Abstract

This study aimed to develop a functional beverage for patients with prehypertension. Raja Bulu banana (Musa paradisiaca L.) and Wilis variety of soy beans (Glycine max L.) are used as ingredients for functional beverages production. This study used a completely randomized design and the treatments were given in three formulas with different proportion of soy milk (mL) and banana (g), namely F1 (1000:250), F2 (1000:350), and F3 (1000:500). The results of Kruskal-Wallis test showed that the average preference of colour, flavor, taste, and viscosity characteristics among the three formulas were not significantly different (p>0.05). The most preferred functional beverage formula was F3, chosen by 88.00% of panelists. One serving size (300 mL) of F3 functional beverage contained 149 kcal energy, 34.68 g carbohydrates, 1.91 g protein, 0.24 g fat, 3.95 g dietary fiber, 26.76 g total sugars, 7.00 mg sodium, 401.20 mg potassium, 13.84 mg calcium and 42.16 mg magnesium. Therefore, the product is potential to be a functional beverage alternatives, especially for prehypertension patients.

Abstract

The objective of the study was to analyze the risk factors for anemia among pregnant women in Indonesia. The study design was a cross-sectional study. All of data used in this study was from Basic Health Research 2013, Ministry of Health. The data collected include age, education, birth number, parity, pregnancy spacing, antenatal care, and nutritional status (chronic energy deficiency). The number of subjects was 452 pregnant women. The chi-square test was applied to analyze correlation on dependent and independent variable. Logistic regression was applied to analyze determinants of anemia in pregnant women. The results showed that there were 38.1% pregnant women in Indonesia who had anemia (Hb<11 g/dl). The prevalence of pregnant women with anemia in rural and urban were 37.9% and 38.2% respectively. Bivariate analysis showed that age, education, birth number, parity, pregnancy spacing, and antenatal care were not significantly associated with anemia. Main determinant of anemia in pregnant women was nutritional status (chronic energy deficiency; OR=1.975; 95%CI:1.279-3.049).

Abstract

This study aimed to analyse the relation of nutritional status, physical activity or oxidative stress with cognitive function of pre-elderly and elderly. A comparative cross-sectional study was conducted on 40 pre-elderly and 35 elderly subjects who were admitted to the Integrated Development Post Program (Posbindu) between September 2014 and January 2015. Anthropometric measurements (weight and height), physical activity, and biochemical data (oxidized low-density lipoprotein[Ox-LDL] and serum malondialdehyd [MDA]) were obtained. Nutritional status was assessed through body mass index (BMI), while the cognitive function was measured by Rey Osterrieth Complex Figure (ROCF) and Digit Span Backward. The data were analysed using an independent t-test and Spearman’s test with a confidence level of 95%. The study showed that the prevalence of malnutrition among the pre-elderly and elderly were 60.0% and 80.0%, respectively. Concerning physical activity, those who belonged to inactive-sedentary activity based on physical activity level (PAL) ratio were 55.0% and 45.7%, respectively. There were no significant differences in Ox-LDL, MDA levels and cognitive function (p>0.05). Significant negative correlations existed between Ox-LDL and immediate visual memory function (r=-0.289; p<0.05), as well as between Ox-LDL and delayed visual memory function (r=-0.288; p<0.05). The conclusion that visual memory function was only correlated with Ox-LDL.

Abstract

This study was aimed to estimate economic loss due to obesity among adults in Indonesia. Estimating of economic loss due to obesity was measured by calculating cost of health care, cost of productivity loss due to premature death, and cost of productivity loss due to absenteeism. Health care cost was estimated by multiplying the proportion of incidence of comorbidity in obese population, population of obese, and maintenance costs. Cost of productivity loss due to premature death was calculated by using the number of deaths, labour force participation rate, and annual wages, then divided by discount rate rank expected years of life lost. Cost of productivity loss due to absenteeism was calculated by using population of obese, the number of days absent from work, labour force participation rate, and daily wages. Health care cost in Indonesia was estimated at Rp 56,487 billion/year. Cost of productivity losses due to premature death was estimated at Rp 1,597 billion/year. Cost of productivity losses due to absenteeism estimated at Rp 20,394 billion/year. The total cost of obesity was then estimated at Rp 78,478 billion/year (0,9% of Indonesia’s GDP in 2013).

Abstract

The objective of this study was to analyze the association of nutritional status measured by Body Mass Index (BMI) and Mini Nutritional Assessment (MNA) with lipid profile in pre-elderly and elderly. The study design was cross sectional involving 116 subjects in Poslansia Dahlia Senja, Depok City. Data were collected in September 2014 consisted of weight, height, arm circumference, calf circumference, and blood samples for lipid profile analysis. Blood analysis were conducted at Health Laboratory of Bogor City. The results showed that 61.1% pre-erderly and 54.5% elderly had BMI with category overweight and obese, while nutritional status measured by MNA were 62.7% pre elderly and 70.2% elderly had good nutritional status. There were 54.2% pre-elderly and 63.1% elderly people had dyslipidemia. Statistical analysis with correlation test showed there was significant correlation between BMI with triglycerides (r=0.201; p<0.05) and MNA with total cholesterol (r=0.264; p<0.05).

