Abstract

The mangrove ecosystem is an important habitat for fiddler crabs (Uca spp.). Mangroves provide shelter, breeding grounds, and a food source in the form of organic matter from decaying leaves. The reduction in mangrove forest area will impact the survival of fiddler crabs because mangrove trees are their natural habitat and also provide food for these crabs. This study aims to identify the diversity and population density of fiddler crabs (Uca spp.) and to analyze the types of mangroves and their density. The method used in this research was a survey method at three observation stations, employing manual sampling techniques (hand collecting), as well as diversity analysis using the Shannon-Wiener index and mangrove density based on standard criteria from the Ministry of Environment. The results showed the presence of four species of fiddler crabs (Uca rosea, Uca forcipata, Uca coarctata, Uca dussumieri) and four types of mangroves (Sonneratia alba, Rhizophora mucronata, Avicennia alba, and Nypa fruticans). The diversity index of fiddler crabs was categorized as moderate, while mangrove density varied among stations, with tree density classified as sparse, and pole and seedling density classified as moderate and dense, respectively. This research provides important information for conservation efforts and sustainable management of the mangrove ecosystem in the region

Abstract

Udang vaname (Litopenaeus vannamei) adalah komoditas penting dalam akuakultur global dengan nilai ekonomi tinggi, berkontribusi pada pendapatan petambak dan ekonomi lokal. Budidaya vaname di Indonesia umumnya masih menggunakan metode tradisional dengan manajemen tambak terbatas. Kondisi fisika-kimia air tambak yang kurang optimal dapat menyebabkan stres pada udang dan meningkatkan resiko infeksi patogen, seperti bakteri Vibrio yang memicu penyakit Vibriosis, mengancam kesehatan udang dan menimbulkan kerugian. Penelitian ini bertujuan mengetahui faktor fisika-kimia air yang mempengaruhi total Vibrio pada hepatopankreas udang vaname di tambak tradisional Kecamatan Rungkut, Surabaya. Metode yang digunakan adalah survei dengan pengumpulan data melalui pengamatan langsung dan analisis laboratorium. Analisis regresi linear sederhana dengan taraf signifikansi 5% menunjukkan bahwa oksigen terlarut (DO) dan amonia berpengaruh nyata terhadap total Vibrio pada hepatopankreas udang vaname. DO memiliki nilai p 0,025 dengan korelasi negatif, sedangkan amonia memiliki nilai p 0,020 dengan korelasi positif.

Abstract

The Chinese pond mussel (Sinanodonta woodiana) is an invasive species in Indonesian waters with potential utilization as a food source, particularly as a by-product of freshwater pearl aquaculture in the future. However, most studies on clam processing in Indonesia have focused on the local species Pilsbryoconcha exilis, while research on S. woodiana remains limited. This article aims to review the meat characteristics of S. woodiana and to propose strategies for developing potential processed products. The study was conducted through a literature review complemented by preliminary observations of locally caught samples. The findings indicate that clam meat tends to become tough after heating and undergoes high cooking loss, consistent with previous studies. Earlier processing attempts, such as meatballs, nuggets, crackers, and shredded meat, have not penetrated modern markets due to technical constraints, negative consumer perceptions, and the absence of sustainable business models. To address these challenges, this article highlights four products considered most promising: clam meatballs and nuggets (previously explored) and two new proposals, namely ready-to-cook frozen clam and crispy whole clam. These products are considered aligned with market trends, technologically simple, and potentially supportive of MSME development within a zero-waste framework.

Abstract

Hilsa kelee is an abundant fishery commodity in Balinese waters and has great potential as a raw material for functional food products due to its high protein content and omega-3 fatty acids. One popular form of processing is fish meatballs. However, challenges in improving sensory quality and nutritional value remain a concern. This study aims to investigate the effect of adding seaweed flour in various concentrations (0%, 1%, 2%, 3%, and 4%) on the quality and consumer preference of Mata Belo fish meatball products. Seaweed is known to contain fiber, minerals, and bioactive compounds that can improve the functional and organoleptic characteristics of food products. This study was conducted at the Teaching Factory of the Marine and Fisheries Polytechnic of Jembrana in February–March 2025, using experimental methods and sensory tests (SNI 7266:2017) and hedonic (SNI 2346:2015) with 30 panelists. Data analysis was carried out using the Kruskal-Wallis and Mann-Whitney tests. The results showed that the addition of seaweed flour significantly affected the odor and taste attributes (p < 0.001), but did not significantly affect the appearance and texture (p > 0.05). Meanwhile, the hedonic test showed that the concentration variation did not significantly affect the panelists' preference level for all attributes (p > 0.05). The addition of seaweed flour up to 4% can improve sensory quality without reducing consumer preference. This research contributes to the development of functional food products based on local fish and seaweed that are value-added and competitive.

Abstract

Fish floss is one of the processed fish-based products that has a longer shelf life and high nutritional value. This study aimed to analyze the nutritional composition and consumer preferences of catfish and tuna floss produced by local SMEs in Banyumas Regency. Proximate analysis showed that catfish floss contained 7.29% moisture, 2.82% ash, 27.30% protein, 16.80% fat, 33.62% fiber, and 26.79% sugar. Meanwhile, tuna floss contained 8.12% moisture, 4.86% ash, 29.66% protein, 11.32% fat, 24.71% fiber, and 28.31% sugar. Both products met most of the SNI quality standards. A hedonic test involving 60 panelists using the conjoint method revealed that price, color, aroma, and taste were the dominant attributes influencing consumer preferences. Tuna floss was superior in protein content and aroma, while catfish floss excelled in texture and fiber. These findings indicate that local fish floss products have strong potential to enhance the competitiveness of SMEs and promote higher fish consumption among the community.

