Abstract

This study aims to determine the effect of different proportion of peel and flesh red dragon fruit of the jam to organoleptic test, to obtain the results of analysis of chemical properties and physical properties of jam, and also the selected formula. This research used experimental method by using Randomized Design. The organoleptic test was then analyzed using Kruskal Wallis and Mann-Whitney method. The result showed that proportion of peel and flesh of red dragon fruit has significant test (p0,005) on hedonic quality test of color, texture, taste, aftertaste and hedonic test of flavor and taste. Based on the hedonic test, water content, carbohydrate content, antioxidant capacity, total flavonoid, and viscosity of the selected formula were  F3 (peel (70 g) and flesh (30g)), with water content (30,95%), ash content (0,27%), protein content (0,65%), fat content (0,20%), carbohydrate content (67,93%), antioxidant capacity (164,79 mg AEAC), total flavonoid (0,430 mg/g), viscosity (1333,67 cP) and polish (15,5 cm).

Abstract

Used cooking oil is widely used by Indonesian people to fry many foods, which is the oil have been oxidized. On the other hand, Indonesia has a lot of unutilized waste products, such as bagasse. The design of the study was experimental, which added the bagasse to the used cooking oil to filtrate the physical and chemical impurities. There were 3 kinds of treatments, i.e. F1 (3% of bagasse), F2 (5% bagasse), F3 (7% bagasse), and control (without bagasse). The characteristics of used cooking oil (control) were: dark brown, rancid odor, having 0,39% of free fatty acid, 12,39 meq/Kg of peroxide value, 35,52% w/w palmitic acid, 35,31 oleic acid, 9,35% w/w linoleic acid, and 3,32% w/w stearic acid. The best treatment taken on the highest yield, organoleptic test, and peroxide number was F1 (3% bagasse), it could reduced free fatty acid and peroxide value become 0,26% and 6,67 mEq/kg. The number of fatty acids from the best treatment were dominated by palmitic acid (33,94% w/w), oleic acid (33,92% w/w), linoleic acid (9,03% w/w) and also had stearic acid (3,21% w/w). The bagasse can significantly reduce the organoleptic properties, the oxidation parameters, and other fatty acids of used oil (P0,05). So, the bagasse could potentially decrease the oxidation parameters of used cooking oil.

Abstract

The purpose of this study was to get the prediction model which had optimum validity for  estimating body fat percentage of adolescent girls. The design of this study was a Cross Sectional. The sampels were 110 school girls which taken by Stratified Proportional technique. Anthropometric measurements consisted of measurements of age, weight, and height (to obtain the BMI (kg/ m2) and BMI (WHO Z Score)), waist circumference, and skinfold thickness. Body fat percentage was measured using various predictive models. Bivariate analysis used was the correlation test. Multivariate analysis used was multiple linear regression test. The ROC test was used for the validation test to determine the Area Under Curve (AUC) value, sensitivity, specificity, Positive Predictive Value (PVP), Negative Predictive Value (PVN), Likelihood Ratio + or (LR +), and LR-. The  result  of  the study  showed  that the average of body fat percentage of samples was 26,51% ± 5,48%. The prediction model which obtained from multivariate analysis was BFP= 0,991 BMI +0,069 ST+0,249 A -1,703. Based on the validation test, the prediction model of this study had optimum validity in compared with other  prediction  models.  Tujuan dari penelitian ini adalah untuk mendapatkan model prediksi yang memiliki validitas optimal untuk memperkirakan persen lemak tubuhremaja putri. Desain  penelitian adalah Cross Sectional. Sampel yang diambil sebanyak 110 siswi dengan  menggunakan teknik Stratifikasi Proporsi. Pengukuran antropometri terdiri dari pengukuran usia, berat badan dan tinggi badan (untuk mendapatkan nilai IMT (kg/m2) dan IMT WHO Z Score), lingkar pinggang, dan skinfold thickness. Persen lemak tubuh diukur dengan menggunakan berbagai model prediksi. Analisis bivariat menggunakan uji korelasi. Analisis multivariat menggunakan uji regresi linier ganda. Uji ROC digunakan untuk uji validasi untuk mengetahui nilai Area Under Curve (AUC), sensitivitas, spesifisitas, Predictive Value Positif (PVP), Predictive Value Negative (PVN), Likelihood  Ratio + atau  (LR+), dan LR-. Hasil penelitian menunjukkan bahwa rerata persen lemak tubuh   responden adalah  26,51 %   ±  5,48 %. Model prediksi  yang  didapatkan dari hasil multivariat adalah PLT=  0,991 IMT  + 0,069 ST + 0,249 U -1,703. Berdasarkan hasil  uji  validasi, model prediksi tersebut  memiliki validitas optimal jika dibandingkan dengan model prediksi lainnya.

