Abstract

ABSTRACT The purpose of this study was to determine the contents of proximate, iron, zinc, cholesterol, and fatty acid profiles from fresh mangrove shells (Telescopium telescopium), fresh Kalandue shells (Polymesoda erosa), and boiled blood shells (Anadara granosa L.). Shellfish in this study came from the city of Kendari. The analysis included: levels of proximate, iron, zinc, cholesterol, and fatty acid profiles. The dominant proximate content of the three types of shells was protein, which was 53.91% in mangrove shells, 69.72 %% in blood shells, and 77.07 % in kalandue shells. The highest iron and cholesterol contents were obtained in fresh kalandue shells that reached 74.9 ppm and 145.77 mg/100g, respectively. Meanwhile, the highest zinc content was obtained in the boiled blood shell (63.1 ppm). There were 10 types of fatty acids in fresh mangrove shells, 13 types of fatty acids in fresh kalandue shells, and 9 types of fatty acids in boiled blood shells. In addition, kalandue shells had chain fatty acid (SCFAs) namely Butyric Acid (C4:0).Keywords: proximate, iron, zinc, cholesterol, fatty acid, telescopium telescopium, polymesoda erosa, anadara                   granosa ABSTRAKTujuan penelitian ini untuk menentukan kandungan proksimat, zat besi, zink, kolesterol, dan profil asam lemak dari kerang bakau (Telescopium telescopium) segar, kerang Kalandue (Polymesoda erosa) segar, dan kerang darah (Anadara granosa L.) rebus. Kerang pada penelitian ini berasal dari Kota Kendari. Analisis meliputi : kadar proksimat, kadar besi dan zink, serta kadar kolesterol dan profil asam lemak Kandungan proksimat yang dominan dari ketiga jenis kerang tersebut adalah protein  53,91 % pada kerang bakau, 69,72%% pada kerang darah, dan 77,07% pada kerang kalandue. Kandungan Zat Besi dan kolesterol tertinggi pada jenis kerang kalandue segar masing-masing sebesar 74,9 ppm, dan 145,77 mg/100g, sedangkan kandungan Zink terbesar pada jenis kerang darah rebus (63,1 ppm). Terdapat 10 jenis asam lemak pada kerang bakau segar, 13 jenis asam lemak pada kerang kalandue segar, dan 9 jenis asam lemak pada kerang darah rebus. Selain itu, pada kerang kalandue terdapat satu asam lemak rantai pendek (SCFAs) yaitu Asam Butirat (C4:0).Kata kunci: proksimat, besi, zink, kolesterol, asam lemak, kerang bakau, kerang Kalandue, dan kerang darah

Abstract

Background: In Indonesia, the prevalence of Diabetes Mellitus (DM) has increased. DM can have a significant impact on health that requires serious countermeasures. Moringa leaves have been extensively studied in terms of their efficacy in the treatment and prevention of DM.Objective: To identify the relationship between the habit of consuming Moringa leaves and blood sugar levels of Muna tribe.Method: This study was a cross-sectional study design conducted among local people in the Muna tribe community at Gunung Jati sub-district, Kendari, Southeast Sulawesi, Indonesia. A total of 81 people was participated selected using a proportional random sampling.Results: The average of frequency consumption of Moringa leaves among Muna tribe was one time a day, with consumption as much as 160 grams/day. The average of normal blood sugar was 103.5 mg/dl. There was no relationship between age, gender, education, working status with the frequency and amount of Moringa leaf intake. Similarly, analysis of blood sugar based on characteristics, there was no relationship between gender, education, working status with blood sugar, but there was a significant relationship between age and blood sugar (p=0.00). There was no relationship between the frequency and amount of moringa leaf intake with blood sugar levels.Conclusion: There was no relationship between the habit of consuming Moringa leaves both in terms of characteristics and blood sugar level among Muna people in the Gunung Jati, Kendari, Southeast Sulawesi, Indonesia.

