Abstract

Malnutrition is a nutritional problem that is still quite a lot in Indonesia and still really needs to be addressed so it doesn't have negative impacts that are detrimental to both the toddlers themselves or their families and the country. The prevalence of malnutrition in Indonesia is still high and needs to be addressed and prevented so that the number does not increase. One of the factors that can cause a toddler to be malnourished is the mother's lack of knowledge regarding well balanced nutrition to give to toddlers. Therefore, in this service, balanced nutrition socialization is carried out for mothers of toddlers in an effort to prevent malnutrition in toddlers. This community service activity was carried out at the Rugun Midwife Independent Work Practice Clinic on May 10-16 2023. This community service activity was carried out in the form of socialization and was carried out in several stages, namely planning, education and final evaluation. The results of this activity show that mothers under five are very enthusiastic in participating in activities and listening to what is conveyed by the speakers. This is also shown by the results of the pre-test and post-test which show that the mother's knowledge after being given socialization increases in a better direction. It is necessary to carry out further analysis related to changes in attitudes and behavior of mothers under five in an effort to prevent malnutrition in toddlers at the Rugun Midwife Independent Work Practice Clinic.

Abstract

Degenerative diseases become dangerous killer diseases if not treated properly. Diabetes mellitus (DM) is a non-communicable disease which can be a complication that causes other dangerous diseases. The incidence of DM is still worrying as a contributor to killer diseases and in North Sumatra the incidence continues to increase every year. Based on the existing number of DM sufferers, 25% of sufferers know that they are DM sufferers, the rest do not know yet and this remaining number has a big risk of causing bodily health problems and a risk of complications from other, more dangerous diseases. Consuming foods high in simple carbohydrates, high in sugar, subjected to a lot of processing and low in complex nutrients and fiber can cause disturbances in the function of the insulin hormone, leading to the emergence of DM. In an effort to treat and increase public knowledge regarding DM disease and control the condition of DM sufferers, this is through the implementation of the 3J diet (right schedule, right amount and right type). This educational service activity was carried out in Bandar Kupa, Percut Sei Tuan District, Deli Serdang district on 5-7 June 2023. This community service activity was carried out through several stages. At the initial stage, observations were carried out, then continued with the planning stage, education, delivery of educational material and the evaluation stage of acceptance of the material that had been delivered during the service education process. The results obtained showed that in terms of participant attendance, there was community enthusiasm in participating in the education provided. The results of the educational evaluation, increasing the knowledge of the community of education participants, decreased with the level of knowledge from less than 48% to 12%, there was an increase in sufficient knowledge before education by 32%, increasing to 68% and the level of good knowledge did not increase, namely at a percentage of 20%.

Abstract

Dirty hands will be a source of disease. Soap is a pharmaceutical preparation used to maintain health. Celery (Apium graveolens L.) is a plant of the Apiaceae tribe with a distinctive menthol aroma. This study aimed to determine the inhibitory power of celery leaf extract formulation (Apium graveolens L.) as an antibacterial hand-washing soap. This research method is a type of experimental research. The stages of the research were collecting samples, identifying plants, making simplicia, characterizing simplicia, screening phytochemicals, making extracts and making hand soap formulations of celery leaf extract (Apium graveolens L) at concentrations of 5%, 10%, 15% and antibacterial testing of celery leaves, against Escherichia coli bacteria. The results showed the celery leaf extract soap formulation contained phytochemical compounds of flavonoids, tannins and saponins. The organoleptic test found that the best soap formulation was the F2 formulation with a concentration of 10% at an average level of preference value, namely 3.67 for colour, 3.27 for aroma, and 3.80 for texture. The homogeneity test performed showed that all formulations produced soap with good homogeneity. The height and stability test of the resulting celery extract soap foam ranged from 61-71 mm. The irritation test of the resulting celery extract soap also showed no irritation for all the formulations. The value of the antibacterial activity test found that the F1 formulation showed antibacterial activity with an inhibition zone diameter of 3 (weak), F2 with an inhibition zone of 9 (moderate) and F3 with the antibacterial activity of 12 (strong).

