Abstract

Abstrak: Perbedaan budaya antara Indonesia dan Jepang dapat memengaruhi kebiasan dan pola makan warga diaspora Indonesia di Jepang. Berdasarkan hasil penelitian sebelumnya warga Indonesia yang berada di Jepang mengurangi tingkat konsumsi pangan bergizi karena kesulitan untuk mendapatkan bahan pangan dengan harga terjangkau. Tujuan kegiatan ini adalah untuk meningkatkan pengetahuan warga diaspora Indonesia di Sendai Jepang terkait dengan penerapan gizi seimbang dan keamanan pangan. Metode pelaksanaan kegiatan ini berupa FGD dan edukasi dengan Teknik ceramah serta diskusi tanya jawab baik secara luring dan hybrid. Peserta kegiatan adalah Warga Negara Indonesia yang berada di Sendai-Jepang yang tergabung dalam Keluarga Muslim Indonesia (KMI) Sendai sebanyak 19 orang. Monitoring dan evaluasi capaian dilakukan dengan menggunakan formulir pre-test dan post-test yang terdiri dari 10 soal pilihan ganda. Indikator keberhasilan kegiatan ini adalah terjadi peningkatan skor pengetahuan pada minimal 70% peserta. Hasil kegiatan FGD berupa penetapan materi edukasi yang diharapkan oleh peserta. Edukasi yang dilakukan berhasil meningkatkan skor pengetahuan sebanyak 94.7% peserta. Rata-rata skor pre-test adalah 48, sedangkan rata-rata skor post-test adalah 85. Diharapkan kegiatan edukasi dapat dilakukan secara rutin untuk mempertahankan dan memperdalam pengetahuan peserta, sebagai bagian dari program kerja rutin KMI Sendai.Abstract: Cultural differences between Indonesia and Japan may influence the dietary habits and eating patterns of Indonesian diaspora living in Japan. Previous research has shown that Indonesians residing in Japan tend to reduce their consumption of nutritious foods due to difficulties in accessing affordable food ingredients. The aim of this activity was to enhance the knowledge of the Indonesian diaspora community in Sendai, Japan, regarding the application of balanced nutrition and food safety practices. The methods of implementation included Focus Group Discussions (FGD) and educational sessions through lectures and interactive Q&A discussions, conducted both offline and in hybrid formats. The participants of this activity were 19 Indonesian citizens residing in Sendai, Japan, who are members of the Indonesian Muslim Family (KMI) Sendai. Monitoring and evaluation of achievements are carried out using pre-test and post-test forms consisting of 10 multiple-choice questions. The indicator of the success of this activity is an increase in knowledge scores in at least 70% of participants. Monitoring and evaluation were carried out using pre-test and post-test questionnaires. The result of the FGD was the determination of educational topics as requested by the participants. The educational sessions successfully increased the knowledge scores of 94.7% of the participants. The average pre-test score was 48, while the average post-test score was 85. It is recommended that such educational activities be conducted regularly to maintain and deepen the participants' knowledge, as part of KMI Sendai’s ongoing program initiatives.