Abstract

Pemberian pelatihan dan edukasi bagi kader posyandu remaja diharapkan dapat dijadikan sebagai bekal dalam memberikan pelayanan kepada remaja peserta posyandu dengan harapan mentrasfer ilmunya kepada teman sebayanya. Metode pengabdian mayarakat ini terlebih dahulu diberikan pretest, kemudian memberikan konseling gizi dan praktik cara melakukan konseling gizi selanjutnya diberikan posttest dan evaluasi. Hasil pengadian masyarakat didapatkan terjadi peningkatan pengetahuan kader posyandu remaja dari rata-rata skor 8,8, meningkat menjadi 13,2 dan sebanyak 64% berpengetahuan cukup sebelum pelatihan meningkat menjadi 100,0% berpengetahuan cukup saat posttest. Sedangkan keterampilan juga terjadi peningkatan dari rata-rata 4,2, menigkat menjadi 9,4, sebelum pelatihan semua (100,0%) kader posyandu remaja tidak terampil, setelah pelatihan (posttest) sebagian besar (68,0%) kader posyandu remaja terampil dalam melakukan konseling gizi. Hasil analisis statistik menunjukkan bahwa terdapat perbedaan pengetahuan dan keterampilan kader posyandu remaja sebelum dan sesudah pelatihan. peningkatan kemampuan kader posyandu remaja dalam kegaiatan pengabdian masyarakat ini, dapat disebabkan adanya bimbingan yang diberikan pada saat praktik dari pengajar dalam hal ini pemateri dosen-dosen jurusan gizi, selain itu media yang digunakan yakni flipchart dapat membantu memahami materi yang disampaikan. Kegiatan ini berimplikasi pada kader kesehatan dengan mendorong kader posyandu remaja dalam mengupayakan peningkatan status kesehatan dengan usaha yang inovatif.

Abstract

Latar Belakang : Dari hasil pemantauan status gizi (PSG) tahun 2017 yang dilakukan Ditjen kesehatan Masyarakat (Kemenkes RI, 2019). Provinsi Sulawesi Tenggara pada tahun 2016 diperoleh persentase balita usia 6 -59 bulan menurut status gizi dengan indeks BB/U sebanyak 13,7% balita gizi kurang, dan pada tahun 2017 meningkat menjadi 17,30 balita gizi kurang, dan masuk dalam 10 besar provinsi yang memiliki cakupan persentase gizi kurang yang tinggi, dan pada tahun 2018 terjadi penurunan persentase cakupan balita yang menderita gizi kurang sebanyak 16,40% (Kementerian Kesehatan RI, 2018). Berdasarkan data dari Puskesmas Benu-benua Kota Kendari ditemukan anak balita Gizi Kurang yang berada di Kelurahan Benua-Benua dengan Prevalensi sebanyak 5,4% pada tahun 2020. Metode : Jenis penelitian yang digunakan adalah study Observasional Analitik dengan menggunakan pendekatan cross sectional study. Sampel dalam penelitian ini adalah semua anak balita usia 1-5 tahun yang ada di Kelurahan Benu- Benua Kecamatan Kendari Barat Kota Kendari pada bulan Februari Tahun 2022 sebanyak 54 sampel. Hubungan antara variabel bebas dan terikat di uji menggunakan uji Chi-square. Hasil : Berdasarkan hasil penelitian diperoleh bahwa pengetahuan gizi ibu sebagian besar (81,5%) memiliki pengetahuan gizi kurang, pola asuh gizi sampel sebagian besar (57,4%) memiliki pola asuh gizi baik, pola makan sampel sebagian besar (75,9%) memiliki pola makan baik. Uji statistik menunjukan tidak terdapat hubungan pengetahuan gizi ibu dengan status gizi pada anak balita dimana p value (0.739), adanya hubungan pola asuh gizi dengan status gizi pada anak balita p value (0.004), serta adanya hubungan pola makan dengan status gizi pada anak balita p value (0.000). Kesimpulan : Dengan demikian dapat disimpulkan bahwa variabel yang berhubungan pada status gizi anak balita usia 1-5 tahun adalah pola asuh gizi, pola makan.

