Abstract

Community service performed at Immanuel Bandung School of Health Sciences aims to see the relationship of nutritional status and nutritional behavior to female students in MI AL-ISHLAH BANDUNG. Research design of this study was cross-sectional study. Sampling method was purposive sampling and number of subject mere 145 students of 3, 4, 5, and 6 done by purposive sampling with 145 samples of students taken from grade 3, 4, 5 and 6 grade in MI AL-ISHLAH BANDUNG. The assessment is done by using questionnaires pre and post test treatment. The results obtained from community service that is the nutritional status of female students in MI AL-ISHLAH with normal category (-2SD to 1SD), while for the nutrition behavior of female students in MI AL-ISHLAH BANDUNG included in the category less (<60%) . Based on the calculation by using T-test obtained results that are not significant (p-value> 0.05), this is due to lack of motivation in applying nutritional behavior

Abstract

Penyampaian pesan-pesan melalui poster, leaflet, dan multimedia diharapkan dapat menjadi salah satu cara efektif dalam meningkatkan edukasi gizi pada kader posyandu, ibu balita dan anak sekolah bahkan pada sasaran yang lebih luas.? Tujuan pengabdian masyarakat ini adalah mengedukasi kader posyandu, ibu balita dan anak sekolah berbasis media di Desa Sukawening. Metode yang digunakan dalam pelaksanaan pengabdian masyarakat yang diselenggarakan Sekolah Tinggi Ilmu Kesehatan Immanuel Bandung tim Program Studi S1 Gizi diantaranya ceramah, video, poster, drama, musik dan demonstrasi.Hasil yang didapat, diantaranya: 1). Terdapat perbedaan signifikan antara pengetahuan kader dengan sebelum (13,4) dan sesudah (16,9). 2) Adanya perbedaan signifikan pengetahuan ibu (0,000, p value < 0,05) setelah diberikan edukasi dengan media. 3). Dari 65 orang siswa kelas 4, 5 dan 6 memiliki nilai rata - rata 9,6 dalam menjawab soal pre-test dan nilai rata - rata 13,2 dalam menjawab soal post-test. Secara stastistik, p value < 0,05 (H0 ditolak) maka dapat disimpulkan bahwa ada perbedaan signifikan antara pengetahuan siswa di SD Sukawening sebelum dan sesudah diberikan materi penyuluhan tentang gizi seimbang dan sarapan pagi. 4). Menunjukkan bahwa dari 41 orang siswa kelas 4, 5 dan 6 memiliki nilai rata - rata 9,8 dalam menjawab soal pre-test dan nilai rata - rata 12,9 dalam menjawab soal post-test. Secara stastistik, p value < 0,05 (H0 ditolak) maka dapat disimpulkan bahwa ada perbedaan signifikan antara pengetahuan siswa di SD Nenon sebelum dan sesudah diberikan materi penyuluhan tentang gizi seimbang dan sarapan pagi. Hasil dari kegiatan pengabdian ini adalah bertambahnya wawasan pada kader posyandu, ibu balita dan anak sekolah di Desa Sukawening setelah diberian edukasi dengan menggunakan media.

Abstract

Prevalensi anemia menurut Riskesdas 2013 untuk kelompok usia > 1 tahun terhitung masih tinggi yaitu sebesar 23,9%. Sementara upaya perbaikan gizi masyarakat melalui fortifikasi pangan dirasakan belum optimal. Seiring dengan tingginya produksi pangan lokal kacang – kacangan, maka dari itu dikembangkan produk pangan berbasis tepung komposit (kacang hijau dan kacang merah sebagai sumber zat besi) yang diduga dapat meningkatkan kadar hemoglobin WUS. Tujuan penelitian ini yaitu mengetahui pengaruh pemberian cookies sumber zat besi terhadap kadar hemoglobin sampel. Penelitian ini menggunakan desain eksperimental true eksperimental dengan jenis pre test - post test with control group dengan sampel sebanyak 32 orang yang terbagi menjadi 2 kelompok yaitu kelompok kasus (yang diberi cookies sumber zat besi) dan kelompok kontrol (yang diberi cookies biasa). Pengujian data dilakukan dengan analisis univariat dan bivariat. Hasil penelitian menunjukkan bahwa rata - rata sampel berumur 19 tahun dengan berat badan rata – rata 53,0 kg di awal penelitian dan 54,3 kg setelah periode intervensi, tinggi badan sampel rata – ratanya yaitu 156,2 cm. Rata - rata asupan zat gizi sampel antara lain yaitu 99,1 gram protein, 27,6 mg besi, 64,8 mg asam folat, 2,3 mg vitamin B12 dan 85,9 mg vitamin C. Rata - rata kadar hemoglobin sampel kelompok kasus sebelum intervensi yaitu 11,5 mg/dl dan 13,8 mg/dl setelah intervensi. Rata - rata kadar hemoglobin sampel kelompok kontrol sebelum intervensi yaitu 11,9 mg/dl dan 13,7 mg/dl setelah intervensi. Uji statisik bivariat menggunakan SPSS menunjukkan bahwa nilai p value sebesar 0.001 yang berarti ada perbedaan antara kadar hemoglobin kelompok kasus dan kelompok kontrol.

