Abstract

The Canteen is a facility that is often visited by many people, therefore the canteen cleanliness and health need attention. Especially The canteen in places such as education providers. Whatever is served by canteen will be consumed by campus residents and become a daily habit to consume it. Contamination that occurs in the canteen will endanger campus residents, and if consumed by many people will cause many victims. This will certainly endanger the health of campus residents, especially students and employees. Food handler’s personal hygiene and completeness of APD are closely related to food contamination. For this reason, it is necessary to develop a healthy canteen, one of which is by providing education about personal hygiene and the importance of using APD when food is personalized. This activity is a community service of the Nutrition Study Program Faculty of Health Sciences (FIKes)Esa Unggul University. The purpose of this activity is to create a healthy and pollution free canteen Esa Unggul University. All food handlers canteen attended and participated in this activity well. Activities like this are important to carry out to cultivate a healthy canteen in an educational environment such as a campus.

Abstract

Data prevalensi obesitas di seluruh dunia meningkat dua kali lipat antara tahun 1980 dan 2014. Meningkatnya obesitas tidak lepas dari gaya hidup, seperti menurunnya aktivitas fisik. Edukasi gizi baik melalui penyuluhan, konseling ataupun berbagai metode lainnya merupakan salah satu upaya yang dapat dilakukan dalam mencegah masalah gizi. Program latihan olahraga dan edukasi gizi adalah cara yang tepat untuk melihat seberapa besar pengaruh terhadap status gizi di pusat kebugaran khusus wanita seperti di Duadua Studio Depok. Tujuan penelitian ini adalah mengetahui pengaruh program latihan olahraga dan edukasi gizi terhadap komposisi tubuh, lingkar perut dan lingkar panggul pada peserta olahraga di pusat kebugaran Duadua Studio Depok. Penelitian ini menggunakan desain One Group Pretest-Posttest. Teknik pengambilan sampel yang digunakan adalah teknik longitudinal dengan sampel berjumlah 34 orang. Analisis data menggunakan Uji t-paired. Hasil penelitian menunjukkan ada pengaruh yang signifikan dari program latihan olahraga dan edukasi gizi terhadap komposisi tubuh dan lingkar perut (p<0,05). Namun, tidak terdapat pengaruh yang signifikan terhadap lingkar panggul (p>0,05). Terdapat pengaruh program latihan olahraga dan edukasi gizi terhadap komposisi tubuh dan lingkar perut. Tidak terdapat pengaruh yang signifikan terhadap lingkar panggul pada peserta olahraga di pusat kebugaran di Duadua Studio Depok. Pada penelitian selanjutnya perlu menggunakan kelompok perlakuan dan kelompok kontrol, hal tersebut dapat menjadikan kelompok pembanding pada saat penelitian

Abstract

A women's farmer business group in Mekarbuana village, Kab. Karawang, is participating in this community service activity. In order to boost the abilities of women farmer business groups in Mekarbuana village, this project intends to provide instruction about personal cleanliness for food handlers. Women farming business groups in Mekarbuana village have limited knowledge of hygiene and food safety. As a result, women farming business groups in Mekarbuana village need to be educated on the importance of personal hygiene and food safety in food processing so that they can broaden their knowledge of food hygiene and safety and ensure that consumers feel safe when eating the resulting food. The lecture method is being used to deliver the education. It was determined from the results of this activity that knowledge increased after being educated, so it was suggested that the activity be carried out by health workers and continued with constant monitoring or observation.

Abstract

Teachers are one of the key factors determining the quality of education. Teacher’s work productivity might be influenced by their daily food intake and nutritional status. The objective of this study is to determine the relationship between daily food intake and nutritional status to the work productivity of teachers. This research used a cross-sectional approach that was carried out at SMK Pelita Ciampea Bogor. The research samples were 75 teachers selected by simple random sampling method. Characteristic data was obtained through interviews and filling out questionnaires. The instruments used to measure nutritional status were digital scales and microtoise. The daily food intake data were obtained from the interview results using the 1x24 hour food recall form. Work productivity data was obtained by filling out a questionnaire containing 25 closed questions. The data were analyzed using the chi-square test. The results showed that teacher's food intake was lower than their recommended dietary allowance. Most of the teachers were obese but had very good work productivity. Bivariate analysis showed that there was no significant relationship between nutritional intake and work productivity (p>0,05). In daily food intake, only fat intake had a significant relationship to work productivity (p=0,004). It could be concluded that fat intake had a significant relation to work productivity.

Abstract

Latar belakang: Usia anak sekolah merupakan masa yang kritis untuk membentuk pola makan, jika makanan yang dikonsumsi pada masa ini terpenuhi dengan baik dapat mencegah masalah gizi dan penyakit degeneratif. pendidikan gizi pada siswa sekolah dasar memainkan peran penting dalam membentuk dan meningkatkan pengetahuan dan sikap gizi, khususnya dalam hal pemilihan jenis makanan. Salah satu modifikasi media yang dapat digunakan untuk edukasi gizi usia anak sekolah adalah media permainan ‘Nutrition Bingo’. Media ini memiliki cara bermain yang menimbulkan rasa kompetitif sehingga dapat membangkitkan semangat belajar pada anak. Selain itu, dalam permainannya Nutrition Bingo menmanfaatkan banyak indera seperti mendengarkan, melihat, ataupun berdiskusi dimana hal ini dapat membuat anak semakin banyak menerima informasi dengan baik.Tujuan: Tujuan penelitian ini untuk melihat pengaruh pemberian media ‘Nutrition Bingo’ terhadap pengetahuan dan sikap gizi seimbang serta keanekaragaman pangan pada anak usia 10-12 tahun).Metode: Penelitian ini merupakan penelitian Quasi Eksperimental dengan rancangan pre-test post-test control group design. Kelompok intervensi yang mendapatkan pendidikan gizi dengan Nutrition Bingo pada penelitian ini merupakan 20 anak usia 10-12 tahun di Yayasan Quantum Sejahtera dan 20 anak di Yayasan Komite Bersama Indonesia Kuat sebagai kelompok kontrol, mendapatkan pendidikan gizi dengan metode ceramah. Analisis data dalam penelitian ini menggunakan Paired Sample T-test, Wilcoxon, Independent T-test dan Mann Whitney.Hasil: Hasil penelitian menunjukkan adanya pengaruh pemberian media Nutrition Bingo terhadap peningkatan pengetahuan (p≤0,0001) dan sikap (p≤0,0001) mengenai gizi seimbang dan keanekaragaman pangan.Simpulan: Media Nutrition Bingo dapat digunakan menjadi salah satu media yang dapat meningkatan pengetahuan dan sikap gizi seimbang serta keanekaragaman pangan pada anak usia sekolahKata Kunci : Media permainan gizi; Nutrition bingo; Pengetahuan gizi.

