Abstract

During the reign of Sri Sultan Hamengkubuwono VII at Yogyakarta Palace, Sangga Buwana is a traditional food which arose up as a result of acculturation between local culture with European and Asian culture. The food symbolizes a confession of human towards the existence of God. When comparing to burger in terms of ingredients and the manner of serving, both of them are quite similar. The purpose of this research is to study the potency of Sangga Buwana as a healthier fast food than burger. In addition, the investigation of the potency of local food utilization such as breadfruit (Artocorpus altilis) flour as wheat flour substitution in preparation of choux dough is also conducted. The study is conducted by literature research and interviews. The results showed that the substitution of wheat flour to breadfruit flour is potential to make Sangga Buwana as a healthier fast food because it has richer fiber, higher mineral, and lower fat content than wheat flour. Breadfruit flour can partially substitute the usage of wheat flour in the preparation of choux dough.

Abstract

This study aimed to determine the effect of honey solution intervention on systolic blood pressure and elderly diastole in the Aisyiyah Nursing Home Surakarta. Method of this research using Quasi-experimental approach with a pre-posttest control group design with 24 respondents selected by purposive sampling and divided into 4 groups there are O1 (70 gr honey), O2 (35 gr honey), K- (control with hypertension) and K+ (control with normotensive). Measurement of blood pressure using an Omron Sphygmomanometer. Paired Sample T-test was used to determine the effect of blood pressure before and after the intervention. The One Way ANOVA test was used to see differences in the average blood pressure data before the intervention. The results showed that there was an effect of honey solution on systolic blood pressure before and after intervention with p = 0,000 (p 0,05), as well as diastolic blood pressure in the statistical test, showed that there was an effect of honey solution on blood pressure diastole before and after intervention with p = 0,001 (p 0,05). So, there was a significant effect on the intervention of honey solution with 35 and 70 gr honey dose on systolic and diastolic blood pressure in the elderly.

Abstract

The aims of this study was to look at the effect of healthy breakfast education with Islamic Comic Media on the level of knowledge of elementary school students. This study was a quasi-experimental type with pre-posttest control group design. The sampling was simple random method as many as 64 students, group A was given islamic comic media (n=32) and group B as control of the group (n=32). Nutrition knowledge level were obtained from filling out questionnaires. The influence of nutritional education media on increasing knowledge in both groups analyzed by Wilcoxon test, and continued with the Mann Whitney test. The results of the analysis showed that there was a significant increase in the level of knowledge in islamic comic group (p = 0,000). There is the influence of giving Islamic comic about healthy breakfast to elementary school-age students' knowledge.

Abstract

Food waste is one of the important indicators to find out the success of food service in a food organization in a hospital. The purpose of this study was to determine the differences in food waste on a treatment: serve with and without garnishes on diet serving in Rajawali room to patients 5A and 5B Dr. Kariadi Semarang hospital. This type of descriptive analytic study illustrates the differences in the weight of the food waste (staple food, animal and vegetable side dish) serve with and without garnishes. This study involved 36 respondents which were divided into 2 groups. The first group of 18 respondents received food served with garnishes, while the second group of 18 received with no garnishes. The garnishes given in the form of lettuce and tomatoes (rounded cut on animal side dishes). The food waste was weighed using a digital scale with an accuracy of 0.01 grams and the data was then analyzed using Mann-Whitney. The results showed the food waste in animal side dishes with garnishes was 9.9%. While the serving with no garnishes was 26.4%. It implies that the use of garnishes is able to reduce the food waste on animal side dishes by 16.5%. Based on the data analysis, it was obtained the p-value = 0.000, which indicating a significant difference on the average weight of the food waste which served with and without garnishes.

Abstract

Diabetes mellitus is one of the generative disease that increase every year. Most cases of diabetes mellitus in Indonesia is type 2, the prevalence 90-95% of all cases of diabetes. About 7% of South Sulawesi's population suffer from this disease. DM is a lifelong disease that requires good management, especially in terms of blood sugar control. The aim of study is to determine factors associated blood sugar level of patients DM type 2 in RSUD Kota Makassar.This study used cross sectional study approach and sample of 149 people. This research was conducted at Internal Polyclinic of RSUD Kota Makassar, data were collected using questionnaires and patient medical records file. The results of univariate analysis showed that most respondents got adequate family support (55.1%). Most people with type 2 diabetes melitus in RSUD Kota Makassar had good diet (51.5%). Blood sugar levels of respondents in this study which were still not well controlled (77.9%). Bivariate analysis with chi square test showed that family support was not related to blood sugar levels (p = 0.26) while diet was associated with blood sugar levels (p = 0,000, = 0.523). That blood sugar levels related with dietary, not family support. : It is desirable for health workers to optimize the counseling method for patients, especially in terms of motivating patients to control disease and family should be involved in the counseling activities.