Abstract

Background: Stunting is a disorder of growth and brain development in children caused by malnutrition for a long time, including inadequate intake and increased nutritional needs due to repeated infections, and lack of stimulation. The percentage of stunted toddlers in Southeast Sulawesi in 2017 was 36.4% , Konawe Regency by 29.6%. This study aims to determine the relationship between infectious diseases, knowledge of maternal nutrition and diet with the incidence of stunting under five children Method :. This type of research is descriptive analytical research with a cross sectional study approach. It was carried out from March to May 2020, the number of samples was 35 participant. The sampling technique was Proportional Random Sampling. Results: The study showed as many as 54.3% (n=19) under five were women, 57.1% under five aged 12-36 months, 31.4% under five suffering from infectious diseases, there were 85.7% mothers under five had poor nutrition knowledge, as many as 51.4% Stunting toddlers. Conclusion: There is a significant relationship between infectious diseases and the incidence of stunting in toddlers, and there is no significant relationship between knowledge of maternal nutrition and eating patterns with the incidence of stunting. Suggestion: Toddler mothers are given nutrition education to always visit Posyandu regularly so they can monitor their child's growth and development.

Abstract

Ringkasan: Latar Belakang: Kompleksitas permasalahan kesehatan remaja memerlukan penanganan komprehensif terintegrasi. Sistem surveilans yang baik dapat mendeteksi masalah kesehatan remaja secara dini untuk pencegahan stunting dan penyakit tidak menular. Tujuan: Mengembangkan aplikasi layanan elektronik berbasis website "Remaja Milenial Sehat (REMILA)" untuk pencatatan dan pelaporan status kesehatan remaja sebagai upaya pencegahan stunting di Kota Baubau. Metode: Penelitian research and development menggunakan model ADDIE (Analysis, Design, Development, Implementation, Evaluation). Lokasi penelitian di Puskesmas Katobengke dan Betoambari dengan sampel 100 remaja menggunakan accidental sampling. Uji coba aplikasi dilakukan pada 18 penanggung jawab Posyandu remaja. Hasil: Aplikasi REMILA berhasil dikembangkan untuk pencatatan status gizi, anemia, KEK, obesitas, dan risiko PTM. Data antropometri, pemeriksaan Hb, gula darah, kolesterol, dan tekanan darah dapat diinput dan diakses admin maupun petugas Puskesmas. Simpulan: Sistem informasi REMILA bermanfaat untuk pencatatan dan pelaporan status kesehatan remaja dengan akses mudah dan penggunaan efektif. Saran: Diperlukan evaluasi efektivitas aplikasi untuk surveilans kesehatan remaja berkelanjutan.

Abstract

Background: One of the local food in Southeast Sulawesi is Sinongi. Sinonggi is the staple food of the tribe Tolaki. The raw material for making Sinonggi is sago flour. Generally sago flour in Southeast Sulawesi prepared traditionally methodes so the sanitaries is not enough for mantain contaminant of microbes producing organic acid which causing deteriration of sago and the impact of product become changing in colour, aroma, taste. Objective: to determine the degree of acidity sago as the raw materials for making sinonggi in traditional markets Mandonga, Kendari city.Method: Types of research design is descriptive surveys studies. The research was done on November to Desember 2014. The sample of this research are sago starch were sold in traditional markets Mandonga of Kendari City as many as 12 samples were Purposive Sampling. Type of analysis included: forms of sago flour and the degree of acidity of sago flour (SNI 3729: 2008) Result: The results showed that of the 12 samples of sago flour 7 samples (67%) are wet sago flour form, and Nine samples (75%) have a degree of acidity did not meet predetermined requirements in SNI. Conclusion: Most of the samples have a degree of acidity did not meet predetermined requirements in SNI 3729: 2008

