Abstract

Parents of children with Autism Spectrum Disorder (ASD) often report that their children are picky eater or selective in consuming food and refuse to try new food. This may affect the adequacy of nutritional intake. The purpose of this research was to analyse the correlation between picky eater behavior and nutrient adequacy of children with autism. This cross sectional research was conducted in 38 children with autism at SLB AGCA Center Surabaya using random sampling technique. The correlation between picky eater behavior and nutrient adequacy was analyzed by Chisquare. Based on the result of this research, there was correlation between picky eater behavior and energy adequacy (p=0.007), calcium (p =0.002) and zinc (p=0.010). On the other hand, there was no correlation between picky eater behavior and protein adequacy. It is suggested that parents should increase food intake of children with picky eater behavior, especially food that contain energy, calcium and zinc. Parents should try to offer new food, so the children wants to eat.

Abstract

Obesity is a public health problem that encompasses life cycle including adolescent. Adolescent obesity bring consequences to increase case of obesity in adult and the risk factors for degenerative diseases. This study analyze risk factor of socio-economic, parents history of obesity, nutrition knowledge and fast food consumption with the prevalence of adolescent obesity. The study was case control study and conducted at several high school in Gorontalo City, with 670 adolescent, consisting of 335 case groups and 335 control groups. Data analysis was performed to assess the risk of independent variables of obesity. Low father’s education (OR= 2.724; 95% CI; 1.970 – 3,767), low mother education (OR= 4.727; 95% CI; 3.357 – 6.657), parents history of obesity (OR= 2.016; 95% CI; 1.482 – 2.743), low adolescent knowledge (OR= 6.673; 95% CI; 2.296 – 19.393) and fast food consumption more than 3 times per week (OR= 1.829; 95% CI; 1.337 – 2.502) increasing the risk of adolescent obesity. Mother occupation as a household mother (OR=0.338; 95% CI; 0.224 – 0.468) become protective factor. Pocket money (OR= 1.015; 95% CI; 0.724 – 1.423) was not a risk factor of obesity. Multivariate analysis showed that mothers occupation was dominant factor that infl uence obesity. Parent education, history of obesity, nutrition knowledge and fast food consumption were risk factors for obesity.

Abstract

Soybean, rice bran and seaweed flour (Gracilaria sp) are food sources of iron and vitamin B12 so it is potential to be used as an ingredient for alfernative snack for childbearing age women with ovo vegetarian diet. This research intended to analyze effect of soybean, rice bran and seaweed flour (Gracliaria sp) substitution on the acceptability, iron and vitamin B12 content. This research was true experimental research with completely randomized design. There are 4 formulas with six times replications. Analysis of accessibility different used was friedman. Friedman Test and Wilcoxon Ranks Test. The untrained panelists were 25 childberaing age women with ovo vegetarian diet. The difference test showed that there were no difference in colour, aroma and texture. There was a difference (p<0,05) on flavour characteristic and  Wilcoxon Ranks Test showed that there was a difference (p<0,05) between control formula and substitution formula. Based on the result of acceptability, brownies substitution formula with the best score was F3 formula (flour 37.5 g, soybean flour 22.5 g, rice bran 75 g, and seaweed flour (Gracilaria sp) 15 g). The iron and vitamin B12 content of  F3 formula were 3.6 mg and 0.2 μg respectively on 100 gram formula and fulfill 10-15% of childbearing age women’s requirement. Finally, the best formula which obtained from its acceptability, iron and vitamin B12 content was F3 formula, so it could be an alternative snack for childbearing age women with ovo vegetarian diet.

