Abstract

This study was conducted to analyze the effects of banana (Musa balbisiana) flour kefir synbiotic on total cholesterol level and triglyceride level of Metabolic Syndrome rats model. This research used a true experimental method with pre-post test control group design. The number of 24 rats model were randomly divided into four groups, i.e. K– (healthy rats, standard diet), K+ (Metabolic Syndrome rats, standard diet), PI (Metabolic Syndrome rats, standard diet and synbiotic 1,8 ml/200grBW/day), and PII (Metabolic Syndrome rats, standard diet and synbiotic 3,6 ml/200grBW/day), with intervention duration of 3 weeks. Blood draws were carried out at the beginning and end session of the intervention to analyze total cholesterol and triglyceride levels. Abstract

This study aims to determine the relationship between calcium and phosphorus intake with dental caries of school children. This study was an observational study with a cross sectional design. The sampling technique used purposive sampling, with a total sample of 96 subjects. This research was conducted in Madrasah Ibtidaiyah Nurussalam, Ngawi starting from April - May 2019. Data on dental caries status (DMF-T index) was obtained by dental examination by a dentist. Data on calcium and phosphorus intake were obtained by direct interviews regarding the amount and type of intake using the Semi-Quantitative Food frequency Quesionaire (SQFFQ) form and the 24 hour food recall form. Calcium and phosphorus data were processed using Nutrisurvey software and the Indonesian Food Composition Table (TKPI). Chi-square statistical tests were used to analyze the relationship between calcium and phosphorus intake and dental caries. The majority of MI students who experience caries are aged 10 and 11 years. Calcium and phosphorus intake of subjects was classified as inadequate (77,1% and 59,4%). There was a significant relationship between calcium intake with dental caries p = 0,031 ( 0,05) and phosphorus intake with dental caries p = 0,029 ( 0,05). Adequate intake of calcium and phosphorus can reduce the risk of dental caries in children. Penelitian ini bertujuan untuk mengetahui hubungan antara asupan kalsium dan fosfor dengan karies gigi anak sekolah. Penelitian ini adalah penelitian observasional dengan desain cross sectional. Tehnik pengambilan sampel menggunakan purposive sampling, dengan jumlah sample sebanyak 96 subjek. Penelitian ini dilakukan di Madrasah Ibtidaiyah Nurussalam, Ngawi mulai dari bulan April - Mei 2019. Data status karies gigi (indeks DMF-T) diperoleh dengan melakukan pemeriksaan gigi oleh dokter gigi. Data asupan kalsium dan fosfor diperoleh dengan wawancara langsung mengenai jumlah dan jenis asupan menggunakan form Semi-Quantitative Food frequency Quesionaire (SQFFQ) dan form food recall 24 hours. Data kalsium dan fosfor diolah menggunakan software Nutrisurvey dan Tabel Komposisi Pangan Indonesia (TKPI). Uji statistik Chi-square digunakan untuk menganalisis hubungan anatar asupan kalsium dan fosfor dengan karies gigi. Mayoritas Siswa MI yang mengalami karies adalah usia 10 dan 11 tahun. Asupan kalsium dan fosfor subjek masih tergolong kurang (77,1% dan 59,4%). Terdapat hubungan yang signifikan antara asupan kalsium dengan karies gigi p=0,031 ( 0,05) dan asupan fosfor dengan karies gigi p=0,029 ( 0,05). Asupan kalsium dan fosfor yang cukup dapat menurunkan resiko karies gigi pada anak.

Abstract

The aims of this study was to determine the substitution effect of avocado seed flour on the organoleptic properties of sponge cake. Method: This was experimental study where the substitution rate of wheat flour with avocado seeds was treated. There were 3 treatments, F1 (15% of avocado seed flour), F2 (25% of avocado seed flour), F3 (40% of avocado seed flour) and F0 (control). The substitution of avocado seed flour had a significant effect (P 0.05) on the organoleptic properties. The F1 (15%) was the best formula with the highest acceptability compared to other formulas determined by hedonic test. The characteristics of the sponge cake were sweet taste, very fragrant aroma, very soft texture, and have a yellow colour. The product contained 44.77% (w/w) of carbohydrates, 17.97% (w/w) fat, 8.04% (w/w) protein, 28.02% (w/w) water, and 1.2% (w/w) ash. To get the best acceptability of the sponge cake, the maximum substitution of avocado seed flour in the sponge cake is 15%.

