The development of science and technology in agriculture, has been instrumental in increasing the production of various agricultural commodities. But climate change is also uncertain world led to decreased agricultural productivity. World energy crisis resulted in higher prices of agricultural commodities due to competition between food and energy are higher. Efforts to utilize biomass (agricultural products) has started a lot of research, not only as raw material for bioenergy, but also in an attempt to exploit agro-products into valuable economic products, and realize clean production in agro-industry.

Abstract

Chinese laurel fruit (Antidesma bunius (L) Spreng) can be used as a natural dye due to anthocyanin content which produces red colour at a low pH (1-3). This study aimed to determine changes in the quality of the natural dyes powder from chinese laurel fruit (Antidesma bunius (L) Spreng) during storage time by using accelerated method. Production of chinese laurel fruit extracts was done with distilled water + 3% citric acid with a ratio of 1:3 and the addition of maltodextrin as much as 15%. Natural dyes powder from chinese laurel fruit packaged with PP plastic and stored at temperatures 28°C, 35°C and 55°C to observe the changes of total anthocyanin and its colour during storage. Changes in the quality of the natural dyes powder laurel fruit during storage were due to the presence of pigments from anthocyanins which are degraded by heat. So that the total anthocyanin and the color of te natural coloring powder of laurel fruit decreased. Characteristics of analysis of natural dyes powder at the beginning of storage time (H0) showed moisture content of 2.53%, total anthocyanin of 56.24 mg anthocyanin/100 g dye powder, vitamin of C 12.54 mg anthocyanin/ 100 g dye powder, water solubility of 73.90%, total titrated acid of 8.04%, and red colour. Dye powder stored in 28°C showed less quality decreasing and longer shelf life compared to that stored in temperature 35°C and 55°C . The shelf life of natural dyes product from chinese laurel fruit that stored in 28°C, 35°C, and 55°C were 241 days, 101 days, and 14 days, respectively. Abstract

Pengembangan agroindustri di Aceh dapat mendorong pertumbuhan ekonomi karena sumber utama pendapatan masyarakat Aceh berasal dari sektor pertanian. Penelitian ini bertujuan untuk mencari nilai tambah dan menemukan strategi terbaik untuk meningkatkan nilai tambah produk pinang. Penelitian ini menggunakan analisis nilai tambah, dimana output dikurangi biaya input dan analisis IFAS, EFAS dan SWOT untuk menentukan strategi terbaik untuk pengembangan agroindustry pinang. Hasil penelitian menunjukkan nilai tambah yang diperoleh dengan pengolahan pinnag menjadi tanin mencapai Rp 130.000 sedangkan pewarna alami mencapai Rp 105.000. Berdasarkan hasil analisis faktor internal dan eksternal menunjukkan bahwa factor internal lebih berpengaruh terhadap pengembangan agroindustry pinang dengan skor 3.00. Berdasarkan hasil model strategi kuantitatif, pengembangan agroindustri pinang dapat dilakukan dengan memaksimalkan peluang dan mengatasi segala faktor yang menjadi kelemahan. Oleh karena itu, strategi yang paling tepat untuk pengembangan produk potensial pinang adalah memfasilitasi dan mensosialisasikam informasi tentang produk turunan pinang kepada masyarakat serta mempromosikan dan meningkatkan inovasi teknologi untuk mempercepat adopsi teknologi oleh para petani.Kata kunci: agroindustri, pinang, nilai tambah, analisis

Abstract

Mono-acylglycerol (MAG) is the most used type of emulsifier in food industry. The need for domestic emulsifiers increases each year with an average value of 4%, so that the development of MAG as an emulsifier has good prospects. This study aimed to determine the best concentration of MAG as bakery products emulsifier such as sponge cake (2%, 2.5%, 3%), white bread (0.5%, 1%, 1.5%), and cookies (0.8%, 1.6%, 3.2%), and to know the characteristics differences of bakery products between synthesized MAG and commercial emulsifier. MAG was synthesized through the esterification process of coomercial glycerol from the byproducts of making biodiesel and palm fatty acid distillate from the byproducts of crude oil purification at a temperature of 150°C, 90 minutes time, and a molar ratio of PFAD:glycerol 1:6. The best MAG concentrations for sponge cake were 2.5% based on physical characteristics and 3% based on organoleptics. The best MAG concentration for white bread was 1% indicate by its swelling dimensions. The best MAG concentration for cookie was 1.6% indicated by its swelling power that affects the crispness. The addition of MAG as emulsifier produces good characteristics and equivalent to commercial MAG in several aspects of bakery product quality.Keywords: bakery, emulsifier, mono-acylglycerol, organoleptics, swelling powder