Abstract

Tanaman Garcinia cowa atau asam kandis memiliki beberapa senyawa bioaktif seperti xanthone, flavonoid, tanin, dan asam hidroksisitrat (HCA) yang bermanfaat bagi kesehatan dan pertumbuhan. Kandungan senyawa bioaktif yang terkandung didalamnya menjadikan asam kandis berpotensi untuk dijadikan sebagai alternative feed aditif alami dengan tujuan untuk meningkatkan efisiensi pakan, dan pertumbuhan ikan. Penelitian dilakukan dengan menggunakan model penelitian Rancangan Acak Lengkap dengan 4 perlakuan dan 3 ulangan. Perlakuan yang diberikan merupakan penambahan ekstrak asam kandis sebesar 0% (Perlakuan A), 0,5% (Perlakuan B), 1% (Perlakuan C), dan 1,5% (Perlakuan D). Parameter yang diamati berupa laju pertumbuhan harian, tingkat kelangsungan hidup, dan rasio konversi pakan. Analisa data menggunakan statistik uji ragam (Uji Anova) dengan tingkat kepercayaan 95%, apabila terdapat perbedaan yang signifikan maka dilanjutkan dengan Uji Duncan untuk mengetahui nilai antar perbedaan. Hasil penelitian menunjukan bahwa penambahan 0,5% tepung asam kandis (perlakuan B) pada pakan ikan dengan metode coating, memberikan performa terbaik terhadap performa pertumbuhan benih ikan nila dengan nilai laju pertumbuhan harian sebesar 3,37% per hari, rasio konversi pakan sebesar 1,30, dan SR sebesar 60%. Penelitian ini menunjukkan adanya potensi tepung asam kandis sebagai feed aditif alami dalam pakan ikan.

Abstract

Fish is a high-quality source of animal protein that is easily digested and contains complete essential amino acids. The relatively low fish consumption in Indonesia encourages the need for diversification of fish-based products to increase public interest in nutritious food. Tilapia (Oreochromis niloticus) flour contains high protein and can be easily applied to various food products, making it a potential fortification ingredient for snack foods such as churros. This study aimed to analyze the effect of adding tilapia flour on the acceptability and nutritional content of churros. The research used an experimental method with four concentration treatments of tilapia flour (0%, 5%, 10%, and 15% of wheat flour weight) and involved 25 semi-trained panelists in a hedonic test assessing appearance, aroma, texture, and taste. Proximate analysis was conducted on the control and the most preferred treatment. The hedonic data were analyzed using the Friedman and Bayes tests, while the proximate results were analyzed descriptively. The results showed that churros with 10% tilapia flour were the most preferred, with taste being the most influential attribute. The churros contained 17.38% moisture, 11.88% protein, 42.63% fat, 1.47% ash, and 43.60% carbohydrates. This study concludes that the addition of tilapia flour can enhance the nutritional content of churros without reducing consumer acceptance, making it a promising alternative for flour-based food innovation.

Abstract

Coral reefs are essential habitats that support marine biodiversity and serve several ecological functions, such as protecting coastlines from erosion and providing fishery resources that enhance the livelihoods of coastal communities. However, these ecosystems face significant threats from human activities and natural factors. Therefore, a comprehensive understanding of community perspectives is crucial for supporting conservation efforts. This study aims to explore the community's knowledge of coral reef ecosystems in the waters surrounding Pangalasiang Island, Donggala Regency, and analyze the factors influencing these perceptions. A purposive sampling method was employed, involving 25 respondents, including fishermen, fishery entrepreneurs, and residents of Pangalasiang Island. Data were collected through questionnaires, structured interviews, and field observations, and analyzed using a Likert scale to gauge respondents' perceptions of various aspects. The results indicated that most respondents had a positive perception of coral reefs. They recognized the ecosystem's role in maintaining fish stocks, protecting coastlines, and creating economic opportunities through the fisheries and marine tourism sectors. Key factors influencing these perceptions included education level, type of livelihood, experience interacting with the sea, and knowledge of ecological benefits. This positive perception may contribute valuable social capital to community-based management initiatives, emphasizing active community participation. Therefore, the findings of this study are expected to serve as a foundation for developing conservation and empowerment strategies for coastal communities, promoting sustainable management of coral reefs.

Abstract

Exploring the STUNFISH strategy is an important integrated effort to optimize stunting prevention. The urgency of this research lies in the importance of exploring the conceptual STUNFISH strategy in improving access to quality food, which is integrated with coastal communities in utilizing local fishery products. This, in turn, can help prevent stunting. This study aims to explore community expectations of the STUNFISH (Stunting Prevention through Fish Diversification) strategy as an approach to stunting prevention based on the diversification of processed fishery products.  The research method uses a concurrent mixed method design with a triangulation strategy, in which quantitative and qualitative data are collected simultaneously. The research sample consisted of 96 respondents from the coastal communities of Jeneponto Regency, who were determined using simple random sampling based on the Lemeshow formula. The results showed that the majority of respondents, consisting of pregnant women, nursing mothers, and mothers of toddlers, responded positively (“agree” and “strongly agree”) to the ten STUNFISH strategies. The strategies with the highest level of support included diversification of nutritious fishery products, promotion of local foods, marketing campaigns, development of fish processing skills, and MSME entrepreneurship assistance. These results show positive acceptance and high expectations from the community towards the stunting prevention program based on processed fishery products. The integration of increased nutritional intake with local economic development makes STUNFISH a comprehensive and adaptive intervention model in efforts to reduce the prevalence of stunting.