Abstract

Degenerative disease refers to metabolic syndrome which occurs as a result of an unhealthy lifestyle. An unhealthy diet results in the emergence of large amounts of free radicals. High free radical content can disrupt cells and their genetic material which can result in degenerative diseases. Antioxidants are compounds that function to protect body cells from damage caused by free radicals that cause degenerative diseases. Soybean juice added with tamarillo is a food ingredient that is a source of antioxidants. The aim of the research was to obtain the best Dutch eggplant formula added to soy milk. The research method used was a Completely Randomized Design (CRD) which involved four additional treatments of Dutch eggplant, namely P1 (50 mL), P2 (55 mL), P3 (60 mL) and P4 (65 mL). Research activities were initially carried out by testing the organoleptic products using the hedonic method by 70 untrained panelists. Product testing is carried out using Then the best product testing results are continued to be tested for antioxidant content. Antioxidant testing The results of the organoleptic test research obtained the highest scores for the color attribute 5.69 (P3), aroma 5.23 (P2), taste 6.09 (P1), texture 4.76 (P1), and overall 5.81 (P1). Abstract

Minimum Service Standards (MSS) are specific provisions that must be fulfilled by local governments as a concurrent obligation targeted to reach 100% every year. However, as of 2023, Bekasi City has not achieved the set targets. The MSS Service Quality Achievement Index in Bekasi City is still relatively low, with all 6 MSS falling under the "Unfinished" category. This indicates problems in MSS implementation, including issues related to policy, planning, budgeting, and execution involving policymakers, implementers, and service recipients. This study aims to map the challenges in implementing MSS in Bekasi using Soft System Methodology (SSM) analysis and provide recommendations for addressing the identified issues. This research adopts a qualitative approach with action research methodology. Data collection techniques include analyzing relevant documents to understand the problem situation and conducting SSM's seven stages of analysis. This study contributes to the literature by applying SSM to understand and enhance policy implementation at the local level, which can be adapted to similar contexts in neighboring Malaysia and Singapore. The findings serve as a reference for improving MSS implementation and enhancing public service quality. Abstract

Nutritional problems in children in Indonesia stem from what they eat, including the consumption of school snacks. Education on the nutritional content of school snacks must be provided to overcome the risk of snacks in school-age children to obtain balanced nutrition. The purpose of this study was to provide education on nutritional content and sanitation at SD Islam Ulun Nuha Medan. The design of this study used a pre-experiment with a one group pre-post-test design with a sample of 129 students from grade 5 to grade 6. Education was provided through lectures containing the concept of nutritional content and sanitation in children's snacks. Pre-test and post-test were conducted before and after the education using 10 question in questionnaire. The results of this activity show the pre-test and post-test that have been distributed before and after education, which shows that there is an increase in respondents' knowledge before and after being given education, which is 6.66 with a p-value of 0.0001. It’s shows that there is an influence of nutrition education on students' knowledge about nutritional and sanitation in snacks. The increase in knowledge can be caused by using lecture and demonstration methods with slide presentation media and examples of healthy and unhealthy snack foods. The use of the right methods and media greatly affects the results of education where the more senses are exposed, the easier it is to understand a message.

Abstract

The problem of wasting still occurs quite frequently in Indonesia so efforts are needed to overcome this so that it does not cause detrimental impacts in both the short and long term. One effort that can be made is by providing food that is high in protein originating from local food ingredients such as mocaf flour and lomek fish flour. One product that can be developed from this material was cookies. Therefore, in this research, researchers will develop a cookies product from mocaf flour with the addition of lomek fish flour. The aim of this research was to determined the organoleptic characteristics and protein content of cookies products made from mocaf flour with the addition of lomek fish flour. The research design used was a Completely Randomized Design (CRD). In this research, cookies product manufacturing, organoleptic testing, determination of the selected formula, and analysis of protein content were carried out. The organoleptic test results showed that the color, taste and texture attributes showed significantly different results (p-value<0.005) while the aroma attributes showed results that were not significantly different (p-value>0.005). The organoleptic test results show that formula 2 was preferable compared to formulas 1 and 3, especially in terms of taste attributes. Based on this, formula 2 was selected as the selected formula. Formula 2 contains 21.0 grams of protein per 100 grams of product and can be claimed as a high-protein product. This product requires further research related to organoleptic testing for the target group, complete proximate and amino acid content, and product shelf life.
