Abstract

 This community service initiative was designed to empower communities by providing training on converting vegetable waste into eco-enzyme as a solution for sustainable household waste management. The program adopted a participatory method involving awareness sessions, practical workshops, and ongoing assistance. Participants were introduced to material preparation, fermentation techniques, and the utilization of eco-enzyme as an eco-friendly cleaning solution and liquid fertilizer. The outcomes indicated a significant increase in participants’ understanding and practical skills in managing organic waste, along with heightened environmental awareness. Furthermore, the program fostered positive behavioral changes in reducing household organic waste and promoted the adoption of simple and affordable sustainable practices. Hence, eco-enzyme production represents a practical community-based approach to improving sustainable household waste management.

Abstract

Nanas merupakan unggulan kedua yang di ekspor Indonesia setelah buah manggis pada 22 tahun lalu, volume ekspor nanas pada tahun 2004 sebesar 2.431.263 kilogram atau mengalami peningkatan sebesar 6,4 % dari tahun -tahun sebelumnya, permintaan ekspor nanas yang cukup tinggi merupakan pendorong bagi produksi nanas dalam negeri yang mampu bersaing dengan nanas negara lain. Seperti halnya produk pertanian lainnya, karakteristik buah nanas adalah mudah rusak dan pemanfaatannya lebih banyak sebagai makanan penutup mulut karena rasanya yang segar. Potensi penganeka ragaman produk pangan dengan bahan baku sebenarnya cukup banyak namun sampai dengan saat ini masih belum berkembang. Oleh sebab itu pada penelitian ini dilakukan memanfaatkan ektrak buah nanas melalui fermentasi bakteri Acetobacter Xylinum untuk membentuk polisakarida akstraseluler (nata) sebagai hidangan non energi yang biasa kita kenal Nata de pina, penelitian ini bertujuan untuk memanfaatkan ekstrak buah nanas untuk dijadikan hidangan Nata de pina. Hasil pengujian menunjukkan bahwa nata de pina memiliki nilai pH sebesar 4,7 dan kadar air sebesar 98,08% sudah memenuhi syarat mutu berdasar SNI nata. Hasil uji organoleptik terhadap 30 panelis menunjukkan bahwa sebagian besar panelis menyukai rasa, warna, aroma, dan tekstur Nata de pina yang dihasilkan.

Abstract

Oil palm fronds are abundant agricultural biomass with high cellulose content that can be converted into carboxymethyl cellulose (CMC) as a natural food thickener. This study aimed to evaluate the effect of oil palm frond-derived CMC on the physicochemical and sensory characteristics of chili sauce and to determine the optimum CMC concentration. A completely randomized design was applied using four CMC concentrations (0, 0.5, 1.0, and 1.5%) with three replications for each treatment. The evaluated parameters included moisture content, pH, crude fiber, texture, vitamin C, viscosity, aroma, and taste. Data were analyzed using one-way analysis of variance followed by Duncan's multiple range test at a 5% significance level. The results showed that increasing CMC concentration significantly reduced moisture content from 84.55% to 83.30% while increasing pH from 3.97 to 4.15, crude fiber from 1.24% to 1.72%, texture from 1.33 to 2.14 N, vitamin C from 22.81 to 24.44 mg/100 g, and viscosity from 2,334.33 to 4,275.00 cP (p < 0.05). Sensory evaluation also showed significant differences, with the 1.0% CMC treatment receiving the highest aroma (4.80) and taste (4.90) scores. These findings indicate that oil palm frond-derived CMC can serve as an effective natural thickening agent for chili sauce, with a concentration of 1.0% providing the best balance between physicochemical quality and consumer acceptance.

Abstract

This study examines how retention time affects the effectiveness of anaerobic digestion in the treatment of Palm Oil Mill Effluent (POME). The study focuses on variations in Chemical Oxygen Demand (COD), pH levels, and biogas production using wastewater sourced from three palm oil processing facilities: Pagar Merbau POM, Adolina POM, and Cinta Raja POM retention Time. Anaerobic digestion was conducted for various retention periods of 0, 15, 30, 45, and 60 days. Evaluations were conducted to assess the reduction of organic contaminants, stabilization of pH levels, and the amount of biogas produced during the fermentation phase. The results showed that COD generally decreased with increasing retention time, although temporary increases were observed at days 30 and 60, while pH levels gradually moved towards a more stable state. Biogas production increased and peaked at 45 days, but no biogas production was observed at 60 days. These results indicate that retention time is crucial in influencing the effectiveness of anaerobic treatment methods. A retention period of 45 days offers the best conditions for the reduction of organic pollutants and for optimizing biogas production from POME.
