Abstract

Gelatin is a simple protein obtained from the partial hydrolysis of collagen from the skin, bones, joints and connective tissue of animals. One potential material for the manufacture of gelatin is fish bone milkfish (Chanos chanos). Gelatin derived from fish bones with acid process is able to change the triple helix collagen fibers into a single chain, whereas the solvent base only produce double chain. Demineralization of bone or fish skin should use a weak acid is acetic acid, because when using strong acids will produce a strong scent and color gelatin becomes dark. This study aims to determine the effect of the use of acetic acid to the production of fish bone gelatin and the concentration of acetic acid is necessary to produce gelatin with physical and chemical properties of the best. This study uses a Completely Randomized Design (CRD) with four treatments and five replications. The treatments used in this study is the concentration of acetic acid 2%, 4%, 6% and 8%. Based on the research, it was found that the acetic acid solvent effect on the value of the yield and gel strength, but has no effect on the pH value and viscosity. Acetic acid concentration 8% give 4.102% yield value; pH value (acidity) 4.98; 134.313 bloom gel strength and viscosity of 3.6 cP. FTIR analysis results indicate that the fish bone gelatin produced from this research have the same functional group with commercial gelatin.

Abstract

Ocean pollution occurs because of the concentration of population, tourism and industrialization in the coastal areas, causing contamination of the water ecosystem by heavy metals, one of them is cadmium (Cd). Existence of heavy metals in the water can be accumulated in aquatic  organisms, especially blood shells. Its dangerous for human that consumed them. The purpose of this study is to know the contents of cadmium (Cd) in blood shells, water, sediments and to determine the relation of blood shell’s size with the contents of cadmium (Cd) in the Bancaran Coastal, Bangkalan, Madura. Research methods that used was observations method. The main parameters that  observed  are  the contents of cadmium (Cd) in sea water, sediment and blood shells in the Bancaran Coastal. Supporting parameters that observed are water quality include temperature, p H, salinity, DO and brightness. Data analysis is used to find relations of the data that obtained (regression-correlation). The results showed that the contents of cadmium (Cd) of large blood shells are higher than the small and medium blood shells and there is relat ion between the size of the blood shells with the contents of cadmium (Cd). The water quality of Bancaran Coastal are the temperature 28oC-29oC, pH 7-8, salinity 30 ppt, the brightness 30 cm and DO 5 mg/l.

Abstract

Anadara granosa are one of the benthic organisms that are frequently reported because contained heavy metals because of water pollution. This is because A. granosa is a feeder filter so that accumulates heavy metals in its body. Reduce the levels of heavy metals with activated charcoal from coconut shells in the absorbance process using the depuration method. It is re-optimized with the use of nano-active charcoal. The goal was to determine the effect of concentrations of nano-active charcoal from coconut shells on the heavy metal content of A. granosa. Stages of this reserch, namely charcoal activation, ultrasonication, SEM testing, blood shell depuration, and heavy metal testing. Based on the results of the Scanning Electron Microscope (SEM) Test it is known that the charcoal particles are sized 10-9 nm. The types of heavy metals found included hydrargyrum (Hg) 0.0009 mg/kg, cadmium (Cd) 0.62 mg/kg, and plumbum (Pb) 1.82 mg/kg. Heavy metals with lowest content is found in P5 (active charcoal concentration of 15% of the sample weight) of mercury (Hg) 0.0002 mg/kg; cadmium (Cd) 0.1 mg/kg; and lead (Pb) 0.373 mg/kg. This shows that the higher concentraion of activated charcoal given, the lower heavy metal content.

Abstract

AbstractEel (Monopterus albus) are mostly bream a potential cultivated currently. Eel has a high cholesterol a month 185mg/10gram. Limit of the normal body needs cholesterol is 160-200 mg per day. The content of high cholesterol are not comparable with the content of unsaturated fatty acids eel meat. The unsaturated fatty acid on meat eel very low at α-linolenat acid of 0,46%, EPA of 0,22%, DHA of 2,12%, Linolenat acid of 7,42% and Arakidonoit acid of 1,75%. One effort can be done to increase omega-3 and omega-6 is through engineering feed, with the addition of supplements fatty acids that originated from marine organisms are expected to Omega-3 content and Omega-6 can increase in the meat eel. Abstract

Abstract Blood cockles (Anadara antiquata, Anadara granosa) and Ark clams (Trisidos tortuosa) is one type of clams that is often consumed by people in Surabaya and Sidoarjo. The study was conducted in February-April 2014. The ratio of N/P on water conditions in Sedati of 3.3 / 1 it's indicates that the sampling process is done in the rainy season which resulted in the case of stirring the sediment. On the condition of the ratio N/P is phytoplankton still able to grow optimally. While the study site in Kenjeran, Surabaya obtained ratio N/P by 5.56 / 1 this indicates the potential of phytoplankton at this location is more optimal than the region in Sedati. In morphology, clams from Kenjeran is relatively larger than the clams from Sedati.

Abstract

Abstract The increase in value-added of fishery products is one of which can be done by processing. In addition to maintaining the value of the protein in the fish raw material, it would be easier if the product is stored and increase the sale value of the fish itself. The ability to perform in the fish processing in Mandangin island is still very limited. Community service activities that have been carried out by a team of the Faculty of Fisheries and Marine Universitas Airlangga was introduce smoked fish product processing with liquid smoke, because this method easier and faster so that the products can be marketed. Liquid smoke was developed because the location is very minimal in the supply of raw materials such as firewood and coconut, so the use of liquid smoke is very appropriate. The resulting refined products are expected to be a source of protein Mandangin Island community itself and is able to become an alternative source of income for the community to increase the sale value of fishery products. Mentoring process being conducted by a team from the Faculty of Fisheries and Marine Universitas Airlangga so that the products can be marketed outside Mandangin Island or even to other areas in East Java.
