Abstract

The aim of this study was to analyze the differences in nutrient intake based on region characteristics in children under-five, in health centers, Kabupaten Tangerang. We used primary data such as; eating habits (nutrient intake), and characteristics of the region with the cross-sectional approach. The total of subject is about 48 children with using voluntary sampling technique. Independent sample t-test and Mann Whitney (non-parametric) were applied to answer the research questions. Children aged 6-23 months and 24-48 months were female (53.3%) and male (55.6%). Children aged 6-23 months living in rural areas (76.7%), their parents as Fishermen and Farmers (40.0%), the average of household expenditure is about < Rp.2.649.086 (82.8%). Children aged 24-48 months living in urban areas (72.2%), their parents as laborers (72.2%), the average household expenditure is about <Rp.2.649.086 (72.2%). There are differences between energy, carbohydrate, protein, and fat intake based on the level of household expenditure in the group of children aged 6-23 months (p<0.05), but the study failed to find in the age group 24-48 months (p≥0. 05). Abstract

Banana skin contains nutrients that are high enough, especially in vitamins and minerals so that they can be used as raw material for food by processing it into flour. Banana skin flour can be used as a variety of processed foods. This study aims to develop snack alternatives for children aged 6-24 months in the form of MP-ASI biscuits with basic ingredients of Ambon banana peel and the addition of sweet potatoes in the hope that in addition to increasing nutritional value it can also increase the added value of the waste. This study uses experimental design carried out in March to November 2018. The flow of research includes (1) First Phase, namely the proposition research and (2) The second stage, namely the main research. Preliminary research includes preparation of tools and materials, then making basic ingredients namely banana peel flour and red sweet potato flour, as well as determining biscuit formulations. While the main research includes organoleptic tests (hedonic quality and acceptability), nutritional value tests (proximate test for macro nutrients and β-carotene test using HPLC), and tests of TPC (Total Plate Count) microbial contamination. The results showed that biscuits made from banana peel and red sweet potato met the SNI standard for MP-ASI so that it can be recommended for food for infants aged 6-24 months, but the temperature of storage, processing and packaging must be considered to be able to meet the requirements for food safety.Keywords: banana skin ambon, red sweet potato, mp-asi biscuits, baby food

Abstract

Background: One group of school-age children has nutritional problems. The problem of excess nutrients can affect body function, while a nutrient deficiency can cause impaired body growth and maturity of the reproductive organ system. Also, daily nutritional deficiencies can cause a lack of concentration in learning. Purpose: To determine the effect of food consumption patterns on nutritional status. Method: The research design used was observational with a cross-sectional study approach. This research was conducted at SMP Negeri 3 Satu Atap Batu Bujur, West Bilah Subdistrict, Labuhan Batu Regency, North Sumatra Province with a research sample of 78 students consisting of class VII and VIII aged 13-15 years. The sampling technique in this research is using the total sampling method. Data analysis was performed univariate and bivariate using the Chi-Square test. Results: dietary variation was associated with nutritional status with a p-value (0.010). Snack food was related to nutritional status with a p-value (0.45). Physical activity is related to nutritional status with a p-value (0.030). Conclusion: There is a correlation between dietary variation, snack food, and physical activity with nutritional status among students. It is recommended that students keep their food consumption and physical activity in accordance with nutritional needs.Keywords: Food Variation, Snack Food, Physical Activity, Nutritional Status.

