Abstract

ABSTRACTBackground: Nutritional status is a major global health issue that frequently leads to the deaths of children under five years old. According to the World Health Organization (WHO), malnutrition accounts for 45% of deaths in this age group. In Indonesia, one key factor contributing to high rates of malnutrition among children under five is insufficient maternal knowledge. Enhancing maternal understanding of nutrition can be achieved through nutrition education, with Motion Graphics being one effective educational media.Research Objective: To assess the impact of Motion Graphic media education on the four pillars of balanced nutrition regarding the knowledge and attitudes of mothers with toddlers in Cot Gadong Village, Jeumpa District, Bireuen RegencyMethods: This study uses the Research and Development method with the ADDIE development model (Analysis, Design, Development, Implementation, Evaluation). Primary and secondary data are collected, and they are subsequently put through editing, coding, scoring, processing, and cleaning steps. Both quantitative and qualitative data were acquired. Utilizing SPSS software for data analysis, the T-Dependent test with a 95% confidence level (α = 0.05) was included.Results: The average scores from the tests are as follows: 85.51% from the material expert, 85.96% from the media expert, and 93.33% from the language expert. The average knowledge level before education was 41.57, which increased to 83.33 after education. Similarly, the average attitude score rose from 40.20 before education to 87.23 after education. Statistical analysis shows p values of 0.000 for both knowledge and attitude.Conclusion: The creation of Motion Graphic media on the four pillars of balanced nutrition can enhance both the knowledge and attitudes of mothers with toddlers in Cot Gadong Village, Jeumpa District, Bireuen Regency.

Abstract

Background: The success of a management in patients cannot be separated from monitoring. Therefore, a warning system is needed to monitor the management of diabetes mellitus. One way is to monitor the management of diabetes mellitus patients. Media Self-Monitoring Card is the development of control card media that contains educational materials as well as monitoring to monitor diabetes mellitus management independently. Media Self-Monitoring Card has the advantage that it is practical to use, self-based so that monitoring can be carried out intensely.Objective:  Develop Self-Monitoring Card educational media for monitoring the management of type 2 diabetes mellitus in outpatients.Method: This research method is Research and Development (R ; D) with five stages of development, namely analysis, development, implementation, and evaluation (ADDIE). The media that has been created is then tested through validation tests by two material experts and two media experts. The cut-off point Content Validity Index (CVI) limit on material validation and media validation tests is at least 0.8. Media that have been declared viable by material experts and media experts will then be field-tested limited by ten random respondents selected according to predetermined criteria.Result: The Content Validity Index (CVI) value in the material validation test was 0.9. While the Content Validity Index (CVI) value in the media validation test is 0.87. Based on limited field trials, a percentage of 94.3% was obtainedConclusion: Self-Monitoring Card media is suitable to be used as a medium for education and monitoring of type 2 diabetes mellitus management in outpatients. For this reason, further research is needed to determine the effectiveness of education using the Self-Monitoring Card to monitor the management of type 2 diabetes mellitus.

Abstract

Background: The Indonesian Ministry of Health's Nutritional Status Study reported that the prevalence of stunting in Indonesia in 2022 was 21.6%. Although there has been a decrease, this figure still does not meet the WHO standard of less than 20%. Stunting is a condition where a child is shorter than their peers, experiencing growth failure due to poor nutrition, recurrent infections, and inadequate psychosocial stimulation from early life. Pregnancy is a crucial period and represents a golden opportunity for a child to grow and develop normally. Objective: The purpose of this study is to analyze whether maternal intake during pregnancy is related to the occurrence of stunting.Research Methods: This study is a literature review that uses primary data research articles on maternal nutritional intake during pregnancy related to the incidence of stunting. The data sources used are research journal publications conducted in Indonesia. Article searches were conducted using the Google Scholar database search engine. The inclusion criteria for journals in this study are research journals on antenatal nutrient intake related to the incidence of stunting, published between 2014 and 2024, and freely accessible.Results: The literature review results show that nutrient intake during the antenatal period affects the incidence of stunting in children. Mothers who consume insufficient iodine, carbohydrates, proteins, fats, and folic acid during pregnancy are more likely to give birth to stunted babies.Conclusion: There is a significant relationship between nutrient intake during pregnancy and the incidence of stunting in children. Mothers with deficiencies in carbohydrates, proteins, fats, iodine, and/or folic acid are at a higher risk of giving birth to stunted children.