Abstract

Masa remaja merupakan salah satu masa perkembangan manusia. Masa remaja merupakan masa peralihan dari masa kanak-kanak hingga dewasa yang meliputi perubahan biologis, psikologis dan sosial. Pola hidup dan pola makan yang benar sangat mempengaruhi pertumbuhan serta perkembangan remaja, salah satunya yaitu pola hidup sehat serta makan dengan beraneka ragam sesuai dengan pedoman gizi seimbang. Namun pada kenyataannya banyak remaja yang tidak menerapkan pedoman gizi seimbang di kehidupan sehari-hari, bahkan tidak mengetahui apa itu pedoman gizi seimbang. Kegiatan ini bertujuan untuk melakukan edukasi secara online pada siswa SMPN 220 Jakarta mengenai pentingnya makan beraneka ragam sesuai dengan pedoman gizi seimbang. Kegiatan dilakukan melalui WhatsApp group yang diikuti oleh 89 siswa. Edukasi secara online ini penting untuk dilakukan karena dapat meningkatkan pengetahuan siswa mengenai makan beraneka ragam. Hasil pre-test 73,46 dan post-test 85 menunjukkan ada peningkatan pengetahuan siswa sebesar 11,54 poin setelah mengikuti edukasi. Sehingga edukasi secara online ini perlu untuk sering dilakukan pada siswa remaja.

Abstract

Hypertension is a condition where systolic blood pressure greater than 140 mmHg and diastolic blood pressure greater than 90 mmHg. One of the factors that can prevent hypertension is potassium deficiency. Foods that contain high potassium are bananas and mung beans. These foods can be developed as raw ingredients for making cookies for people with hypertension. In addition, cornstarch is used as a carbohydrate source which is commonly used in the making of snacks. The objective of this study is to determine the effect of adding banana flour and cornstarch to cookie’s nutritional and organoleptic content. The addition of mung beans is the same for all formulations. An experimental study with four formulations which are F0, F1, F2 and F3. This study involved 25 semi-trained panelists and 30 consumer panelists for organoleptic testing. Data analysis using ANOVA and Duncan test. Based on the ANOVA test results, there were significant differences in preference, quality and nutritional value between the four formulations. The selected cookie formulation is F2 with a ratio of 80% banana flour and 20% cornstarch which contains 442 kcal, protein 4.28 g, fat 16.82 g. 68.5 g carbohydrates, 0.25 g fiber and 4016 mg potassium per 100 g cookies.

Abstract

Consumption of vegetables and fruit in school-age children, which is still less than the recommended five servings/day in 2018, can increase the risk of nutritional problems in children due to low fiber consumption, leading to obesity. High-fiber snacks made from local food can be a solution. However, the availability is still limited. This research aims to develop snack products from chayote, dragon fruit peel, and Kepok banana peel. This quasi-experimental study was conducted from April 2021 to August 2022 at Saraswanti Indo Genetech Chemistry Laboratorium in Bogor. The sample consists of moderately trained  panelists, as many as 30 people. There were four concentration formulations of chayote, dragon fruit peel, and Kepok banana peel. Data were analyzed using One Way Anova and followed by Duncan Multiple Range Test (DMRT). The result shows significant differences in color (p= 0,000), taste (p= 0,000), texture  (p= 0,000), and overall preference level between formulations (p= 0,002). The selected F2 contains a water content of 18,25%, ash content of 3,12%, protein of 2,82%, fat of 0,28%, carbohydrates of 75,53%, dietary fiber of 10,48 %, and a total plate count of 30 colonies/g. In conclusion, the F2 tends to be more liked by the panelists and can be considered high in fiber.

Abstract

School-age children often do not pay attention to the quality and quantity of their food consumption. Therefore, nutrition education about healthy food is needed to increase their knowledge and attitudes in choosing healthy food to support their growth and development. This study aimed to analyze the effect of nutrition education through the media "Interactive Book" on knowledge and attitudes about healthy food in children aged 9-12 years. This research was conducted in several areas in Serang City, Banten. A quasi-experimental was designed with one group pretest-posttest. The subjects of this study used 35 children. Data analysis used paired sample t-test. The results showed there was an increase in knowledge and attitude scores after being given education with interactive book media (post-test 1). In posttest 2 there was a slight decrease in the average score, but both were still in the good category. The results of the paired t-test analysis showed that there was a significant difference in knowledge and attitude scores between before and after being given education. Interactive book media is proven to increase the knowledge and attitudes of school-age children. This media can be used as an effective nutrition education media for school children aged 9-12 years