Abstract

The human immune system can protect the body from bacteria, viruses, and parasites that cause disease. The immune system becomes more active when enough amounts of macro and micro nutrients are consumed. Antioxidants can also guard against the attack of free radicals and radical chemicals found in the body, limiting the damage caused by the oxidation process. One of them is using turmeric and spinach extract as a supplement. Turmeric extract can be used in the production of crispy spinach cookies. The research was purposed to find out the effect of turmeric extract addition on organoleptic characteristics and antioxidant content crispy spinach. This research used a Experimental research design (Pre-Experimental Design) with three treatments consisting of the addition of 50 ml, 60 ml, and 70 ml of turmeric extract. All three formulations were conducted hedonic tests for know the best formulation, followed by antioxidant content (DPPH method), carbohydrate content (method by different), protein content (Kjedahl), and fat content (Soxhlet). Furthermore, economic analysis and product ranking are carried out. Formulation 3 was chosen because of the highest nutritional content. Keywords: crispy spinach, immunity, turmeric extract

Abstract

Hypertension is a condition where blood pressure is more than 140/90 mmHg, which occurs because the heart pumps blood faster to fill oxygen and nutritional needs. This study aims to determine the relationship between nutritional status, sodium, potassium and fiber with the incidence of hypertension at the Cimaung Public Health Center, Bandung Regency. The research design used was case control. The sample consisted of 132 respondents consisting of 66 cases and 66 controls obtained by accidental sampling. Data collection on characteristics such as age, gender, level of education was obtained through interviews. Data on sodium, potassium and fiber intake was obtained through interviews using the Semi Quantitative Food Frequency Questionnaire (SQ-FFQ) form and nutritional status data was obtained through direct measurements of body weight and height. Data analysis was carried out using the Chi Square test. Statistical test results of the relationship between nutritional status and hypertension (p-value = 0,456 (p>0.05)), sodium (p-value = 0,000 (p0.05)). The conclusion of this study is that there is a relationship between sodium and potassium and the incidence of hypertension at the Cimaung Public Health Center, Bandung Regency. There is no relationship between nutritional status, fiber and the incidence of hypertension at the Cimaung Public Health Center, Bandung Regency.

Abstract

The problem of stunting in Indonesia is still quite high, namely 21,6% based on data from the 2022 Indonesian Nutrition Status Survey (SSGI). One of the effective measures to control stunting is through providing additional food (PMT) such as biscuits to children. Carrots and pumpkin are local foods that are rich in beta carotene. Carotenoids as a source of provitamin A are able to overcome the problem of vitamin A deficiency (VAD), which is the cause of growth disorders in children. This research aims to determine the effect of substitution of yellow pumpkin (Cucurbita moschata) and carrot (Daucus carota L.) composite flour on organoleptic characteristics including color, aroma, taste, texture and nutritional content (beta carotene, carbohydrates, protein and fat). This research used a Randomized Block Design (RAK) with 3 treatments, namely formula 1 (150 grams of wheat flour, 50 grams of pumpkin flour and 50 grams of carrot flour), formula 2 (50 grams of wheat flour, 60 grams of pumpkin flour and 50 grams of flour carrots) and formula 3 (50 grams of wheat flour, 50 grams of pumpkin flour and 150 grams of carrot flour) with 3 repetitions. The research results showed that formula 3 biscuits were the best formulation in terms of organoleptic characteristics with the highest beta carotene content compared to F1 and F2. F3 biscuits contain 30,97 mg beta carotene, 7,45 grams of carbohydrates, 3,22 grams of protein and 8,89 grams of fat. The conclusion of this research is that the substitution of wheat flour with composite flour (Cucurbita moschata and Daucus carota L.) has an effect on the nutritional content (beta carotene, carbohydrates, protein and fat) of biscuits. Consuming pumpkin biscuits per 100 grams can qualify as a good source of the antioxidant beta carotene.