Abstract

AbstractIron deficiency Anemia is one of the main problems in Indonesia where the death rate on pregnant women is still quite high. To overcome this problem the Indonesian goverment have been implementing a distribution of iron tablets to pregnant women since 1970.  The study was aimed to analyze the relationship between the attitude of compliance consumption of iron tablets and hemoglobin level in pregnant women at Puskesmas, Kecamatan Palmerah, Administration city of West Jakarta. The study population is pregnant women who visit the Puskesmas Kecamatan Palmerah. Whereas, the sample of this study is pregnant women who visiting the puskesmas, they got iron tablets, and in trimester II. This study used Pearson Product Moment Correlation to analyze the data. The study found that there was significant  relationship between the attitude of compliance consumption of iron tablets and hemoglobin level in pregnant women at Puskesmas, Kecamatan Palmerah, Administration city of West Jakarta. The study revealed that the consumption level of iron and Calcium are still below RDA. Therefore the counseling of anemia and iron tablets are still needed to improve their consumption.Keywords: iron deficiency anemia, hemoglobin, iron tablets AbstrakAnemia Gizi Besi adalah salah satu masalah utama di Indonesia dimana terjadi paling tinggi pada Ibu hamil. Dalam megatasi masalah ini, di Indonesia telah dijalankan pemberian tablet besi yang di khususkan pada Ibu hamil sejak tahun 1970. Penelitian ini bertujuan untuk menganalisis hubungan sikap kepatuhan terhadap konsumsi tablet besi dan kadar hemoglobin pada ibu hamil di Puskesmas, Kecamatan Palmerah, Kota administrasi, Jakarta Barat. Populasi dalam penelitian ini adalah ibu hamil yang mengunjungi Puskesmas Kecamatan Palmerah. Sedangkan sampel pada penelitian ini adalah ibu hamil yang mengunjungi Puskesmas, mereka mendapatkan tablet besi, dan ada pada trimester II. Penelitian ini menggunakan uji Pearson Product Moment untuk menganalisis data. Dari hasil uji ditemukan bahwa ada hubungan yang bermakna antara sikap kepatuhan konsumsi tablet besi dengan kadar hemoglobin pada ibu hamil di Puskesmas Kecamatan Palmerah, Kota administrasi Jakarta Barat. Penelitian ini juga melihat bahwa konsumsi zat besi dan kalsium masih di bawah Angka Kecukupan Gizi. Oleh karenanya, penyuluhan tentang anemia dan zat besi masih diperlukan untuk meningkatkan konsumsi mereka.Kata kunci: anemia, zat besi, hemoglobin

Abstract

AbstractGrowth Period influenced by intrinsic factors (genetic) and ekstrensik factors (nutrients , oxygen, hormones), growth factors, psychosocial and chronic-diseases. The aims of this study was to determine the differences height gain of 4-5 graders who consume enough iodine and less. The data was conducted in June-August 2009. This research is a comparative study with a longitudinal approach. The population of this study is a public elementary school students Lagoa 06, we got the sample total are 74 respondents. We used t-test to analyzed data. Data collected includes are characteristics of sampling population, gender, age and consumption patterns iodine, intake of iodine from food frequency and iodine test from salt. Based on consumption patterns found that 41.9 % good, 54.1 % fairly good and 4.1 % less consumption. The average of accretion height from iodine intake with category fairly good and less, respectively (0.92 ± 0.517) and (0.39 ± 0.261). The result found that there's significant difference accretion of height between the fairly good iodine intake and less (p<0.05). Need to consume food high iodine to assist the growth of school age children.  Keywords: Height, Iodium, School-age Children  AbstrakPertumbuhan dipengaruhi oleh faktor intrinsik (genetik) dan faktor ekstrensik (zat gizi, oksigen, hormon), faktor pertumbuhan, psikososial dan berbagai penyakit kronis. Penelitian ini bertujuan untuk mengetahui perbedaan pertambahan tinggi badan anak kelas 4-5 yang mengonsumsi iodium cukup dan kurang. Pengambilan data dilakukan pada bulan Juni-Agustus 2009. Jenis penelitian ini adalah penelitian yang bersifat komparatif dengan pendekatan longitudinal. Populasi dalam penelitian ini adalah siswa Sekolah Dasar Negeri Lagoa 06 sedangkan sampelnya sebanyak 74 responden. Analisa pada data penelitian ini dengan menggunakan uji beda rata–rata (t-test). Data yang dikumpulkan meliputi: Karakteristik sampel, jenis kelamin, umur dan pola konsumsi iodium, konsumsi iodium diambil melalui food frekuensi dan tes iodium pada garam. Berdasarkan pola konsumsi 41,9% dinyatakan baik 54,1% cukup dan 4,1% konsumsi kurang. Pertambahan tinggi badan rata-rata konsumsi iodium cukup diperoleh nilai (0,92±0,517) dan untuk iodium kurang (0,39±0,261). Dari hasil uji komparasi, didapatkan adanya perbedaan penambahan tinggi badan antara yang mengkonsumsi iodium cukup dan yang kurang secara signifikan dengan nilai P<0,05. Diperlukannya konsumsi sumber makanan tinggi iodium untuk membantu pertumbuhan anak usia sekolah. Kata Kunci: Tinggi badan, Iodium, Anak Sekolah