Abstract

Background: The number of older adults who have poor nutritional status is still often found in nursing homes in Salatiga City. Lack of appetite is the leading cause of poor nutritional status. Even though the nursing home has provided a healthy food menu for each older person, comfort food can be used to increase appetite so that the nutritional status of the elderly improves. This research aims to describe perceptions of comfort food to elderly caregivers in providing food at the Salatiga Nursing Home. The research method is qualitative with a descriptive approach. The criteria for participants are caregivers or caretakers of older adults aged 30-60 years who work in nursing homes to provide food and can still communicate. The research participants were ten caregivers or administrators of the three nursing homes in Salatiga City, Central Java nursing homes. The research results were five themes: first, food menu management, selection of food menus for the elderly, preparation of menu lists in nursing homes made by the caregivers, and asking the elderly about their food preferences. Both elderly eating habits and nutritional status, older adults have the habit of not finishing food if it does not suit their taste. Third, caregivers often feel sad and disappointed when older people do not finish their food. The fourth is the meaning of comfort food, which is everyone's favorite food from childhood. Fifth, comfort food is needed to manage food in nursing homes. Conclusions show that comfort food is understood as a term for favorite foods or favorite foods for caregivers in nursing homes but has not yet been used as an approach in the nutritional management of the elderly.

Abstract

Background: Pumpkin, purple sweet potato, catfish, and soybean tempeh contain nutritional elements beneficial for health. These ingredients, formulated into enteral formulas, are expected to serve as potential nutritional therapy for malnutrition.Objectives: This study aims to explore the hedonic aspects, hedonic quality, and viscosity of enteral formulas made from pumpkin, purple sweet potato, catfish, and soybean tempeh.Method: This research employed a Randomized Complete Block Design (RCBD) consisting of four treatments labeled as L1, L2, L3, and L4 with consecutive ratios of catfish flour to soybean tempeh flour being 19:31, 21:29, 23:27, and 25:25. Hedonic and hedonic quality were analyzed using the Friedman test, while viscosity was analyzed using the One-Way ANOVA test.Results: The research results indicate a significant influence (p0.05) on viscosity and hedonic quality tests for color and thickness parameters, as well as hedonic tests for taste and aroma parameters. However, there is no significant influence (p0.05) on hedonic quality tests for taste and aroma parameters and hedonic tests for color and thickness parameters.Conclusion: The highest average results in hedonic and hedonic quality tests were found in enteral formula L1. The panelists favored enteral formula L1, which had the least amount of catfish flour and the most soybean tempeh flour. The enteral formula with the best hedonic quality was also identified as formula L1. As the proportion of added catfish flour increased, the viscosity of the enteral formula also increased.

Abstract

Background: Type-2 diabetes mellitus (DM) is a metabolic syndrome characterized by hyperglycemia due to oxidative stress. Efforts to reduce oxidative stress may include consuming snacks with high antioxidant activity and flavonoids made from purple sweet potato flour and kidney bean flour.Objectives: To determine the effects of the purple sweet potato flour and kidney bean flour ratio on the organoleptic properties (hedonic and hedonic quality tests), antioxidant activity, flavonoid content, and estimated selling price per serving of pie as an alternative snack for patients with type-2 DM.Method: Used a Complete Randomized Design (CRD) with three formulations of purple sweet potato flour and kidney bean flour: F1 (60%:40%), F2 (70%:30%), and F3 (80%:20%). Statistical analysis of antioxidant activity and flavonoids was performed using ANOVA and Duncan’s test. Meanwhile, organoleptic properties were examined using Kruskal-Wallis and Mann-Whitney tests.Results: There was significant effect of the purple sweet potato flour and kidney bean flour ratio on antioxidant activity, flavonoid content, and hedonic tests (color and aroma) (p0.05). However, no significant effect was found on hedonic taste, texture, mouthfeel, aftertaste, overall preference, and all hedonic quality (p0.05). The antioxidant activity of the pie formulations F1, F2, and F3 was weak, namely 6.539 mg/ml, 8.158 mg/ml, and 7.679 mg/ml, respectively. The flavonoid content was also low, accounting for 0.74%, 0.52%, and 0.80%, respectively. The selected formulation was F3 with hedonic quality of brown color, slightly weak sweet taste, weak bitter taste, distinctive flour taste, and medium aroma, texture, mouthfeel, and aftertaste. The estimated selling price per serving (85g) of F3 was IDR 3,768.26Conclusion: The selected formulation (F3) of  pie can used as alternative snack for patients with type-2 DM.

