Abstract

The aim of this study was to determine the efficacy of formulated tempe-yam supplementation on weight for age z-score of underweight children aged 2-4 years. A quasi experiment pre-post test with control group design was applied in this study for four weeks. The intervention group consist of 19 children given formulated tempe-yam 100 g/d; and the control group consist of 19 children given biscuit 100 g/d in Padang Pariaman district, West Sumatera. Data collected included weight, height, and albumin level. Paired t-test was applied for the data analysis. The results of this study found significant differences in albumin level before and after on control group (p<0.05). Then, the results of this study also found significant differences in weight for age z-score before and after on intervention group (p<0.05). Therefore, formulated tempe-yam supplementation as food sumplementation need to be considered for underweight children.Keywords: albumin level, food suplementation, tempe-yam, weight-for age z-score

Abstract

The general objective of this study was to analyze the effect of intervention of the grass jelly on level of MDA (malondialdehyde) in adult male smokers. The design of this study was a quasi experiment with pre-post test with control. The subjects were divided into four groups, consisted of 1) control (K); that was not given any food intervention; 2) P1 that was given food intervention for 14 days; 3) P2 that was given food intervention for 21 days; and 4) P3 that was given food intervention for 28 days. Subjects were requested to consume grass jelly drink everyday as much as 200 g/d. All subjects had high level of MDA at pre-intervention. The result of this study shows that MDA levels of subjects at post-intervention in the treatment groups decreased significantly (p<0.05). The highest decrease was occured on P3 (49.82%). Hence, the intervention of grass jelly drink as much as 1 portion (200 g) could reduce MDA level of plasma; and the longer the intervention, the higher the reduction.Keywords: antioxidant, grass jelly drink, MDA

Abstract

The objective of this research was to analyze the effect of olein and super olein palm oil on blood lipid profile (total cholesterol, LDL cholesterol, HDL cholesterol, and triglyceride) and fatty liver condition of Sprague Dawley rats. The design used was pre and post test with control group design. The intervention run for 8 weeks using 20 rats which were divided into four treatments i.e: (1) standard-low fat feed and water (negative control/KN), (2) standard-low fat feed and dried egg yolk (positive control/KP), (3)standard-low fat feed and olein palm oil (B), and (4) standard-low fat feed and super olein palm oil (A). Results showed that blood lipid profile of rats at baseline were not different among treatment groups, while at midline super olein group has total cholesterol, triglyceride, and indirect LDL cholesterol lower than olein group. At endline, HDL and indirect LDL cholesterol of super olein group were different compared to olein group, while total cholesterol and triglyceride were not different between both groups. Super olein group had HDL cholesterol higher and indirect LDL cholesterol lower than olein group. Based on histopathology, lipid accumulation in the liver of Sprague Dawley rats in super olein group were lower than in olein group. The data showed that percentage of lipid droplet in super olein group (A) was 22.01%, while in olein group (B) was 40.43%.Keywords: blood lipid profile, fatty liver, palm oil, rats

Abstract

The objectives of this study were to analyze the food security condition, to analyze the external and internal factors that affect food security and to formulate strategies for improving food security in Tangerang Selatan. The primary data was collected by conducting a focus group discussion and questionnaire filling with purposive sampling technique. Descriptive method on secondary data such as food availability was used to analyze the food security condition. Internal Factor Evaluation (IFE) matrix and External Factor Evaluation (EFE) matrix were used to formulate strategies. Strengths, Weakness, Opportunities, and Threats (SWOT) matrix was used to determine the alternative strategies and Quantitative Strategic Planning Matrix (QSPM) was used to determine among feasible alternative strategies. The results showed that the most important internal factor is commitment of the regional leader and the most important external factor is geographical location of Tangerang Selatan. The total weighted score IFE matrix of 2.86 is average and EFE matrix of 2.81 is above the average. The SWOT matrix showed that the government of Tangerang Selatan may need to “improve food availability” because of “food price volatility”. The QSPM sum total attractiveness scores of 3.76 indicate that the government of Tangerang Selatan should “improve triple helix relations among university, industry, and government” as the strategy to improve food security in South Tangerang.Keywords: EFE matrix, food security, IFE matrix, QSPM, SWOT

Abstract

This study aims to determine the stability of total phenolic content, antioxidant activity, α-glucosidase inhibitory activity, physical properties (total dissolved solid, pH, color), and total microorganism of antidiabetic functional beverage at certain storage period. The functional beverage made from red betel leaf, cinnamon, and red ginger by using infuse method. Parameters were analyzed for 28 days on 10°C and 30°C of storage temperature. Antioxidant activity was measured by 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay, α-glucosidase inhibitory activity was determined in vitro, and total microorganism was measured by total plate count (TPC) method. The results showed that there were increasement in total dissolved solid of 1.92% (10°C) and 3.85% (30°C), and pH values of 15.30% (10°C) and 13.57% (30°C). In contrary, there were decreasement in total phenolic content of 61.63% (10°C) and 79.73% (30°C), antioxidant activity of 46.80% (10°C) and 53.19% (30°C), and α-glucosidase inhibitory activity of 5.43% (10°C) and 0.39% (30°C). Total microorganism at 10oC was <1.0×100 CFU/mL until day 28, while at 30oC was 2.0×100 CFU/mL on day 28. Based on the results, the functional beverage was good in physical and microbiological quality and still have biological activity as an antidiabetic beverage during storage.

