Abstract

Gula pereduksi adalah golongan karbohidrat yang dapat mereduksi senyawa-senyawa penerima elektron, contohnya glukosa dan fruktosa.. Semua monosakarida (glukosa, fruktosa, galaktosa) dan disakarida (laktosa, maltosa), kecuali sukrosa dan pati (polisakarida), termasuk sebagai gula pereduksi. Kandungan karbohidrat dalam bahan pangan dapat ditentukan dengan berbagai metode, yaitu secara kualitatif dan kuantitatif. Metode kualitatif ada beberapa uji seperti test molish, moore, bennedict, barfood, Iodium dan selliwanoof. Uji karbohidrat yang resmi ditetapkan oleh BSN dalam SNI 01-2891-1992 yaitu analisis total karbohidrat dengan menggunakan metode Luff Schoorl. Jenis penelitian yang digunakan adalah penelitian eksperimen. Hasil penelitian menunjukkan bahwa rata-rata kadar gula pereduksi pada buah naga merah dengan menggunakan metode Lane Eynon yaitu 4,21%, sedangkan rata-rata kadar gula pereduksi pada buah naga dengan menggunakan metode Luff Schoorl yaitu 2,87 %. Hal ini berbeda dengan kandungan karbohidrat buah naga merah berdasarkan Tabel Komposisi Pangan Indonesia yaitu 9,1 %. Pengujian lebih lanjut dan mendalam tentang penggunaan metode kadar gula pereduksi (metode SNI dan tidak SNI) dapat dilakukan dengan membandingkan beberapa sampel (kearifan lokal) dengan perlakuan tingkatan berat sampel yang berbeda-beda sehingga didapatkan kadar gula pereduksi yang lebih akurat.

Abstract

Efforts are being made to address malnutrition in Indonesia, one of which is food diversification based on innovation and the development of additional food formulations to increase toddler immunity. One of the progs being developed is moringa oleifera. Moringa leaves contain a variety of nutrients, including protein, ß-carotene, vitamin C, iron, zinc, and calcium. Combining jelly with vegetables is one way to help parents deal with their children who don't like vegetables. This study looked at how adding moringa leaf flour to pudding affected the amount of calcium, iron, and zinc, as well as organoleptic testing. This type of study is an actual experiment with four (four) treatments of adding moringa leaf powder and a fully randomized design, namely 0 g, 3 g, 5 g and 7 g. Data analysis utilizing the Mann Whitney and Kruskal-Wallis tests. 25 moderately trained panelists underwent organoleptic testing, and the amounts of Ca, Fe, and Zn were measured at the Baristand Padang.  According to the study's findings, pudding with 3g of moringa leaf flour added was the best treatment when combined with Ca 116,53 mg, Fe 2,05 mg, and Zn 5,17 mg. Therefore, it can be inferred that adding moringa leaf flour to pudding has an impact on the organoleptic tests, Ca, Fe, and Zinc levels.

Abstract

Abstract: Based on data obtained from the Sitinjak Health Center, the number of people with hypertension has increased in three consecutive years. In 2021, there were 144 people with hypertension, which then increased to 162 people in 2022. In 2023, the number of sufferers increased again to 176 people. Of the total 176 people with hypertension, the majority were adult women, with a total of 105 people, while 71 men were recorded. The purpose of the study was to determine the determinants of the incidence of hypertension in productive age. The study used a type of quantitative research with a cross sectional design. The research was conducted in July 2023 in the Sitinjak Health Center working area. The sample amounted to 51 people. The sampling technique used Accidental Sampling. The research instrument used a research questionnaire. Data analysis was done univariate and bivariate. The results showed that there was a relationship between physical activity (p value: 0.010) and eating habits (p value: 0.000) on the incidence of hypertension in productive age. It is recommended to the Puskesmas to further improve health services through health counseling, encourage routine control and conduct health counseling about changing good eating habits for people with hypertension so as to prevent and reduce the incidence of hypertension.Keywords: Physical Activity, Hypertension, Eating Habits, Health Center.

Abstract

Abstract: Stunting is a chronic nutritional problem that occurs due to a lack of nutritional intake over a long period of time, caused by feeding that is not in accordance with the body's nutritional needs. In North Bengkulu, the number of stunted toddlers was recorded at 1,899 children, with details of 1,640 toddlers classified as short and 259 toddlers who were very short. This figure shows a significant increase in stunting cases in North Bengkulu. The purpose of the study was to determine the determinants of the incidence of stunting in toddlers. The research design used in this study was cross sectional. The research was conducted in the working area of the Kerkap Health Center. The research was conducted in May 2023. The study population was toddlers aged 24-59 months in the Kerkap Health Center working area, totaling 593 children. The sample amounted to 90 respondents selected using stratified random sampling. The research instrument used a research questionnaire. Data analysis was done univariate and bivariate. The results showed there was a relationship between LBW (p value: 0.035) and exclusive breastfeeding history (p value: 0.007) to the incidence of stunting. It is recommended to pregnant women and mothers who have toddlers to provide exclusive breastfeeding and to the Puskesmas to further optimize the socialization program for pregnant women to prevent LBW and stunting so that every family member has a good nutritional status including children, so that the stuting nutritional status that occurs in children aged 24-60 months can change and get better at a later age.Keywords: Exclusive breastfeeding, LBW, stunting.

