Abstract

ABSTRAK Penggunaan minyak goreng yang berulang kali atau dikenal sebagai minyak goreng bekas pakai (minyak jelantah) dapat membahayakan kesehatan masyarakat karena berkaitan dengan risiko penyakit tidak menular (PTM). Minyak jelantah menjadi bahaya bagi kesehatan karena mengandung lemak tidak jenuh dan lemak trans.Tujuan kegiatan pengabdian masyarakat ini adalah meningkatkan pengetahuan ibu-ibu dan masyarakat di Desa Panca Mukti, Kabupaten Bengkulu Tengah mengenai dalam penggunaan minyak goreng yang sehat dalam pencegahan PTM. Peserta kegiatan ini yaitu ibu-ibu Desa Panca Mukti sebanyak 25 orang yang terdiri dari Tim Penggerak PKK Pokja III, kader kesehatan lingkungan, kader posbindu dan ketua atau perwakilan dasawisma di Desa Panca Mukti dimana semua peserta tersebut diberikan pelatihan untuk menjadi edukator yang akan meneruskan hasil pelatihan kepada masyarakat desa. Metode kegiatan dilakukan dengan sosialisasi, diskusi, dan monitoring evaluasi. Materi edukasi yang diberikan tentang pengunaan minyak goreng yang sehat dan pengelolaan Bank Minyak Jelantah. Hasil pengukuran pengetahuan peserta menunjukkan rata-rata dan standar deviasi pre test 10,68±2,70 dan hasil post test 16,56±1,96, diperoleh nilai p 0,0005. Terdapat perbedaan pengetahuan peserta setelah diberikan pelatihan tentang penggunaan minyak goreng yang sehat. Perlu dilakukan edukasi dan dukungan perangkat desa dan tokoh masyarakat di wilayah Desa Panca Mukti agar masyarakat selalu menerapkan penggunaan minyak goreng yang sehat sehingga terhindar dari PTM. Kata Kunci: Pengetahuan, Minyak Goreng, Minyak Goreng Bekas Pakai, Minyak Jelantah, Penyakit Tidak Menular  ABSTRACT Repeated use of cooking oil, also known as used cooking oil (UCO) or "jelantah" oil, can pose a health risk to the community as it is associated with non-communicable disease (NCD). "Jelantah" oil is dangerous to health due to its high content of unsaturated fats and trans fats. The aim of this community engagement activity is to enhance the knowledge of mothers and the community in Panca Mukti Village, Central Bengkulu District, regarding the appropriate use of healthy cooking oil in preventing NCDs. The participants in this activity are 25 women from Panca Mukti Village, consisting of members of the Family Empowerment and Welfare/ PKK Pokja III, environmental health cadres, Posbindu cadres, and the heads or representatives of the Dasawisma in Panca Mukti Village. All participants receive training to become educators who will pass on the knowledge gained to the village community. The methods employed in this activity include socialization, discussions, and monitoring evaluations. The educational content covers the proper use of cooking oil and the management of the Used Cooking Oil Bank. The results of the participants' knowledge assessment show a pre-test average and standard deviation of 10.68±2.70, and a post-test result of 16.56±1.96, yielding a p-value of 0.0005. There is a significant difference in participants' knowledge after receiving training on the appropriate use of cooking oil. It is imperative to conduct further education and gain support from village officials and community leaders in the Panca Mukti Village area to ensure that the community consistently adopts the use of healthy cooking oil, thus avoiding NCDs. Keywords: Knowledge, Cooking Oil, Used Cooking Oil, Non-Communicable Diseases