Abstract

The study aims to determine the association of milk as complimentary breakfast towards learning achievement of elementary school students, using a retrospective case-control research design. Subjects were determined purposively with the inclusion criteria having normal BMI and not lactose intolerance. The minimum number of subjects was based on calculations were 38 children. Subjects as many as 22 elementary school children were exposed to a complete breakfast habit with milk and 17 elementary school children became a control group for breakfast habits without milk. Completing the 2x24 hour food recall questionnaire and 7-day food record and subject interviews were conducted for 1 week. Learning achievement is measured using the final score of the semester 1 by K13 curriculum. There was a significant relationship in the exposed group and the control group on learning achievement especially Bahasa scores (p = 0,001) as many as 90,91% in the exposed group and 88,24%, in the control group, also, the tendency for a better IPA (Science) scores in the exposed group was 81,82% compared to the control group at 64,71%. Thus, the habit of breakfast supplemented with milk is closely related to the learning achievement of elementary school children.

Abstract

 This study aims to determine the relation between energy intake, fat, fiber, and physical activity to visceral fat in Universitas Islam Negeri Walisongo employees. This study involved 165 educational employees using simple random sampling technique. Data collection was conducted directly using a physical activity questionnaire, 3x24 hour food recall, and anthropometric data. The data was then statistically processed using Microsoft Excel, Nutrisurvey, and the SPSS. The data analysis were carried out using the Kolmogorov-Smirnov test, Pearson Product Moment Correlation analysis, and Spearman Rank Correlation. Based on the results of the Pearson correlative test, it was found that there was a relationship between energy intake and visceral fat (p value 0.05), while for fat intake, fiber, and physical activity did not have a significant relationship with visceral fat (p 0.05). The results of this study indicate that energy intake is positively correlated with the visceral fat while intake of fat, fiber, and physical activity is not correlated with the visceral fat. Penelitian ini bertujuan untuk mengetahui hubungan asupan energi, lemak, serat dan aktivitas fisik dengan visceral fat pada pegawai Universitas Islam Negeri Walisongo. Responden pada penelitian ini adalah 165 pegawai tenaga kependidikan dengan menggunakan simple random sampling. Pengambilan data dilakukan secara langsung menggunakan kuesioner aktivitas fisik, food recall 3x24 jam, dan pengukuran data antropometri. Data kemudian diolah secara statistik menggunakan Microsoft Excel, Nutrisurvey, dan Statistical Program for Social Science (SPSS). Analisis statistika yang dilakukan adalah uji normalitas dan uji korelasi. Uji normalitas data dengan uji Kolmogorov-Smirnov, kemudian dilanjut uji analisa Korelasi Product Moment Pearson. Berdasarkan uji korelatif Pearson didapatkan hasil bahwa terdapat hubungan antara asupan energi dengan visceral fat yang dibuktikan dengan nilai p 0,05. Adapun untuk asupan lemak, serat, dan aktivitas fisik tidak memiliki hubungan yang signifikan dengan visceral fat (p 0,05). Hasil penelitian ini menunjukkan bahwa hanya asupan energi yang berkorelasi positif dengan visceral fat sedangkan asupan lemak, serat, dan aktivitas fisik tidak berkorelasi.

