Abstract

Kabupaten Karawang merupakan salah satu daerah penghasil rumput laut jenis Gracilaria sp. Untuk meningkatkan nilai jualnya, rumput laut Gracilaria sp. dapat diolah menjadi agar strip. Agar strip Gracilaria sp. kemudian digunakan sebagai bahan baku pembuatan dodol jelly. Menurut SNI 01-2986- 1992, dodol merupakan sejenis makanan yang terbuat dari tepung beras ketan, santan kelapa, dan gula dengan atau tanpa penambahan bahan lainnya yang diizinkan. Namun dalam perkembangannya, dodol dapat dibuat dari bermacam-macam bahan makanan, misalnya dodol buah Garut atau dodol jelly rumput laut khas Lombok. Tujuan penelitian ini untuk memformulasikan produk dodol yang diolah dari karaginan dan agar strip Gracilaria sp. serta menguji kualitas sensori dodol tersebut. Penambahan agar strip Gracilaria sp. mempengaruhi mutu sensori produk dodol jelly pada parameter tekstur. Formulasi bahan dodol jelly meliputi: agar Gracilaria sp, karaginan, gelatin, sirup glukosa, sukrosa, pewarna makanan dan air. Dodol jelly yang dihasilkan memiliki kenampakan jernih dan tekstur kenyal. Nilai tertinggi 4.15 untuk rata-rata kesukaan panelis terhadap tekstur yakni dodol jelly tanpa penambahan agar strip. Untuk warna rata-rata panelis menyukai produk dengan penambahan agar strip 5 gram. Untuk penilaian terhadap aroma semua panelis menyukai aroma dodol dengan atau tanpa penambahan agar strip.

Abstract

Rajungan merupakan salah satu sumberdaya perikanan yang memiliki nilai ekonomi tinggi dalam perdagangan internasional. Rajungan (Portunus pelagicus) merupakan komoditas unggulan Kabupaten Karawang. Bubu lipat sangat populer digunakan oleh nelayan dan dioperasikan dengan sistem longline sehingga memerlukan alat bantu penarik untuk mempermudah dan mempercepat dalam operasi penangkapan. Informasi karakteristik teknis alat bantu penangkapannya masih sangat minim oleh karena itu perlu dilakukan kajian lebih lanjut. Penelitian ini bertujuan untuk menganalisa karakteristik teknis alat bantu penarik bubu rajungan terutama terkait desain, kebisingan dan konsumsi bahan bakar. Karakteristik teknis alat bantu penarik bubu rajungan dideskripsikan sesuai kondisi saat ini, sedangkan untuk kebisingan dan konsumsi bahan bakar dilakukan analisis deskripsi komparatif. Alat bantu penarik bubu pada nelayan pesisir Karawang terdapat perbedaan pada pereduksi putaran (gear box). Tenaga penggerak menggunakan mesin diesel dengan daya 8 – 12 PK, roda piringan penarik (line spool plate) terbuat dari bahan besi plat dan kayu serta karet ban bekas sebagai pelapis dengan diameter 17 – 50 cm. Gear box menggunakan gardan bekas dan roda gigi cacing (worm gear set). Kebisingan yang dihasilkan mesin penggerak pada area nelayan bekerja melebihi nilai ambang batas yang ditetapkan yaitu 91 dB dengan lama paparan lebih dari 2 jam. Dalam jangka panjang hal ini dapat menyebabkan gangguan pendengaran yaitu ketulian. Besaran nilai konsumsi bahan bakar mesin penggerak alat bantu dengan daya 8 dan 12 PK mesin penggerak pabrikan Jepang lebih unggul. Konsumsi bahan bakar pada kondisi putaran minimum dan maksimum untuk mesin berdaya 8 PK adalah 1,48 dan 5,93 liter, sedangkan mesin berdaya 12 PK adalah 2,35 dan 10,35 liter.Blue swimming crab (Portunus pelagicus) is a fishery resource that has the potential to utilize because it has high economic value in international trade. Portunus pelagicus is a leading export fisheries commodity in Karawang Regency; collapsible pots are very popular fishing gear fishermen use. The fishing is operated with a longline system that requires auxiliary hauling equipment to simplify and speed up the fishing operation. Information on auxiliary fishing equipment's technical characteristics is still minimal; therefore, further studies are needed. This study analyzes the pot hauler's technical characteristics, especially regarding design, noise, and fuel consumption. The technical characteristics of the pot hauler are described following the existing conditions, while a comparative descriptive analysis was carried out for noise and fuel consumption. There are differences in the gearbox for the fishing traps for fishermen in the coastal area of Karawang. The driving force uses a diesel engine with a power of 8-12 HP, the towing wheel (line spool plate) is made of iron plate and wood, and used rubber tires as a coating with a diameter of 17-50 cm. The gearbox uses a used axle and a worm gear set. The noise generated by the auxiliary equipment engines in the fishermen's working area exceeds the set noise limit value of 91 dB with an exposure period of more than 2 hours. In the long term, this could cause deafness to the fishermen. Theoretically, the fuel consumption value of the auxiliary equipment engines, with a power of 8 and 12 HP of the Japanese manufacturer, is superior. The fuel consumption at the minimum and maximum rotation conditions for the 8 HP engine is 1.48 and 5.93 liters, while the 12 HP engine is 2.35 and 10.35 liters, respectively.