Abstract

ABSTRAK Penyakit Tidak Menular (PTM) adalah penyakit yang tidak disebabkan oleh infeksi kuman, termasuk penyakit jantung, stroke, diabetes mellitus (DM), kanker, penyakit paru obstruktif kronis (PPOK), serta gangguan akibat kecelakaan dan kekerasan. Kematian akibat PTM seperti stroke, penyakit jantung, kanker, diabetes, dan PPOK telah melebihi kematian akibat penyakit menular. Pelaksanaan Posbindu di Desa Panca Mukti belum sepenuhnya sesuai dengan pedoman, sehingga tujuan meningkatkan partisipasi masyarakat dalam pencegahan dan penemuan faktor risiko PTM belum tercapai optimal. Tujuan untuk meningkatkan pengetahuan kader posbindu dalam pencegahan PTM. Metode yang digunakan yaitu model Community Development (CD) melibatkan kader dan masyarakat secara langsung sebagai subyek dan obyek dalam pelaksanaan kegiatan pengabdian kepada masyarakat. Pendekatan yang digunakan adalah persuasif, yaitu memberikan himbauan dan dukungan tanpa paksaan agar kader dan masyarakat berperan aktif dalam kegiatan ini, serta edukatif, yakni melalui sosialisasi, pelatihan, dan pendampingan untuk mentransfer ilmu pengetahuan dan pendidikan guna pemberdayaan masyarakat. Rata rata pengetahuan kader saat pre-test 51,9 sedangkan mean post test 64,6, setelah pelatihan terjadi peningkatan skor 12,7. Terdapat peningkatan pengetahuan kader Posbindu di wilayah Puskesmas Srikuncoro, Kabupaten Bengkulu Tengah setelah memperoleh pelatihan mengenai pencegahan penyakit tidak menular. Disarankan kader perlu difasilitasi untuk mendapatkan kesempatan pelatihan yang lebih komprehensif dan tersertifikasi untuk meningkatkan kualitas pelayanan kesehatan khususnya dalam deteksi dini dan pencegahan penyakit tidak menular. Kata Kunci: Pengetahuan, Penyakit Tidak Menular (PTM), Kader, Posbindu  ABSTRACT Non-Communicable Diseases (NCDs) are illnesses not caused by infectious agents, including heart disease, stroke, diabetes mellitus (DM), cancer, chronic obstructive pulmonary disease (COPD), as well as injuries from accidents and violence. Mortality from NCDs such as stroke, heart disease, cancer, diabetes, and COPD has surpassed deaths from infectious diseases. The implementation of Posbindu in Panca Mukti Village has not fully adhered to the guidelines, thus the goal of increasing community participation in the prevention and identification of NCD risk factors has not been optimally achieved. To enhance the knowledge of Posbindu cadres in preventing NCDs. The method used was the Community Development (CD) model, engaging cadres and the community directly as subjects and objects in the execution of community service activities. The approach employed was persuasive, providing encouragement and support without coercion to ensure active participation of cadres and community members in this activity. It was also educational, involving socialization, training, and mentoring to transfer knowledge and education for community empowerment. The average pre-test knowledge score of cadres was 51.9, whereas the mean post-test score was 64.6, indicating a score increase of 12.7 after the training. There was an improvement in the knowledge of Posbindu cadres, following training on NCD prevention. Recommended cadres need to be facilitated with opportunities for more comprehensive and certified training to enhance the quality of healthcare services, especially in early detection and prevention of NCDs. Keywords: Knowlegde, Non-Communicable Diseases (NCDs), Kader, Posbindu

Abstract

This study examined the potential of using local ingredients such as Manyung fish (Arius thalassinus) and moringa leaves to create nutritious nuggets. The objectives of this study were to assess the organoleptic acceptability of Manyung fish nugget enriched with Moringa leaves concerning color, taste, aroma, and texture. The research followed an experimental approach using a randomized design. Findings indicated that the formulation F1 (90 g Manyung fish and 10 g moringa leaves), was favorable due to its superior attributes in color, taste, aroma, and texture. Among the formulations, F1 exhibited the most preferred in terms of sensory aspects. This research highlighted the potential of these local ingredients for nugget formulation especially for adolescent consumption

