Abstract

Latar belakang: Penatalaksanaan penderita Diabetes Melitus (DM) salah satunya yaitu terapi gizi. Pangan fungsional  yang dapat dijadikan pelaksanaan terapi gizi bagi penderita DM  adalah  kacang merah dan buah sukun. Kedua bahan tersebut dikombinasikan untuk dikembangkan menjadi makanan selingan yaitu snack bar yang, tinggi protein, rendah lemak dan tinggi serat. Tujuan: Dihasilkan formula/resep produk pangan fungsional diabetisi snack bar yang diterima secara fisik, organoleptik, proksimat, kadar serat pangan, dan kadar pati resisten. Metode: Penelitian ini menggunakan metode eksperimental semu dan dilaksanakan di Laboratorium Ilmu Bahan Makanan dan Uji Cita Rasa Jurusan Gizi Poltekkes. Peneliti memberikan perlakuan dengan membuat 4 variasi pencampuran tepung kacang merah  dan tepung sukun  yang terdiri dari; A (kontrol ), B (75% : 25%), C (50% : 50%), dan D (25% : 75%) pada snack bar.  Setelah itu, dampak yang akan diamati dan diukur serta hasilnya dianalisis, meliputi sifat fisik, organoleptik, uji proksimat, kadar serat pangan dan kadar pati resisten pada snack bar. Hasil: Berdasarkan hasil uji statistik menggunakan uji ANOVA didapatkan hasil bahwa, adanya perbedaan yang signifikan (p<0,05) antara kadar air:0,000, abu: 0,016, protein: 0,000, karbohidrat: 0,000, serat pangan: 0,001, energi: 0,000 dan pati resisten: 0,002 pada snack bar pencampuran t epung kacang merah dan tepung sukun. Kesimpulan: Formula produk yang direkomendasikan adalah B snack bar (tepung kacang merah 75% : tepung sukun 25%).

Abstract

Background: The global increase in ultra-processed food (UPF) consumption has raised significant public health concerns due to its association with cardiovascular disease (CVD). UPFs are typically high in sodium, saturated fats, added sugars, and artificial additives, which contribute to metabolic disturbances and increase CVD risk. This scoping review aims to synthesize the current evidence on the relationship between UPF consumption and CVD risk in adults. Methods: A systematic search was conducted using PubMed and Google Scholar for studies published between 2019 and 2024. Eligible studies included observational research assessing UPF consumption and its impact on cardiovascular health. A total of 172 articles were initially identified, and after applying inclusion criteria, nine relevant studies were selected for review. Results: The findings consistently indicate that high UPF consumption is linked to an increased risk of hypertension, obesity, dyslipidemia, and elevated triglyceride levels—key contributors to CVD. Several studies also highlight a significant association between frequent UPF intake and higher rates of cardiovascular mortality, particularly among high-risk populations. Conversely, diets rich in minimally processed foods, such as whole grains, fruits, and vegetables, demonstrate protective effects against CVD. Conclusions: There is a strong positive correlation between UPF consumption and heightened CVD risk. Public health interventions should focus on reducing UPF intake while promoting healthier dietary patterns to mitigate cardiovascular disease burden. Further longitudinal studies are needed to explore the long-term effects of UPF consumption on cardiovascular health

Abstract

Background: The increasing consumption of sugar-sweetened beverages (SSBs) has become a major public health concern due to its link with metabolic diseases, particularly Type 2 Diabetes Mellitus (T2DM).  Understanding the relationship between SSB consumption and the risk and progression of T2DM, particularly in adult populations, is crucial for developing targeted interventions. This scoping review aims to summarize observational studies that investigate the association between SSB consumption and T2DM risk and progression in adult populations. Methods: This scoping review included nine studies published between 2017 and 2023. The inclusion criteria were studies that involved adult populations (≥18 years) and explored the relationship between SSB consumption and T2DM. Databases such as PubMed and Google Scholar were searched using keywords like ‘sugar-sweetened beverages,’ ‘type 2 diabetes,’ and ‘adult,’ and ‘progression.’ Results: The studies reviewed consistently showed a positive association between frequent SSB consumption and the risk of developing T2DM. Overall, the evidence supports that SSBs contribute significantly to the incidence and progression of T2DM, often through weight gain and increased insulin resistance. Conclusion: This review shows the strong association between SSBs and T2DM, urgent public health interventions are needed to regulate consumption, particularly among high-risk groups.  Future research was needed to examine the long-term impact of SSB on diabetes.

Abstract

Kelompok Wanita Tani (KWT) merupakan wadah pembinaan bagi wanita yang dikembangkan pemerintah dalam proses transfer teknologi pertanian. Desa Trimulyo, Kapanewon Jetis, Kabupaten Bantul memiliki perkumpulan kelompok wanita tani. Namun keberadaan kelompok wanita tani di tengah-tengah kaum perempuan di pedesaan cenderung belum optimal.  Hal ini seperti terlihat dalam kegiatan yang dilaksanakan belum dapat mandiri dan cenderung pasif keberadaannya di masyarakat. Tujuan kegiatan pengabdian masyarakat ini yaitu untuk mendampingi meningkatkan keterampilan kelompok wanita tani dalam memanfaatkan lahan kebun desa untuk meningkatkan produksi bahan pangan sayur mayur yang berkualitas, berkuantitas dan beragam.  Berdasarkan hasil kegiatan, pendampingan kelompok wanita tani (KWT) ini  ini telah berhasil menggerakan kegiatan peningkatan produksi sayur mayur untuk ketahanan pangan  rumah tangga khususnya di RT 02 dan RW 05 Dusun Ponggok II Trimulyo Jetis Bantul. Selama enam bulan kegiatan budidaya sayur mayur bisa panen beberapa kali sesuai dengan jenis tanamannya.  Jenis tanaman yang ditanam di kebun kelompok wanita tani adalah cabe rawit, terong ungu, terong biasa, sawi hijau, dan papaya. Rata-rata hasil panen sayur mayur tiap bulan kurang lebih Rp. 315.000,-. Sehingga selama enam bulan dengn enam kali panen menghasilkan Rp. 1.890.000,-.