Abstract

Background: One of the health problems that often occurs in children under 3 years of age is underweight. The prevalence of underweight in Purwakarta Regency is 14.1%. One of the efforts to overcome this underweight problem is through the Supplementary Feeding Programme (PMT). Catfish can be an option of food ingredients for PMT because it is high in protein and omega-3. Objective: To determine the effectiveness of catfish consumption as an alternative to supplementary feeding (PMT) for children under 3 years of age.Methods: This research design used a quasi-experiment with a non-equivalent control-group before-after design approach. The sample size was 30 children for each intervention and control group. Statistical analysis used univariate, bivariate using paired T-test and Independent T-test, effectiveness using N-Gain test, and multivariate multiple logistic regression test.  Results: The results of the study using a paired T-test showed that there was a difference in the increase in body weight before and after administration of catfish PMT in the intervention and control groups (p-value = 0.001). The independent t-test results showed no significant difference in body weight after administration of catfish PMT in the intervention and control groups (p-value = 0.182). The results of the N-Gain test showed that the intervention group had an average of 7.55% and the control group had an average of 6.99%, which means that the provision of catfish PMT on weight gain is ineffective in the intervention and control groups.

Abstract

Pertumbuhan dan perkembangan anak dipengaruhi oleh gizi, sehingga sangat penting untuk memantau pertumbuhan dan perkembangan anak. Pemantauan dapat dilakukan di Posyandu, selain itu Posyandu juga berfungsi sebagai media promosi kesehatan. MPASI merupakan makanan yang diberikan kepada bayi mulai usia 6 bulan, namun pengenalan MPASI kepada bayi seringkali dilakukan sebelum usia 6 bulan, sehingga dilakukan penyuluhan terkait MPASI. Penelitian ini bertujuan untuk mengetahui tingkat pengetahuan ibu balita sebelum dan setelah dilakukan penyuluhan terkait MPASI, efektivitas penggunaan media brosur dalam penyuluhan, serta hubungan usia pemberian MPASI dengan status gizi balita. Populasi merupakan balita di Desa Mulyasejati, Kecamatan Ciampel. Subjek merupakan balita di Posyandu Cempaka II IX. Metode yang digunakan adalah Quasi Experimental Design dengan model one group pretest-posttest design. Hasil dan kesimpulan yang diperoleh yaitu terdapat peningkatan pengetahuan ibu balita sebelum dan setelah penyuluhan, namun media brosur dikatakan tidak efektif secara signifikan dengan p-value 0,225 (p0,05), sedangkan usia awal pemberian MPASI tidak memiliki korelasi terhadap status gizi (wasting) dengan p-value=0,757 (p0,05).

