Abstract

This study investigated the effects of fortification with functional plant ingredients—butterfly pea flower (Clitoria ternatea), roselle (Hibiscus sabdariffa), and ginger (Zingiber officinale)—on the physicochemical, antioxidant, textural, colour, and sensory properties of extruded rice crackers. A Completely Randomized Design consisting of four treatments (P1: control, P2:butterfly pea flower, P3:roselle, and P4:ginger addition) with triplicate experiments was applied. Results demonstrated that plant-based fortification significantly influenced proximate composition, bioactive compounds, and product quality attributes (p < 0.05). Roselle fortification produced the highest anthocyanin content and the strongest antioxidant activity, with values of 2.602 ppm and 16,059 ppm (IC50), respectively. Butterfly pea flower enhanced flavonoid content to 0.010% and achieved the highest overall sensory acceptance (score 5.00). Ginger addition significantly improved textural characteristics, particularly hardness and crispiness, with values of 63.19 N and 1.96 N, respectively, contributing to a desirable snack structure. Colour parameters were strongly affected by natural pigments derived from functional plants, enabling clean-label visual differentiation of products. Overall, butterfly pea flower (P2) was identified as the optimal formulation, providing the best balance between functional enhancement and sensory acceptance. This study introduces functional rice crackers made from broken rice with improved antioxidant capabilities, diversifying the product from rice-based raw materials. Abstract

This study aimed to determine the quality of dried butterfly pea flowers obtained by several post-harvest handling treatments. Post-harvest treatment of butterfly pea flowers according to SOPs includes harvesting, wet sorting, washing and draining, weighing, drying, dry sorting, and packaging. This study consisted of four post-harvest treatments, including P1 (without washing and sorting, direct sun drying), P2 (without washing and sorting, drying using food dehydrator), P3 (with washing and sorting, indirect sun drying), and P4 (with washing and sorting, drying food dehydrator). All treatments were analysed for dried flower quality, including water content, antioxidant content, and organoleptic quality.  The results showed that there was a significant difference in the moisture content of butterfly pea flowers with four post-harvest treatments.  P3 and P4 obtained lower moisture content than P1 and P2, which were 9.7% and 10.7%, respectively.   Washing, wet sorting, and dry sorting are part of post-harvest handling following SOPs.  The antioxidant content data showed no significant difference from the four treatments, but the highest free radical inhibition was obtained from the P3 treatment, which was 80%. From this study, it can be concluded that good post-harvest treatment of butterfly pea flowers consisted of harvesting activities, wet sorting, washing and draining, weighing, undirect sunlight drying or food dehydrator drying, dry sorting, and packaging.

Abstract

CV Salama Nusantara had not conducted calculations regarding inventory, and there were still raw materials accumulating in the warehouse (overstock), which could result in a reduction in profit and an increase in company expenses. Additionally, it was observed that there was a shortage of raw materials (stockout), leading to production interruptions and the company incurring higher costs for reordering in smaller quantities. This research aimed to understand the inventory system when using ABC and EOQ methods and the difference in Total Inventory Cost (TIC) values between the company’s and EOQ methods The study showed that the ABC method in the simplisia inventory system classified category A with 66.58% of the investment value for one type of simplisia, requiring greater control compared to categories B and C. The use of EOQ for ginger simplisia resulted in the highest EOQ value of 134.72 kg with an ordering frequency of 7 times. The comparison of Total Inventory Cost (TIC) for simplisia such as red ginger, cardamom, sappanwood, cinnamon, cloves, and nutmeg showed that the EOQ method resulted in a lower TIC compared to the company’s policy, with differences of Rp2,365, Rp12,973, Rp14,116, Rp65,494, Rp4,768, Rp16,055, and Rp66,048, respectively.

Abstract

Purpose of the study: This study analyzed the simultaneous and partial influences of seven internal and external factors: age, education level, motivation, time availability, family support, access to production resources, and group management. Methodology: A census-based quantitative survey enrolled all 40 KWT members as respondents. Structured Likert-scale (1–5) questionnaires were administered and validated through item-total correlation analysis (r-critical = 0.312) and Cronbach's alpha reliability testing (α = 0.897). Ordinal data were transformed to an interval scale using the Method of Successive Intervals (MSI). Data were analyzed using multiple linear regression in SPSS v.25, preceded by normality (Kolmogorov–Smirnov), multicollinearity (VIF), heteroscedasticity (Glejser), and autocorrelation (Durbin–Watson) assumption tests at α = 0.05. Main Findings: All seven variables simultaneously and significantly influenced member participation (F = 11.002; p = 0.000; R² = 70.6%). Partial analysis confirmed that only time availability (β = 0.361; p = 0.005) and production resource access (β = 0.430; p = 0.007) were significant predictors, with production resource access being the strongest. Age, education level, motivation, family support, and group management showed no significant partial effects, with group management exhibiting a negative coefficient attributable to the free-rider effect. Novelty/Originality of this study: This study empirically demonstrates that enabling factors, time availability, and access to production resources dominate psychological, demographic, and managerial factors in determining actual KWT member participation. It simultaneously tests seven internal and external variables in a food-production-based empowerment context, reveals the intention-behavior gap mechanism, and proposes a structural-barrier-reduction framework for empowering agricultural women’s groups.