Abstract

The aim of this study was to obtain the most optimum rice analogue formulation made from corn, sago, soybean, and rice brans. DX7 Mixture Design program was used to achieve the purpose. Antioxidant and lightness were used as the analysis response. The rice was then characterized for physical and chemical properties, antioxidant activity, and glycemic index. The most optimum rice analogue formulation based on the value of antioxidant and brightness parameters consisted of 32.17% corn flour, 16.67% sagoo flour, 13.3% soybean flour, rice brans 3.16%, and 1.33% GMS (the water added was 50% of the amount of the dough). The formulation showed that the rice analogue was potential to be developed into a functional food that supplies fiber 13.30% (> 6.00%), had low glycemic index (54±18) with 28.02%. amylose , contained bioactive components that acts as antioxidants, such as α-tocopherols 1.00% and ϒ-oryzanol, 48.70%.Keywords: antioxidant, glicemic index, oryzanol, rice analog, tocopherol

Abstract

The objective of this study was to analyze the effects of feeding flour-based red dragon fruit and exercise to blood glucose and lipid profile in obese rats. Total of 20 males Sprague-Dawley were divided into five groups: standard diet (SD), high fat diet (HFD), high fat diet + exercise (HFD+E), high fat diet + red dragon fruit flour (HFDRD), and high fat diet + red dragon fruit flour + exercise (HFDRD+E). The intervention was carried out for four weeks after 18 weeks fattening periode. The results showed that red dragon fruit and exercise significantly decreased blood glucose, total cholesterol (TC), trygliseride (TGA), and LDL-chlesterol (LDL-C) (p<0.05), but not for HDL-cholesterol. The HFDRD+E group significantly (p<0.05) had highest decreased of blood glucose, TC. In conclusion, red dragon fruit and exercise have a potential effect to improve hyperglicemic condition and dyslipidemic condition.Keywords: blood glucose, lipid profile, obese rats, red dragon fruit

Abstract

The aims of the research were to determine the best formula and characteristics of free gluten with high protein sago starch noodles substituted with beans flour. A factorial random design was used for the experiment. Ratio of sago starch to red and green bean substitution were 100:0; 90:10; 80:20; 70:30. Variables analyzed were 1) chemical properties (water content, total fat, total protein, carbohydrate by difference and ash content) and 2) sensory properties. Hedonic test was conducted to determine the level of consumer acceptance of 15 semi-trained panelists. Data were analyzed by F-test and Duncan’s Multiple Range Test (DMRT). The best formula was sago starch noodle from sago starch 70% and red bean 30% with protein content 10.47% dry weight (dw); fat content 1.17% dw; water content 68.99% wet weight (ww); ash was 1.19% dw and carbohydrate by different was 18.18% dw. The hedonic test values were 2.44 (like slightly); color 2.77 (yellow-brown), texture 2.59 (chewy slightly) and flavour 2.50 (rather good).Keywords: green bean, red bean, sago starch noodle

Abstract

The objective of this study was to analyze risk factors related to pregnancy nutritional status on the linear growth of newborn infants. The data used in this research was secondary data from longitudinal studies of nutritional status of pregnant women and their offspring in Bogor District. The variables used included body weight at early pregnancy, body height, weight gain, serum protein, serum albumin, hemoglobin, serum zinc, serum retinol, energy adequacy, protein adequacy and protein density at second and third trimester of pregnancy. A multiple logistic regression was applied to analyze the risk factors. The results showed that vitamin A deficiency (serum retinol <20 μg/dl) of the second trimester and body mass index <18.5 kg/m2 at early pregnancy, are the risk factors of the linear growth of newborn infants (OR = 11.12 and 8.84). This implies that normal nutritional status at early pregnancy is important in preventing stunting among newborn infants.Keywords: body mass index, linear growth, newborn infants, pregnant women, vitamin A deficiency

Abstract

The study objective was to analyze the effect of nutrition education programs on snacking behavior of school children. A pre-post intervention study was conducted at 13 districts/cities from 8 provinces in Indonesia, and involved 1,600 grade 5 school children. The snack education program was done by PT Unilever Indonesia in the period of May 2016. The intervention was conducted at the schools by applying education media such as flipcharts, posters and audio-kinetic for children exercices. A self-administered measurement by a validated questionnaire was applied to assess knowledge, attitudes and practices before and after the program. The results showed that before intervention there are 50.9% of school children had good knowledge, 82.8% had good attitude, 34.0% of children had bad practices on snacks food. After the education program, the good knowledge increase by 16.2% and the good attitudes increased by 7.4% of children. Only few students (2.7%) increased practices on good snacking, meanwhile there was 13.4% decrease on poor snack practices. In conclusion, the education program could improve the snacking behavior in school children.Keywords: attitudes, knowledge, practices, school children, snack food