Abstract

  AbstrakBuah melodi merupakan buah import yang mulai dikembangkan dan dibudidayakan di Indonesia. Banyak orang yang mengatakan rasa buah melodi menyerupai rasa buah melon.  Mengetahui perbedaan daya terima dan komposisi zat gizi pada sirup buah melodi yang dibandingkan sirup buah melon. Metode: Jenis penelitian yang digunakan adalah eksperimen murni dengan metode Visual Analog Scale (VAS) dengan 3 variasi konsentrasi buah yang berbeda yaitu 0,5kg; 2kg; dan 3kg. Analisis statistik yang digunakan adalah One way Anova dan t-test. Analisa komposisi zat gizi meliputi kadar karbohidrat, gula (total padatan terlarut), vitamin C, dan serat kasar. Berdasarkan uji organoleptik sirup buah melodi dan sirup buah melon, yang banyak disukai adalah sirup dengan konsentrasi buah 0,5kg dan sirup buah melon lebih banyak dipilih. Berdasarkan hasil uji statistik nilai yang didapat untuk aroma (49,27+21,09), warna (40,87+18,67), dan rasa (50,88+22,76). Tidak ada perbedaan yang signifikan dari tingkat kesukaan, aroma, warna, dan rasa p≥0,05. Kata kunci: Buah melodi, Zat Gizi, Sirup

Abstract

AbstractBackground: Stunting prevalence for 7-12 years old in Nusa Tenggara Islands is still above the national prevalence (35.6%), in NTT (58.5%), NTB (39.6%). The prevalence of emaciation child in NTT (17%), NTB (17.7%), are still above the national prevalence (12.2%). Objective: To analyze differences in macro-nutrients intake and fiber based on nutritional status of children aged 7–12 years old in Nusa Tenggara Islands (NTT and NTB). Design: Using data from the Health Research (Riskesdas), with cross sectional method, statistical test used independent t-test and one-way ANOVA test. The sample is 1104 school children aged 7–12 years in the islands of Nusa Tenggara (NTT and NTB).   Result: The average intake of energy, protein, fat, carbohydrates, and fiber in school children aged 7–12 years in Nusa Tenggara Islands still less than the requirement. Most children have normal nutritional status (71,3%). Respondents were more men (63,2%) and reside in rural areas (63,2%). The majority of the highest education level of the head of households was not graduated from primary school (83,8%). There are differences in energy and fat intake between men and women (p<0,05). There are differences in fat and fiber intake in rural and urban areas (p<0,05). There are differences in energy, protein, and carbohydrate intake based on education level of household head (p<0,05). There is no difference in energy and macro-nutrients intake based on nutritional status of children (p≥0,05). Prevalensi anak kekurusan di NTT (17%), NTB (17,7%), masih diatas prevalensi nasional (12,2%). Tujuan: Menganalisis perbedaan asupan zat gizi makro dan serat berdasarkan status gizi anak usia 7-12 tahun di Kepulauan Nusa Tenggara (NTT dan NTB). Metode Penelitian: Menggunakan data hasil Riset Kesehatan Dasar (Riskesdas), dengan metode cross sectional, uji statistik yang digunakan t-test independen dan uji one-way anova. Sampel sebanyak 1104 anak sekolah usia 7-12 tahun di Kepulauan Nusa Tenggara (NTT dan NTB).   Hasil Penelitian: Rata-rata asupan energi, protein, lemak, karbohidrat, dan serat pada anak sekolah usia 7-12 tahun di Kepulauan Nusa Tenggara masih kurang dari kebutuhan seharusnya. Sebagian besar anak berstatus gizi normal (71,3%). Responden lebih banyak laki-laki (51,3%) dan bertempat tinggal di pedesaan (63,2%). Tingkat pendidikan tertinggi kepala keluarga yang paling banyak yaitu yang tidak tamat SD/MI (83,8%). Ada perbedaan yang asupan energi dan lemak antara laki-laki dan perempuan (p<0,05). Ada perbedaan asupan lemak dan serat di pedesaan dan perkotaan (p<0,05). Ada perbedaan asupan energi, protein, dan karbohidrat berdasarkan tingkat pendidikan tertinggi kepala rumah tangga (p<0,05).  Tidak ada perbedaan asupan energi, dan zat gizi makro berdasarkan status gizi anak (p≥0,05). Sedangkan asupan serat terdapat perbedaan berdasarkan status gizi (p<0,05).Kata kunci: anak sekolah, asupan energi, zat gizi makro

