Abstract

Pemilihan jajanan pada anak sekolah dasar dipengaruhi oleh berbagai faktor internal dan ekternal. Faktor internal meliputi pengetahuan dan sikap, sedangkan faktor ekternal mencakup ketersediaan jajanan di lingkungan sekolah dan pengaruh teman sebaya. Penelitian ini bertujuan untuk menganalisis hubungan pengetahuan, sikap, ketersediaan jajanan, dan pengaruh teman sebaya terhadap pemilihan jajanan pada siswa/i kelas V di SDN Gunong Kleng, Kecamatan Meureubo, Kabupaten Aceh Barat, Tahun 2024. Penelitian ini menggunakan desain observasional analitik dengan pendekatan cross sectional. Populasi penelitian adalah seluruh siswa/i kelas V dengan metode total sampling sebanyak 40 siswa/i. Instrumen yang digunakan adalah kuesioner yang mencakup variabel pengetahuan, sikap, ketersediaan jajanan, dan pengaruh teman sebaya. Analisis data diakukan menggunakan uji Chi-Square.Penelitian menunjukkan terdapat hubungan signifikan antara pengetahuan (p=0,008), sikap (p=0,017), ketersediaan jajanan (p=0,014), dan pengaruh teman sebaya (p=0,000) terhadap pemilihan jajanan. Responden dengan tingkat pengetahuan dan sikap baik cenderung memilih jajanan yang lebih sehat.. Namun, ketersediaan jajanan tidak sehat di lingkungan sekolah dan pengaruh teman sebaya yang signifikan menjadi faktor utama dalam pemilihan jajanan yang tidak aman. Kesimpulan penelitian ini adalah bahwa faktor pengetahuan, sikap, ketersediaan jajanan, dan pengaruh teman sebaya memiliki hubungan signifikan terhadap pemilihan jajanan siswa/i. Oleh karena itu, edukasi gizi dan pengawasan lingkungan sekolah diperlukan untuk meningkatkan kebiasaan jajan yang sehat, serta peran guru dan orang tua dalam memberikan edukasi kesehatan yang baik.

Abstract

Lumi-lumi fish (Harpadon nehereus) is an endemic fish commonly found in West Aceh, known for its high protein content and various minerals. Crackers are a food often consumed as a snack, a complement to dishes, or as an appetite stimulant, with a wide variety of consumers ranging from children to adults. However, the content of crackers made from tapioca is known to have a very low protein content of 0.5%. The addition of lumi-lumi fish is expected to increase the protein content of crackers. This study aims to identify the best formulation and analyse the nutritional content of Lumi-lumi fish crackers. The research method is arranged in a one-factorial Completely Randomised Design, which consists of 4 different levels of Lumi-lumi fish concentration treatment (P0: 0%, P2: 15%, P3: 20%, and P4: 25% Lumi-lumi fish)—then identified the expansion power of crackers between treatments. Next, a hedonic method sensory test was conducted to obtain the selected formulation through a scoring test. The chosen products were analysed for nutritional content in comparison to a control group, namely P0 (0% Lumi-lumi fish). Sixty untrained panellists conducted sensory testing. The results showed a significant effect on the cracker expansion power (P = 0.001), with the highest result obtained by treatment P3 at 58.54%. In the scoring test, the selected Lumi-lumi fish crackers were treatment P3. Then based on the results of nutritional content, it was found that the addition of 25% of Lumi-lumi fish meat was able to increase the nutritional content compared to the control treatment (PO), namely the ash content from 0.83 ± 0.39% to 1.36 ± 0.25%, fat content from 0.42 ± 0.08% to 5.81 ± 0.39%, protein content from 7.16 ± 0.55% to 8.58 ± 0.17% and fiber content from 1.47 ± 0.14% increased to 1.81 ± 0.21%. However, there was a decrease in carbohydrates from 90.11 ± 0.59% to 82.44 ± 0.54%. For the analysis of water content, it follows the rules of SNI 01-2713-2009. To produce Lumi-lumi fish crackers with the best organoleptic acceptance, it is recommended to use a concentration of Lumi-lumi fish of 25%.

Abstract

Stunting is a condition of growth failure in children under five due to inadequate nutritional intake. The main characteristic of stunting is that the child's height is not age-appropriate, which is shorter than children of the same age. Steps to prevent stunting can be taken in various ways, including educational activities, nutrition fulfillment, and anthropometric training. Training on using anthropometry during measurement is expected to make the data collection of children's nutritional status more accurate, and the fulfillment of nutritional sources through local innovations such as independent aquaculture can contribute to providing protein sources. This community service activity aims to increase the understanding of cadres and mothers of toddlers in Gampong Pasi Jeumpa about stunting prevention. Budikdamber training aims to enable the community to fulfill protein as a source of nutrition independently. Implementing this program is through education, counseling, and training. The activity stages include several vital steps, including program preparation, program socialization with partners, and implementation of education and training. Assistance was provided to understand the training and education activities better. The evaluation was conducted to assess the overall success of the program. The activity results showed increased participants' understanding, with the percentage of understanding increasing from 55% (pre-test) to 91% (post-test). Participants better understood the factors that cause stunting and the steps to prevent stunting. Participants became more aware of how to measure using anthropometric tools. Participants also became more aware of how to cultivate fish on a small scale to fulfill the protein and vitamin needs needed for stunting prevention. [This service activity increased participants knowledge of stunting problems and improved measurement skills using anthropometric tools. Participants understand the proper cultivation steps so that the fish produced can be a source of nutrients needed.