Abstract

Latar Belakang: Diabetes Melitus (DM) merupakan penyakit gangguan metabolik kronis yang di sebabkan oleh beberapa faktor diantaranya asupan zat gizi makro, indeks glikemik dan beban glikemik yang di tandai tingginya kadar glukosa darah sewaktu (GDS) akibat gangguan fungsi insulin.        Tujuan: Tujuan dari Penelitian ini adalah untuk mengetahui Hubungan Tingkat Asupan Zat Gizi Makro, Indeks Glikemik Dan Beban Glikemik Dengan Glukosa Darah Sewaktu Pada Pasien Diabetes Melitus Tipe 2Metode: Penelitian ini merupakan kuantitatif dengan desain cross sectional yang  dilakukan pada Tanggal 19 Juni- 14 Juli 2024 di RSU Az-Zahra Kalirejo Kabupaten Lampung Tengah. Populasi berjumlah 162 orang dan responden berjumlah 50 orang yang diambil dengan teknik sampling purposive sampling. Data primer diperoleh melalui wawancara menggunakan form recall 2x24 jam. Analisis bivariat menggunakan uji korelasi gamma. Hasil: Hasil penelitian menunjukkan dari 50 orang pasien DM Tipe 2 terdapat 39 (78%)  pasien memiliki kadar GDS hiperglikemik, 24 (48%) asupan energi defisit tingkat berat, 25 (50%) asupan karbohidrat defisit tingkat berat, 20 (40%) asupan protein defisit tingkat berat, 21 (42%) asupan lemak defisit tingkat berat, 25 (50%) indeks glikemik rendah, 26 (52%) beban glikemik rendah.Kesimpulan: Ada hubungan yang kuat antara asupan zat gizi makro (energi p= 0,001. karbohidrat p= 0,002. protein p= 0,005, lemak p= 0,004), indeks glikemik (p=  0,001) dan beban glikemik (p=0,001) dengan kadar glukosa darah sewaktu pasien diabetes melitus tipe 2. Diharapkan pasien DM tipe 2 dapat menerapkan prinsip 3J yaitu tepat jenis, jumlah dan jadwal makanan yang dikonsumsi dalam pengendalian glukosa darah sewaktu.

Abstract

ABSTRAK Latar Belakang: Gizi buruk disebabkan oleh kekurangan energi, protein, dan penyakit infeksi yang mempengaruhi pertumbuhan dan balita. Salah satu pendekatan pengelolaan gizi pada balita kurang gizi adalah dengan memberikan makanan tambahan lokal, seperti tepung ikan gabus dan tepung kacang hijau, yang kaya akan energi dan protein.Tujuan: Untuk mengetahui pengaruh substitusi tepung ikan gabus dan tepung kacang hijau terhadap mutu organoleptik dan kandungan gizi kue lidah kucing sebagai makanan tambahan alternatif untuk balita gizi buruk umur 12-59 bulan.Metode: Penelitian eksperimental ini menggunakan Rancangan Acak Lengkap (RAL) dengan 3 perbandingan tepung terigu: tepung ikan gabus: tepung kacang hijau (F1 = 60%:20%:20%; F2 = 40%:20%:20%; F3 = 20%:40%:40%) dan 2 kali berulang. Data sifat organoleptik dianalisis menggunakan uji Kruskal-Wallis dan Mann-Whitney , sedangkan kandungan gizi dianalisis menggunakan uji Anova dan Duncan .Hasil : Hasil penelitian menunjukkan bahwa kedua bahan substitusi berpengaruh nyata terhadap uji hedonik rasa, uji mutu warna hedonik, dan kandungan gizi (p0,05), tetapi tidak berpengaruh nyata terhadap aroma, tekstur, aftertaste, sensasi rasa di mulut, uji warna hedonik, dan uji mutu rasa hedonik (p0,05). Formulasi terpilih F2 secara hedonik memiliki aroma, rasa, warna, dan aftertaste yang kurang disukai, dengan tekstur yang cukup disukai dan sensasi di mulut . Uji mutu hedonik menunjukkan aroma agak amis, rasa kacang, rasa pahit, agak asin, aroma harum, rasa manis, aftertaste , sensasi di mulut , tekstur agak renyah, dan warna coklat. F2 hah kadar abu 2,15%, udara 4,25%, protein 18,56%, lemak 23,76%, karbohidrat 51,30%, energi dari lemak 213,80 kkal, dan energi total 493,20 kkal. Kesimpulan: Cookies F2 memenuhi persyaratan sebagai makanan tambahan dan cookies Standar Nasional Indonesia kecuali kadar abu. Ukuran sajian 25 gram (5 lembar) memberikan kontribusi 10-15% dari angka kecukupan gizi (AKG) balita usia 12-59 bulan dan dapat dianggap sebagai cookies berprotein tinggi berdasarkan label informasi gizi untuk anak usia 1-3 tahun sebesar 71,38% .