Abstract

AbstrakPendidikan kesehatan dan gizi dapat diberikan kepada anak-anak melalui suatu media yang dapat menarik minat mereka untuk mengetahui, mempelajari, dan kemudian mempraktikkan dalam kehidupan mereka sehari-hari. Hal ini dapat dilakukan dengan menggunakan wahana permainan yang menarik dan mengajarkan pola hidup sehat bagi anak-anak secara tidak langsung tanpa kesan menggurui. Wahana permainan ini diharapkan akan merangsang anak-anak untuk lebih kreatif dan dapat berinteraksi sesama mereka. Tujuan dari penelitian ini adalah menilai pengaruh pemberian pendidikan kesehatan dan gizi melalui media boardgame terhadap pengetahuan dan sikap kesehatan dan gizi serta variasi pilihan pangan pada anak usia sekolah dasar di Jakarta Barat. Sampel penelitian ini adalah siswa sekolah dasar kelas 3 di SD negeri 11 Pagi Duri Kepa. Desain penelitian ini adalah case control. Kelompok intervensi diberikan permainan boardgames PiKA-PiKA dengan dua kali putaran permainan. Kedua kelompok diberikan kuesioner yang sama. Pada kelompok intervensi, kuesioner diberikan setelah diberikan permainan. Kelompok kontrol hanya diminta mengisi kuesioner tanpa diberikan permainan PiKA-PiKA sebelumnya. Analisis data dilakukan secara deskriptif dan inferensia dengan uji Independent T Test. Hasil penelitian menunjukkan pengetahuan kesehatan dan gizi pada kelompok kontrol lebih baik berbanding kelompok intervensi (p<0.05). Pada penilaian sikap dan variasi pilihan pangan diperoleh hasil bahwa tidak terdapat perbedaan yang signifikan antara kedua kelompok (p>0.05).Kata kunci: Boardgames, Gizi, Kesehatan, Pendidikan

Abstract

Coronary Heart Disease (CVD) is the manifestation of atherosclerosis which is formed of foam cells formation. Beside of medicine, the alternative way to prevent CVD is by high soluble fiber food consumption such as persimmon fruit (Diospyros kaki var. Junggo). The aim of this experiment was to understand the effect of persimmon fruit toward the foam cells formation in the intima aorta layer of rat (Rattus novergicus strain wistar) with atherogenic diet. The experiment was conducted by using experimental laboratoric in vivo with True Experimental Design (Post Test-Only Control Group Design) about 12 weeks, using 5 male rats/group + 1 male rat for spare in each group, the age about 56120 days, and the weight about 100-200 g. The experimental rats were divided into 5 groups, i.e P0 (30.6 g normal diet), P1 (22.9 g atherogenic diet), P2 (22.4 g atherogenic diet + 1.2 g persimmon flour), P3 (21,9 g atherogenic diet + 2.4 g persimmon flour), and P4 (21.4 g atherogenic diet + 3,6 g persimmon flour). Calculation of foam cells was carried out using light microscop with 400x magnification in the area of intima aorta layer of rat. The experiment proved that persimmon flour intervention orally could reduce foam cells formation in the intima aorta layer of white rat with atherogenic diet.  Keywords: atherogenic diet, persimmon, soluble fiber, foam cells

Abstract

Remaja merupakan masa transisi dari anak-anak menuju dewasa. Pada masa ini, remaja akan lebih memprioritaskan citra tubuh (body image). Tujuan penelitian ini adalah untuk mengetahui faktor-faktor yang berhubungan dengan body image pada remaja di Karawang. Penelitian ini menggunakan desain cross-sectional study. Jumlah subjek penelitian sebanyak 66 siswa SMA yang diambil dengan purposive sampling. Analisis data yang digunakan adalah uji chi-square. Hasil penelitian ini menunjukkan bahwa hanya pengetahuan mengenai body image dan ideal body image berhubungan dengan body image (p-value < 0.000). Pengetahuan gizi remaja perlu ditingkatkan melalui pendidikan gizi agar mampu memperbaiki persepsi mereka tentang body image. Kata kunci : citra tubuh, remaja, Karawang
