Abstract

This study aims to analyze the empirical nutritional quality (energy, protein, fat, carbohydrates, vitamin A, calcium, iron and phosphorus), organoleptic quality and determine the best treatment level of Nuggets with red bean and catfish formulation as supplementary food for wasted under five years old children. This study employed an experimental approach with a Completely Randomized Design (CRD) consisting of three treatment levels. The nugget formulation was developed by modifying the proportions of catfish, chicken meat, and red beans with the following ratios: P0 = 0:100:0, P1 = 25:48:27, P2 = 33:40:27, and P3 = 41:32:27. Organoleptic tests by 25 semi-trained panelists assessed color, aroma, taste, and texture using a hedonic scale. Statistical analysis utilized Kruskal-Wallis and Mann-Whitney tests to determine significant differences, while the best formulation was identified using effectiveness index analysis. In this study the best formulation, consisting of 41% catfish, 32% chicken, and 27% red beans (P3), showed an Overcome Value (OV) of 0.884 and provided 359.94 kcal, 15.67g protein, 20.94g fat, and 27.17g carbohydrates per 100g. No significant preference difference was found between the control and P3 treatments. Future studies should focus on optimizing frying conditions to improve nugget color.

Abstract

This study aims to examine the menu patterns, food acceptability, and lunch preferences among female students of ICBS Wustha Al Muflihun, Malang. A descriptive qualitative research design with a cross-sectional approach was employed. Data collection used modified observation and interview methods. A total of 34 students were selected from 52 using purposive sampling. The study found that the lunch menu patterns were generally unbalanced, consisting only of staple food, plant-based side dishes, and vegetables. Food acceptability was categorized as good, with an average leftover percentage of 6.53%. Regarding preference, 67% of students liked the taste, 56% liked the color and aroma, and 64% liked the texture. It is suggested that school lunch providers consider a more balanced menu and improve variation to increase acceptance and nutritional adequacy.

Abstract

Background: Food service is a set of activities ranging from menu planning to food distribution to consumers to achieve optimal health status through proper nutrition. Including recording, reporting and evaluation activities (Aritonang et al., 2012). According to the Ministry of Health of the Republic of Indonesia (2013) Food organization is the provision of quality food according to nutritional needs, cost, safe and acceptable to consumers in order to achieve optimal nutritional status. Objective: To analyze the residue of ordinary food in class III patients against the adequacy of energy and macronutrients in the provision of food at Kanjuruhan Hospital Malang Regency. Methods: This type of research is descriptive observational. The research was conducted by observing the remaining food eaten by class III patients at the Nutrition Installation of Kanjuruhan Hospital, Malang Regency. Result : The menu on days 1 and 3 did not meet the hospital's minimum service standards, which were still above 20%, while the menu on day 2 met the hospital's minimum service standards, which were <20%. Nutrient adequacy on days 1 and 3 was lowest for protein and on day 2 for fat. Conclusion: The menu on days 1 and 3 did not meet the minimum hospital service standards of 22.9% and 29%, while the menu on day 2 met the minimum hospital service standards of <20%. Abstract

Abstract: Tea bags are a single dry tea product or a mixture of several types of tea or with the addition of other food ingredients that are permitted according to applicable regulations and are packaged and ready to be brewed. This research created a tea bag formulation from black tea (Camellia sinensis OK var. assamica (Mast)) and manalagi apple (Malus sylvestris (L.) Mill.) which has specific properties, namely antioxidants with a ratio of F1 (25:75), F2(50:50), and F3(75:25). This research aims to determine the quality test and antioxidant activity of tea bags combining black tea and manalagi apples. This research uses a quantitative descriptive method with parameters including organoleptic tests, water content, ash content and antioxidant activity. The organoleptic results of the tea bag have a brown tea color, smell typical of tea and taste bitter, slightly sweet. The water content test results for F1, F2, and F3 were respectively 5.426%; 4.476%; 3.686 %. The ash content test results for F1, F2, and F3 respectively were 3.611%; 5.537 %; 6.507 %. The quality test results are in accordance with SNI standards. The IC50 value of tea bag preparations in F1, F2, and F3 respectively was 61.91 ppm; 84.21 ppm; and 96.43 ppm. F1 has the strongest antioxidant activity due to the addition of more manalagi apples. The results showed that the antioxidant activity of the black tea and manalagi apple formulations was included in the strong category.

Abstract

Formaldehyde, better known as formalin, is a prohibited food additive. The use of formalin in food can cause poisoning in the human body, namely acute abdominal pain accompanied by vomiting, the emergence of nervous system depression or circulatory failure. The purpose of this study was to identify the formalin content in shrimp tested at the KIPM Surabaya I Center. This study was conducted using a test kit method, namely formalin main reagent. The principle is to add liquid (reagent) to food suspected of containing formalin. The reaction between chromatophore acid and formalin produces a purple complex compound of 3,4,5,6-dibenzoxanthylium . The results of this study showed that negative shrimp samples contained formalin, indicated by the absence of color changes in the samples analyzed and compared with the positive controls that had been made.