Abstract

This study aimed to understand the difference of glucose levels in electrical strored rice i.e. rice cooker and the glucose level of rice stored at room temperature at 0, 6, and 12 hours. This study used a completely randomized design (CRD) with 2 treatment groups (electrical stored rice and room temperature stored rice). Storage time is 0, 6, and 12 hours. Each treatment was conducted with 3 repetitions. The glucose levels were measured using spectrophotometry method. The Kruskal Wallis test was used to analyze the glucose level difference of 2 treatment groups. The glucose level electrical stored rice at 6, and 12 hours storage were 3,31%, and 2,16% consecutively. Whereas the glucose level room temperature stored rice at 6 and 12 hours storage were 2,60% and 2,16% respectively. Bivariate analysis showed that there were significant differences of the glucose levels at 6 hours storage, however there was no significant difference at 12 hours storage. There was a massive decrease of the glucose levels during storage for both of the treatment groups. Tujuan penelitian ini untuk mengetahui perbedaan kadar glukosa nasi yang disimpan di rice cooker dan nasi yang disimpan pada suhu ruang dengan waktu simpan selama 0, 6, dan 12 jam. Penelitian ini menggunakan desain rancangan acak lengkap (RAL) dengan 2 kelompok perlakuan (nasi yang disimpan di dalam rice cooker dan nasi yang disimpan pada suhu ruang). Variabel waktu penyimpanan adalah 0, 6, dan 12 jam. Masing-masing pengujian dilakukan dengan 3 kali pengulangan. Kadar glukosa diukur menggunakan metode spektrofotometri. Uji Kruskal Wallis digunakan untuk menganalisa perbedaan kadar glukosa nasi yang disimpan di dalam rice cooker dan nasi yang disimpan pada suhu ruang. Kadar glukosa nasi yang disimpan di rice cooker pada penyimpanan selama 6 dan 12 jam yaitu berturut-turut 3,31 %, dan 2,16 %. Sedangkan kadar glukosa nasi yang disimpan pada suhu ruang selama 6 dan 12 jam adalah 2,60 % dan 2,16 %. Analisis bivariat menunjukkan adanya perbedaan kadar glukosa pada nasi yang disimpan di dalam rice cooker dan nasi yang disimpan pada suhu ruang pada penyimpanan selama 6 jam, tetapi tidak ada perbedaan kadar glukosa yang signifikan pada penyimpanan selama 12 jam. Terjadi penurunan kadar glukosa pada nasi selama penyimpanan, baik yang disimpan di dalam rice cooker maupun pada di suhu ruang.

Abstract

This study was a true experimental study using the randomized controlled group method with a pre-post test design. The Sprague-Dawley rats were divided into 4 groups (5 rats/group): K (+) Captopril 0,45 mg/200 g BW, goldenberry juice 1,8 ml/200 g BW (P1), cucumber juice 1,8 ml/200 g BW (P2), and 1,8 ml/200 g BW (P3, combination juice 50%:50%). Systolic blood pressure measured by blood pressure analyzer with the tail-cuff method. The result of systolic blood pressure analyzed by Paired t-Test to determine the mean difference of systolic blood pressure before and after 8% NaCl induction. One Way ANOVA test followed by Post Hoc Duncan to determine the mean difference of systolic blood pressure between groups. Goldenberry, cucumber, and combination juice have a significant effect of reducing systolic blood pressure in hypertension with p = 0,000 (0,05). Goldenberry juice was the most effectively on reducing systolic blood pressure in hypertension with 42.21%.

Abstract

This study aims to analyze the relation between fiber intake, cholesterol, nutritional status, and physical activity with blood cholesterol level on adult women. The study design was a cross sectional study. The study involved 60 adult women (aged 40-64 y.o) in the Sanggar Senam Bugar Sehat Bogor as respondent. The analysis used was Chi-square test to assess the relation between variables. The result showed a signinificant relation of physical activity (p value=0,027, OR=0,098 ; 95% CI=0,012-0,809), fiber intake (p value=0,046, OR=7,724 ; 95% CI=0,918-64,260), and cholesterol intake (p value=0,000, OR=16,00 ; 95% CI=3,398-75,345) with blood cholesterol level. It is concluded that blood cholesterol levels are influenced by eating pattern, physical activities, and routine medical check up.

Abstract

Prevalence of malnutritions in childern still high in Indonesia. Bad food consumption is one of several causes of malnutritions. Therefore, food consumption of childern need to be analyzed The objective of this study were to analyze food consumption of childrens 2-12 years old and compare it with Balanced Nutrition Guidelines in Indonesia. This study design was cross-sectional. Subjects were 38890 childrens 2-12 years old of basic health survey of Ministry of Health. Food consumption data were collected by 24 hour recall method. Food consumption patterns presented in the participation and quantity, which devided in to 1) carbohydrate foods), 2) vegetables, 3)fruits, 4) animal foods (included milks), and 5) vegetable proteins. The participation of consumption of carbohydrate foods, vegetables, fruits, total animal foods, milks, and vegetable proteins were 99.9%, 57.6%, 14.0%, 80.0%, 20.4%, and 36.4% respectively. The quantity of consumption of carbohydrate foods, vegetables, fruits, total animal foods, milks, and vegetable proteins were 353.1 – 534.3 gram (3.5 – 5.5 portions), 44.4-72.6 gram (0.44 – 0.72 portions), 88-90 gram (2 portions), 28-244 ml (0.2-2 portions), and 17.6 – 32.6 gram (0.35 – 0.65 portions) recpectively. Subjects had high consumption of carbohydrate foods, but had low consumption of vegetables, fruits, total animal foods, milks, and vegetable proteins. In conclusion, food consumptions of subjects were not accordance with Balanced Nutrition Guidelines.

Abstract

Achievement of badminton athlete performance is supported by excellent physical fitness, normal nutritional status and adequate fluid intake. The purpose of this study was to determine the relationship of nutritional status and fluid intake with physical fitness athletes in Badminton Association of Kudus Regency. This research is an observational research with cross sectional approach. The populations in the study were badminton athletes in Kudus Region who met the inclusion criteria. Samples used 33 samples from the total population of 85 samples. Analysis of the relationship of nutritional status and fluid intake with athlete's physical fitness using Pearson Product Moment test. Based on the test of the relationship of nutritional status with athlete physical fitness obtained p value = 0.386. Analysis of the relationship of fluid intake with athlete's physical fitness obtained p value = 0.450. This study can be concluded that there is no relationship of nutritional status and fluid intake with athlete's physical fitness.
