Abstract

The quality of a yogurt highly depends on the milk’s quality, the culture, and the incubation temperature. However, many home yogurt makers do not have access to fresh milk and incubator which may lead to subpar-quality yogurt. This research explored the potential of using Saccharomyces cerevisiae to improve yogurt quality when fermentation conditions are suboptimal. The experiment was conducted by inoculating ultra-high temperature (UHT)--sterilized milk with a 10% yogurt starter containing Lactobacillus delbrueckii subsp. bulgaricus and Streptococcus thermophilus, also various S. cerevisiae concentrations (0; 0.156; 0.625; 2.5; and 10%). The inoculated milk was fermented at 30 °C for 24 hours. Their sensory qualities were examined by the panelists. Their acidity, pH, and microorganism count were examined before and after incubation. S. cerevisiae addition at 2.5% displayed better taste and texture without discernable unpleasant aroma. These improvements might be due to the ethanol production by S. cerevisiae. S. cerevisiae addition was also found to slightly inhibit the growth of L. delbrueckii subsp. bulgaricus and S. thermophilus. However, the combined number of these probiotic microorganisms (2.7 × 108 CFU/mL) was still by the national standard.  S. cerevisiae addition potentially improves yogurt quality made from UHT milk incubated at lower temperatures.

Abstract

Tanaman Genjer (Limnocharis flava) adalah salah satu jenis gulma yang memiliki fungsi ganda sebagai bahan pangan nutraseutikan dan agen fitoremediasi. Pemanfaatan Genjer sebagai bahan pangan didasarkan pada kandungan metabolit sekunder yang terdapat didalamnya, seperti flavonoid, fenol, serta antioksidan yang berpotensi untuk dikembangkan sebagai bahan pangan fungsional serta obat tradisional. Selain itu, kemampuan tanaman Genjer sebagai agen fitoremediasi dalam menyerap senyawa pencemar seeperti logam berat, menjadikannya efektif dalam pengelolaan limbah cair. Tujuan review artikel ini dibuat untuk mengeksplorasi keunggulan dan tantangan dalam pengaplikasiannya. Metode penelitian ini yaitu literature review dengan menentukan topik yang dikaji, mengumpulkan artikel – artike, evaluasi, dan interpretasi hasil. Artikel yang digunakan merupakan artikel penelitian dari tahun 2015-2024 dan berasal dari google scholar. Hasil review menunjukkan bahwa tanaman Genjer tidak hanya berperan dalam kesehatan manusia melalui kandungan nutrisinya. Tapi juga mendukung keberlanjutan lingkungan dengan kemampuan sebagai agen fitoremediasi. Dengan pemahaman yang lebih lanjut, tanaman Genjer dapat dioptimalkan sebagai solusi yang inovatif dalam bidang pangan serta lingkungan.

Abstract

Currently, the public is interested in polyherbal-based foods and beverages as a source of natural antioxidants. The aim of the study is to evaluate the antioxidant properties and the phenolic and flavonoid compounds of formulations containing Z. officinale, C. citratus, and P. reticulatus (ZCP). Each sample was extracted using the maceration process in an ethanol solvent at room temperature for three 72-hour periods. There were fourteenth formulation of Z. officinale rhizome, C. citratus leaves, and P. reticulatus fruit which used Design of Expert (DoE). The DPPH method was used to determine the power of antioxidants. The flavonoid content of the extract was measured using the colorimetric method and AlCl3 reagent, while phenolics content using Folin-Ciocalteu. The formulations ZCP 1:0:0, 0:0:1, and 1:1:1 showed the antioxidant capacity in a strong categorization, with an IC50 value less than 50 µg/ml, while ZCP 0:1:0 was in a weak categorization (IC50 > 250 µg/ml). Another ZCP formulation was in a medium category. The ZCP 1:1:1 formulation was suggested as the best one for this investigation, which contains three plant samples. This formulation is interesting for further toxicity studies and in vivo testing so that it can be applied as an antioxidant-rich supplement product.