Abstract

Data hasil Survei Status Gizi Indonesia (SSGI) menunjukkan bahwa prevalensi balita stunting di Indonesia sebesar 21,6%. Aceh adalah salah satu provinsi dengan prevalensi stunting yang tinggi, mencapai 31,2%, dan Aceh Barat termasuk kabupaten dengan angka stunting yang tinggi. Penanganan isu stunting pada balita sangat memerlukan pendekatan yang komprehensif serta melibatkan beragam sektor. Salah satunya adalah kader posyandu ikut andil dalam melakukan deteksi awal mengenai stunting. Potensi pangan lokal di desa Ujung Kalak bisa dimanfaatkan oleh para kader untuk pembuatan Pemberian Makanan Tambahan (PMT) yang lebih bervariasi berbasis pangan lokal yang ada di desa sehingga perlunya keterampilan dalam pengolahan PMT berbahan baku lokal yang dapat mendukung dalam penanganan stunting. Kegiatan pengabdian bertujuan untuk memberdayakan kelompok mitra di desa Ujung Kalak dalam upaya menurunkan angka stunting dengan meningkatkan pengetahuan kader mengenai penyusunan menu PMT dengan konsep Nurti-Plan Menu yaitu kader menyusun beberapa alternatif menu sesuai dengan standar isi piringku serta mengolah menu tersebut menjadi PMT yang bervariasi dengan menambahkan bahan baku pangan lokal. Hasil yang telah dicapai menunjukkan peningkatan pengetahuan mitra tentang stunting serta keterampilan mitra dalam mengolah PMT dengan tambahan daun kelor yang menghasilkan produk seperti puding, nugget, dan churros.

Abstract

Diabetes is a non-communicable disease among the highest causes of death worldwide, including in Indonesia. Factors that cause diabetes include pancreatic β-cell damage, genetic factors, and an unhealthy lifestyle. Diabetes is characterized by high blood glucose levels (hyperglycemia) beyond normal limits. Hyperglycaemia can be treated using synthetic chemical drugs or insulin therapy, which has adverse long-term effects. The community believes herbal medicine is an alternative diabetes treatment. Melastoma sp is a plant that has the potential as an antidiabetic agent. This study aimed to determine the effectiveness of ethanol extract of Bhee fruit (Melastoma sp) on blood glucose levels of diabetic mice. This study is a laboratory experiment using laboratory animals. The mice were divided into seven treatment groups with three replicates: KN (normal control), KP (treatment control), KD (diabetes control), KO (drug control), P1 (treatment dose of 100 mg/kgBB extract), P2 (treatment dose of 200 mg/kgBB extract), and P3 (treatment dose of 400 mg/kgBB extract). The study's results, the administration of doses of ethanol extract of the fruit 100, 200, and 300 mg /kgBB for 14 days reduced glucose levels in diabetic mice. However, they could not exceed the ability metformin at a dose of 500 mg/kgBB.

Abstract

The prevalence of overweight in adolescents is increasing rapidly due to the high production and consumption of sweet foods favored by adolescents. Being overweight during adolescence is correlated with the risk of obesity in adulthood if there is no further prevention. More than one-third of adults and 17% of adolescents are obese, and the prevalence remains stable in America. In Indonesia, the prevalence of excessive nutrition has also reached 16%. This study to determine which types of food consumption are at risk of overweight in adolescents. This research used a cross-sectional design. The study sample consisted of high school students and was selected using random sampling methods. The dependent variable was overweight, and the independent variables included consumption aims of fatty foods, sweet foods, sweet pastries, junk food, and sweet beverages. The gathered data were analyzed using univariate analysis and bivariate analysis with a chi-square test at α = 0.05. This research found that 28% of adolescents are overweight. The results of the bivariate analysis showed that the variables significantly influencing overweight we the consumption of sweet foods (p = 0.02; OR = 2.965, 95% CI = 0.978-8.988) and sweet pastries (p = 0.01; OR = 6.829, 95% CI = 0.987-47.231). In conclusion, the consumption of sweet foods, which implies high sugar intake, is correlated with overweight in adolescents. It is recommended that adolescents limit their consumption of sweet foods containing high sugar levels and increase their nutritional literacy because there is no recommended dietary allowance for sugar