Abstract

The research was conducted in April-May 2023 on the KM. Mekar Baru Putra 3, based at the Pelabuhan Perikanan Nusantara (PPN) Pekalongan. The aim of this study was to identify and evaluate life safety equipment on the purse seine vessel. The research employed a case study approach on the KM. Mekar Baru Putra 3, and data were collected through observations and direct participation in fishing operations on board. Structured interviews were also conducted with fishermen working on the vessel to gather more accurate information regarding life safety equipment. Data analysis was performed using a comparative descriptive approach, comparing the on-board conditions with the minimum requirements for life safety equipment as per applicable regulations. The research findings revealed that the life safety equipment on board included GPS and a fish finder. Based on the evaluation results, a score of 20 was obtained, which is below the minimum threshold specified by the applicable regulations. Therefore, there is a need for awareness and understanding to be conveyed to the owner and captain of the KM. Mekar Baru Putra 3 to ensure compliance with the required life safety equipment

Abstract

Penerapan Good Manufacturing Practice (Gmp) Dan Sanitation Standar Operating Procedure (Ssop) Pada Proses Pengolahan Tekwan Ikan Tenggiri (Scomberomorus guttatus) Roza Piasari1), Liliek Soeprijadi2), Rahmad Surya Hadi Saputra3) 1, Teknik Pengolahan Produk Perikanan, Politeknik Kelautan dan Perikanan Karawang ABSTRAKPenelitian ini bertujuan untuk mengkaji penerapan Good Manufacturing Practice (GMP) dan Sanitation Standard Operating Procedure (SSOP) pada proses pengolahan tekwan ikan tenggiri (Scomberomorus guttatus) di UMKM X. Subjek dalam penelitian ini adalah perusahaan pengolahan makanan laut yang memproduksi tekwan ikan tenggiri, sedangkan objek yang diteliti adalah penerapan GMP dan SSOP dalam proses produksi tekwan. Metode penelitian yang digunakan adalah pendekatan kualitatif deskriptif dengan observasi langsung terhadap proses produksi, wawancara dengan petigas terkait, serta analisis dokumentasi yang ada. Hasil penelitian menunjukkan bahwa perusahaan sudah menerapkan Sebagian besar prinsip GMP dan SSOP, namun terdapat beberapa area yang perlu diperbaiki, seperti pengawasan terhadap kebersihan alat dan sanitasi ruangan produksi yang masih kurang optimal. Kesimpulan dari penelitian ini adalah bahwa meskipun penerapan GMP dan SSOP telah dilaksanakan dengan baik, masih terdapat kekurangan yang perlu diperbaiki untuk meningkatkan kualitas dan keamanan produk. Perusahaan disarankan untuk lebih meningkatkan pengawasan dan pelatihan kepada karyawan dalam menjaga kebersihan dan sanitasi selama proses produksi.

Abstract

Kabupaten Karawang memiliki potensi perikanan yang menjanjikan, terutama dalam budidaya ikan patin. Namun, limbah tetelan ikan patin yang dihasilkan seringkali tidak dimanfaatkan secara optimal, sehingga menimbulkan masalah lingkungan dan pemborosan sumber daya. Kegiatan pengabdian masyarakat ini bertujuan untuk meningkatkan nilai tambah tetelan ikan patin melalui pelatihan pengolahan produk bernilai ekonomi, seperti nugget dan otak-otak. Metode yang digunakan adalah Participatory Rural Appraisal (PRA), yang melibatkan partisipasi aktif masyarakat dalam proses pelatihan. Kegiatan ini dilaksanakan di Desa Tambak Sari, Karawang, dengan sasaran utama kelompok wanita nelayan. Hasil evaluasi pelatihan diversifikasi Olahan Produk Perikanan Berbahan Tetelan Ikan Patin,  menunjukkan peningkatan signifikan dalam pengetahuan dan keterampilan peserta, dengan rata-rata nilai pengetahuan meningkat dari 60 (sebelum pelatihan) menjadi 90 (setelah pelatihan). Selain itu, peserta juga mampu mempraktikkan pembuatan nugget dan otak-otak secara mandiri, serta memahami pentingnya standar keamanan pangan dan strategi pemasaran. Dengan demikian, pemanfaatan tetelan ikan patin sebagai bahan baku produk olahan bernilai tambah dapat berkontribusi pada pengurangan limbah, peningkatan pendapatan, dan pemberdayaan ekonomi masyarakat lokal.

