Abstract

Tourism has become one of idol business in Indonesia, which can be seen by the graph of performance continues to rise up compared to oil, gas, coal, and palm oil which continue to decline. Each destination tries to serve tourists better using many kinds of strategies, one of them is the destination image. This research aims to analyze the influence of destination image on the revisit intention in Mount Batur, Bali. The study is explanatory and done using quantitative and descriptive approaches. The number of samples to be used is 100 samples. The method of data collection is done by questionnaire collection method to analyze the influence of the destination image variable on the variable of revisit intention obtained by descriptive explanation. Based on the results of the research conducted, it shows that the image of the destination has a significant effect on the interest in returning to tourists in Mount Batur, which means that the hypothesis proposed in the study was accepted. This can be seen in the results of the hypothesis test the value of t arithmetic obtained is equal to 7.242 with a significance value of 0.000 smaller than 0.05. Based on the correlation test, the relationship between the two variables is at a moderate level with a percentage of influence of 34.9%. So that from this it is expected that tourists area managers of  Mount Batur must try to maintain security, comfort and the environment.

Abstract

The tourism sector in Indonesia has been established as the main sector in the future. Visits of Chinese tourists ranked highest in 2017 than any other country. The huge potential of China's market in the world demands that the government together with tourism stakeholders jointly increase the number of Chinese tourists visiting Indonesia. This research is a literature study on the characteristics of Chinese outbound tourists from various sources, as well as strategies to increase the visit of Chinese tourists to Indonesia. The results of this literature review are expected to be an input for the development of tourism sector in Indonesia in reaching outbound tourists from China, and can be an inspiration for a suitable research theme in the future.

Abstract

This paper aims to study the role of local government in realizing sustainable marine tourism. Pemuteran Village is one of the best practices of sustainable marine tourism in the developing world. Three types of government roles were studied, namely: regulator, facilitator, and of executor.. These roles were positioned as exogenous latent variables in a causal relationship with  sustainable marine tourism in the village. Sustainability is measured through reflective constructs, i.e. economic benefit, socio-cultural benefit, and environmental benefit felt by the local community of Pemuteran Village. The data were  collected from 60 respondents, consisting of community leaders, non-governmental organizations, and tourism industry stakeholders in Pemuteran Village. Then, questionnaires were analyzed by structural equation modelling—partial least square (path modelling). The results show that the government roles did not have a significant effect on marine tourism sustainability. However, the role of local government and the existence of marine tourism sustainability were reflected significantly in its three constructs where the most represented construct in this relationship respectively are the role of facilitator and the environmental benefit. The most important finding in this research is that the role of local government was not only measured  by regulator and facilitator roles, as in previous research, but includes analysis of the executor role. which proved significant in structural model evaluationone of the best practices of sustainable marine tourism — – partial least square (path modelling). The results show that the government roles did not have aprove significantly aeffect on marine tourism sustainability. However, the role of local government and the existence of marine tourism sustainability were reflected significantly in its three constructs where the most represented construct in this relationship respectively are the role of facilitator and the environmental benefit. Abstract

Focus of this study was formulation of biscuit with substitutionof  brown rice flour which were widely accepted by the community. The objective of the study was to formulate biscuit subtitution by brown rice flour. The experiment was conducted in Maret-July 2017 in Family Welfare Education Laboratory. Data collected was quality of biscuit (color, flavor, texture, taste, and overall) and the preference. Data was analyzed by Mean and ANOVA. Result: 18g wheat flour, 6g cornstarch, 4g tapioca starch, 19g brown rice flour, 12g margarine, 29g eggs yolk, and 12g refined sugar. Nutrition contents the best biscuit was water 2,52g, ash 1,19g, fat 24,46g, protein 11,68g, carbohydrate 60,15g, and energy 507,46Kcal.

Food Street has become an Industry in Indonesia with growth Manificiently year by year, Many Business Cities such as Bandung- Capital City of West Java and Palembang- Capital City of South Sumatera, Food street industry in Indonesia is very rapidly development, All major cities in Indonesia have main area for food street vendors, and has become part of Lifestyle, Cleanliness is a Important issue that Domestic and Foreign Tourists are very detail mentioned on this matter, Food Hygiene, This research emphasizes the Solution of Cleaning Equipment and Cooking Hygiene Problems, Three Buckets System is adopted from cleanliness procedure on cruise ship, with the Wash - Rinse and Sanitize System then the Hygiene Guarantee will be more effective.Based on 6 (six) Principles of Food Hygiene,one of mentioned is Hygiene of Cookware and Dinner wares,Use of the Three Buckets System at a Street Vendor using the Portable (Three Bucket System) Tool to make it easier for Street Merchants to use the tool at a cost that is not large.Of the 250 Respondents interviewed 90% stated that cleanliness is very important in considering buying decisions in the street vendors.Some obstacles faced by Food Street Vendors in maintaining cleanliness are the availability of clean running water, Places and costs incurred in making washing Equipment, with Three Buckets System is expected to be a solution in maintaining cleanliness so that customer health can be maintained with cleanliness of Cooking Equipment and Utensils till Dinner Wares.