Abstract

AbstractThe purpose of this study was to analyze the difference effect of sport drink and sweet orange juice on VO2 max value in soccer athletes. This study was in the field of quasi experimental design with pre-post test with controlled group. The subject of this study were 22 soccer athletes which are calculated by Lameshow formula. The subject has given 300 ml sport drink, sweet orange juice without any additional ingredients, and placebo for 3 days intervention. The VO2 max value was measured by Balke running test before dan after the treatment. Data were analyzed by paired sample t-test, one way ANOVA, dan post-hoc LSD. Based on the results of the paired sample t-test, there were significant differences between the values before dan after treatment (p0.05). There was an increase of VO2 max in the sweet orange group (5.53±3.09) dan sport drink group (3.2±2.11). There wasn’t a significant difference effectivity of sport drink (52.68±2.27) ml/kgBB/minute dan sweet orange juice (54.86±1.29) ml/kgBB/minute on VO2 max value in football athletes (p0.05). Sport drink and sweet juice orange can increase VO2 max in football athletes. There is no difference in the effectiveness of VO2 max in both of these drinks.  AbstrakPenelitian ini bertujuan untuk mengetahui ada tidaknya perbedaan efektivitas pemberian minuman isotonik dan jeruk manis peras terhadap VO2 max atlet sepak bola. Desain penelitian ini adalah quasi experimental, pre-post test with control group design. Jumlah subjek penelitian sebanyak 22 atlet sepak bola yang dihitung berdasarkan rumus Lameshow. Subjek penelitian pada 3 kelompok berbeda menerima 3 hari intervensi pemberian 300 ml isotonik bermerek, jeruk manis peras, dan placebo. Nilai VO2 max diukur dengan menggunakan tes Balke. Nilai VO2 max dianalisis menggunakan uji paired sample t-test, uji one way ANOVA, dan dilanjutkan dengan uji Post-hoc LSD. Berdasarkan hasil uji paired sample t-test, terdapat perbedaan yang signifikan antara nilai sebelum dan sesudah perlakuan pada kedua kelompok (p0,05). Terjadi peningkatan VO2 max pada kelompok jeruk manis peras (5,53±3,09) dan kelompok minuman isotonik (3,2±2,11) ml/kg BB/menit. Tidak terdapat perbedaan signifikan efektivitas minuman isotonik (52,68±2,27) ml/kg BB/menit dan jeruk manis peras (54,86±1,29) ml/kg BB/menit terhadap VO2 max atlet sepak bola (p0,05). Rerata VO2 max sebelum perlakuan ketiga kelompok relatif sama atau tidak ada perbedaan yang signifikan (p0,05), sedangkan rerata VO2 max sesudah perlakuan ketiga kelompok mempunyai perbedaan yang signifikan (p 0,05). Pemberian minuman isotonik dan jeruk manis peras dapat meningkatkan VO2 max atlet sepak bola, dan tidak terdapat perbedaan efektivitas di antara keduanya.

Abstract

AbstractThis study aims to analyze the relationship between complementary feeding, food security, and nutritional status (Weight-for-age (WAZ)) of children aged 6-59 months in Bekasi. This study used cross sectional design of 135 pairs of mothers and children aged 6-59 months in the Jatiluhur Primary Health Center, Bekasi City. Provision of complementary feeding and food diversity were collected using questionnaire. Food Security was collected using (Household Food Insecurity Access Scale- HFIAS) questionnaire. Anthropometic data was collected using weighing scale and was converted into z-score using WHO-Anthroplus software. Data were analysed by chi-square/Fischer exact test with 5% significant p value. The result showed that 86 (63.7%) children were underweight (z-score -1 SD). There was a significant relation between timing of introduction complementary feeding and nutritionaatus (p = 0.031). On the other hand, there was no significant relation between food security and food diversity with nutritional status. This study showed that that the timing of introduction complementary feeding is significantly related to the nutritional status of children in Bekasi. AbstrakPenelitian ini bertujuan untuk menganalisis hubungan pemberian makanan pendamping ASI dan ketahanan pangan dengan status gizi balita (BB/U) usia 6-59 bulan di puskesmas wilayah Kota Bekasi. Penelitian ini menggunakan desain cross sectional pada 135 ibu dan balita usia 6-59 bulan di wilayah Puskemas Jatiluhur, Bekasi. Data karakteristik, keragaman pangan dan riwayat pemberian MP-ASI diukur menggunakan kuesioner, ketahanan Pangan diukur dengan kuesioner Household Food Insecurity Access Scale- (HFIAS). Data status gizi didapatkan dengan pengukuran berat badan kemudian diolah menggunakan software WHO-Antrhoplus. Analisis statistik yang digunakan adalah uji chi-square/fischer exact dengan tingkat kesalahan 5%. Sebanyak 86 balita (63,7%) memiliki status gizi kurang (z-score  -1 SD). Terdapat hubungan antara waktu pemberian MP-ASI dengan status gizi balita BB/U ( p = 0,031). Tidak terdapat hubungan ketahanan pangan, keragaman pangan, frekuensi dan jenis pemberian MP-ASI dengan status gizi balita BB/U (p=0,443). Berdasarkan penelitian yang dilakukan, hanya waktu pemberian MP-ASI yang terkait dengan status gizi balit di bekasi.