Abstract

ABSTRAK                                                                                     Upaya penurunan angka stunting di Indonesia memerlukan kolaborasi lintas sektor serta program yang menyentuh akar permasalahan. Salah satu strategi penting adalah edukasi tentang gizi seimbang dan pemantauan penerapannya di masyarakat. Kader posyandu memiliki peran strategis dalam mendampingi masyarakat, khususnya ibu balita, untuk menerapkan prinsip-prinsip gizi seimbang dalam kehidupan sehari-hari. Kegiatan ini bertujuan untuk meningkatkan kapasitas kader posyandu dalam menjelaskan empat pilar gizi seimbang dan menaksir porsi Makanan Pendamping ASI (MPASI) balita. Mitra kegiatan ini adalah Posyandu di wilayah Kelurahan Padasuka Kecamatan Ciomas, Kabupaten Bogor, Jawa Barat.  Kegiatan dilaksanakan pada Mei 2025 dengan peserta sebanyak 20 orang ketua kader posyandu. Kegiatan dimulai dengan tahap persiapan dan koordinasi, pelaksanaan, monitoring dan evaluasi. Pelaksanaan edukasi menggunakan metode ceramah, diskusi interaktif, tanya jawab, dan simulasi praktik. Evaluasi keberhasilan kegiatan dilakukan dengan mengukur peningkatan pengetahuan peserta menggunakan formulir pre-test dan post-test yang berisi 10 pertanyaan terkait dengan materi yang disampaikan. Hasil evaluasi menunjukkan adanya peningkatan rata-rata nilai sebesar 32,3 poin, dengan nilai rata-rata pre-test sebesar 60,0 dan post-test sebesar 92,3. Hasil ini menunjukkan bahwa kegiatan edukatif yang disertai simulasi dapat meningkatkan pemahaman kader secara signifikan. Peningkatan kapasitas kader ini diharapkan berdampak positif dalam mendukung penerapan gizi seimbang dan pencegahan stunting di tingkat komunitas. Kata kunci: Kader Posyandu; MPASI; Standar Porsi; Stunting ABSTRACTEfforts to reduce stunting in Indonesia require cross-sectoral collaboration, including community-based nutrition education. Posyandu cadres play a strategic role in assisting mothers of toddlers to apply the principles of balanced nutrition, particularly in fulfilling complementary feeding (MP-ASI). This community service program aimed to strengthen the capacity of posyandu cadres in explaining the four pillars of balanced nutrition and in estimating appropriate MP-ASI portions for toddlers. The program was conducted in May 2025 in collaboration with Posyandu at Padasuka Village, Ciomas District, Bogor Regency, West Java, with 20 head cadres as participants. Educational activities were delivered through lectures, interactive discussions, and practical simulations. Knowledge evaluation was carried out using pre-test and post-test instruments. The results showed an average score increase of 32.3 points, from 60.0 to 92.3 (equivalent to a 53.8% improvement). These findings indicate that practice-based education significantly improved cadres’ understanding. Enhanced cadre capacity is expected to support the application of balanced nutrition principles and contribute to stunting prevention at the community level. Furthermore, this program has the potential to be replicated in other posyandu areas as a sustainable approach to improving maternal and child nutrition. Keywords: Complementary Feeding; Portion Standards; Cadres; Stunting

Abstract

Yoghurt usually prepared from animal milk, but it can be created from plants. Almond (Prunus dulcis) compounds  oil, fiber, and vitamins B (B1, B2, B3, and B6). Butterfly pea blossoms (Clitoria ternatea) boost antioxidants and attractiveness. The aim of the study was developing almond yoghurt products with the addition of butterfly pea flowers and evaluating their nutritional, antioxidant, and probiotical potential. The method was a Completely Randomized Design (CRD) that was utilized to test butterfly pea flower concentration (F1:10, F2:20, F3:30). The starters were lactobacillus bulgaricus, streptococcus thermophillus, and bifidobacterium. Hedonic quality, preference, nutritional content, total lactic acid bacteria, and antioxidant activity were dependent variables. Analyses included the Kruskal Wallis test and Mann-Whitney follow-up. 1,1-diphenyl-2-picrylhydrazyl (DPPH) was utilized for antioxidant analysis and total plate count (TPC) for total lactic acid bacteria. The formula was determined using Exponential Comparison Method. The results indicated that there were significant differences (p-value<0.05) in color, texture, and taste quality but did not show significant differences in aroma quality (p-value>0.05). The selected formula (F2) from the organoleptic test results had a total energy nutritional content of 80.6 kcal, total fat 4.4%, carbohydrates 6.8%, and protein 3.5%. It had an antioxidant activity of 212 ppm with a lactic acid bacteria content of 1.8x107 colonies/mL and a pH level of 4. The conclusions was almond yogurt with 20 grams of butterfly pea flowers produced meets the Indonesian National Standard for Yogurt Quality but has very weak antioxidant activity. Antioxidant activity can be enhanced by adding other raw materials as antioxidant sources.Yoghurt salah satu minuman susu fermentasi yang umumnya terbuat dari susu hewani, tetapi dapat dikembangkan dari bahan baku nabati. Salah satunya adalah kacang almond (Prunus dulcis) dengan kandungan lemak, serat pangan, dan vitamin B (B1, B2, B3, B6). Penambahan bunga telang (Clitoria ternatea) dapat meningkatkan penampilan dan kandungan antioksidan. Tujuan penelitian mengembangkan produk yoghurt sari kacang almond dengan penambahan bunga telang dan mengevaluasi potensi gizi, antioksidan, serta probiotik. Metode penelitian adalah eksperimental menggunakan Rancangan Acak Lengkap (RAL) dengan peubah respon adalah konsentrasi bunga telang (F1:10, F2:20, F3:30). Starter bakteri yang digunakan adalah Lactobacillus bulgaricus, Streptococcus thermophillus, dan Bifidobacterium. Variabel dependen adalah mutu hedonik, tingkat kesukaan, kandungan gizi, total bakteri asam laktat, dan aktivitas antioksidan. Data yang didapatkan dianalisis menggunakan uji Kruskal Wallis dengan uji lanjut Mann-Whitney. Analisis antioksidan menggunakan metode 1,1-diphenyl-2-picrylhydrazyl (DPPH) dan total bakteri asam laktat menggunakan metode total plate count (TPC). Penentuan formula terpilih menggunakan Metode Perbandingan Eksponensial (MPE). Hasil penelitian terdapat perbedaan signifikan (p-value<0,05) mutu warna, tekstur, dan rasa tetapi tidak menunjukkan perbedaan signifikan mutu aroma (p-value>0,05). Formula terpilih (F2) dari hasil uji organoleptik memiliki kandungan gizi energi total 80,6 kkal, lemak total 4,4%, karbohidrat 6,8%, dan protein 3,5%. Memiliki aktivitas antioksidan 212 ppm dengan kandungan bakteri asam laktat 1,8x107 koloni/mL dan kadar pH dengan nilai 4. Kesimpulan yoghurt almond penambahan 20 gram bunga telang yang dihasilkan memenuhi SNI Mutu Yoghurt namun memiliki aktivitas antioksidan yang sangat lemah. Aktivitas antioksidan dapat ditingkatkan dengan menambahkan bahan baku lain sebagai sumber antioksidan.