Abstract

Children with Autism Spectrum Disorder (ASD) have digestive disorders, therefore their diet should be gluten-free and casein-free. Gluten-free and casein-free foods tend to be low in protein. ASD children who apply a gluten-free diet and casein have a lower calcium intake and low in bone density. Catfish flour with high protein and calcium content were expected to increase the nutritional value (protein and calcium) of cookies which gluten-free and casein-free. This study was aimed to determine the effect of catfish flour substitution towards acceptance and nutritional value of gluten and casein free cookies as an alternative snack for ASD children. This study was experimental research with Completely Randomized Design. Panelists of this study were children with ASD (4-6 years) and their parents as many as 40 people. There were 4 formulas in this study, F0 was control, and 3 substitution formulas. Percentage of Flour substitution were, F2 (2%: 2%); F3 (4%: 4%); and F5 (6%: 4%). Kruskal Wallis test showed no significant difference in the level on acceptance level in taste and aroma between F0, F3, and F5. The acceptability and nutritional value's ranking showed the best formula was F5. 100 grams of F5 cookies (protein: 6.75 g; calcium: 247.51 mg) can fulfill 19% of the protein and 24.8% calcium of children RDA (4-6 years). Gluten-free and casein-free cookies with catfish (Formula 5) with enough protein and high calcium can be an alternative snack for ASD children.

Abstract

Food waste should get the attention because it will contribute to recovery time during illness as fulfilling the energy and nutrients need. Meanwhile, many hospitals are having leftover food more than 20 percent. Internal and external factor have correlation with it. This study aimed to analyze the relation between vegetables taste, appearance and waste vegetables among pediatric patients in Dr Ramelan Naval Hospital, Surabaya. This research was a cross sectional study. The samples were 32 children aged 2-12 years old whom hospitalized in class II and III patient rooms. The primary data was collected by interview and observation. Vegetables waste measured by Comstock form. Chi square test was used to analyze the relation between the taste, appearance and waste of vegetables. The result showed that there was no correlation between vegetables waste with four aspects of taste and five aspect of appearance (p value>0.05). Nonetheless, taste, consistency, platting method, and portion tend to have a big difference on vegetables waste.

Abstract

Anchovy flour and red beans flour are food with high proteins and essential amino acid that could be processed into various foods such as mini pie which could become high-proteins snack. This research aimed to analyze the effect of anchovy flour and red beans flour substitution towards mini pie acceptance and protein content. The design of this formula development study was true experiment with completely randomized design. There were 4 types of treatment (substitution of anchovy flour and red beans flour) with 3 times of replication. There were 25 mothers of children under five involved as untrained panelists. The differences in acceptance level was analyzed by Kruskal Wallis and Mann Whitney test (α ≤ 0.05). The result of organoleptic tests showed the most preferred formula was F3 anchovy flour 62.5 g and red bean flour 15g. The highest increase in proteins content substitution per 100 g mini pie was F3 (9,6 g). There were significant differences between F0 with F1, F2, and F3 for all characteristics (colour p=0.000, aroma p=0.027, texture p=0.002, flavour p = 0.000). The best formula composition was F3 (substituted by anchovy flour 62.5 g and red bean flour 15 g). Mini pie modified by anchovy flour and red bean flour could be functioned as an alternative high protein snack for children under five years old.

Abstract

Malnutrition is one of the causes of health problems in the elderly. Nutritional status of the elderly can be affected by many factors, such as food intake, comorbidities, drugs consumption, physical activity, and depression. Depression status has a relationship with the nutritional status of the elderly by influencing the intake of the elderly. The purpose of this study was analyze the correlation and the risk of depression tendency with elderly nutritional status at UPTD Griya Werdha Surabaya. This study was a case-control design. The number of respondents were 30 elderly consist of 15 elderly in each case and control groups. The case group was elderly who had MNA score <24 points, while the control group was elderly who had MNA score of ≥24 points. Depression were measured by Short Geriatric Depression Scale (GDS). Spearman correlation test was used to analyze the data. Most of the elderly do not experience depression (GDS<5). There was a correlation between depression with nutritional status of the elderly (p=0.007). Depression elderly were 9.75 times more likely to malnourished than nutritional status [OR=9.75, 95% CI =`1.63 (1.45-1.81)]. Nutritional status was correlated with the tendency of depression in the elderly. It is necessary to increase more activities at the UPTD Griya Werdha Surabaya to reduce the risk of depression among elderly.

