Abstract

Dangke and dadih is milk processing product from South Sulawesi and West Sumatera. Dangke had total plate count, yeast and mold, and lactic acid bacteria, respectively 6,4 x 108   cfu/g, 2,5 x 108 cfu/g, 2,8 x 105  cfu/g; and dadih had 7,3 x 108  cfu/mL, 9,0 x 107 cfu/mL, 1,5 x 105  cfu/mL. Dangke and dadih had higher sensitivity to Gram positive than Gram negative bacteria. Based on protein molecular weight, then dangke and dadih had peptide that included to glicoprotein.

Abstract

Housing temperature and housing system may influence productive performance and egg qualities. This research aimed to investigate the influence of different housing temperatures and housing system on productive performance and egg qualities. A total of 72 Lohmann hens were reared in litter and cage system with different housing temperatures of 18oC and 30oC. Each treatment consisted of 18 hens. Traits measured were productive performance (feed intake, hen day production, egg weight, egg mass, and feed conversion), egg internal and external qualities (egg shape index, Haugh Unit, air sack, albumin height, egg shell cleanless, egg shell thickness, and egg shell weight).  This experiment was run twice according to housing system for each housing temperatures and was completely randomized design. Data was subjected to t-test and descriptive analyses. Productive production and egg quality in both housing systems did not differ. However, the egg weight was significantly heavier in cage system compared to litter system in neutral housing temperature.

Abstract

Meat consumption in Indonesia has increased with most needs come from broiler  meat.  However,  it  is  not  followed  by  development  of the  transportation technology that consider animal welfare. The purpose of this study was to compare the level of broiler stress measured from comb, shank and rectal temperature among sex between conventional transport system and environmentally transportation M- CLOVE. The results showed average of temperature and relative humidity during the transport process in the M-CLOVE was lower compared to the open crate. Temperature differences occured 1.4 °C with a relative humidity of 2.5% different. M-CLOVE transport reduced the level of stress of broiler which was indicated from lower comb temperature, shank temperature and rectal temperature which compared to broiler transported in open crate. Closed system and constant air circulation in the M-CLOVE  might  reduce  the  effects  of  heat  generated  from  exposure  to  direct sunlight during the transportation process.

Abstract

This research aims to determine the best ventilation modification to produce propolis. The study was conducted at the foot of Mount Tampomas, Sumedang, West Java, in 5 weeks from July to August 2013. The material used were 15 hives of Apis mellifera honey bee colony with population 16 000 – 20 000 bees. The 15 colonies were randomly divided into 3 levels treatment of ventilation size on the lid nest, that were no ventilation as control treatment (A), 50 cm2 (B), and 100 cm2 (C) ventilation holes. Propolis trap was installed in each hive. The experimental design used was completely randomized design followed by T-test. The results showed that ventilation size was not significantly affected propolis production but significantly affected honey production.   Honey production in C treatment was significantly higher. In general the best treatment hive cap to produced propolis and honey are C treatment with the highest average weight of propolis and honey for 5 weeks was 16.4±6.98 g and 3101.6± 581.5 g also have a big end population

Abstract

Nitrate or nitrite that used on dendeng making as antioxidant agent and color stabilizer could forming toxic compound (nitrosamine). The Formation of nitrosamine could be inhibited by addition of natural antioxidant that contained in the fruits such as strawberry (Fragaria ananassa). The aim of this study was to evaluate the influence of stawberry as curing ingredient on physical properties and antioxidant activity of dendeng. Dendeng was made by addition of spices and combination of nitrite (0 ppm and 125 ppm) and strawberry (0%, 10%, 20%,30%) addition. Sample for analysis used fried dendeng. The result showed that pH value  were  affected  by  additon  of  nitrite  and  strawberry    (P<0.01),  but  the objective color was affected by addition of nitrite only. Strawberry addition affected antioxidant activity of dendeng that was evaluated by scavenging activity on radical DPPH and antioxidant capacity (P<0.05). Interaction factor affected water activity and total phenolic content of dendeng (P<0.05). As conclusion strawberry addition up to 30% could be used as curing agent on dendeng making and increased antioxidant activity on dendeng product.

