Increasing the protein content of the sticks can be done by substituting catfish as a protein source. The purpose of the study was to determine the level of preference and protein content of fish sticks with catfish flour substitution. This research is an experimental study with a completely randomized design (CRD), consisting of 4 kinds of ratios of wheat flour and catfish flour, namely 100%:0%, 80%:20%, 70%:30%, 60%:40%. The level of preference was carried out on 25 semi-trained panelists and protein content using the Kjeldahl Method. Data analysis using Oneway ANOVA and Duncan's advanced test. The most preferred taste and color were fish sticks with the addition of 40% catfish flour while the most preferred texture and the odor was 30% catfish flour. Substitution of catfish flour on catfish sticks had a significant effect on taste, color, texture, and aroma (p<0.05) and the highest protein content is stick with an additional 40% of catfish flour, with a protein content of 24.65%. It is recommended to carry out further research on the shelf life of catfish sticks and their effect on taste, color, texture and odor.

Poor consumption behavior in adolescence, such as diet trends and consumption of junk food, is the underlying cause of the emergence of various nutritional problems. Protein along with iron (heme) plays a role in the transportation of nutrients by forming a complex of hemoglobin in the body. If the body is deficient in protein, it can interfere with the formation of hemoglobin. The program for giving iron supplements to adolescence women in the working area of the Sidomulyo Health Center has been running but due to the Covid-19 pandemic and the implementation of online teaching and learning activities (students are not present at school) it has stopped since 2019. So it is necessary to provide assistance in giving iron supplements and accompanied by nutrition education in order to prevent the incidence of anemia in adolescent womens in Pekanbaru City High School. The purpose of this Community Service is to provide assistance for adolescent womens to consume iron and nutrition education. The result of this community service is an increase in adolescent nutritional knowledge and adherence to consuming iron suplements. Nutrition education for adolescent womens was provided with the counseling method and the " Adolescent Womens’ Nutrition Diary" module and there was an increase in the nutritional knowledge score of adolescent womens before receiving education, namely 67.38% and after receiving education 85.71%. In addition, a quiz competition was held in order to measure the level of understanding of nutrition education that had previously been carried out. Mentoring is done by holding a “Together Consuming Iron Supplements” so that the iron supplements given is guaranteed to be 100% consumed by adolescent womens. Learning nutrition for adolescent womens in preventing anemia can continue for a long time to form educational networks through Instagram media. Giving complementary feeding properly is not only to meet children's nutritional needs but also to stimulate children's eating skills. However, there are still many inappropriate complementary feeding practices, due to the lack of knowledge of mothers and the lack of available information. The cadres of Integrated Healthcare Centre (POSYANDU) as an extension of health workers are expected to be able to provide mothers with adequate information and skills regarding the proper practice of giving and processing complementary feeding. The purpose of this community service is to increase the knowledge of cadres regarding the practice of giving complementary feeding and the skills of cadres in processing the menu of complementary feeding. This community service involved 30 posyandu cadres in Rejosari Village. Activities carried out in the form of counseling accompanied by the practice of menu processing. Based on the results of the evaluation, the knowledge level of cadres has increased, which means that the cadres are considered to have understood and have been able to disseminate information related to proper complementary feeding practices and have been able to process the menu.

Introduction: Malnutrition in early life can impact later life. In Indonesia, the determinant cause of malnutrition is inadequate complementary feeding. Lack of knowledge, misguided beliefs, and food taboos are also factors that determine complementary feeding. For this reason, the community needs to be given education about nutrition and health behavior through appropriate IEC. Objectives of the study: To determine the difference in knowledge, attitude, and behavior of mothers in the practice of breastfeeding using Educational Video. Methods: This study is a pre-experimental study with one group pretest and post-test. The study was conducted from January to December 2023 in Pekanbaru City. Results/findings: The results of the Wilcoxon test showed that there was a significant difference between the knowledge variables before and after the provision of educational videos with a value of p = 0.000 (p <0.05) and there was a significant difference between the attitude variables before and after the provision of educational videos with a value of p = 0.000 (p <0.05). but there was no significant difference between the behavior variables before and after the provision of educational videos with a value of p = 0.209 (p>0.05). Conclusion: Education with video media in mothers who have children aged 6-24 months can improve knowledge and attitudes, but there is no difference in maternal behavior in providing complementary food.

Nutrition during pregnancy plays an important role in fetal growth, the nutritional needs of pregnant women increase both in quantity and quality of nutrition. The proportion of anemia in pregnant women increased from 37.1% in 2013 to 48.9% in 2018. Anemia is linked to other health problems such as low birth weight, stunting, and child malnutrition. One of many ways to overcome the problem of anemia in pregnant women is by giving iron supplement. Pregnant women in Riau Province who received iron supplement decreased from 79% in 2018 to 65% in 2019. Therefore, it is necessary to empower cadres in preventing anemia, namely by using control cards of iron supplement consumption and education in the form of providing nutritional videos for pregnant women. The aim of this Community Service is to provide cadre training so that they will be able to educate pregnant women to increase knowledge, adherence to drinking iron supplement, and skills in processing foods high in iron. The training method used for cadres is lectures with educational media in the form of control cards, presentation handouts, showing videos on nutrition for pregnant women, and questions and answers. The training for cadres successfully improved cadre knowledge and skills, which now could educate and giving assistancy to pregnant woman consuming iron supplements and prepare high Fe foods.