Abstract

Bread is a favorite food for Indonesian people as an alternative snack or breakfast. Bagel is one of breads that gain popularity in Indonesia. Sorghum and white sweet potato as local staple foods could be used as substitute ingredients for decreasing the consumption of wheat flour and made a low glycemic index snacks that suitable for diabetics. The aim of this research was to analyze the effect of sorghum and white sweet potato substitution toward acceptability (color, aroma, taste, and texture), nutrient value (energy, carbohydrate, fat, protein, fiber) and the glycemic index of bagel. This research was an experimental study with Completely Randomized Design with 8 repetitions. There were one control formula (F0) and two substitute formulas, F1 (substitution with white sweet potato 20%), and F2 (substitution with white sweet potato 20% and sorgum 10%). The untrained panelists were 30 diabetics. The difference test was analyzed by Kruskall Wallis dan Mann Whitney with confidence level 95% (α≤0.05). The result showed that the most favorite formula was F1 and there were no significant differences among the formulas in color (p=0.360), aroma (p=0.940), taste (p=0.160), and texture (p=0.120). The nutrient value of F1 can fulfilled the nutritional requirement of diabetics snacks which contain, energy 85%, carbohydrate 99%, fat 40%, protein 92%, and fiber 260%. It also have low glycemic index (54.6), so it can be and alternative snack for diabetics.

Abstract

Vitamin A is an essential nutrient to support the function of vision, growth, and immune system. Vitamin A cannot be synthesized in the body hence must be obtained through foods or supplements. However, oral administration of vitamin A is often hindered by poor absorption due to its hydrophobic nature and by its easily degradable nature by light and oxygen, particularly at high temperature. This study aimed to prepare a self-assembly vitamin A nanoemulsion with a high loading capacity to improve vitamin A absorption accross intestinal mucosa and to slow down its degradation process. The nanoemulsion was composed by glyceryl monooleate, Cremophor RH-40, and PEG 400 (1:8:1), then titrated with aqueous phase. The nanoemulsion characterization included globule size evaluation, size distribution, zeta potential, globule morphology, entrapment efficiency, physical and chemical stabilities, and ex vivo penetration test on New Zealand albino rabbit intestines. The vitamin A nanoemulsion was found to form transparent and nano-sized emulsions even when loaded with 16.67% vitamin A. The formula also produced 58.1±2.0 nm spherical globules with -0.69 mV zeta potential. Entrapment efficiency of vitamin A in the nanoemulsion was higher than 95%. The nanoemulsion shows stable after storage for 10 days at room temperature, as well as able to increase penetration rate compared to free vitamin A. Taken together, our established vitamin A nanoemulsion has a good stability and was proved to increase vitamin A absorption through intestinal mucosa while simultaneously decreased the vitamin A degradation rate.

Abstract

Basketball athlete require maximum oxygen capacity to maintain their endurance during physical activity for long time. Good cardio respiratory endurance for athlete can slower fatigue so they can reach a peak performance optimally. Many factors affect cardio respiratory endurance such as haemoglobin status and smoking habits. The purpose of this study was to analyze the correlations between haemoglobin status and smoking habits with cardio respiratory endurance among basketball student activity unit. This research was an observational analytic with case control study design. The sample in this research were 50 people and divided into case (25 people) and control (25 people) groups. Data collections included cooper test, blood sampling with cyanmethemoglobin method and smoking habits. The result showed that there were correlation between haemoglobin status p=0.014 (OR = 6.78; 95% CI: 1.6-28.54), smoking habits p=0.020 (OR = 7.67; 95% CI: 1.47-39.98) with cardio respiratory endurance. Non anemia and non-smoking Athletes have a better cardio respiratory endurance than anemia and smoking athletes. It is recommend to maintain haemoglobin status in the normal range to avoids anemia and quit smoking to increase their optimal cardio respiratory endurance
