Abstract

Kehamilan resiko tinggi adalah kehamilan yang mengancam Kesehatan dan kesejahteraan ibu dan janinnya. Kondisi seperti ini mengharuskan untuk mendapatkan perawatan dari tenaga Kesehatan terlatih dan khusus (National Institutes of Health, 2017). Kehamilan dianggap beresiko tinggi bila ada potensi komplikasi yang dapat mempengaruhi ibu, bayi, atau keduanya. Tujuan Kegiatan pengabdian masyarakat ini adalah untuk meningkatkan pengetahuan dan kemampuan kader posyandu dalam melakukan skrining deteksi dini resiko tinggi dalam kehamilan. Metode pelaksanaan pengabmas yang dilakukan berupa pelatihan bagi kader dalam bentuk pembekalan materi, demonstrasi dan praktik cara pengisian KSPR sebagai alat deteksi dini skrining ANC resiko tinggi dalam kehamilan dan evaluasi penerapan di lapangan. Tempat pelatihan dilakukan di kantor desa dan kegiatan praktik cara pengisian KSPR diadakan pada Posyandu. Hasil yang didapatkan terdapat peningkatan pengetahuan peserta, yaitu dari rata-rata nilai 45 menjadi rata-rata 70 melalui pretest dan posttest, dan terdapat peningkatan kemampuan kader dalam pengisian KSPR yaitu dari rata-rata 40 menjadi rata-rata 65. Disarankan kepada kader posyandu di Desa Ranah Singkuang agar dapat rutin melakukan skrining deteksi dini resiko tinggi pada kehamilan dengan menggunakan KSPR pada saat hari buka posyandu dan pada saat pelaksaan kelas ibu hamil.

Abstract

Stunting in early childhood remains a major public health issue in developing countries, including Indonesia. In addition to undernutrition, excessive intake of simple carbohydrates may disrupt the endocrine pathways crucial for linear growth. This study examined the association between simple carbohydrate consumption and growth biomarkers insulin-like growth factor 1 (IGF-1), leptin, and growth hormone as predictors of stunting risk in children aged 12–36 months of age. A cross-sectional observational study was conducted with 250 children from urban and rural settings. Dietary intake was assessed using a validated 24-hour recall, and biomarker levels were measured using ELISA. The results showed an average daily energy intake of 1,350 kcal, with 65% derived from carbohydrates, predominantly simple sugars and refined starches. Stunted children exhibited significantly lower concentrations of IGF-1, leptin, and growth hormone (p < 0.01), with strong inverse correlations between simple carbohydrate intake and biomarker levels (r = –0.45 for IGF-1; r = –0.38 for growth hormone [GH]). Multiple regression analysis confirmed that a higher intake of simple carbohydrates significantly predicted lower biomarker levels and reduced height-for-age z-scores (HAZ). These findings highlight the importance of dietary quality, emphasizing the need to reduce simple carbohydrate intake to support hormonal balance and optimal linear growth in early childhood.

Abstract

Pumpkin bars are practical functional food products; however, their distribution is often hampered by a lack of data on quality degradation kinetics in the tripos environment. This study aimed to estimate the shelf life of pumpkin bars using the Accelerated Shelf Life Test (ASLT) method with the Arrhenius approach and to evaluate the effectiveness of aluminum foil packaging in maintaining product quality. This study used an experimental design conducted at the Food Laboratory of the Riau Ministry of Health Polytechnic and SIG Laboratory from January to October 2025. Samples were stored at 35, 40, and 45°C, and a control temperature of 18°C for 30 days, with observations every 7 days. The parameters observed included moisture content, water activity (Aw), and the presence of mold and yeast. Data analysis used the Arrhenius kinetic model to calculate the reaction rate constant and estimate the shelf life. The results showed that the product was stable in terms of mold and yeast <10 colonies/g. Increased moisture content (8.5–14%) and Aw (0.52–0.67) were the main limiting factors for the growth of these Based on Arrhenius calculations, the shelf life of the product was estimated to be 23–35 days at 35–45°C. Moisture content and sensory degradation were the main determinants of the shelf life of pumpkin bars in aluminum foil packaging.