Abstract

This research contributes to sugar substitution as a sweetener. Honey and stevia are natural sugar substitutes in various food products. The purpose of this research is to recognize the difference in appearance, flavour and texture of chiffon cake using sugar, honey and stevia. The research used an experimental method. This research used descriptive analysis technique of observation and interviews with reference to a comparison that is sensory evaluation of chiffon cake characteristic, which include appearance, flavour and texture. The results show that panelists prefer chiffon cake using sugar as a sweetener in terms of appearance and texture. However, chiffon cake using honey as a sugar substitute is preferable to panelists in terms of flavour and overall aspects.

Abstract

Efforts to lower blood sugar levels for diabetes mellitus patients can take by consuming  a popular functional drinks which has been added by herbal ingredients such as breadfruit leaves. The aim of this research is to observe the effect of addition three-types of sweetener (aspartame, acesulfam k, and sorbitol) in different ratio (50%: 25%: 25%, 25%: 50%: 25%, 25%: 25%: 50%) to the antioxidant capacity and glucose level of functional drinks made from breadfruit leaves, as well as its number of calories and variety sensory tests (sour taste, sweetness and texture). The experimental design used a Completely Randomized Design with three replications. This study also employs 35 panellists to produce organoleptic quality data in two repetitions.  All collected data were then analyzed using ANOVA test followed by DMRT test. Results showed that the highest antioxidant capacity was obtained by ratio 25%: 25%: 50% of aspartame, acesulfam k, and sorbitol with IC50 value of 64,717 ppm. Meanwhile the lowest glucose level was resulted by ratio 50%: 25%: 25% of aspartame, acesulfam k, and sorbitol in value of 25.53 g/100g. The highest number of calorie was produced by ratio 25%: 25%: 50% of aspartame, acesulfam k, and sorbitol with a value of 126.44 cal. / 100gr. Whereas, the most preferred formulas of breadfruit drink formulas are found in ratio 25%: 25%: 50% of aspartame, acesulfam k, and sorbitol.

Abstract

Jatigede Reservoir area has potential to be a Tourist Destination Area. This area has two ecotourism that are Puncak Damar and Tanjung Duriat. The area will be used as a Tourism Special Economic Zone (Kawasan Ekonomi Khusus). This research purpose is to find out how the feasibility of Puncak Damar and Tanjung Duriat Ecotourism as tourist destinations. The design used is qualitative with a case research approach. The result of the research showes that Puncak Damar and Tanjung Duriat have not fulfill the principle of ecotourism. Puncak Damar Ecotourism has attractions, (1) the views of Jatigede Reservoir, (2) taking pictures at viewdeck, (3) camping, (4) offroad. While in Tanjung Duriat, that are (1) the view of the Jatigede Reservoir, (2) taking photos in tree towers, (3) camping, (4) fishing, (5) boating. In terms of accessibility, the road conditions of both ecotourism are damaged and rocky and there is no public transportation. The facilities of the infrastructure in both ecotourism are not yet complete. The obstacles in Puncak Damar Ecotourism are (1) damaged road conditions, (2) no clean water, (3) no food stall that operate, (4) relations between managers. In Tanjung Duriat there obstacles are: (1) damaged road conditions, (2) no electricity system, (3) relations between managers. Both of these ecotourism are still not feasible for tourist destinations. It is because there are still many attractions that cannot support tourism activities at Puncak Damar and Tanjung Duriat Ecotourism objects.

Abstract

The industrial revolution 4.0 has encouraged a digital technology companies called startup. PT Insan Agritama Teknologi (Inagri) is one of startup in Bandung City that is engaged in agriculture as a supplier of food ingredients. Inventory of goods in Inagri is currently fulfilled from five partner farmers. At present, Inagri has collaborated with several Horeca (hotel, restaurant, café) and modern retailers to distribute agricultural products. However, for approximately 2.5 years, Inagri has not yet found a standard procedure for inventory control. Sometimes Inagri could not fulfill the demand because there was an out of stock of goods. Therefore required to control supplies. The purpose of this study was to identify the process of controlling inventory in Inagri and analyzed the classification of inventory in Inagri based on ABC analysis. This study used the ABC analysis method. The results showed that the classification of goods inventory in Inagri based on ABC analysis, group A amounted 16 commodities, this amount represented 21% of total items (76 commodities). Group B amounted 17 commodities or 22% of total commodity and group C had 43 items or 57% of total commodities sold by Inagri. ABC analysis is one of the solutions for making goods stock procurement decisions in future period.

Abstract

Mengkapan Mangrove Ecotourism, located in Siak Regency, Riau Province, was once visited by a large number of visitors soon after it was opened for public in 2015. Nevertheless, since the beginning of 2016, the number of visitors has been drastically dropped. One of the causes of this unfortunate condition is that there is no established planning to guide the development of the mangrove ecotourism. Therefore, this study was aimed to formulate strategies for developing the Mengkapan Mangrove Ecotourism by using the SWOT analysis. The data was collected through conducting interviews with related stakeholders, distributing questionnaires to them, and performing field observations. The collected data was then analyzed inductively to capture the key strategy alternatives. Based on the results of SPACE Matrix and SWOT Matrix, this study formulates the following priority strategies: diversifying tourist attractions and promoting them massively by using online media, creating tour packages, and making a cooperation with travel agents.
