Abstract

Suckermouth catfish (Pterygoplichthys pardalis) is a type of foreign fish (South America) which is prohibited from entering Indonesia because it can endanger ecosystems and the aquatic environment by its invasive nature. The existence of janitor fish threatens the sustainability of the endemic fish of Tempe Lake in Wajo Regency. Until now, there has been no study regarding the quality and food safety for the use of suckermouth catfish in the regency. This study aims to analyzed the heavy metal content of lead (Pb), mercury (Hg) and arsenic (As) of janitor fish in Wajo Regency. Samples of janitor fish were taken from three districts in Wajo Regency used a purpossive sampling technique. Analysis of Pb, Hg and As metals on meat, scales/skin, and bones/fins of suckermouth catfish, refers to SNI 2354.5: 2011, SNI 2354.6-2016 and SNI 01-4866-1998. The results show that suckermouth catfish from the three districts are not contains Pb but contains Hg and As which do not exceed the requirements for metal contamination content limits based on SNI 2729: 2013 concerning requirements for quality and safety of fresh fish

Abstract

This research aims to determine the use of hazardous chemicals in fishery products that are marketed in the city of Makassar. In this study used the Accidental Sampling Technique. Samples are taken from the center of Makassar souvenirs, traditional markets, and modern markets. The fishery products used as samples are crackers, meatballs, and brains. Hazardous chemicals evaluated for use are borax and formalin. The samples were analyzed using a test kit and colorimeter at the BIOCHEME Laboratory (Healthy Food) Department of Chemistry,University of Brawijaya. The results show that fish meatball products marketed in Makassar City do not contain borax, but contain formalin 11.2 - 13.13 ppm. Brain-brain products do not contain borax and do not contain formaldehyde, fish/shrimp crackers marketed in Makassar City do not contain formaldehyde but 33% contain borax with an average, level of 10.39 ppm.

Abstract

Grouper is one of the demersal fish groups that are abundant in Indonesian marine waters. In addition, the high market demand for this fish has also increased its main production technique as an export product. One example of a product from this fish is fish fillet which still leaves waste. Offal is an example of a by-product of grouper which is underutilized so that it is of low value in the market and as a resource. The high protein content of fish offal can be used as a raw material in the manufacture of protein hydrolysates which of course require the role of proteolytic enzymes. Bromelain enzyme which is a proteolytic enzyme that is protease. This study aims to determine the effect of the bromelain enzyme concentration obtained from pineapple crude extract on the quality of the protein hydrolyzate of grouper offal. The experimental design used in this study was a Factorial complete randomized design with different enzyme concentrations (4, 6, 8, 10). and 12%) and the difference in water bath time (4, 6, 8, and 10 hours). The results showed the bromelain enzyme concentration had a very significant effect on the yield and degree of hydrolysis of snapper offal, and observations of the proximate results showed the potential utilization of hydrolyzed protein of fish offal as a food source.

Abstract

Suckermouth catfish (Pterygoplichthys pardalis) are found in Lake Tempe, Wajo Regency, but their existence has not been utilized so far and is even considered the cause of the loss of several endemic fish species in the lake. This study aims to determine the chemical characteristics and the preference level of sticks fortified with Suckermouth catfish (Pterygoplichthys pardalis) meal as an effort to utilize these fish. The research method used was experimental with treatment of SK (control without adding Suckermouth catfish flour), S1 (addition of 10 g of Suckermouth catfish flour), S2 (addition of 20 g of Suckermouth catfish flour), and S3 (addition of 30 g of Suckermouth catfish flour). The parameters observed were moisture, protein, fat, carbohydrate, and ash content, and the level of preference (hedonic test). The results showed that the panelists tended to say they really like the appearance and flavour of the stick S1 product, and very much like the taste and texture of the stick S3 product. The highest protein and water content was in S3 treatment, the highest ash and carbohydrate content was in SK treatment, and the highest fat content was in S1 treatment