Abstract

AbstractThis study aims to determine the correlation between vitamin E and vitamin C intake with total cholesterol levels in the hypercholesterolemic patient. The research design was cross-sectional type with 30 samples whose diagnosed with hypercholesterolemia in January 2019 at Tlogosari Kulon Health Center, Semarang. The intake of vitamin E and vitamin C was obtained using a semi-quantitative food frequency questionnaire (SQFFQ). Total cholesterol data were collected from the result of the patient’s blood test with cholesterol levels above 200 mg/dl. The analysis used was univariate and bivariate analysis to determine the correlation between the intake of vitamin E and vitamin C with total cholesterol levels. The bivariate analysis used the Spearman Rank. The average intake of vitamin C and E of respondents is classified as less, namely 34.51 mg and 0.12 mg in a day. There was no significant correlation between vitamin E intake and total cholesterol levels (p-value =0.13 ), there was no significant correlation between vitamin C intake and total cholesterol levels (p-value =0.39). Vitamin E and vitamin C intake are not related to total cholesterol levels in hypercholesterolemic patients. AbstrakPenelitian ini bertujuan untuk mengetahui hubungan antara asupan vitamin E dan vitamin C dengan kadar kolesterol total pada pasien yang mengalami Hiperkolesterolemia. Desain penelitian adalah cross sectional dengan (n=30) yang baru didiagnosa Hiperkolesterol pada bulan Januari 2019 di Puskesmas Tlogosari Kulon Semarang. Asupan vitamin E dan vitamin C diperoleh dengan menggunakan semi quantitative food frequency questionnaire (SQFFQ). Data kolesterol total diperoleh dari hasil tes laboratorium kimia darah pasien dengan kadar kolesterol di atas 200 mg/dl. Analisis yang digunakan adalah analisis univariat dan bivariat untuk mengetahui hubungan antara asupan vitamin E dan vitamin C dengan kadar kolesterol total. Analisis univariat yang digunakan adalah uji normalitas dan bivariat adalah uji Spearman Rank. Rata-rata asupan vitamin C dan E responden tergolong kurang, yaitu 34,51 mg dan 0,12 mg per hari. Tidak ada hubungann signifikan antara asupan vitamin E dengan kadar kolesterol total (p-value =0,13 ), tidak ada hubungan signifikan antara asupan vitamin C dengan kadar kolesterol total (p-value =0,39). Asupan vitamin E dan vitamin C tidak berhubungan dengan kadar kolesterol total pada pasien Hiperkolesterolemia.

Abstract

AbstractThis study aimed to analyze body weight and body fat in obese adult men after administration of green coffee, green tea, and cinnamon (GGC) powder combination drink. This study applied a pre-post experimental design. Fourteen obese male subjects which are chosen by purposive sampling were given 200 mL/day GGC drink for 8 weeks. Body weight, body fat, and food intake data were collected before and after intervention. The instrument used in this study include microtoise, meterline, food recall 2x24 hours, and bioelectrical impedance analysis (BIA). The result showed that GGC drink significantly decrease body weight (-2.45 kg; p-value=0.001), BMI (-0.89 kg/m2; p-value=0.001), waist circumference (-2.97 cm; p-value=0.001), body fat percentage (-1.75%; p-value=0.004), and visceral fat (-0.92; p-value=0.001). Based on the results of the Wilcoxon Test showed that administering 200 mL/day of GGC drink improve nutritional status in obese adult men. In conclusion, administrating 200 mL/day of GGC drink reduce body weight and body fat of adult men.Abstrak Penelitian ini bertujuan untuk menganalisis berat badan dan lemak tubuh pada laki-laki dewasa yang mengalami kegemukan setelah pemberian minuman herbal kombinasi bubuk kopi dan teh hijau serta kayu manis (minuman KTM). Penelitian epidemiologi klinik ini menggunakan desain pre-post experimental. Sebanyak empat belas orang pria dewasa yang dipilih secara purposive diberi 200 mL/hari minuman KTM selama 8 minggu. Data berat badan, lemak tubuh dan asupan makanan dikumpulkan sebelum, selama, dan sesudah intervensi. Instrumen yang digunakan dalam penelitian ini meliputi microtoise, meterline, food recall 2x24 jam, dan bioelectrical impedance analysis (BIA). Berdasarkan hasil Uji Wilcoxon menunjukkan bahwa pemberian minuman KTM selama 8 minggu menurunkan berat badan secara signifikan (-2,45 kg; p-value = 0,001), IMT (-0,89 kg/m2; p-value = 0,001), lingkar pinggang (-2,97 cm; p-value = 0,001), persen lemak tubuh (-1,75%; p-value = 0,004), dan lemak sentral (-0,92; p-value = 0,001). Kesimpulan penelitian ini adalah minuman KTM dapat menurunkan berat badan dan lemah tubuh pada laki-laki dewasa.