Abstract

The profiles of higher education graduates are generally attached to the name of professions as a description of the competencies that are expected to be achieved after carrying out the study process at higher education. In the digital era where disruption has hit various fields, various types of new professions have also evolved accordingly and had different types and characters from previous decades. However, the graduate profile stated in the curriculum documents has not followed the current professions’ development. With the evolution of the economic era since the 1960s to the 2000s, from the agricultural, industrial, creative, to collaborative economies, creates a need to establish a graduate profile that is in line with future needs. It is impossible for higher education actors to offer back outdated graduate profiles that are not relevant to the times in the future. In this research, various changes in the world were analyzed and the competences and roles of new graduates were laid out. This profile was aimed to prepare graduates to implement their knowledge when entering the new era that needs different characteristics of graduates compared with the previous era. The research approach wastransformative research involving various experts in a participatory manner to define the character of the profession and what roles are needed in the future. The research was conducted in the Faculty of Agricultural Industry Technology, Padjadjaran University and several faculties which emphasized the implementation of the Outcome Based Curriculum. This research produces 6 types of future role characters that can be used as a reference for future roles of Agro-industrial Higher Education graduates.Keywords: disruptions, generation’s characteristics, agroindustrial courses, graduate’s profiles.

Abstract

A well-being supply chain system will affect on the sustainability of the production and consumer’s satisfaction. Consumer’s need will be fulfilled if the served quality is in the accordance with consumer’s expectations. This study aimed to identify banana supply chains, determine product quality attributes, and strategies for improving the quality of banana products. The methods used were Van der Vorst supply chain management framework, Quality Function Deployment (QFD), and Analytical Hierarchy Process (AHP). The research results exposed that banana supply chain consisted farmers, traders, industries, retailers, and consumers. The dominant quality factors on thise supply chain were the harvest planning (0.24) and harvesting technique (0.19) for fresh bananas; the frying (0.28) and the packaging (0.20) for sale banana; the frying (0.28) and the packaging (0.17) for banana chips. Meanwhile, the quality attributes for fresh bananas were fruit maturity and damage level, for sale bananas were taste and texture, and for banana chips were taste and level of cracked chips. The proposed strategies to improve product quality in the banana comodity supply chain were an increase ability or skill in the production process for each actor (0.25), using standards in the product production process (0.22), make a explicit contractual agreements between actors regarding product quality (0.21), establish a structur farmer group institutions (0.13), optimizing local wisdom (0.10) and the government’s role in assisting farmer and industrial development (0.08). Abstract

Cleaning is one of the air conditioner (AC) treatments that should be done within a certain period to maintain its function. The AC cleaning process cannot separate from the use of cleaning fluid as one of the main ingredients. This study aimed to obtain the most efficient formulation of AC cleaner fluid from Methyl Ester Sulfonate (MES) with Hydrogen Fluoride (HF) in improving performance and seeing the effect of sonication on the effectiveness of detergent in resulting the AC cleaner. The AC cleaner formulation used the two factors Completely Randomized Design method, namely MES deposition (10%, 20%, 30%) and HF concentration (1%, 2%, 3%). The combination stage was based on parameters of density, viscosity, surface testing, wetting, and pH. From these testers, the three best treatments were M10H3 (MES 10% + HF 3%), M20H3 (MES 20% + HF 3%), M30H3 (MES 30% + HF 3%). Three samples were tested for detergency so that the best treatment was M30H3 (MES 30% + HF 3%). Sonication treatment was able to improve the properties of the resulting AC cleaner, with the density value of 1.0193 g/cm3 to 1,0001 g/cm3 , surface tension from 23.676 dyne/cm to 20.765 dyne/cm, contact angle from 32.37oto 20.5 o, pH from 2.44 to 2.9, and particle size from 10.85 μm to 158.27 nm. The post-state sample had a higher detergency power than before sonication that can increase cleaning ability by as much as 70%. However, the resulting formulation did not have a higher detergency level than commercial AC cleaner brand X.Keywords: AC Cleaner, air conditioner, HF, MES, sonication

Abstract

Kompleksitas rantai pasok menyebabkan pula keputusan yang komplek untuk masalah yang harus ditangani walaupun sangatlah sulit akan tetapi sangat membutuhkan respon yang cepat dan akurat. Agroindustri gula tebu melakukan proses bisnis yang dimulai dari pemanenan, pengolahan tebu menjadi gula yang selanjutnya didistribusikan ke konsumen melalui distributor atau ke retailer hingga ke konsumen langsung. Permasalahan yang terjadi pada distribusi aliran informasi data pada rantai pasok agroindustry gula adalah adanya gap jumlah presisi stok gula yang ada di antar departemen pemerintah,begitu pula yang terjadi antara kualitas gula nasional seperti raw sugar, gula kristal putih dan gula rafinasi Walaupun proses dari hulu perkebunan hingga pabrik giling tebu sama akan tetapi jumlah produksi dan konsumsi yang ada di kementerian akan berbeda. Oleh karena itu akan diidentifikasi berdasarkan proses bisnis yang terjadi dari mulai tebu ditebang pengangkutan proses giling penyimpanan penjualan hingga pembeli memdistribusikan kepada konsumen. Pendekatan yang digunakanmenggunakan pendekatan berorientasi temuan pada referensi supply chain management, diagnosis awal untuk melengkapi investigasi literatur sesuai dengan ecosystem yang terjadi pada kondisi real. Identifikasipermasalahan yang terjadi akan dianalisa berdasarkan gambaran kondisi awal rantai pasok, analisa kebutuhan berdasarkan diagram input-output, diagram use case hingga framework ketelusuran rantai pasok agroindustry gula. sistem penelusuran yang terintegrasi diharapkan akan dapat meningkatkan kontrol proses dan mendeteksi sebab dan akibat ketika suatu produk gagal memenuhi standar dalam aliran informasi sepanjang rantai pasok mulai dari hulu hingga hilir endkonsumen. framework traceability yang diusulkan pada proses bisnis agroindustry gula diawali dengan distribusi transaksi dokumen perjalanan produk dari hulu kehilir khusus untuk nilai informasi kualitas dan kuantitas sehingga pemain yang terlibat dalam rantai pasok dalam memantau record data.Kata kunci : agroindustry gula, framework ketelusuran, pencatatan data, rantai pasok

