Abstract

Butterfly pea (Clitoria ternatea L.) is an indigenous Indonesian flower that is usually consumed as a natural ingredient in herbal drinks and nutraceutical products. It contains several bioactive compounds that showed strong antioxidant activity to neutralize free radical compounds from foods. The aim of this study was to identify the bioactive compounds, antioxidant capacity and the organoleptic characteristics in the brewed of dried butterfly pea. The experimental design of this study used a completely randomized design with two factors: 1) dried butterfly pea content in water : 0,5; 1,0; dan 1,5 (g/200 ml) and 2) brewing levels (1, 2, and 3 times). The phytochemical screening analysis revealed that the brewed butterfly pea contained bioactive compounds such as flavonoids, tannins, saponins, steroids, and triterpenoids. The longer dried butterfly peas soak in water showed the higher level of total anthocyanin content, total phenolic compounds, and antioxidant activity. Organoleptic analysis showed significantly effect of the colour but not the odour or flavour of the brewed dry butterfly pea.

Abstract

Biji ketapang mempunyaicita rasa yang enak dan komposisi kimia yang mirip dengan kacang tanah. Oleh karena itu biji ketapang mempunyai potensi yang sangat besar untuk dibuat menjadi produk pangan baru. Salah satu produk pangan tersebut adalah mentega ketapang (Catapa butter). Berdasarkan hal tersebut maka perlu dilakukan penelitian yang bertujuan untukmengevaluasi sifat kmiawi mentega ketapang yang dibuat pada berbagai : (1) lama penyangraian (2) lama perendaman  (3) lama penyangraian dan perendaman.Rancangan yang digunakan dalam peneltian ini adalah Rancangan Acak Lengkap. Faktor yang dicoba adalah lama penyangraian (4 ; 8 ; dan 12 menit) dan lama prendaman (0 dan 12 jam). Perlakuan disusun secara faktorial sehingga diperoleh 6 kombinasi perlakuan. Percobaan diulang 4 kali dengan 24 unit percobaan. Variabel yang diamati adalah kadar air, abu, serat kasar, lemak dan protein. Data hasil pengamatan dianalisis menggunakan Uji F. Jika terdapat perbedaan nyata antar perlakuan maka dilanjutkan dengan Uji Rentang Jamak Duncan (DMRT) untuk menentukan perlakuan terbaik. Perlakuan terbaik kemudian dibandingakn dengan selai kacang tanah non komersial. Hasil penelitian menunjukkan lama penyangraian berpengaruh nyata terhadap kadar air dan abu sedangkan perendaman berpengaruh nyata terhadap kadar air, abu dan protein. Kombinasi keduanya memberikan pengaruh yang nyata hanya terhadap kadar protein. Penyangraian 8 menit menghasilkan mentega ketapang dengan kadar air 2,8% dan abu 2,6% sedangkan perendaman 0 jam menghasilkan mentega ketapang dengan kadar air 2,5%, abu 2,7% dan protein 26,5%. Kombinasi kedua perlakuan berpengaruh terhadap kadar air, abu dan protein mentega ketapang. Dibandingkan dengan SNI selai kacang tanah, mentega ketapang mempunyai karakter kimiawi yang mirip kecuali pada kadar abu yang cenderung lebih tinggi yaitu sebesar 2,7%.  Penyangraian 8 menit dan perendaman 0 jam menghasilkan mentega ketapang dengan kadar air 2,7%, abu 2,5%, serat kasar 1,8%, lemak 50,6% dan protein 27,6%.

Abstract

Cassava is one of the abundant tubers in Limpakuwus Village. In its development, to increase its selling value, cassava can be processed into mocaf flour (modified cassava flour). In previous community service, the local community had received training related to making mocaf flour. Therefore, further training was conducted to process mocaf flour into bakery products. One of them was making mocaf brownies because they were considered simple and easy. The purpose of this service was to enhance the skills of PKK mothers in processing mocaf flour into mocaf brownies and provide motivation for forming small business groups and promoting entrepreneurship. The implementation method began with identifying problems and potential in the village, followed by coordination and planning of activities, and the implementation of training and evaluation. Based on the results of the service carried out for PKK mothers in Limpakuwus Village, it showed that participants were able to process mocaf flour into mocaf brownies and had a positive impact.

Abstract

Peanuts are one type of nuts that are quite a lot in Indonesia. Peanuts processing in Indonesia is still very limited. It is necessary to diversify the processing of peanuts into other food products. One of the efforts to diversify the peanuts process is to process them into flour. Peanuts have a weakness, namely, peanuts contain compounds of anti-nutritional substances which are mostly dominated by phytic acid and the presence of an unpleasant odor. This weakness can be overcome by the fermentation process. tempe is one of the processed products fermented in beans. The purpose of this study was to determine the functional characteristics of fermented peanut flour with variation in yeast concentration and fermentation time; and the best combination of the treatments. This study used a completely randomized design (CRD). The factors tested were the concentration of tempe yeast (3, 5 and 7%) and length of fermentation (24, 28, 32 dan 36 hours). The result of the study showed that all treatments had a significant effect on the functional characteristics of fermented peanut flour. The result shows that fermentation treatment with variations used increase the levels of water absorption capacity, solubility in water, total phenol, and antioxidant activity; but decrease the levels of oil absorption capacity and emulsion capacity. Fermented peanut flour with the best functional properties was obtained at 7% yeast concentration and 36 hours of fermentation (R3F4) treatments.