Abstract

Buffalo  has  anatomical  similarity with  cattle, such as  rument  and  body frame. The objective of this study were to body measurement and percentage of carcass and non carcass of swamp buffaloes and PO cattles in the feedlot system. Six heads male of Swamp Buffalo (218 kg) and eight heads male of PO Cattle (217 kg) were maintained in the feedlot system for 10 weeks. The body size was measured during the maintenance and percentage of carcass and non carcass were taken from the calculations of carcass/non carcass weight per live weight ×100%, data was analyzed using t-test method. The results showed that various parts of the body measurement was significant (P<0.05), percentage of carcass was too significant (P<0.01), and percentage of non carcass was not significant (P>0.05).

Abstract

Red fruit pasta are reported containing active components that are important to health, so the opportunities to be developed into a functional food ingredients. The purpose of this study is utilize pasta as natural dye in beef sausage and based on chemical quality and sensory. Given some active compounds are known to display as natural dye for food.  In this study, beef sausage was added by red fruit pasta in various concentrations: (0%, 7%, 9%, and 11%) were added on beef sausage. The observed variables were chemical qualities (water content, protein content, fat content, ash content and carbohydrate content) and sensory (colour, taste, texture, and aroma). The result showed that the addition of red fruit pasta on beef sausage significantly affected on water content and protein content. Organoleptic testing (hedonic and hedonic quality testing) showed that the panelists remarkably prefered all beef sausages with addition of red fruit pasta

Abstract

This research aimed to study and evaluate the nutritional composition of sie reuboh treated with different concentrations of palm vinegar (Arenga pinnata) and kaffir lime leaves (Citrus hystrix) addition. The four treatments for sie reuboh were P0 (0 mL palm vinegar and 0 kaffir lime leaves), P1 (100 mL palm vinegar and 10 kaffir lime leaves, P2 (100 mL palm vinegar and 10 kaffir lime leaves). The parametes are nutrition content (water content, ash content, fat content, protein content and carbohydrates content) and organoleptic (hedonic qualiy test and hedonic test). The result showed that different concentrations of palm vinegar and kaffir lime leaves addition significantly affected (p<0.05) ash content and carbohydrates content of sie reuboh. Ash content in this study ranged from 3.11 % to 2.43 % and carbohydrates content ranged 3.89 % to 5.59 %. The result of organoleptic showed that were significantly affected (p<0.05) on hedonic quality test (flavor of palm vinegar, flavour kaffir lime leaves and taste). The value of palm vinegar flavor has 3.17 to 3.83, the value of kaffir lime leaves has 3.00 to 3.57 and the taste value has 3.30 to 3.77. Different level of palm vinegar and kaffir lime leaves not affected at moisture content, protein content, fat content, hedonic quality (color and tenderness) and hedonic (color, flavor, taste, tenderness and overall appearance).

Abstract

Increasing of duck rearing as a meat producer requires an increase in duck population to fulfill the demand.  The objective of this research was to analyze the proper chilling frequency to increase duck egg hatchability from cihateup alabio cross breeds.  Chilling frequencies used in this study were once, twice, and three times.  One time chilling was done in the afternoon (12.00-13.00).  Two times chilling was done in the morning (06.00-07.00) and in the evening (17.00-18.00).  Three times chilling was done in the morning (06.00-07.00), in the afternoon (12.00-13.00), and in the evening (17.00-18.00).  Materials used in the research were digital thermometer, 491 eggs from Balitnak Ciawi, KMnO4, Na2CO3, 40% formalin, and chlorin.  The result showed a high fertility on duck egg from Cihateup Alabio cross breeds (>75% on average) with 4 : 16 (male : female) sex ratio.  All of the chilling frequencies had no significant effect on egg hatchability from Cihateup Alabio cross breeds.

Abstract

Duck eggs have lower hatchability because they have higher risk of embryo mortality due to a longer incubation than chicken eggs. This study was designed to obtain the proper of start cooling during artificial incubation to improve duck eggs hatchability and hatching weight. Eggs of cihateup alabio duck were obtained from Balai Penelitian Ternak (Balitnak) Ciawi. Eggs were collected weekly in 5 different times. Total egg collected was 419 eggs. Incubated eggs were sprayed and cooled for 0.25 h at room temperature for 2 times a day in setter period. This study used randomized block design and 3 treatments of starting cooling time of egg. Observed variables were egg weight, fertility, hatchability, embryo mortality and hatching weight. Cooling eggs at different times during the setter period did not affect to hatchability. Highest hatchability was obtained on Days 17. The start cooling significantly was affected the hatching weight.