Abstract

SSGI data for 2022 shows that the prevalence of malnourished children under five is 7.7% and in Banten province it has increased from 5.8% to 9.8%. Malnutrition in toddlers is the main cause of growth and development disorders. One of the government programs in dealing with malnourished toddlers is an education class for mothers of toddlers based on MCH books which is expected to be able to improve the nutritional status of malnourished toddlers. This research aims to determine the effect of nutritional education through classes for mothers of toddlers based on MCH books on the nutritional status of malnourished toddlers. Experimental research method with a one group pretest posttest design. The sample for this research was 60 malnourished toddlers using a purposive sampling technique. Primary data includes sample characteristics, maternal nutritional knowledge collected through interviews using questionnaires and anthropometric measurements. Research data was processed using Microsoft Excel and SPSS, analyzed using the Paired Sample T-Test statistical test. The results showed that the majority of toddlers (71.7%) were male, 66.7% of mothers had an elementary school educational background and the majority did not work (76.7%) and came from families with monthly income below the minimum wage. (53.3%). Research data shows that there is a positive change in the mother's nutritional knowledge score, namely 30% to 75% in the good category and 70% to 25% in the poor category. Most toddlers experience an increase in average body weight, body length and z-score value of BB/PB or BB/TB. The results of the Paired Sample T-Test statistical test showed that there was an influence of maternal classroom nutrition education on maternal nutritional knowledge (p=0.000) and nutritional status of toddlers (p=0.000). It is hoped that this class program for mothers of toddlers can be continued, considering the impact felt by the target group.

Abstract

Latar Belakang: Terapi gizi medis mulai dari tahapan pengkajian, diagnosa gizi, intervensi hingga monitoring dan evaluasi gizi pada pasien stroke sangat penting diterapkan, melalui pemberian makan yang tepat sesuai kebutuhan gizi dan daya terima pasien. Data World Stroke Organization tahun 2022 menunjukkan 1 dari 4 orang diperkirakan mengalami stroke. Tujuan : Mengetahui efektifitas terapi gizi medis terhadap perbaikan asupan makronutrien pasien stroke iskemik sebelum dan sesudah intervensi. Metode: Desain penelitian pre-experiment yang melibatkan 55 orang sampel melalui teknik accidental sampling. Pengumpulan data melalui pengukuran antropometri, recall 24 jam, observasi dengan formulir comstock dan rekam medik. Analisa data menggunakan uji statistik dependent paired t-test (tingkat kepercayaan 95%). Hasil : Penelitian menunjukkan 56,4% responden berjenis kelamin laki - laki, 61,8% responden dengan stroke infark berusia  ≥ 60 tahun dan sebagian besar responden (74,5%) disertai dengan hipertensi, diabetes melitus, coronary artery disease (CAD) dan dislipidemia. Sebelum intervensi gizi, sebagian besar asupan makronutrien responden berada pada kategori defisit tingkat berat (98% - 100%). Setelah intervensi terdapat peningkatan asupan protein pada responden sebesar 8,3%, asupan karbohidrat 9,1% dan asupan lemak 14,7%. Hasil uji dependent paired t-test diperoleh nilai signifikansi 0,000 (p<0,05), secara statistik terdapat perbedaan signifikan sebelum dan setelah terapi gizi medis. Simpulan: Responden penelitian mengalami perbaikan asupan protein 1,8% dan asupan lemak 7,3% dengan peningkatan rata - rata asupan makronutrien sebesar 12%. Terapi gizi medis sangat penting dan terbukti efektif dalam memperbaiki asupan makronutrien untuk penyembuhan pasien stroke, meningkatkan kualitas hidup pasien serta mempersingkat lama perawatan di rumah sakit.

Abstract

Children's nutritional status is very important because it includes balanced physical growth and mental development, while poor nutritional status can hinder the growth and development process of toddlers. This study investigates the effect of participation in the Joint Education Group on the Nutritional Status of Toddlers Aged 6-23 months in Pagerbatu Village, Majasari District, Pandeglang. The study was conducted in 2023 involving 60 pairs of respondents (mothers and toddlers aged 6-23 months) who were malnourished (weight faltering). There is an effect of participation in educational groups on the nutritional status of toddlers, with a p-value = 0.000. However, the mean TB/U decreased by -1.0006±2.02603, and the Wilcoxon test results showed a p-value of 0.135 (p > 0.05), indicating that there was no effect of participation in the education group on nutritional status based on Height by Age. The results of the path analysis and Sobel test showed that all hypothesis tests carried out were not significantly significant (H2 was rejected). It is recommended that mothers implement the knowledge gained from the education group to enhance the growth and development of their toddlers.