Abstract

Abstract: Stunting is a condition in which the growth and development of a toddler is impaired due to long-term malnutrition, which causes the child's height to be shorter than other children of the same age. Based on data tracking of stunting cases in Jambi Province, it is known that one of the districts in the top 5 highest incidence of stunting is East Tanjung Jabung District. According to sub-districts in East Tanjung Jabung Regency, the Simpang Pandan Health Center working area has the highest incidence of stunting. The purpose of the study was to determine the maternal and sanitation aspects of the incidence of stunting. The research design used in this study was cross sectional. The research was conducted in the Simpang Pandan Health Center Working Area. The research was conducted in November 2023. The population is mothers who have children aged 0-59 months in the Simpang Pandan Health Center area, totaling 1176 mothers. The sample amounted to 73 people. The sampling technique used Stratified Random Sampling. The research instrument used a research questionnaire. Data analysis was carried out univariate and bivariate. The results showed a relationship between maternal knowledge (p value: 0.000) and latrine ownership (p value: 0.028) to the incidence of stunting. It is recommended to the Puskesmas to increase the knowledge of mothers and also other communities about stunting, it is hoped that the Puskesmas can increase public knowledge through preventive actions and health promotion to the community and conduct counseling to cadres in each village.Keywords: Latrines, Knowledge, Stunting

Abstract

Abstract: Toddlerhood is a critical phase in a child's life, characterized by rapid growth and development. The results of an initial survey conducted by researchers in July 2023 on 10 mothers of toddlers in the Lubuk Buaya Health Center working area, showed that 6 out of 10 mothers of toddlers (60%) reported that their children experienced poor nutritional status. The purpose of the study was to determine the factors that cause the incidence of malnutrition in toddlers. The research design used in this study was cross sectional. The research was conducted in the Lubuk Buaya Health Center area. The research was conducted in July 2023. The study population was toddlers (12-59 months) in the Lubuk Buaya Health Center work area which amounted to 243 toddlers. The sample amounted to 80 respondents. The sampling technique used Simple random sampling. Data analysis was done univariate and bivariate. The results showed there was a relationship between maternal knowledge (p value: 0.025) and income (p value: 0.010) to the incidence of undernutrition. It is recommended to further improve information sources for mothers of toddlers about the incidence of nutritional status in children and causative factors by conducting regular health counseling and by distributing leaflets or sticking posters at the health center about the importance of checking nutritional status in children under five years of age 12-59 months.Keywords: Undernutrition, Maternal Knowledge, Income.

Abstract

Moringa leaves (Moringa oleifera) are highly nutritious. Processing into flour extends shelf life, facilitates use, but the initial treatment methods affect its nutrient content. This research investigated how different pre-processing treatments (boiling blanching, steaming blanching, and no blanching) impact the macro- and micronutrient profile of Moringa leaf powder. The study was carried out from June to September 2023 using a true experimental design, applying specific pre-treatments before the leaves were dried and ground into powder. The macronutrient composition was assessed using the proximate analysis method, whereas mineral levels were measured by spectrophotometric techniques carried out at the Industrial Research and Standardization Center (BARISTAND) Padang. The results indicated considerable variation in nutritional content based on treatment type. Boiling blanching: carbohydrates 6.24%, protein 51.32%, fat 23.54%, moisture 12.68%, ash 5.11%, iron 55.16 mg/kg, calcium 9715.61 mg/kg, zinc 21.33 mg/kg.Steaming blanching: carbohydrates 16.35%, protein 47.93%, fat 44.29%, moisture 8.56%, ash 6.96%, iron 50.80 mg/kg, calcium 9453.80 mg/kg, zinc 22.70 mg/kg. No blanching: carbohydrates 26.41%, protein 47.40%, fat 48.75%, moisture 9.37%, ash 8.44%, iron 56.64 mg/kg, calcium 14905.11 mg/kg, zinc 26.62 mg/kg. In conclusion, Pre-treatment methods strongly affect the nutritional value of Moringa leaf powder.Therefore,selecting the right method is essential to optimize its use in food processing and community nutrition programs.

Abstract

Aloe vera gel (AVG) chicken nuggets are an alternative food that is very suitable for consumption by school-aged children. These foods contain protein and antioxidants. So that what is consumed is safe and of good quality, it is necessary to measure its shelf life using the total plate count (TPC) parameters and consumer acceptance of the product. This type of research is quasi-experimental for testing shelf life and pre-experimental for testing the acceptability of chicken nuggets among schoolchildren. The shelf life estimation method is ASLT (Accelerated Shelf Life Test). This research was carried out at the Padang Food Ingredient and Baristand Science Laboratory from May to October 2022. Acceptability tests were carried out at the domicile of the selected samples. The parameter used in storing AVG chicken nuggets is ALT. Data analysis was carried out on acceptability using the Wilcoxon test. The research results showed that the storage temperature with the longest shelf life was -200 °C, with a shelf life of 26,65 weeks. The average acceptance of the product by schoolchildren is 99,5%. This research concluded that the lower the temperature, the longer the shelf life of AVG chicken nuggets. School-age children well receive AVG chicken nuggets. Suggestions for storing ground and frozen meat products pay attention to temperature because temperature greatly influences the amount of TPC contamination.
