have consumed and 30 who didn’t consume maternal milk products. This research was conducted in working area of Public Health Centre Ciampea, Bogor District which was choosen purposively. Dependent variable in this research are individual characteristics, nutritional knowledge, nutrition claim’s knowledge, perception and attitude on nutrition claim, meanwhile independent variable in this research is purchasing decision of maternal milk product. Statistic analysis used in this research were Mann Whitney and logistic regression analysis. Education level, family income, income per capita, and nutrition knowledge of subject who consumed maternal milk product was better than who did not consume maternal milk. The opportunity of purchasing decision on maternal milk product would increase 3,99 times if education level was more than 9 years, 4,18 times when family income was more than Rp 1.500.000 every month, and 3,69 times when index of nutrition claim’s perception was more than 65. This research is intended to increase awareness for understanding nutrition claim on maternal milk products and can help food industry to identify factor that influence purchasing decision on maternal milk products.Keywords: maternal milk product, nutrition claim, pregnant women, purchasing decision

Abstract

The aim of this study was to analyze difference and compare the determinants of stunting among under five years children considering different ecosystem in Kupang. It is an observational study using case control of under five children with and without stunting. There were 132 subjects chosen from lowland, middleland region, and mountainous ecosystem zones. Data was analyzed using Multiple Logistic Regression Analysis. The analysis resumes that determinants of stunting in lowland area is energy intake (p=0.002; OR=0.059; 95%CI:0.010-0.359), energy intake is a protective factor, in the middleland region is love and cares (p=0.002; OR=9.247; 95%CI:2.213-38.644) and sanitation (p=0.046; OR=2.832; 95%CI:1.020-7.860). Furthermore, the environmental sanitation as the factor in mountainous area (p=0.034; OR=3.978; 95%CI:1.112-14.230). The impact of stunting if left untreated will cause problems for generation in the future, for example impairment of mental development and physical growth, and it will end in poverty and the threat of life survival, so it need a proper intervention to handle it.Keywords: determinants, ecosystem zone, stunting

Abstract

The purpose of this study is to determine prevalence of at risk inadequate intake of dietary zinc, and to analyze differences of zinc serum level between dietary zinc quintile and stunting status. A cross sectional study was conducted to 70 school children (9-12 years) selected by simple random sampling. Height was measured by stadiometer and weight was measured using calibrated digital weight-scale. Zinc serum level was analyzed by Atomic Absorbance Spectrophotometry (AAS) method, and dietary intake of zinc and iron was obtained using semi-quantitative Food Frequency Questionnaire (FFQ). Data were analyzed using Anova test. Seventy percent subjects were at risk inadequate intake of dietary zinc based on Estimated Average Requirement (EAR) cut off and zinc serum levels among all subjects in this study were <65 μg/dl. There were 47.1% stunting children found in this study. Mean zinc serum levels significantly differences between dietary zinc quintile (p=0.000) and between stunting status (p=0.000). At risk inadequate dietary zinc still contributed to zinc deficiency in coastal school children population. Abstract

The objective of this quasi experimental study was to analyze effectiveness of three iron supplementation on hemoglobin concentration of adolescent girls. Three intervention groups have received iron supplements (60 mg of iron elemental and 0.25 mg folic acid) for 14 weeks in March-June 2015 in Tasikmalaya District. The groups received supplementation weekly (M), weekly and daily for ten days during menstruation period (M+Mens), and weekly and nutrition education (M+PG) supplementation respectively. The result showed that the mean change of hemoglobin was not significantly different among the three groups (M+PG 0.63±1.16 g/dl, M+Mens 0.48±1.04 g/dl, and M 0.44±1.13 g/dl) (p>0.05). Iron supplementation could reduce the prevalence of anaemia by 15.8% (M), 18.0% (M+Mens), and 4.9% (M+PG). Weekly iron supplementation was as effective as weekly and daily during menstruation period on hemoglobin change among adolescent girls. Iron supplementation in adolescent is better done intermittently (weekly) with benefit addition the high compliance in supplement consumption.Keywords: adolescent, anaemia, hemoglobin, iron supplementation

Abstract

This research was conducted to compare physicochemical characteristics of germinated soybean tempe flour (GST flour) and soybean tempe flour (ST flour). Soybean was germinated within 28 hours and then processed into tempe. Germinated soybean tempe and soybean tempe were freeze-dried for 26 hours, and then milled into GST flour and ST flour. The GST flour and ST flour were used for physical and chemical analysis. The used of germinated soybean was proven to affect the quality of flour. GST flour had 53.37 % db protein, 24.97 mg AEAC antioxidant capacity/100 g tempe, 5.08 mg tocopherol/100 g db, 81.75 mg isoflavone/100 g db, and minerals (Ca, P, Fe, Zn) which were higher than that of the ST flour. GST flour also had better quality than that of ST flour, in term of: higher bulk density (0.42 g/ml), lower water activity (0.63), and lower repose angle (39.94o).Keywords: chemical characteristic, germinated soybean tempe, physical characteristic, soybean tempe

Abstract

This study aimed to find a functional food formulas (FFF) based on local food as breakfast product, that can be accepted organoleptically, nutritious, and contain antioxidants for overweight/obese adolescents. This study was laboratory experiment, randomized complete design and using five level of one factor of treatment (proportion of carrot: pumpkin were F1 7.14%:19.64%; F2 8.93%:17.86%; F3 10.71%:16.07%; F4 12.50%:14.29%; and F5 14.29%:12.50%). The result showed that 80-100% of semi-trained panelis accepted all FFFs (F1, F2, F3, F4, and F5) organoleptically. There was a significant effect of level of treatment (F1, F2, F3, F4, and F5) on the color, flavor, and overall of FFFs (p<0.05). Product F5 had the highest percentage of acceptance and the average value than other products. F5 consisted of 30.36% orange sweet potato, 28.57% red beans, 8.93% fermented soybean (tempeh), 14.29% carrot, 12.50% pumpkin, 3.75% sugar, and 1.79% cornstarch. Each portion of F5 product could contribute about 20% of the recommended energy and protein adequacy for adolescents, and it’s contain 4.02 mg of β-carotene and antioxidant activity 38.54 mg/100 g (AEAC). The total microbe content of F5 was 9.6 x 102 coloni/g, still below the threshold for a type of processed product, so that these products are safe to eat. The resulting product has the potential as a functional food because of the content of β-carotene and it's antioxidant activity and can be considered as a breakfast product for overweight/obese adolescents.Keywords: adolescent, functional food, local food, obese, overweight