Dengan pemahaman yang lebih lanjut, tanaman Genjer dapat dioptimalkan sebagai solusi yang inovatif dalam bidang pangan serta lingkungan.

Abstract

Jahe (Zingiber officinale) merupakan tanaman rempah yang banyak tumbuh di Indonesia dan diketahui memiliki potensi sebagai agen antibakteri. Penelitian ini bertujuan untuk membandingkan aktivitas antibakteri minyak atsiri dari tiga varietas jahe yaitu jahe gajah (Z. officinale var. Roscoe), jahe merah (Z. officinale var Rubrum), dan jahe emprit (Z. officinale var Amarum)  terhadap bakteri Bacillus subtilis dan Pseudomonas aeruginosa. Ekstraksi minyak atsiri menggunakan teknik sohkletasi dengan pelarut etanol. Uji aktivitas antibakteri menggunakan metode difusi cakram. Rendemen minyak atsiri tertinggi Z. officinale var Rubrum 23,45 ± 3,32 %, diikuti Z. officinale var Amarum 19,90 ± 2,17 % dan terendah Z. officinale var. Roscoe 15,70 ± 2,42 %. Pada semua konsentrasi uji, kemampuan minyak atsiri jahe dalam menghambat pertumbuhan Baccillus subtilis lebih kecil secara signifikan dibandingkan tetrasiklin dalam tetapi lebih besar pada P. aeruginosa. Hasil uji antibakteri minyak atsiri semua tiga varietas jahe pada konsentrasi 62,6 – 1000 µg/mL terbukti menghambat pertumbuhan kedua bakteru uji dalam kategori kuat yaitu diamter daya hambat > 20 mm. Kekuatan aktivitas antibakteri minyak atsiti terhadap B. Subtilis lebih rendah dari antibiotika standar tetrasiklin, sedangkan terhadap P. aeruginosa lebih kuat. Minyak atsiri ketiga variets berpotensi untuk dijadikan sebagai agen antibakteri terhadap strain gram negatif dan gram positif.  Ginger (Zingiber officinale) is a spice plant that grows widely in Indonesia and is known to have potential as an antibacterial agent. This study aims to compare the antibacterial activity of essential oils from three varieties of ginger, namely elephant ginger (Z. officinale var. Roscoe), red ginger (Z. officinale var Rubrum), and emprit ginger (Z. officinale var Amarum) against Bacillus subtilis and Pseudomonas aeruginosa bacteria. Essential oil extraction was performed using the Soxhlet extraction technique with ethanol as the solvent. Antibacterial activity was tested using the disk diffusion method. The highest essential oil yield was obtained from Z. officinale var. Rubrum at 23.45 ± 3.32%, followed by Z. officinale var. Amarum at 19.90 ± 2.17% and the lowest from Z. officinale var. Roscoe at 15.70 ± 2.42%. At all test concentrations, the ability of ginger essential oil to inhibit the growth of Bacillus subtilis was significantly lower than that of tetracycline, but higher than that of P. aeruginosa. The antibacterial test results of essential oils from all three ginger varieties at concentrations of 62.6–1000 µg/mL proved to inhibit the growth of both test bacteria in the strong category, namely with an inhibition diameter > 20 mm. The strength of the antibacterial activity of essential oils against B. subtilis was lower than the standard antibiotic tetracycline, while against P. aeruginosa it was stronger. The essential oils of the three varieties have the potential to be used as antibacterial agents against gram-negative and gram-positive strains.