Abstract

Through Making Indonesia 4.0, The Ministry of Industry responds to the demands of energy needs byinnovative renewable energy development to reduce the consumption of fossil fuels such as petroleum, naturalgas and coal with agricultural biomass waste sources. The aim of this research was to synergize waste from thebiodiesel industry in the form of sterol glycosides with purun waste from creative small-scale enterprises (SMEs)to produce renewable energy as a circular economy. The method applied was in the form of descriptive analysis, followed by identifying and characterizing waste found in the biodiesel industry, as well as various purunwastes, which were collectively sampled every day for 3 months, becoming the basis for developing innovativeproducts. Interviews were conducted on 60 purun craftsmen to confirm the circular economy program beingstudied. Observations were also made in the biodiesel industry and purun craftsmen. Data processing wasobtained from the results of experiments by making briquette products referring to several parameters whichwere the basis for standardizing renewable energy products. The synergy between the two actors, namely theBiodiesel Industry and SMEs in micro-scale circular economy activities, produced environmentally friendly- renewable energy which was very helpful for purun micro and small businesses in Purun Village, Banjarbaru,South Kalimantan. Renewable energy results were from various formulas developed with the main ingredientsderived from purun biomass charcoal and biodiesel industrial waste. The advantage of the product when severalother variables met the SNI standard 01-6235-2000 had a calorific value of 5.809 cal g-1 - 6.598 cal g-1, where5.000 cal g-1 which was the SNI for briquette heat could be exceeded. The calorific value produced is equivalentto bituminous grade coal having a carbon content of above 85%.Keywords: briquettes, calor, purun, sterol glycosides, SMEs

Abstract

XYZ Fruit Puree is one of complementary food products developed by Company X. A marketing plan toexpand the market of the product is considered by developing new product variants, namely XYZ Organic FruitPuree. The plan is done by providing new price offers and changing the target market from upper Social EconomicStatus (SES) into middle to upper. This study aimed to evaluate consumer’s acceptance, purchase intention, andpreference toward XYZ Fruit Puree and XYZ Organic Fruit Puree product concepts. Non-parametric tests ofWilcoxon signed-rank test and Mann-Whitney test were used for data analysis in this study to compare thepreference of total samples and each sample groups differentiated by its social economic status and usership. Theresult showed that XYZ Organic Fruit Puree concept was more preferred by all types of consumers in aspects ofoverall liking, uniqueness, intention to buy, and preferential intention. However, if price was taken intoconsideration, intention to buy for XYZ Fruit Puree concept was significantly greater than the XYZ Organic FruitPuree concept. The recommendations given were the price of XYZ Organic Fruit Puree can be adjusted to be moreacceptable to consumers as well as increasing consumer trust in product safety.Keywords: consumer preferences, new product development, purchase

Abstract

The development of the fishery industry not only provides advantages, but has a significant impact on theenvironment. Life Cycle Assessment (LCA) can be used to identify positive and negative environmental impacts ofa process or product, find opportunities for processing and product development, comparing and analyzing theimpact of the environment caused and calculat the environmental impacts resulting from a quantitative product.Life Cycle Assessment (LCA) according to the ISO 14040 consists of four stages, namely the determination of thegoals and scope, inventory analysis, impact analysis, and interpretation. The purpose of this literature study wasto identify and quantify the potential pollution and environmental impact caused by the production process in thefishery industry. Fishery products studied were fish fillets and canned fish products. The potential environmentalimpacts of processing of fishery industry cover greenhouse gas (GHG), acidification, and eutrophication. Thedescription of the environmental impact analysis in the fishery processing industry was explained in this work. Theliterature data indicates that the impact of GHG is caused by CO2, the impact of acidification is generated by SO2, and the effects of eutrophication are generated by PO43-. Recommendations for improvements are replacing energysources and fuels.Keywords: acidification, eutrophication, fishery processing industry, GHG, life cycle assessment