Abstract

Stunting is a condition of failure to thrive due to malnutrition for a long time so that children are shorter than normal children their age. Stunting is not only caused by one factor but by many factors. The prevalence of stunting at the Landasan Ulin Health Center continued to increase from 2018 (16.0%), 2019 (21.89%) and 2020 (22.26%). Objective: To determine the relationship between maternal knowledge, parenting and household food security status with the incidence of stunting in children aged 6-23 months in the working area of the Landasan Ulin Health Center, Banjarbaru City. Methods: This type of research is an observational analytic study with a Cohort Retrospective design. The population of this study was all children aged 6-23 months in the working area of ??the Landasan Ulin Health Center and a sample of 92 children using the purposive sampling technique. Results: The knowledge of the mothers of children under two years was in the less category (47.8%), the parenting pattern for the children was in the sufficient category (39.1%), the household food security status was mostly classified as food insecure (42.4%) and the children who experienced stunting were less (40.2%) . Conclusions: There is a relationship between mother's knowledge, parenting, and household food security status with the incidence of stunting in children aged 6-23 months in the working area of ??the Landasan Ulin Health Center.

Abstract

STH (Soil-Transmitted Helminth) infection remains a complex problem in endemic areas today, especially in developing countries with significant challenges to the population's lack of environmental sanitation and personal hygiene. This study aims to prevent work accidents and provide knowledge about occupational health and safety to farmers using complete PPE to avoid exposure to STH worm infections. Literature or reference searches conducted during the literature review use three web journal databases: Google Scholar, PubMed, and Science Direct. Some words are searched using the keywords "Farmer" AND "Soil-Transmitted Helminth " AND "Infection" OR "Infectious" AND "Personal Hygiene ." The articles use ten journal articles spanning the last five years. Worm infection caused by Soil-Transmitted Helminth is a public health problem in Indonesia. The risk of worm infection or STH can be prevented through improved personal hygiene and education to change the pattern of behavior of farmers who are not good, especially when in direct contact with the soil.

Abstract

Abstract Background: This study examines patient satisfaction with hygiene and sanitation, food quality, and service quality in the food service at Wava Husada Hospital in Kepanjen. Hospital food quality plays a crucial role in supporting patient recovery, in addition to medication. Food tailored to the patient's condition serves as a supporting factor for healing. Furthermore, food and room cleanliness also influence comfort and accelerate the recovery process. Methods: The research used a quantitative descriptive approach, using the Customer Satisfaction Index (CSI) and Importance Performance Analysis (IPA) to measure patient satisfaction, and the Spearman correlation test to determine the relationship between variables. Data were obtained through questionnaires distributed to patients who had received food service at the hospital. Results: The study showed a CSI score of 81.3%, indicating that patients were very satisfied with hygiene and sanitation, food quality, and service quality. However, based on the IPA analysis, seven out of 35 aspects needed further attention to improve service quality. Spearman's correlation test showed no significant relationship between sanitation hygiene, food quality, and service quality and patient satisfaction (p-value > 0.05). Conclusion: Patient satisfaction is very high, although improvements are needed in several areas to provide optimal service. Abstract

Islamic boarding schools, as boarding institutions, are responsible for fulfilling the nutritional needs of their students, especially adolescent girls who require high intake for growth. Food portions that do not meet standards can cause energy and nutrient deficits, thus impacting nutritional status. This study aims to analyze food portion sizes, energy and nutrient consumption levels, nutritional status, and the relationship between variables in female students at one of the Islamic Boarding Schools in Singosari.. The study used a cross-sectional design with 41 respondents. Data were collected through weighing food portions for three days and 1x24-hour recalls, analyzed using the Spearman correlation test. The results showed that most staple food portions (51.2%), plant-based side dishes (78%), and all vegetable portions (100%) were insufficient. The level of energy consumption was classified as moderate deficit (36.6%), normal protein (39%), severe fat deficit (100%), normal carbohydrate (43.9%), and mild iron deficit (31.7%). Most students had normal nutritional status (90.2%). There was a significant relationship between staple food portions and energy and carbohydrate consumption levels, and plant-based side dish portions and protein consumption levels. As well as the level of energy, protein, and carbohydrate consumption with nutritional status (p<0.05).

Abstract

Uterine myoma is one of the benign tumors that is often found in reproductive-age women and often requires surgical intervention. Postoperative conditions become more complex when accompanied by comorbidities, iron deficiency anemia and type 2 diabetes mellitus (T2DM) which can slow recovery progression. The aim of this study is to describe the nutritional care process of patients after uterine myoma surgery with anemia and T2DM, including assessment, diagnosis, intervention, as well as monitoring and evaluation. The study design used an instrumental single-case study on a 43-year-old female patient who was hospitalized in the operating room for 4 days. Data were collected through anthropometric measurements (Mid Upper Arm Circumference/ MUAC and ulna length), biochemical analysis of medical records, daily 24-hour recall, Semi Quantitative Food Frequency Questionnaire (SQ-FFQ), and pre/post test. The results showed that patients experienced malnutrition based on MUAC (18.3 cm), severe anemia (Hb 7.9 g/dL), and hyperglycemia (blood glucose 284 mg/dL). Intake of energy, protein, fat, carbohydrates, fiber, and iron was classified as a severe deficit before the intervention. After feeding a high-protein DM diet with small and frequent portions, the average intake increased to 79.9% energy and 108.5% protein from the daily requirement. Nutrition education improves patient knowledge scores even though the changes are not significant. In conclusion, structured nutritional interventions are able to improve the nutritional adequacy of patients even though the improvement in nutritional status has not been significant in a short time.