Abstract

Yogurt is a fermented dairy beverage made primarily from cow's milk as the main ingredient. The addition of purple sweet potato extract filtrate can provide color and increase the nutritional content of yogurt while enhancing consumer acceptance. This study aims to evaluate organoleptic acceptability and analyze the presence of Lactic Acid Bacteria (LAB), protein content, fat content, and water content in yogurt enriched with purple sweet potato extract filtrate. This study is an experimental study using a completely randomized design (CRD) with one factor. The factor applied was the addition of purple sweet potato extract filtrate (Ipomoea batatas) with treatment units F0 0%, F1 5%, F2 10% and F3 15%. Data were obtained from organoleptic tests of color, aroma, taste, viscosity and overall acceptability by 30 trained panelists. The results of the organoleptic test showed that F3 was the most preferred yogurt formulation with the addition of 15% purple sweet potato extract filtrate. Total Lactic Acid Bacteria (LAB) in F3 was 2.47 x 108cfu/ml, protein content in yogurt with the addition of purple sweet potato (Ipomoea batatas) extract filtrate (F3) was 0.48%, fat content in yogurt with the addition of purple sweet potato (Ipomoea batatas) extract filtrate (F3) was 0.20% and water content was 82.92%. The F3 product can be classified as a probiotic product based on LAB content, however it needs modification to increase protein and fat content in accordance with SNI 2891-2009 standards.

Abstract

Penyakit Tidak Menular (PTM) menjadi masalah kesehatan utama di Indonesia. Deteksi PTM dan edukasi gizi merupakan langkah penting dalam pencegahan dan pengendalian PTM. Puskesmas Sri Kuncoro dan Pemerintah Desa Panca Mukti bekerjasama dengan Jurusan Gizi Poltekkes Kemenkes Bengkulu melaksanakan kegiatan pengabdian kepada masyarakat berupa konseling gizi dalam rangka Gerakan Serentak (Gertak) Skrining Penyakit Tidak Menular bertempat di Balai Desa Panca Mukti, Kabupaten Bengkulu Tengah pada 16 Juli 2024. Konseling gizi dilaksanakan oleh dosen dan mahasiswa DIII Gizi. Masyarakat di wilayah kerja Puskesmas Sri Kuncoro (lansia dan dewasa berisiko) mendapatkan pemeriksaan/skrining risiko PTM yaitu pemeriksaan tekanan darah, kadar asam urat, kolesterol, dan glukosa darah serta konseling gizi. Hasil kegiatan ini menunjukkan antusiasme dan partisipasi aktif masyarakat dalam upaya skrining kesehatan dan edukasi gizi sebagai langkah pencegahan PTM.

Abstract

Packaged processed foods have become an integral part of modern lifestyles, yet they often contain high sodium levels that pose significant risks for hypertension and cardiovascular diseases. This study aims to evaluate the sodium content of packaged processed foods in Bengkulu City based on the 2nd Edition of the WHO Global Sodium Benchmarks. A descriptive cross-sectional study was conducted in May 2024, analyzing 500 products across 22 food subcategories sourced from modern retail outlets. Data on sodium content were collected from nutrition facts labels and converted to mg/100 g or mg/100 ml to ensure comparability with international standards. The results revealed that the highest median sodium levels were found in concentrated bouillon (3,914 mg/100 g), soy sauce (2,000 mg/100 ml), and instant noodles (1,294 mg/100 g). A vast majority of products, particularly canned fish (0% compliance), savory nut and seed snacks (0% compliance), and instant noodles (2.63% compliance), failed to meet the WHO benchmarks. Conversely, subcategories such as soy sauce (100%) and chocolate (81.81%) demonstrated high compliance rates. In conclusion, most packaged foods in the local market significantly exceed international sodium standards. These findings underscore the urgent need for integrative national benchmarks and progressive food reformulation policies to mitigate the burden of non-communicable diseases in Indonesia.