Abstract

Kandungan berbagai senyawa dalam tumbuhan dapat bersifat sinergis atau antagonis dalam memberikan efek antibakteri. Studi ini mengevaluasi aktivitas antibakteri Zingiber officinale, Cymbopogon citratus, dan Phyllanthus reticulatus (ZCP) terhadap bakteri Escherichia coli dan Staphylococcus aureus, serta pola senyawa fenolik dan flavonoid yang terkait dengan aktivitas tersebut. Ekstrak disiapkan melalui maserasi menggunakan etanol 96% dan disusun menggunakan pendekatan Design of Experiment. Aktivitas antibakteri diukur menggunakan metode Kirby-Bauer, sementara kadar senyawa fenolik dan flavonoid diukur menggunakan Kromatografi Cair Kinerja Tinggi (KCKT). Semua komposisi ZCP menunjukkan aktivitas antibakteri sedang berdasarkan diameter zona penghambatan. Beberapa komposisi, termasuk ekstrak tunggal Zingiber officinale, Cymbopogon citratus, dan Phyllanthus reticulatus, serta ZCP 1:1:0 dan ZCP 4:1:1, menunjukkan aktivitas antibakteri terhadap E. coli yang secara statistik sebanding dengan tetracycline, sedangkan terhadap S. aureus, semua komposisi menunjukkan aktivitas yang lebih rendah. Aktivitas yang lebih tinggi terkait dengan pola spesifik senyawa fenolik flavonoid asam galat, rutin, katekin, dan naringenin. Studi lebih lanjut diperlukan untuk mengoptimalkan formulasi dan mengeksplorasi lebih lanjut interaksi senyawa bioaktif guna mengembangkan fitofarmaka yang lebih efektif.

Abstract

The improper use of synthetic larvicides results in detrimental environmental impacts. To mitigate these effects, biolarvicides serve as a viable alternative. Plants within the Asteraceae family contain bioactive compounds with potential biolarvicidal properties. This research aimed to explore the potential of Asteraceae species as biolarvicides. This research utilizes Artemisia vulgaris, Cosmos caudatus, Eclipta prostrata, and Tagetes erecta. Extraction was conducted by the maceration method using 96% ethanol. The resulting extracts were analyzed for secondary metabolite content. Data were analyzed using SAS 9.0 software Two-way ANOVA, followed by Tukey’s post-hoc test. Larvicidal bioassays were performed on third-instar Aedes aegypti larvae at concentrations of 1,000-10,000 ppm. The parameters measured included mortality percentage, LC50, and LC90. Morphological changes in dead larvae were observed and compared against a control group. The results indicated that secondary metabolite in the leaf ethanolic extracts were higher than those in the stems and roots. The leaf ethanolic extract of C. caudatus exhibited the highest content of flavonoids (928.3±368.7 mg/g), phenolics (310.2±84.9 mg/g), tannins (187.1± 55.5 mg/g), and saponins (314±95.4 mg/g extract). Conversely, the highest alkaloid content was recorded in the leaf extract of T. erecta (27.8±7.1 mg/g). The highest mortality rate was observed in larvae exposed to A. vulgaris leaf extract, reaching 100% mortality across all concentrations within 24 hours. Consequently, LC50 and LC90 values for A. vulgaris could not be determined. For C. caudatus, the LC50 values were 7204.7 ppm (24 h) and 6839.7 ppm (48 h), while LC90 values were 9077.3 ppm (24 h) 8226.4 ppm (48 h), respectively. E. prostrata yielded an LC50 of 10255.6 ppm and an LC90 of 18048.9 ppm at 24 hours; however, these values were not detectable at 48 hours. T. erecta showed an LC50 of 6569.6 ppm (24 h) and 6397.1 ppm (48 h), with LC50 values of 9682.1 ppm and 9343.3 ppm, respectively. Morphological observations of dead larvae exposed the extracts alterations, including pigmentation, elongation, and shrinkage. While the leaf ethanolic extract of C. caudatus contained the highest concentration of secondary metabolites. The leaf ethanolic extract of A. vulgaris demonstrated the greatest potential as a biolarvicide.