Abstract

Stunting terjadi karena anak tidak mendapatkan asupan gizi yang mencukupi untuk tumbuh kembangnya. Ada berbagai faktor yang dapat memengaruhi kurangnya asupan gizi pada anak, salah satunya kurangnya pengetahuan ibu tentang berapa banyak porsi makanan yang harus diberikan kepada anak untuk memenuhi kebutuhan energi, zat gizi makro dan zat gizi mikro. Tujuan kegiatan pengabdian masyarakat ini adalah untuk meningkatkan pengetahuan ibu tentang porsi makan. Kegiatan edukasi dilakukan dengan metode demostrasi pengolahan makanan untuk balita serta penyuluhan tentang porsi gizi seimbang untuk makanan balita. Peserta kegiatan ini adalah ibu yang memiliki anak usia balita di RW.03 Kelurahan Padasuka Kecamatan Ciomas Kabupaten Bogor sebanyak 22 orang. Pengetahuan ibu tentang porsi makan balita diukur dengan kuesioner pada saat sebelum kegiatan dan setelah pelaksanaan kegiatan. Hasil pengisian kuesioner terdapat peningkatan pengetahuan ibu sebesar 21 poin. Rata–rata nilai pengetahuan ibu sebelum kegiatan adalah 59, sedangkan rata–rata nilai pengetahuan ibu setelah kegiatan adalah 80. Kesimpulannya kegiatan edukasi berhasil meningkatkan pengetahuan ibu tentang jumlah porsi makanan balita. Ibu balita diharapkan dapat menerapkan pengetahuannya dalam praktik pemberian makan bagi anak.

Many factors could affect the nutritional status of school children, one of them is the school location.Objectives: To analysis the correlation between school location with nutritional status of elementary school students.Method: The research design used was a cross-sectional design. 80 subjects were observed from two different schools namely SDN 1 Cikelet Garut (Urban) and SDN Pesanggrahan 02 Pagi Jakarta Selatan (Rural). The relationship of school location and gender with nutritional status were analyzed using Chi Square. Independent Sample T-test used to analyze nutritional status based on different locations.Result: In rural there are 25% of children with over nutritional status (weight/age). There are still stunted child both in urban (7.50%) and rural (10%), but based on weight/height nutritional status, almost all subjects in both urban (92.50%) and rural (97.50%) in obese category. Chi Square analysis showed that the school location was significantly related (P <0.05) only with the weight/age nutritional status. Gender is significantly related to height/age nutritional status. The majority of boys (15,4%) are shorter than girls (2,4%). The results of the Independent Sample T-test based on location, showed that the nutritional status of subjects in urban was significantly different (P<0.05) from the nutritional status of subjects in rural. In line with this, based in gender there is significantly different (P<0.05) in nutritional status between boy and girl.Conclusions: The results of this study indicate that differences in school locations are related to the nutritional status of elementary school students.

Abstract

This study aimed to analyze the relationship between nutritional status, beverage consumption habits, and disease frequency in high school students. Data were collected through an online questionnaire to explore the characteristics of the subjects: weight, height, beverage consumption habits, and disease frequency. The subjects were 78 students at SMA Muhammadiyah 25 Pamulang, Banten. This study has discovered nutritional status and nutritious beverage consumption habits are not related to disease frequency (p>0.05). Meanwhile, herbal beverage consumption habits are related to disease frequency (p<0.05). The herbal drink contains antioxidants that can improve immunity and cause less frequent disease.