Abstract

High blood pressure is a global health problem with increasing prevalence and is associated with sodium, fiber, and fat. The high consumption of fast food is a serious public health concern, primarily due to the unbalanced nutritional composition of fast food. Fast food is very high in saturated fat and sodium. High sodium content contributes to increased body fluid volume, which can trigger hypertension, while saturated fat contributes to atherosclerosis, or narrowing of the arteries. To analyze the relationship between fat and sodium consumption from fast food and blood pressure in adults in the Telaga Dewa Community Health Center (Puskesmas) in Bengkulu City. This study used a cross-sectional design, with a sample size of 61 adults (21–65 years old) selected through purposive sampling. Data were analyzed using a correlation test. The average fat consumption of respondents was 52.7 g, and sodium consumption was 763.1 g. The average systolic blood pressure was 127 mmHg, and diastolic blood pressure was 85 mmHg. The analysis showed a significant association between fat consumption and blood pressure (p=0.000) and between sodium consumption and blood pressure (p=0.000). Consumption of fat and sodium in fast food is related to blood pressure, showing a strong relationship, meaning that the higher the intake of fat and sodium, the greater the tendency for increased blood pressure. There is a relationship between showed a significant association between fat consumption and blood pressure, so sodium and blood pressure.

Abstract

This paper examines a community engagement initiative employing Culturally Responsive Alumni Mentorship (CRAM) to support Indonesian freshmen at Asia University, Taiwan. Recognizing the challenges of cultural transition and financial constraints, this initiative, led by an Indonesian alumnus, provided a culturally relevant platform for students to thrive. A sharing and discussion session held on September 10th addressed key areas like academic strategies, cultural adjustment, and financial management. CRAM emphasizes leveraging alumni experiences to offer culturally specific guidance. The session fostered a sense of community and facilitated knowledge sharing, leading to positive outcomes such as enhanced cultural awareness, improved confidence, and reduced anxiety. This study highlights the potential of CRAM in empowering international students to navigate the complexities of studying abroad and achieve academic success

Abstract

Diabetes mellitus is a metabolic disease with symptoms of hyperglycemia caused by abnormalities in insulin secretion, insulin action, or both. Central obesity is caused by excessive fat deposits in the abdomen. Excessive fat accumulation results in insulin resistance, which is one of the factors in increasing blood glucose levels in diabetes mellitus sufferers. Diet is very influential in controlling blood sugar levels in the body to avoid complications due to diabetes mellitus. The aim is to determine the relationship between abdominal circumference and eating patterns with blood sugar levels in adult diabetes mellitus sufferers. The design used in this research was analytical observational using a cross-sectional approach, the total number of respondents was 76 people, with purposive sampling technique. The data taken is central obesity data by measuring abdominal circumference directly using a Mettline measuring tape and eating patterns using the Percieved Dietary Adherence Questionnaire (PDAQ) form. Statistical analysis uses the Chi-square test to determine the relationship between the independent variable and the dependent variable. The research results showed that 82.9% of respondents had central obesity and 52.6% of respondents had a diet that did not comply with dietary recommendations for diabetes mellitus sufferers. Based on statistical tests using chi square, it shows that there is a relationship between abdominal circumference and blood sugar levels in diabetes mellitus sufferers (p value = 0.019) and eating patterns and blood sugar levels in diabetes mellitus sufferers (p value = 0.006). The conclusion of this research is that there is a relationship between abdominal circumference and diet and blood sugar levels in adult diabetes mellitus sufferers in the UPTD area of the Puskesmas Pasar Ikan, Bengkulu City in 2024.

Abstract

Nutritional Nutritional status is an important indicator in determining the level of health and growth of children. A good diet plays a role in meeting nutritional needs and contributing to the quality of early childhood health. This study aims to determine the description of the diet and nutritional status of children aged 24–59 months in the working area of ​​the Tumbuan Health Center UPT, Seluma Regency. This study used a descriptive design with a cross-sectional approach. The number of samples was 52 mothers who had children aged 24–59 months who were selected using a purposive sampling technique. Data were collected through a food frequency questionnaire (FFQ) and nutritional status measurements using body weight and height, then analyzed univariately. The results showed that most children had a good diet, with fairly good consumption of animal and vegetable protein. As many as 90.4% of children had a weight according to age in the normal category, 84.6% had a height according to age in the normal category, and 82.7% had good nutritional status based on weight according to height. Conclusion: The majority of children aged 24–59 months have good eating patterns and normal nutritional status based on weight, height, and weight to height. It is recommended that parents increase their nutritional knowledge and routinely monitor their children's growth through the nearest health service.