Abstract

The objective of this study was to develop a bagelen cookies with Red Palm Oil (RPO) substitution as an alternative of functional food high in beta carotene. Complete randomize design with level of RPO as a treatment was applied in this study to produce three substitution formulas and one basic formula. The selected bagelen was determined by sensory evaluation by considering the highest average value and level of RPO substitution. Bagelen with 42% Red Palm Oil (F3) was preferred by 70% panelist. This formula contained 3.11% water, 0.94% ash, 26.72% fat, 41.95% saturated fatty acids and 35.07% unsaturated fatty acids, 8.53% protein, 60.70% carbohydrate, 18.29 ppm (mg/kg) β-carotene, antioxidant activity 75.11% with AEAC value was 43.44 mg/100 g. With its high beta carotene as natural antioxidants, this product may be classified as functional food that are beneficial to health for preventing atherosclerosis.

Abstract

The purpose of this study was to determine the effects of red dragon fruit (Hylocereus polyrhizus) powder and swimming exercise on fat distribution in the liver organ of white male rats model with obesity. The design of this study was experimental study with randomly factorial design. There were 24 rats divided into two groups, 20 rats were induced to be obese by giving high fat diet, and 4 rats were given standard diet. For intervention period (4 weeks) 20 obese rats were divided into 5 groups namely (1) standard diet (SD), (2) high fat diet (HFD), (3) high fat diet plus swimming exercise (HFD+SE), (4) high fat diet plus red dragon fruit powder (HFD+RDFP), and (5) high fat diet plus red dragon fruit powder plus swimming exercise (HFD+RDFP+SE). Research results showed that fat distribution and visceral fat weight were different significantly among intervention groups (p<0.05). The lowest percentage of fat distribution was occured in RDFP+HFD+SE group (21.44%) and the lightest weight of central fat was also occurred in the same group (7.73 g). This study showed that in four weeks intervention, red dragon fruit powder and swimming exercise had a relatively similar clinical effects on reducing percentage of fat in the liver and visceral fat weight.

Abstract

This study aimed to assess the effect of polyphenols in turkey berry fruits on level of antioxidant enzyme (erythrocyte superoxide dismutation [SOD]) and oxidative stress marker (serum 8-isoprostane) in obese adult women. The study was quasi experimental trial with cross-over design. Eight obese women subjects in Benteng Village-Ciampea, Bogor District, West Java were randomly assigned to a control group (n=4), and a turkey berry group (n=4) for 2 x 1 week daily treatment with a one week wash-out period between treatment periods. Turkey berry group consumed home diet and ±160 g of cooked turkey berry (as a side dish or snack) while the control group consumed only home diet. A food record consumption data was collected twice each week. Blood samples were obtained in the morning at day 1, 8, 15, and 22 of interventions and analyzed for the level of erythrocyte SOD and serum 8-isoprostane. The results showed that the different levels of erythrocyte SOD between post and pre intervention on turkey berry groups was not significantly different compared to the control group (p=0.607). Whereas, the different level of serum 8-isoprostane between post and pre intervention on turkey berry group in which decreasing was significantly different from the level on control group which was increasing (p<0.05). It seems that daily consumption of cooked turkey berry fruits can improve oxidative stress condition.

Abstract

The objective of this study was to assess compliance to small-quantity lipid-based nutrient supplements (SQ-LNS) and associated factors. The community-based non randomized controlled intervention was conducted among 117 infants aged six months old in Bangkalan district and received a daily 20 g SQ-LNS (n=58) or three pieces biscuit (n=59) for six months. In SQ-LNS group, the compliance was 71.7%, 62.7%, 59.3% over one, three, and six-month intervention. The proportion of infant with compliance as recommended (7 sachets SQ-LNS per week) was 68.6%, 34.3%, 18.6%. In Biscuit group, the proportion was 96.6%, 92.8%, 91.1% and compliance as recommended (21 pieces per week) was 94.9%, 93.2%, 91.5%. Logistic regression analysis showed that low mother education (OR=3.67; 95%CI:1.14-11.74), food secure household (OR=3.87; 95%CI:1.26-11.88), high household dietary diversity (OR=3.78; 95%CI:1.20-11.89), and low social economy status (OR=3.81; 95%CI:1.16-12.56) were significantly associated with compliance of SQ-LNS as recommended. The mean of day and proportion of recommended daily serving consumed were 3.3 days and 98.8%, in SQ-LNS group; while in Biscuit group were 3.5 days and 87.2%. Mother reported that side effect of consuming SQ-LNS and biscuit were children felt bored (60.3%, 13.6%), vomiting (43.1%, 18.6%), suffering diarrhea (15.5%, 1.7%), respectively. The reason of irregular provision of SQ-LNS and biscuit were vomiting at the early consumption period response, boring, and did not like the smell/taste of SQ-LNS or biscuit. Mother perceived that the benefit of SQ-LNS and biscuit was increase body immunity, weight gain, appetite, and child become more active.

Abstract

The purpose of this study was to investigate the relationship between caregiving behavior and nutritional status of under five children. This research used the quantitative cross-sectional design. The number of samples were 70 mothers taken by a multistage random sampling. The data was gained through in-depth interview and observation. Nutritional status was obtained by anthropometric measurement based on the z-score weight-for-age index. Caregiving behaviors that consist of attention to the mothers and feeding practices were poor, while home health practices were adequate. Most of the nutritional status of children under five was good (57.1%). Correlation analysis showed that attention to the mothers (r=0.321; p<0.05), feeding practices (r=0.252; p<0.05) and home health practices (r=0.358; p<0.05) were related positively to nutritional status. The study showed that caregiving behavior that affects nutritional status was attention to the mothers, feeding practices and home health practices.