Abstract

Aplikasi nanoteknologi, di dunia pertanian maupun kesehatan, kini semakin marak untuk dikembangkan. Vanilla planifolia atau tanaman vanili, yang merupakan penghasil senyawa vanilin, memiliki potensi pengaplikasian nanoteknologi. Peningkatan pertumbuhan tanaman dengan menggunakan teknologi nanofertilizer dan peningkatan senyawa metabolit sekunder vanilin dengan menggunakan teknologi nanoelisitor dapat memberikan hasil maksimal bagi panen tanaman vanili. Disisi lain, vanilin yang merupakan senyawa aktif pada tanaman vanili juga memiliki khasiat sebagai obat dan bahkan dapat dimanfaatkan dalam bidang kecantikan. Penelitian ini bertujuan untuk menggali peran nanoteknologi yang memiliki potensi pengaplikasiannya pada tanaman vanili, baik pada budidaya tanaman maupun pada pemanfaatan senyawa vanilin dalam bidang kesehatan dan kecantikan. Dari hasil yang didapatkan, nanoteknologi dalam bentuk nanofertilizer memiliki potensi besar dalam meningkatkan pertumbuhan tanaman vanili serta dapat membantu tanaman dalam menghadapi cekaman biotik dan abiotik yang mengganggu pertumbuhannya. Nanoteknologi juga dapat diaplikasikan pada senyawa vanilin, dimana vanilin dalam bentuk nanopartikel berperan sebagai anti-inflamasi, anti-kanker, anti-oksidan, serta berperan sebagai senyawa pengikat alami yang mendukung penyembuhan luka. Kemampuan tersebut dapat dimanfaatkan sebagai nanoteknologi dalam bidang kesehatan serta bidang kecantikan  Applications of nanotechnology, in the agriculture and health sector, are now increasingly being developed. Vanilla planifolia or vanilla plants, which are producers of vanillin compounds, have the potential for nanotechnology applications. Increasing plant growth using nanofertilizer technology and increasing vanillin secondary metabolite compounds using nanoelicitor technology can provide maximum yield for vanilla plant. On the other hand, vanillin, which is the active compound in the vanilla plant, also has medicinal properties and can even be used in the field of beauty. This research aims to explore the role of nanotechnology that has the potential for application in vanilla plants, both in plant cultivation and in the use of vanillin compounds in the field of health and beauty. From the results obtained, nanotechnology in the form of nanofertilizer has great potential in increasing the growth of vanilla plants and can help plants in dealing with biotic and abiotic stress that interferes with their growth. Nanotechnology can also be applied to vanillin compounds, where vanillin in the form of nanoparticles acts as an anti-inflammatory, anti-cancer, anti-oxidant, and also acts as a natural binding compound that supports wound healing. This ability can be used as nanotechnology in the health and beauty fields

Abstract. Kasmiyati S, Kristiani EBE, Herawati MM, Rondonuwu FS. 2021. Exploring anticancer activity of wild and polyploid mutant of Artemisia cina.  Biodiversitas 22: 1227-1234. The research aims were to explore the anticancer compounds in wild type (W) and polyploid mutant (P) of Artemisia cina Berg ex Poljakov using NIR and compare their cytotoxicity and selectivity on WiDR colon cancer and HTB183 lung cancer cell lines and Vero normal cell line. The W was obtained from B2P2TOOT Tawangmangu, Indonesia while P was by inducing A. cina shoot culture with 100 mg/l colchicine for 48 hours. They were extracted with hexane using the soxhletation method for 6 hours. The anticancer compounds were detected using NIR. The cytotoxic activity was determined using MTT assay, with Doxorubicin (D) as a control. The calculation of IC50 value used SPSS16 with a Probit analysis. The P contained the determined four compounds while the W contained no rutin. The IC50 values of W, P, and D were 295.5, 84.1, and 0.5 µg/mL on WiDr, 322.4, 128.6, and 39.9 µg/mL on HTB 183, whereas on Vero were 104, 315.6, and 295.5 µg/mL respectively. The selectivity indexes of W, P, and D were 34, 4, and 91 on WiDr, while HTB 183 was 31, 3, and 7, respectively. The P contained artemisinin, quercetin, kaemferol, and rutin, while the W contained no rutin. The cytotoxicity of both plants was less than doxorubicin. Both plants were selective on WiDR and HTB 183.