Abstract

The aim of this study was to analyze the correlation of knowledge, attitudes and behaviors of a mother about breastfeeding with the nutritional status of children aged 6-23 months by using cross sectional design. The target population were all mothers with children aged 6-23 months. The samples were 179 respondents using purposive sampling techniques. Retrieval of data was done using questionnaires and structured interviews. Statistical calculation performed using univariate and bivariate analysis with chi-square test. The result showed that there was no correlation between maternal knowledge with BB/U (p=0,056), though there was a correlation between maternal attitudes with BB/U (p=0,000) and maternal behaviors with BB/U (p=0,000). It is concluded that there was significant correlation between attitudes and behavior of mothers with nutritional status of children aged 6-23 months. It is suggested to nutrition counselor to add more education related to exclusive breastfeeding.

Abstract

Nutrition potential and availability of pumpkin and cork in Indonesia are abundant, so diversification of pumpkin and cork fish in biscuit making is expected to be a more nutritious food alternative. This study was an experimental study using a complete randomized design consisting of three treatments, one control and two replications. This study was conducted in January - June 2016. Observations were made on organoleptic characteristics and protein content of biscuits. The subjective observation result using organoleptic test showed that the level of panelist's preference for color and texture was on treatment A (control) without the addition of pumpkin and cork fish. As for the aroma and taste with the best result is on the treatment of C with the ratio of pumpkin and cork fish (20 g: 20 g). The highest protein content was found in D treatment with the addition of pumpkin and cork fish (30 g: 30 g). Based on the results of research conducted, the addition of yellow squash and cork fish affect the color of biscuits and protein content of biscuits.

Abstract

This study aims to determine the relationship between energy and nutrients intake, body weight, height, BMI-for-Age, percent body fat, physical activity, and socioeconomic status with musculoskeletal fitness. This study used a cross-sectional design. A total of 151 students from 5 Bekasi High School class X and XI were included in this study. Food intake was measured using 2x24 hours food recall, physical activity using Global Physical Activity Questionnaire (GPAQ), anthropometri by direct measurement, and socioeconomic using Family Affluence Scale (FAS) questionnaire. Regression analysis for bivariate and Anova for analysis of socioeconomic status.  The results of this study showed that there were a significant relationship between energy (p=0,001) and nutrients intake (carbohydrate p=0,037; protein (p=0,001; fat (p=0,001), body weight (p=0,002), height (p=0,001), percent body fat (p=0,001), and physical activity (p=0,001) with musculoskeletal fitness before controlled by sex. After stratification analysis by sex, there was a significant relationship between height and percent body fat with musculoskeletal fitness(p0,005), but only found in male students.

Abstract

Smoking can enhance free radicals on blood plasma. Many previous studies proved that tea is a source of antioxidants which might reduce free radicals. Green tea is known to have the higher antioxidant capacity compared to black tea. This study aims to analyze the effect of green tea on reduction of free radicals on moderate smokers, using a pre-post experimental design. Green tea infusions were prepared with commercially available dried tea leaves (Green Tea Gamboeng Series) from the Research Centers of Tea and Cinchona Gambung, West Java. Nine moderate smokers (11-21 cig/day) aged 30-45 years were instructed to drink 200 ml green tea three times a day for four weeks. Total Antioxidant Capacity (TAC) of blood serum was measured at baseline and after four weeks intervention period. The level of TAC significantly increased from 1.18 m mol/L to 1.34 m mol/L after four weeks intervention (P=0.000). These results prove that drinking 200 ml of green tea three times a day for four weeks has a significant benefit reducing free radicals of moderate smokers. Moderate smokers are advised to consume green tea continuously to sustain these positive effects.

Abstract

Low consumption of supplements and energy intake can a decrease athlete performance because it is unable to restore stamina. The purpose of this study to determine whether there is a relationship between the consumption of supplements and energy intake of physical fitness athletes in Badminton Association of Kudus Regency. The type of this research is observational research with cross sectional approach. The sample size used was 33 athletes 18 years old. Sampling was done by using simple random sampling method. Taking supplement consumption data was obtained by filling out the questionnaire. Energy intake data were obtained through questionnaire food frequency questionnaire (FFQ) semi-quantitative. Physical fitness is obtained by performing a fitness test (beep test). Analysis relationship of the supplement consumption, energy intake and physical fitness using pearson product moment test. Respondents with consumption levels of supplements were often 84.8%, rarely 12.1% and never 3%. The results of energy intake study with severe deficit category 9.1%, moderate deficit absent or 0%, light deficit 3%, normal 45,5%, above requirement 42,4%.Physical fitness levels of athletes in the category of superior 21.2%, excellent 30.3%, above average 24.2%, an average of 15.2% and below the average of 9.1%. The result of analysis of the relationship between consumption of supplement with physical fitness showed p value = 0,477 and result of analysis of energy intake relationship with physical fitness showed p value = 0,535. The conclusion of this study is that there is no relationship between supplement consumption and energy intake on physical fitness.