Abstract

AbstractThis study aims to determine the calcium balance in undernourished rats fed with inulin-enriched MOCAF-based diet. Twenty-seven Sprague Dawley male rats at post-weaning age were classified into 1 normal control groups and 8 undernourished groups. The undernourished rats were conditioned for one month then followed by intervention with MOCAF-based diet for another one month. Calcium analysis was performed on the urine, feces, and tibial bones of rats.  Data of calcium were processed using One Way Anova test followed by Post Hoc Duncan to determine mean differences between groups. The results showed that calcium absorption, calcium retention, and calcium bioavailability between groups differed significantly (p0.05). The highest calcium absorption and calcium retention were found in the protein-energy-deficient rats fed Manggu MOCAF with inulin (KEP M2 = 97.47 ± 0.39% and 97.4 ± 0.4%) respectively. Bioavailability of calcium was higher in the group of undernourished rats fed with MOCAF-based diet. The highest level of calcium of the tibia was found in the protein-deficient rats fed Mentega MOCAF with inulin (KP T2 = 41.1 ± 3.59%) and was significantly different (p0.05) from the protein-energy-deficient rats fed Manggu MOCAF without inulin group (KEP M1= 25.7 ± 6.71%). This study concluded that inulin-enriched MOCAF-based diet could improve the calcium balance in undernourished rats.   AbstrakPenelitian ini bertujuan untuk mengetahui pengaruh pemberian diet berbasis MOCAF diperkaya inulin terhadap efektivitas penyerapan kalsium pada model tikus kurang gizi. Sebanyak 27 tikus jantan galur Sprague Dawley usia lepas masa sapih dikelompokkan menjadi 9 kelompok, yaitu 1 kelompok kontrol normal dan 8 kelompok tikus kurang gizi. Pembuatan model tikus kurang gizi selama satu bulan dan dilanjutkan intervensi dengan diet berbasis MOCAF selama satu bulan. Analisis kalsium dilakukan pada urin, feses, dan tulang tibia tikus. Data kalsium diolah menggunakan ANOVA dilanjutkan dengan Post Hoc Duncan. Hasil penelitian menunjukkan daya serap kalsium, retensi kalsium dan bioavailabilitas kalsium antar kelompok berbeda secara signifikan (p0,05). Daya serap dan retensi kalsium tertinggi terdapat pada kelompok tikus kurang energi protein yang diberi diet MOCAF manggu dengan inulin (KEP M2 = 97,47 ± 0,39% dan 97,4 ± 0,4%). Bioavailabilitas kalsium lebih tinggi pada kelompok tikus kurang gizi yang diberi diet berbasis MOCAF. Kadar kalsium tulang tibia paling tinggi terdapat pada kelompok tikus kurang protein yang diberi diet MOCAF mentega dengan inulin (KP T2= 41,1 ± 3,59 %) dan berbeda signifikan dengan kelompok tikus kurang energi protein yang diberi diet MOCAF Manggu tanpa inulin (KEP M1=25,7 ± 6,71 %). Disimpulkan bahwa diet berbasis MOCAF dengan inulin dapat membantu penyerapan kalsium pada tikus kurang gizi.