Abstract

Background: Obesity is an increasingly complex and common global health problem, especially among adults. The aim of this scoping review is to examine the relationship between sleep duration and obesity in adults.  Methods: A scoping review was conducted following the Joanna Briggs Institute (JBI) methodology guideline. Databases including PUBMED, ScienceDirect, DOAJ, and ResearchGate were searched in 2024 with the keywords "obesity AND sleep AND adults". Articles published between 2019 and 2023 that focused on observational studies. Results: Of the 2960 articles found, 7 articles met the inclusion criteria. A cross-sectional research design was used by 86% of the studies, while only 14% were enrolled in cohort studies. The majority of studies showed a significant correlation between short-term and long-term sleep duration and the likelihood of becoming obese. The assessment tools used were extensive and included interviews, questionnaires, and sleep monitors such as the Actiwatch Spectrum. The obesity assessment indicators used are Body Mass Index (BMI) and waistline. Conclusions: The review suggests that adults whose sleep is too short or too long are more likely to be obese. Lack of sleep can trigger hormonal changes, stimulate appetite, and result in obesity.

Abstract

Background: Adolescents in Indonesia face the triple burden of malnutrition due to low nutritional literacy. This study evaluates the impact of Learning Cards (in bahasa: Kartu Belajar or Kejar) in improving anthropometric knowledge and skills among adolescents. Methods: This was a pre-experimental, single-group pre-test post-test design was conducted in Giripanggung Village, Tepus, Gunung Kidul, Yogyakarta, Indonesia in 2023. Fifty adolescents, aged 11-19 years, participated in a three-day offline training covering weight, height, and mid-upper arm circumference measurements. Data were collected at three points (pre-test, post-test 1, and post-test 2) and analyzed using tests. Results: Adolescents' knowledge significantly improved from a pre-test mean score of 54.7 ± 11.8 to 79.7 ± 11.9 in post-test 1 (p < 0.05). While post-test 2 showed a slight decline (77.6 ± 12.5), knowledge remained significantly higher than baseline (p < 0.05). Anthropometric skills also increased substantially, with weight measurement scores rising from 51.3 ± 21.5 (pre-test) to 85.3 ± 13.7 (post-test 1, p < 0.05). Although post-test 2 showed a decline (75.2 ± 15.4), the scores remained higher than the pre-test (p < 0.05). Conclusions: Training using Kejar effectively enhances adolescents' knowledge and skills in anthropometry. These findings suggest that expanding the use of Kejar media to other communities could Improve adolescent nutrition literacy at a national level.

Abstract

Kegiatan gizi mengabdi kepada ibu-ibu PAUD ini dilatarbelakangi oleh sebagian dari ibu PAUD Cahaya Pelangi Bayumeneng RT 10 RW 04, Gamping, Sleman masih ada yang belum tahu tentang Stunting dan Obesitas . Pengetahuan terkait Stunting dan obesitas ini sangatlah penting bagi orangtua dikarenakan dapat dijadikan tonggak untuk memperbaiki atau mempertahankan status gizi anak. Oleh karena itu, pengabdian ini menggunakan metode pemberdayaan masyarakat. Metode ini telah dilakukan dengan teknik ceramah yang dimana materinya dijelaskan oleh narasumber dengan melibatkan para ibu-ibu balita. Tidak hanya menggunakan teknik ceramah, penyuluhan yang telah dilakukan juga mengadakan Pre-test dan Post-test untuk mengetahui persentase mengenai tingkat pengetahuan ibu tentang stunting dan obesitas yang sudah diketahui. Penyuluhan ini di awali dengan pemberian link Pretest , ceramah pemaparan materi dan diselingi dengan pertanyaan langsung dari peserta kepada pemateri, setelah itu adanya diskusi tanya jawab antara peserta dan pemateri, lalu diberikan link Post-Test untuk peserta. Target yang ingin dicapai dalam penelitian ini adalah peningkatan terhadap pemahaman pengetahuan Stunting dan Obesitas bagi ibu-ibu balita. Target tersebut telah tercapai yang dapat dilihat dari persentase hasil pre-test dan hasil dari post-test.

Abstract

The aims of the research were to determine the best formula and characteristics of free gluten with high protein sago starch noodles substituted with beans flour. A factorial random design was used for the experiment. Ratio of sago starch to red and green bean substitution were 100:0; 90:10; 80:20; 70:30. Variables analyzed were 1) chemical properties (water content, total fat, total protein, carbohydrate by difference and ash content) and 2) sensory properties. Hedonic test was conducted to determine the level of consumer acceptance of 15 semi-trained panelists. Data were analyzed by F-test and Duncan’s Multiple Range Test (DMRT). The best formula was sago starch noodle from sago starch 70% and red bean 30% with protein content 10.47% dry weight (dw); fat content 1.17% dw; water content 68.99% wet weight (ww); ash was 1.19% dw and carbohydrate by different was 18.18% dw. The hedonic test values were 2.44 (like slightly); color 2.77 (yellow-brown), texture 2.59 (chewy slightly) and flavour 2.50 (rather good).Keywords: green bean, red bean, sago starch noodle