Abstract

Indonesia has significant aquatic resource potential, especially in its marine waters. One of its leading fishery products is cuttlefish, which is abundant in Indonesian waters. This study aims to examine the characteristics of frozen Whole Clean Cuttlefish processed in accordance with Good Manufacturing Practices (GMP) and the Standard Sanitation Operating Procedure (SSOP). The implementation of GMP and SSOP is essential to ensure the quality and safety of fishery products, as fish-based products are highly perishable. Therefore, improving food safety standards is necessary to maintain the quality of frozen Whole Clean Cuttlefish for consumers.

Abstract

Desa Kawali is one of the Smart Fisheries Villages (SFVs) located in the Kawali District, with its main commodity being tilapia fish. Currently, there are approximately 4,000 fish ponds around the location of Desa Kawali with immense potential. The abundant production of tilapia fish, supported by extensive aquaculture land, can serve as a primary asset in ensuring food security for the village community and also in enhancing their welfare. The welfare of the residents of Desa Kawali largely depends on tilapia fish, which are marketed in the form of live fish or ready-to-consume products. While there is a growing number of processed fish products, the variety and quantity of processed products produced are still limited. Community service is conducted using the Participatory Rural Appraisal (PRA) approach. The PRA method is an approach to community empowerment that emphasizes the involvement or participation of the community in all activities, with external facilitators serving as guides to facilitate community activities. It is a participatory action research method designed to encourage active participation of the community in the development process. The results of the community service activities conducted, ranging from the delivery of materials to practical product manufacturing and packaging, can be summarized as follows: the community service activities conducted provide numerous benefits to the participants. These activities also impact the skills of the participants, and with proper and attractive product packaging, the processed products become more marketable

Abstract

The escalating need for animal protein has stimulated the growth of the capture fisheries industry. However, undue carelessness concerning the maintenance and operation of fishing vessels often results in scenarios that pose serious risks, even leading to fatal accidents. In Karawang District, the high spirit of fishermen in setting sail plays a major role in boosting the productivity in the capture fisheries sector. Yet, the awareness of the importance of using personal safety equipment while at sea remains disappointingly low. The Fish Capture Study Program of the Politeknik Kelautan dan Perikanan Karawang set out to organize a training sessions aimed for enhancing the fishermen’s awareness of safety during their voyages. These sessions are a manifestation of the social responsibility in empowering the community and promoting sustainable development. Through presentations, and direct demonstrations, fishermen are instructed on various aspects of safety during their voyage. The training includes techniques for self-preservation at sea, use of the red hand flare, activation of parachute signals, and smoke signals during emergencies, as well as the use of life buoys and life jackets to enhance safety at sea. This community service activity was attended by 20 fishermen residing on the coast of Karawang District. The initiative attempts to strike a balance between the urgency to meet the growing demands for animal protein, and the obligation to promote safe and sustainable practices in the capture fisheries sector.

Abstract

The tuna handlines operated by some fishers from Southern Malang in the Indian Ocean can be categorized as a type of static fishing gear. The stability of their small-sized vessels becomes critical when a large-sized tuna is caught by the handline and lifted with the help of a line hauler installed onboard, i.e., the floating angle tolerance may be exceeded.   This study aims to determine the angle of inclination of a 9 GT boat when a line hauler is operated onboard.  The research was carried out in June 2016 by measuring the principal dimensions of a fishing boat, FV Cahaya 01, in Pondok Dadap Fishing Port, Malang.  The principal dimensions are length overall (LOA), length before perpendicular (LPP), breadth (B), and depth (D) Data on the boat's principal dimensions, lines plan, and hull shape were used for the boat’s stability calculation.   The studied boat's buoyancy center is located at 0.27 m in front of the midship and the TCP is 0.315. The maximum load of the line hauler was 211.253 kg, and the inclination angle during the hauling process was 3.520.  The installation of the line hauler on the fishing boat creates a new acceptable stability of the boat.

Abstract

Renewable energy planning is a complex process, involving multiple dimensions, including natural resource availability, government policies, and socio-economic factors. This study emphasizes the importance of a decision-making approach that is not only technically based, but also considers the social and political factors that influence policy implementation. Decision-making in renewable energy planning is often hampered by information inequality between stakeholders, social resistance, and policy instability that can slow down a sustainable energy transition. Multi-Criteria Decision Making (MCDM) methods have been used to help stakeholders choose the best option, but overly technical approaches can be a barrier in developing countries. Therefore, simpler and more data-driven approaches, such as heuristic models, become more relevant in contexts of uncertainty. This research uses a descriptive qualitative approach through case studies to explore the dynamics of decision-making in renewable energy planning. Data were collected through in-depth interviews, focus group discussions (FGDs), and document analysis. The results show that transparency, open communication and stakeholder participation are essential to overcome social and political barriers and support effective and sustainable renewable energy policy implementation.