Abstract

Introduction: Eating habits and nutritional status among adolescents in Mamuju, West Sulawesi, showed that adolescents with unhealthy eating habits tend to have a higher incidence of overweight and obesity compared to those with healthy eating habits. This underscores the need for early nutrition education for adolescents. This study aimed to explore the types of health and nutrition services received by adolescents at primary healthcare services in Mamuju District, West Sulawesi.Methods: An explanatory sequential mixed-methods design was used, combining cross-sectional and qualitative methods. The study involved 305 high school adolescents in Mamuju, selected through random sampling. Quantitative data were collected via surveys using structured questionnaires. Qualitative data were obtained from in-depth interviews with 8 key informants (health workers, teachers, and students) and focus group discussions (FGDs) with 8-10 participants per session, who were selected through purposive sampling to ensure diverse perspectives.Results: The results showed that the majority of adolescents accessed healthcare services through the Puskesmas (99.3%), as its easy access reported by 92.2% respondents. However, most respondents (77.7%) were unaware of the types of healthcare services available at the Puskesmas. The most commonly received services were mental health counseling (9.9%) and nutrition education (5.9%).Conclusion: These findings indicate the need for greater dissemination of information about available healthcare services through social media, as well as the strengthening of health and nutrition education programs for adolescents to support healthy lifestyles

Abstract

Remaja putri membutuhkan asupan gizi optimal untuk mendukung pertumbuhan dan perkembangan yang sehat. Pengabdian masyarakat ini bertujuan meningkatkan pengetahuan dan keterampilan remaja dalam mengestimasi porsi makan melalui pelatihan konselor teman sebaya di MAN DDI Bahrul Mubarak, Soropia, Sulawesi Tenggara. Metode pelatihan meliputi ceramah, Focused Group Discussion (FGD), dan praktik menghitung Indeks Massa Tubuh (IMT) serta “Isi Piringku.” Kegiatan dilaksanakan dalam tiga tahap pada Oktober 2023, meliputi penjajakan, pelaksanaan pelatihan, dan evaluasi. Hasil pre-test menunjukkan seluruh peserta belum memiliki keterampilan yang diajarkan, namun setelah pelatihan, 70% siswa mampu menghitung IMT dan porsi makan dengan benar. Pengetahuan dan sikap siswa juga meningkat secara signifikan. Pelatihan ini efektif sebagai media promosi kesehatan dan membentuk peer educator yang diharapkan mampu menyebarluaskan pengetahuan gizi seimbang kepada teman sebaya secara berkelanjutan dengan bimbingan guru.

Abstract

As many as 53% of adolescents have severe energy deficiency and 48% severe protein deficiency. The risk is greater for young women, mothers-to-be, where nutritional deficiencies will have an impact on the health of the mother and baby during pregnancy and childbirth, such as children born with low birth weight who can later become stunted. A youth posyandu service program is needed to prevent stunting problems as early as possible. This study aims to determine the effect of empowering Youth Posyandu Cadres on knowledge of attitudes and behavior of adolescents about nutrition in preventing stunting in Kendari City. This type of research is a quasi-experimental design with a one group pretest-posttest design which was carried out in July-November 2021, carried out on 45 posyandu cadres and 100 youth posyandu participants in the working area of UPTD Puskesmas Puuwatu and UPTD Puskesmas Abeli Kendari City. Before the training most of the youth posyandu cadres were unskilled, after the training most of the posyandu cadres were skilled. The knowledge, attitudes and behavior of cadres at the pretest were mostly lacking, at the post-test most of them became good. Most of the youth participating in the posyandu had less knowledge, attitudes and behavior on the pretest, after peer education the aspects of knowledge, attitudes and behavior of the teenagers were mostly good. Statistically there are significant differences before and after peer training and education on the characteristics of the study. Regular and continuous training is required.
