Abstract

The purpose of this study was to examine the effect of lambda carragenan addition as a natural food additive alternative to bread to improve microbiological quality and prolong the shelf life. The method used in this study was completely randomized design (CRD) with 7 days of storage at room temperature as treatment and repeated three times. Observed parameters was moisture content, total microbes, total fungi and total E.coli. The concentration of lambda carragenan used was 0.4%. The observed data of water content was analyzed using Co-stat software with 5% significance Differences. If there was a real difference, then tested continued using Honestly Significance Differences (HSD) at level 5%. Microbiological quality observation data (total microbes, total fungi and total coliform) were analyzed descriptively. The results showed that the storage of bread with the addition of 0.4% lambda carrageenan caused the bread to last for 4 days of storage. Water content of bread decreased during 7 days storage. The microbiological quality of bread indicates that the storage of bread for 4 days was still acceptable in accordance with Indonesian National Standard (SNI) with total microbial 8.556 log cfu / ml, total mushroom 4,255 log cfu / ml, and amount of E.coli as much as <2,398 cfu / ml . The types of fungi that grow on bread with the addition of lambda carrageenan wer Aspergillus niger and Aspergillus flavus.Keywords: bread, hydrocolloid, lambda carrageenan, microbiological quality, shelf lifeABSTRAKTujuan dari penelitian ini adalah untuk mengkaji pengaruh penambahan lambda karaginan sebagai alternative bahan tambahan makanan (BTM) alami pada roti untuk meningkatkan mutu mikrobiologi dan memperpanjang masa simpan. Metode yang digunakan pada penelitian ini adalah rancangan acak lengkap dengan perlakuan lama penyimpanan selama 7 hari pada suhu ruang dan diulang sebanyak tiga kali. Parameter yang diuji antara lain kadar air, total mikroba, total jamur dan total E.coli. Konsentrasi lambda karaginan yang digunakan adalah 0,4%. Data hasil pengamatan kadar air dianalisis dengan software Co stat dengan taraf nyata 5%. Apabila terdapat beda nyata, maka dilakukan uji lanjut menggunakan uji Beda Nyata Jujur (BNJ) pada taraf 5%. Data hasil pengamatan mutu mikrobiologis (total mikroba, total jamur dan total koliform) dianalisis secara deskriptif. Hasil penelitian menunjukkan bahwa penyimpanan roti dengan penambahan 0,4 % lambda karagenan menyebabkan roti bertahan selama 4 hari penyimpanan. Kadar air roti mengalami penurunan selama penyimpanan 7 hari. Mutu mikrobiologis roti menunjukkan bahwa penyimpanan roti selama 4 hari masih dapat diterima sesuai dengan Standar nasional Indonesia (SNI) dengan jumlah total mikroba 8,556 log cfu/ml, total jamur 4,255 log cfu/ml, dan jumlah E.coli sebanyak <2,398 cfu/ml. Jenis jamur yang tumbuh pada roti dengan penambahan lambda karagenan adalah Aspergillus niger dan Aspergillus flavus.

Abstract

The chemical properties and antimicrobial activity of honey can be affected by geographic location. The aim of this study was to determine the chemical quality and inhibition activity of trigona honey bee (Tetragonulaclypearis) from Breeders in East Lombok District against Pseudomonas aeruginosa in vitro. This study was conducted using completely randomized design (CRD) with one factor, namely the location of the trigona beekeeping which consisted of 6 (six) locations, namely breeders Dames Damai, Bintang Rinjani, Sukarema, Bebidas, Banjar Sari and Geres.). Data were analyzed by analysis of variance (ANOVA) at a significance level of 5% using Co-Stat software. Significantly different data were tested with an Honestly Significant Difference (HSD). Data of phytochemical compounds (tanins and flavonoids) were analyzed using a descriptive method. The results showed that trigona honey had significantly different pH, water content, and reduced sugar content. The pH of trigona honey obtained from 6 farms in East Lombok Regency is in the general pH range of trigona honey, which ranges from 2.99 to 3.33. Meanwhile, the water content of trigona honey obtained from 6 farms in East Lombok Regency was very high, namely 27.98 - 41.01% (bb) with very low reducing sugar levels, which only ranged from 25.22 - 30.92%. However, the antimicrobial activity of trigona honey from 6 breeders in East Lombok showed the inhibition activity to Pseudomonas aeruginosa is relatively high that indicated by the formation of an inhibition zone due to the existence of flavonoid content in trigona honey as an antimicrobial agent.

Abstract

Pakuan Village is one of the villages in Narmada Sub-district, West Lombok Regency where banana production is very abundant but has not been maximally utilized by the vilagers. Generally, bananas are only sold fresh or banana chips and banana sale. Bananas have the potential to become raw materials for various food products. The limited knowledge of the villagers regarding banana processing technology causes a lack of innovation in producing processed banana products. The purpose of this service activity is to increase villagers knowledge related to banana processing technology to support the strengthening of the capacity of MSMEs in Pakuan Village. This activity involved around 12 MSMEs groups. Activities were carried out in 3 stages, namely preliminary studies, socialization and training, and evaluation. The approach method used was a participatory approach. Through this activity, the villagers succeeded in increasing the knowledge and skills needed in processing bananas into jelly candy and fostering community interest in innovating to develop other food products made from bananas. The diversification of banana products can be one way to improve the economy and welfare of the community.

Abstract

arang lebah hasil perasan madu trigona masih mengandung komponen yang dapat dimanfaatkan seperti propolis. Propolis diketahui memiliki kemampuan sebagai antimikroba. Umumnya pelarut yang banyak digunakan untuk ekstraksi propolis adalah etanol. Penelitian ini bertujuan mengetahui efektivitas antimikroba propolis lebah Trigona spp asal Lombok yang diekstrak dengan pelarut air menggunakan beberapa metode seperti maserasi, metode MAE (Microwave Assisted Extraction), dan metode perebusan, terhadap lima bakteri uji yang berhubungan dengan pangan seperti Staphylococcus aureus, Escherichia coli, Vibrio spp., Pseudomonas spp., dan Lactobacillus casei. Propolis komersial digunakan juga sebagai pembanding. Pengujian aktivitas antimikroba dilakukan dengan metode sumur. Hasil penelitian menunjukkan sampel ekstrak propolis memiliki aktivitas antimikroba terhadap bakteri uji golongan gram negatif dan tidak menunjukkan penghambatan untuk bakteri uji golongan gram positif. Sampel ekstrak propolis dengan metode MAE adalah ekstrak dengan aktivitas antimikroba terbaik karena memberikan zona hambat pada ketiga bakteri uji E. coli, Pseudomonas spp., dan Vibrio spp.

Abstract

Coffee is one of the leading agricultural products in Indonesia, including the West Nusa Tenggara (NTB) region, which is known for its high quality coffee production. Sembalun sub-district, especially Sajang, has great potential in developing arabica coffee that can compete in the international market. However, the challenges faced by coffee farmers are still quite significant, especially in improving the quality of coffee fruit and managing coffee waste more effectively. The implementation of collaborative international community service (PkM) in Sajang related to improving coffee quality has many significant benefits, especially in women's empowerment, sustainable agriculture, and economic potential. International collaborative community service involves various stakeholders, both from within and outside the country, to solve problems efficiently and solutively, especially in sustainable agriculture issues. The focus of this PkM is to educate and equip the community, with the latest innovations and technologies to improve the quality of local coffee. The workshop went well, involving village officials, 20 members of Bumi Lestari Indonesia farmers (male and female) and coffee business owners.