Abstract

Kuliah Kerja Nyata atau yang disingkat dengan KKN merupakan bentuk kegiatan pengabdian masyarakat yang dikaitkan dengan Tri Darma Perguruan Tinggi yaitu pendidikan, pengajaran dan penelitian yang disatukan dalam sebuah kegiatan. Kuliah Kerja Nyata (KKN) pada gelombang 110 periode 05 Juli 2023 – 20 Agustus 2023 mengusung berbagai macam tema yang sangat bermanfaat bagi beberapa wilayah. Salah satunya yaitu KKN Tematik Indeks Pembangunan Manusia yang dilaksanakan di Kabupaten Takalar. Kabupaten Takalar merupakan salah satu kabupaten yang terletak di Provinsi Sulawesi Selatan. Kabupaten Takalar memiliki 9 kecamatan dan 100 Desa/Kelurahan salah satunya adalah Desa Patani. Saat ini, Desa Patani diketahui memiliki beberapa masalah yang dihadapi oleh masyarakat salah satu diantaranya yaitu stunting. Adapun penyebab terjadinya stunting di Desa Patani yaitu kurangnya kesadaran masyarakat terhadap kesehatan dan lingkungan mengenai perilaku pola hidup bersih dan sehat. Terdapat beberapa upaya yang telah dilakukan dalam pencegahan masalah stunting, salah satunya adalah Pemberian Makanan Tambahan (PMT). Pemberian Makanan Tambahan (PMT) merupakan bentuk kegiatan pemberian makanan kepada balita dengan tujuan untuk mengatasi masalah gizi yang terjadi pada masyarakat. Pemberian Makanan Tambahan (PMT) yang sehat akan diberikan melalui pengolahan ikan tongkol menjadi nugget. Tujuan dari kegiatan “Pemberian Makanan Tambahan (PMT) Berupa Olahan Ikan Menjadi Nugget Sebagai Upaya Penurunan Angka Stunting di Desa Patani” yaitu sebagai alternatif menu pemberian makanan tambahan (PMT) pada balita dalam mencegah stunting.

Abstract

Catfish (Pangasius sp.) has high nutritional value and can be used to make various products, one of which is jambal roti. This research aims to determine the characteristics of jambal bread based on fermentation time and salt concentration. The research used an experimental method with a completely randomized design (CRD) factorial pattern with three levels of fermentation duration (A), namely A1:24 hours, A2:36 hours and A3:48 hours at two levels of salt concentration (B), namely B1:25% and B2:30% repeated 3 times. The parameters assessed are sensory characteristics, total plate number, water content, ash content and salt content. The results showed that the sensory values ​​were appearance (7.82-8.30), smell (8.14-8.25), taste (8.04-8.41), texture (7.66-8.68), mold (9.00). The research results also showed total plate number (0-1.037 x 103), water content (26.99 - 32.29%), ash content (18.98 - 23.34%) and salt content (19.44 - 24,50%). ALT meets standard quality requirements (SNI 2721.1-2009), water content complies with SNI (8376:2017), ash content does not meet the SNI (8376:2017), and salt content in 2 samples (A1B2 and A2B2) only meets SNI (8376:2017). The characteristics of Catfish Jambal Roti Patin this study, in general, are in accordance with SNI (8376:2017)

Abstract

Catfish (Pangasius sp.) is a popular type of freshwater fish that has the potential to be cultivated in Indonesia. So far, the use of catfish, especially those from Sidenreng Lake, Sidenreng Rappang Regency, South Sulawesi, has not been optimal. Catfish is only used as a fresh commodity without processing and preservation activities. One of the well-known preserved products is jambal roti. Jambal roti is a product of salt fermentation. This research aims to analyze the nutrition contents of jambal roti catfish, Sidenreng Rappang Regency, South Sulawesi. The research method used was experimental with a Completely Randomized Research Design. The treatment was long fermentation (24, 36, and 48 hours) at a salt concentration of 30%. The parameters observed were water content, salt content, protein, fat, and amino acids. The research results showed that the treatment given significantly affected water content, salt content, protein, fat, and amino acids. The best treatment is a fermentation period of 36 hours.
